Dear readers, sometimes we all spend far too much time thinking about the future. We plan, arrange and worry about things which are still a long way ahead of us. This doesn't mean that we shouldn't think about our next holiday or retirement plans However, it is all too easy to forget that life occurs in an instant. It has no regard

for us, our desires or our feelings at a given instant, but it does have an extremely important

effect on our happiness. In particular, our happiness with ourselves.

Eat yoursElf into a good mood:With 'mood food'!

You know that there are some days when you simply feel great for no particular reason and then there are other days when it seems you out of on the wrong side of the bed. But you shouldn't worry, your moods are in no way affected by which side of bed you get out of! Nutrition is a far greater factor. There are foods which really knock you for six and others which make you feel completely euphoric. Therefore, it is great to know what foods affect us in which way.

Even the ancient Romans knew that a healthy spirit can only live in a healthy body. In other words, by doing our bodies good we also be-come more psychologically resilient and more balanced and "simply feel great". It is not only possible for our food to have a positive effect on our stomachs but also on our minds, as it is our brains which control, organ-ise and channel all of the thoughts, behavioural patterns and feelings which constitute human nature. In addition, the nervous system must function perfectly in order that it is able to adequately produce important neurotransmitters such as serotonin, dopamine, noradrenaline and other messengers which have a significant effect on our moods.

In the scientific world, we identify psychoactive substances as being materials which, when taken into the body, have a direct affect on the mind. They have a mood-brighten-ing, stimulating or calming effect.

In short, they affect our emotions. The most well-known example of this is chocolate. This is hardly surprising as sweets stimulate production of the messenger serotonin which make us happy and euphoric. In addition, the cocoa used in chocolate contains the substance theobromine which likewise has a mood-brightening and stimulating effect on our nervous system.

If you're feeling jaded or slightly de-pressed, then it is recommended that you go for foods which are rich in the amino acid tyrosine. This is due to the fact that this substance not only improves intellectual performance but also your alertness and mood. Milk, peas, beans, nuts and meat are a good start. Mother nature's menu also contains ingredients to combat irritability, nervousness and tension, i.e. fish, cheese, curds or poultry. These foods ensure that the hormone melatonin is produced and in doing so aid calmness and tranquillity, which

“At first, everything was as it should be. However, after a few days I began noticing that I was losing weight very rapidly. After just two or three weeks, I weighed just 38 kilos, the same as my 10 year old son. I had constant diarrhoea and was finding it impossible to eat anything. I couldn’t even breast-feed my own son.”

“During my time in hospital, I was subject to thorough examinations. I was connected up to all manner of tubes and devices but the test results always came back negative even though I was clearly quite unwell. I couldn’t breast-feed my baby, my hair started falling out and I even lost my appetite.

Finally, after two months, I was sent for a biopsy. This was when I was told that I had a rare condition known as coeliac condition and that I could avoid experiencing the symptoms if I followed a very strict diet. I was so relieved and happy that I was finally healthy again, but I had so many questions…. Why me? Why did it take so long for a diagnosis?”

I now understand that in my home country of Hungary it is very rare for an adult to be affected by this condition, which usually occurs in children.”

Food allergies or incompatibilities are a major topic for an ever increasing number of people. Never have the triggers been so numerous as they are today.

Yes, yes, yes!

If you have an intolerance to a particular type of food, this means having to say no to a great number of things throughout your life... no to lactose, no to gluten, no to wheat, no to milk, no to soya or no to egg. We want you to be able to say yes again! Particularly to taste. The majority of "forbidden" ingredi-ents in foods can be replaced easily! During the course of our research, we succeeded in finding substitutes for a number of ingredients which proved to be more valuable, in terms of food psychology, than the ingredient replaced while providing the same full flavour. Regardless of whether it's flour, pasta, biscuits, sweets or bread, our products are naturally gluten-free and in many cases also free from incompatible and allergy-triggering substances. In addition, taste is also considerably important to us.

Keeping it natural

The task facing our R&D department is as complex as it is demanding. The team comprises seven highly skilled food technologists who are specialists in gluten-free food. They are responsible for testing and categorising a wide variety of natural gluten-free alternative raw ingredients. They then use these as a basis for developing new recipes and food preparation techniques.

We have chosen to take an extremely broad approach to our research. For example, rather than testing just a few varieties, we chose instead to test 100 different varieties of maize and rice and to monitor their behav-iour throughout the baking process. A range of different ingredients is required for when recipes have to exclude particular ingredients such as milk.

For research with such ambitious objectives, i.e. for complex chemical, physical, physiological, sensory and organoleptic tests, familiar equipment such as the trusted oven is by no means sufficient. Therefore, our laboratories are equipped with the latest and most elaborate measurement and testing facilities.

Nowhere is out of reach to us when it comes to searching for new and appropriate raw ingredients. We are therefore constantly in contact with new suppliers throughout the world which allows us to extensively test alternative raw ingredients. These ingredients must be natural, wheat-free and not genetically modified. New requirements are constantly being added and we constantly endeavour to satisfy these.

chilli bruschetta with shrimps

Ingredients (serves 4)12 slices Schär Pane Casereccio, 100 g cream cheese or parfait, 100 g banana, 2 tbsp. lime or lemon juice, 1 red chilli, salt, 12 ready-to-eat shrimps, some coriander leaves (to taste)

Method 1. Chop the banana into small pieces. Place in a

bowl together with the parfait and the lime juice and stir until smooth. 2. Clean, seed and finely chop the chilli and add to the mixture. Salt to taste. 3. Toast the slices of bread and spread with the mixture. 4. Decorate with shrimps and coriander.

lemon tiramisu

Ingredients (serves 4)200 – 300 g Schär Savoiardi (depending on container), 250 g mascarpone, 125 g cream, 4 eggs, 200 g sugar, 1 tbsp. limoncello, juice of 4 untreated lemons, mint leaves for decoration

Method1. Separate eggs and beat the yolk with 150 g sugar until light and fluffy. 2. Grate the lemon zest and add to the mascarpone. 3. Beat the cream until it forms stiff peaks and fold into the mascarpone mixture. 4. Add the egg yolk/sugar mixture and stir. 5. Beat the egg white until it forms stiff peaks and fold into the mixture. 6. Mix some water together with limoncello, lemon juice and the rest of the sugar in a shallow dish. Soak the sponge fingers in the liquid and then place them next to each other in a shallow container (alternatively you could initially cut the sponge fingers in half and use them to fill glasses). 7. Pour a layer of the lemon mixture over the sponge fingers and then arrange another layer of soaked fingers on the top. Pour in the remaining mixture. 8. Chill tiramisu for 3 hours. Garnish with slices of lemon and mint leaves, before serving.

There have long been discussions on the positive effect of breast-feeding in relation to the reduced risk of suffering from coeliac condition. British researchers have evaluated 6 studies, published between 1996 and 2004 on the subject of breast-feeding and coeliac condition, and have determined a clear connection between the breast-feeding period and the reduced risk of suffering from coeliac condition.

first 6 months - no gluten

Children with the corresponding genetic make-up should be exclusively breast-fed for the first six months and should completely go without gluten and/or supplementary foods containing gluten. This ensures that in the first six months, when the immune system is not yet fully developed, children profit from the dual-protection of breast milk and complete abstention from gluten. On the one hand, breast milk contains substances which provide protection against hypersensitive reactions of the immune system and on the other hand, children who are breast-fed do not come into contact with allergy-causing egg white.In cases where the mother is unable to breast-feed, she can, without a doubt, revert to infant formula, as this contains all the vital ingredients and has to be free from gluten. In the study, the British researchers also recommend to continue breast-feeding for two months after food containing gluten has been introduced.

Step by step gives more

From about the end of the sixth month, breast milk alone is no longer sufficient. Babies need additional foodstuffs for healthy growth and should be gradually introduced to a variety of foods. It is best to start with a gluten-free supplementary food such as a mash made from vegetables, potatoes and possibly meat or a mash made from vegetables, millet, rice and flakes of corn. Only then should you slowly start introducing a small quantity of cereal which contains gluten, i.e. a cereal-milk blend. Wherever possible, breast-feeding should continue for two months.

If there are people in your family who are affected by the coeliac condition, then you should allow your child to be examined regularly for coeliac antibodies as soon as he receives food containing gluten. This will ensure that coeliac condition is diagnosed early and that appropriate measures are taken.
