The Knights First Pulled Pork Dinner

Our Lady of the Valley Knights of Columbus held their first pulled pork dinner after the 4:00 Mass November 12th. Concerns about the project being a success were completely unfounded. Those that enjoyed both the dinner and the pork to go were very satisfied, with comments like “best event ever”.

This is the most labor-intensive part of the operation: prepping 300 pounds of smoked pork shoulder roasts for a pulled pork

dinner.

Parishioners were pleased with the menu of pulled pork, baked beans, and homemade

coleslaw.

The Peanut Brittle Warriors Strike Again

In 2016, Our Lady of the Valley’s Knights of Columbus made 950 pounds of peanut brittle in 15 hours. From customer feedback received, it was our best effort yet.

Patriotism

Denver Catholic September 24 – October 7, 2016

Patriotic Knights To Commemorate and celebrate the signing of the Constitution of the United States of Sept. 17, 1787, Our Lady of the Valley Knights Council 11575 and Assembly 3124 presented copies of the U.S. Constitution to the students in American Government and Civics Classes. As a part of the Knights of Columbus second annual “Constitution for Students Program”, booklets were presented to the following schools: Windsor High, St. Mary’s in Greeley, St. Joseph’s in Fort Collins, and St. John’s in Loveland. What better way to remind students of the document we base our freedoms on than to put a copy in their hands. Thank you Knights!

Veterans Day 2016 Members of the Knights of Columbus Assembly 3124 of Our Lady of the Valley parish brought out the uniforms of members who are also veterans. Despite the fact that these were all from retired military veterans, the uniforms were inspection ready. That goes to show the pride that these men had in the service to their country.

Thanks to marvelous innovations in medical technology, and advances in living and working conditions, many of us will enjoy long, prosperous lives. With average life expectancies on the rise, there’s a lot to be grateful for and look forward to. But living longer also comes with added responsibilities that we must take seriously.
