A successful entrepreneur with a proven record in multiple fields, Sean Collins holds integrity paramount in business relationships. He has a drive for growth and remarkable creative vision, combined with an unstoppable thirst for knowledge. This propelled Sean to start his first business at age 23, followed by the development of a number of successful ventures.

The vision for FatCats began when Sean joined forces with Dave Rutter in 1993, building a solid business partnership and sharing a drive to succeed with customers. Their vision was to create a unique and memorable consumer experience for the entire family, while providing excellent food and state-of-the-art bowling/entertainment facilities.

In 2004, Sean and Dave became the first franchisees of Costa Vida. In 2009, they formed Costa Vida Holdings and acquired the Costa Vida brand from the founders. In 2009, Sean began serving as the Chairman of the Board of FatCats Holdings and Costa Vida Holdings. In 2010, Sean sold his ownership of several other enterprises to focus on the growth of FatCats and Costa Vida.

With over 25 years of retail and consumer goods operating experience, Sean provides his growth-oriented entrepreneurial spirit to expand the FatCats brand and to accelerate a trajectory to make Costa Vida a national presence, under the 2011-formed umbrella company appropriately named Win Enterprises Group, LLC.

Professional discipline and the leadership to inspire and empower individuals to achieve, and even exceed their goals, are but a few of the assets that have accompanied Dave Rutter on his successful business path. With drive, determination and a desire to lead his team to winning success, Dave became the owner and operator of the full-service restaurant Prestwich Farms after only three years as General Manager. He retained that ownership through 1996.

When Dave and Sean joined forces in 1993, they combined their mutual entrepreneurial energies with their individual talents for leadership and a common vision for excellent retail brands. Dave brings to this team a strong operational background, along with an insightful ability to deliver solid financials. In 2009, Dave began serving as President of FatCats Holdings and Costa Vida Holdings.

With over 25 years of foodservice/hospitality industry, Dave provides his disciplined operating experience to expand the FatCats brand and to accelerate a trajectory to make Costa Vida a national presence, under the 2011-formed umbrella company appropriately named Win Enterprises Group, LLC.

Jeff became Costa Vida’s Chief Operating Officer in November 2009 and is also COO of CV Holdings. Jeff served as COO for one of Costa Vida’s largest franchisees. Jeff also served as COO for Rumbi Island Grill, August 2004 to March 2006. From 1982 to July 2004, he was employed by CKE Restaurants (Carl’s Jr. and Hardee’s) in a number of operations positions. From 1997 to July 2004, he was a Regional Vice President. Jeff has over 30 years of experience in the hospitality and food service industry.

Rich became the Win Enterprises CFO in September of 2011. Prior to joining the executive team of Win Enterprises, he worked as the CFO for Nature’s Way Products, Inc. from 1989 to 2010. From 1983 to 1986, Rich was a Senior Auditor for Deloitte and Touche. Rich has 31 years of experience in the area of finance.

Q: WHAT ARE YOUR FAVORITE HOBBIES?A: Composing music and writing poetry.

Geoff has been Costa Vida’s Executive Chef since October 2012. Before that he worked as a district sales manager, regional sales manager and resident food snob for Sysco Intermountain. Before that, he worked in the kitchens of Zuni Café, Campton Place Restaurant, and The Presidio GC.

Q: WHY DO YOU LOVE DOING WHAT YOU DO? A: Making people happy through food is very rewarding.

Q: OUTSIDE OF COSTA VIDA, WHAT ARE YOUR PASSIONS?A: I’m an avid golfer, skier, traveler and all around food nut. I’ve been married to my wife Erica for 10 years, and have 2 children. I believe the harder you work, the luckier you get.

Blair joined Costa Vida as the Director of construction and design in 2013. Prior to joining the team he was with Five Guys Burgers and Fries and Franklin Covey building stores across the US and Canada.

Kip started his career in Costa Vida in 2003. He worked in the very first Costa Vida in Layton Utah as a line cook. From there he joined a franchisee group and opened up four stores in the Denver and California market. In 2008 Kip joined the Costa Vida Holdings group as a district manager. In 2012 Kip was promoted as a Director of Operations for Costa Vida management. In his role Kip oversees the Franchise Business Consultants that support the franchisees and the District managers for the Company stores. Kip has a great passion for the food that Costa Vida serves, and loves the environment it has created.

Terry has worked in the restaurant industry for over 30 years, in every aspect of domestic and international restaurant development , operations and innovation. He helped introduce McDonald’s into Mexico, living in Mexico City. While working at McDonald’s headquarters near Chicago, he helped form relationships with WalMart, Exxon, Chevron, and Amoco for restaurant development, and headed corporate initiatives in franchising, marketing, supply chain, restaurant design, and quality management.. Most recently, Jennings’ was responsible for strategic development at Five Guys Burgers & Fries in Canada, opening the chains first international location followed by another 40 restaurants..

Q: WHY DO YOU LOVE DOING WHAT YOU DO? A: Its about the connection with our team and seeing them experience success as part of the Costa Vida family, but ultimately creating great meals & great experiences for our guests.

Simón has experience working in a large, national law firm as part of its business litigation group, representing multi-national corporations and also working in a small law firm representing entrepreneurs and start-up companies. Super Lawyers magazine and his peers have selected Simón as a Mountain States Super Lawyer “Rising Star”, listing him in the years 2009, 2011-2013. He has been voted by his peers throughout the state as one of Utah’s “Legal Elite” in 2010 and 2011 (as published in Utah Business magazine).

Q: WHAT DO YOU LIKE TO DO OUTSIDE OF THE OFFICE?A: Besides spending time with my family, I like to do manual labor at a lakeside cabin in interior British Columbia, and explore the desert in Southwest Utah near St. George. COSTA VIDAWith over 25 years of experience in the hospitality and food service industry, Collins and Rutter became franchisees of Costa Vida Fresh Mexican Grill in 2004.

2005

FRESH-MEX TRENDCollins and Rutter were quick to recognize the trend in Fresh-Mex franchising, and immediately jumped into the Costa Vida opportunity, opening new locations in Provo (2004) and Orem (2005).

2008

3RD COSTA VIDA OPENSCollins and Rutter crossed state lines and opened their third location in Meridian, ID. This too became a smashing success.

CONTINUED GROWTHCollins and Rutter continue their growth plans by establishing Costa Vida Holdings and acquiring the franchisor, and most of the locations in Idaho and Utah. Costa Vida Holdings owns and operates 12 locations.

FatCats is a state-of-the-art bowling center that provides family entertainment and great food all under one roof.

P R O J E C T B E N E F I T S Sean Collins and Dave Rutter are excited for the opportunity to bring a much needed and desired multi-venue family entertainment center to your great city. The citizens of your city and the surrounding areas will enjoy eight (8) state-of-the-art digital movie screens and twenty (20) lanes of bowling with the most sophisticated technology in the industry. Additionally, the center will feature an indoor glow-in-the-dark mini golf course, an adult arcade, a children’s arcade, a sports grill restaurant featuring a varied menu that is sure to please all tastes, and facilities for special events such as birthday parties, corporate events and school groups.FatCats Entertainment Center will provide one-stop entertainment that all members of the family can enjoy.

The center will be a catalyst for demographic growth surrounding the center, creating a destination point for entertainment and other retail and banking opportunities. Revenue benefits to the city include sales and property tax, utility tax, miscellaneous tax, charges for services and user fees.

P R O J E C T S U M M A R YThe center is proposed to be approximately 50,000 sq. ft. located on five to six acres of ground. Estimated cost of the building, equipment and ground will be approximately $9.5 million. The completed project will employ 50 to 60 persons.

Revenues to the city will include annual taxable sales, property taxes, utility taxes, if applicable, miscellaneous taxes, charges

for service and user fees, and school district revenues. In addition, the city will benefit from construction jobs and other related activities.

The project cost breakdown is estimated as follows: cost of building $6.5 million, cost of equipment $2 million, plus ground costs.

The creation of a major focal point for the cities, families, and citizens will be by far the greatest benefit.
