1 Preheat grill on high. Melt Weight Watchers Canola Spread in a small saucepan over medium heat. Add flour and cook, stirring, for 1 minute or until bubbling. Gradually whisk in milk until smooth and combined. Cook, stirring, for 2–3 minutes or until thickened. Remove from heat. Stir in Bega Country Light Tasty Grated Cheese 50% Less Fat and two-thirds of the chives until sauce is melted and smooth. 2 Grill bread on both sides until toasted. Spread 1 side of each slice of toast with mustard. Spread with cheese sauce. Grill for 3 minutes or until golden. 3 Meanwhile, heat Weight Watchers Baked Beans in Tomato Sauce in a saucepan over medium heat for 5 minutes or until warmed through. 1 Heat half the Weight Watchers Canola Spread in a large saucepan over high heat. Cook mushrooms, stirring, for 5 minutes or until tender. Stir in thyme and rosemary. Season with salt and freshly ground black pepper. 2 Meanwhile, whisk eggs, egg whites and Weight Watchers Cottage Cheese in a large jug. Season with salt and freshly ground black pepper. 3 Lightly spray a medium non-stick frying pan with oil and heat over medium-high heat. Add one-quarter of the egg mixture. Swirl to coat base. Cook for 1–2 minutes or until almost set. Scatter over one-quarter of the mushroom mixture. Fold omelette in half and transfer to a serving plate. Cover with foil to keep warm.
