3. Make Dairy free pancakes.

Ingredients

2 bananas, peeled (approx. 160g/5oz peeled weight) 120g/4½oz plain flour 1 tsp baking powder 120ml/4¼fl oz oat milk (or other plant-based milk) 3 tsp coconut or vegetable oil

To serve (optional)

handful blueberries 1 banana, sliced maple syrup (or honey if you're not vegan), to drizzle dollop coconut yoghurt

Method1. Roughly chop the bananas and add to a blender with the flour, baking powder and oat milk.

Blend until smooth. Alternatively, mash the banana thoroughly on a plate, then transfer to a bowl and whisk in the other ingredients until smooth.

2. Heat a teaspoon of the oil in a small frying pan over a medium–high heat and spoon the mixture into the pan to make two pancakes, each about 10cm/4in in diameter – you will need about a tablespoon of mixture per pancake. Cook for around 2 minutes on each side, or until golden-brown, adding more oil if needed, then keep warm. Repeat until you have made all the pancakes.

3. To serve, divide the pancakes between two plates and top with the banana, blueberries, maple syrup and coconut yoghurt. Enjoy while still warm.

Recipe tipsMethod

1. Preheat to oven to 200C/180C Fan/Gas 6.2. Tip the beans, peas, tomatoes, oregano, chilli flakes and tomato purée into a roasting tin

and toss together. Bake for 15 minutes. For the last few minutes of cooking, put the tacos on a baking tray and warm in the oven.

3. Meanwhile, mash together the avocado, lemon juice and coriander.4. Carefully tip the beans into a serving bowl. Put the tacos, beans, avocado, cheese and

soured cream in separate bowls on the table so everyone can help themselves.Recipe TipsIf making with children, here are some tips to help them cook safely:

Always supervise small children when using the cheese grater and oven.

Make sure children always wear thick oven gloves when transferring food to and from the oven. It may be best for an adult to do this step.

To grate cheese, hold the handle of the grater with one hand and then push the block of cheese downwards over the grater ‘teeth’. Always keep your fingers away from the grater ‘teeth’, as they are very sharp. Children should always be supervised while grating.

You can buy tins that have ring pulls, and can be opened without a tin opener, which may be easier for children. The lid of a tin is very sharp, so watch those fingers!
