In a saucepan, heat oil over medium heat for about 30 seconds. Sauté leek until softened, about 2 minutes. Add garlic and sauté. Add mushrooms and sauté, stirring frequently. Add vinegar, stir well, and season with salt to taste. Prepare pasta as directed and serve with sautéed vegetables.

In a saucepan, melt margarine over medium heat. Cook onions until tender. Add rice, apple juice, water, contents of spice sack and cinnamon; bring to boil. Cover, reduce heat to low. Simmer until most liquid is absorbed. Stir in apples and walnuts just before serving.

3 Tbsp. fresh lemon juice1 Tbsp. soy sauce1 Tbsp. Dijon mustard2 cloves garlic, minced

Combine lemon juice, soy sauce, mustard, garlic, brown sugar and curry paste in a large zip lock bag. Add shrimp and seal. Marinate in the refrigerator for 1 hour. Preheat grill to high heat. When the grill is hot, lightly oil the grate. Thread shrimp onto skewers, or place in a grill basket. Transfer the marinade to a saucepan and boil for a few minutes. Grill shrimp for 3 minutes per side, or until opaque. Baste occasionally with the marinade. Serves 6.

Wild Rice SpoonbreadI N G R E D I E N T S

1 Tbsp. unsalted butter1/2 small onion, minced21/2 cups water or low sodium

chicken broth2/3 cup Reese Wild Rice

(one 4 oz. box)11/2 cups stone ground cornmeal

D I R E C T I O N S

Preheat oven to 350°F. Heat 1 Tbsp. butter in saucepan until bubbling. Add onion and sauté until translucent. Add the water or broth; boil. Stir in rice, cover and reduce heat. Cook about 40 minutes or until tender. Combine cornmeal and salt in a bowl. Stirring constantly, gradually add the boiling water, then the melted butter. In a separate bowl, beat eggs until thickened, add milk and beat to combine. Add baking powder, then combine with the cornmeal and beat or whisk to blend. Fold in the cooked rice, reserving a few tablespoons for garnish. Grease and fill an 8-inch square glass baking dish. Bake for 35 minutes, top with reserved rice, continue baking for 15 minutes or until center is firm and top is browned.
