GiftingThe holidays are here and that means holiday parties! When someone has invited you to a holiday party, whether for social or business reasons, it is fashionable to bring a small host or hostess gift as a token of gratitude. Assuming your host or hostess enjoys wine, a nice bottle of wine is the perfect gift. Here are ten suggestions when choosing your bottle of wine:

Decide how much you would like to spend. Generally speaking, when gifting a bottle of wine, you should be prepared to spend anywhere from $10-$25. You don’t want to purchase a wine that is too inexpensive nor too pricey due to the risk of looking impolite.

Don’t be selfish. Don’t give the host or hostess a bottle of what you want to drink; give them what they want to drink. You don’t want to give a big, bold red to someone who only drinks whites. Instead find wines they would be interested in.

The Artof

1. The bottle of wine is a gift. Remember that the bottle of wine presented to a host or hostess by a guest is a gift and they may choose if they would like to serve that wine for the evening or not.

Red or White? As a general approach, reds and sparkling wines are more acceptable in the winter and whites are most common for the summer. Once you have chosen between red and white, you can then narrow your search down to a specific “appellation” (region), “varietal” (type of grape), or perhaps, a certain winery.

Gifting Unusual Wine. It is always fun to select a wine that is not avail-able at your local neighborhood grocery or liquor store. Consider purchasing a foreign wine, or even a wine from another state. Also, consider the bottle’s aesthetic appeal. A uniquely shaped bottle or creative label design can be a great conversation starter.

Wine Enthusiast. Is your host or hostess a wine enthusiast? If so, he or she may have a favorite varietal or winery, which would make your venture of selecting the wine much easier. But if this isn’t the case, perhaps they may enjoy receiving a bottle of one of your own favorites or a treasured bottle from your private collection.

Consider the Situation. Depending on the gathering, there may be cultural considerations to take into account. Make sure you are enlightened about the situation before bringing your host a bottle of delicious wine.

Consider a large-format bottle. Consider a large bottle of wine such as a magnum, if you know the number of people attending. Specialty wine retailers often carry magnums and larger format bottles, or they can be ordered directly from a winery.

Presenta t ion . You may wish to present your bottle of wine in a variety of ways: in tissue-paper tied with a ribbon, a festive wine bag, or a wine box. Be creative!

A great pairing. Dress up your bottle of wine with a wine accessory. Here are some wine accessories that you can contemplate over: wine stopper, decanter, a unique corkscrew, set of wine glasses, a drip stopper, bottle collar, or the perfect accessory for those too impatient to let their wine breath, the Vinturi Wine Aerator.

2 pork tenderloins, about 1 pound each½ bottle (4 ounces) Viansa Lavender Honey Grilling GlazeViansa Extra Virgin Olive Oil

Warm Viansa Lavender Honey Grilling Glaze in nonstick saucepan on lowheat for about 5 minutes.Heat oven to 450°F. Line a 9x13x2-inch baking pan with foil; brush with olive oil.Trim excess fat from pork tenderloins. Place pork in prepared baking dish. Place in the preheated oven. Roast pork for 15 minutes. Reduce oven temperature to 350°F. Brush pork with Viansa Lavender Honey Grilling

Glaze & repeat every 10 minutes while continuing to roast pork for about 30 to 40 minutes, or until pork is cooked thoroughly. A meat thermometer should register about 160°F when inserted in thickest part of pork tenderloins. Slice tenderloins and serve drizzled with Viansa Lavender Honey Grilling Glaze. Serves 6

Serve with Viansa 2007 Pinot Noir or Viansa 2007 Signature Series Carlos Merlot

Wine Pairing Recipes

PORK TENDERLOIN WITHVIANSA LAVENDER HONEY GRILLING GLAZE

2 Bartlett pears (peeled, seeded andthinly sliced)2 tsp. Viansa Extra Virgin Olive OilSalt to tasteFresh ground black pepper to taste2 Petite lettuces½ cup Candied Walnuts(found at specialty stores)¼ cup Blue cheese, crumbled

Viansa Nespola Vinaigrette

¼ cup Viansa White Balsamic Vinegar cup Viansa Nespola Conservewith Currants¾ cup Viansa Extra Virgin Olive Oil

Preheat oven to 400ºF. Place sliced pears on plate. Season with olive oil, salt and pepper. Transfer to baking sheet. Roast in oven for 30 - 40 minutes at 400ºF or until slightly golden brown and tender. Remove and cool. Dress lettuces lightly with Nespola Vinaigrette. Place small mound of dressed greens onto chilled serving plates. Add roasted pear wedges. Top with crumbled blue cheese and candied walnuts. Serve immediately. Serves 4

VinaigretteWhisk balsamic vinegar & Nespola Conserve together in a mixing bowl. Add Viansa Extra Virgin Olive Oil while whisking until all the oil is incorporated. Store in refrigerator until needed. Whisk before each use.

3 1/2 cups all-purpose flour (plus

extra for dusting)2 tsp baking powderPinch of salt2 eggs1/2 cup Viansa Hazelnut Honey6 T sweet butter, melted3/4 cup milk, room temperature1/4 cup unsweetened cocoa powderConfectioner’s sugar (for sprinkling)

Preheat oven to 350 degrees F. Grease bundt pan with butter snd lightly dust with flour. Sift to-gether the flour, baking powder and pinch of salt in bowl. Add eggs, Viansa Hazelnut Honey, melted

butter and milk. Mix until smooth.

Pour one-third of mixture into separate bowl and stir in cocoa powder. Pour plain mixture into pre-pared mold. Pour the cocoa mixture on top. Bake 50-60 minutes. Remove from oven. Let cool for 15 minutes. Remove cake from pan. Sprinkle with confectioner’s sugar and serve. Serves 6-8

CIAMBELLA MARMORIZATTA WITHVIANSA HAZELNUT HONEY

1 lb green beans3 fresh tomatoes3 T Viansa Extra Virgin Olive Oil1 whole garlic clove (peeled, chopped)2 T Viansa Artisan Italian SeasoningBlend1 tsp chopped fresh basil1 tsp chopped fresh oregano1 lemon

Clean green beans. Drop prepared beans into boiling water and cover. After 3 minutes, remove with straining spoon. Place beans in large bowl of ice water. Let cool in water for 3-5 minutes, stirring a little. Score bottom of 3 tomatoes with pairing knife by cutting an “X” on bottom of each tomato. Remove stem root. Immerse tomatoes in boiling water. Leave in water for 30 to 45 seconds. Place tomatoes in large bowl of ice water. Let cool for 3-5 minutes. Remove skins and de-seed tomatoes. Chop into chunks. In a frying pay, over low heat, add 3 tablespoons of Viansa Extra Virgin Olive Oil. Add chopped garlic. Gently sauté until light brown. Increase heat. Add green beans and sauté for 1 minute. Stir in tomatoes. Cook 4 minutes until green beans are ten-der. Season with Viansa Artisan Italian Seasoning, chopped basil and chopped oregano. Drizzle with Viansa Extra Virgin Olive Oil and a squeeze of fresh lemon. Serves 6

Serve with Viansa 2007 Pinot Noir or Viansa 2007 Signature Series Carlos Merlot

This New Year’s, Open Everyone’s Eyes with a Blind Tasting

If you’re a total control freak, you can purchase all the wines yourself so that only you will know what’s being tasted. Or you can ask each guest to bring a bottle or two of wine. If you handle it that way, be specific about what

wine—other than the brand—they should look for. Heavier red wines are ideal for winter gatherings, so you might suggest a 2005 Cabernet Sauvignon from anywhere in the world, or 2006 California Zinfandels or 2005 Chiantis from Italy. Six to eight wines are a good number for a blind tasting. The evening of the party when all the wines are assembled, remove the foils completely because these can identify a particular brand. Leave the labels on the bottles and simple slip the bottles into a brown paper sack. Use a rubber band around the neck of the bottle to secure the bag. Prominently number each one. As you set the table, have glasses of water along with bland crackers or slices of baguette on hand for cleansing palates. Also, have some decorative pitchers on the table so that friends can pour out wine they don’t wish to finish. Complete the table by putting a small notepad and pen at each place. Taste through the wines starting with #1. No need to encourage discussion. It will naturally occur. When all the wines have been tried, have everyone rank them from most favorite to least favorite. If eight wines were tasted, everyone should give their top-rated wine 8 points. Their least favorite wine will score one point. Tally all the points and before revealing the wines, share with everyone the rankings from most popular to least. The moment of truth comes when you remove the wines from the bags. It’s a guarantee that lively conversation will follow the unveiling. Have pricing on hand. It’s always enlightening when a $25 bottle outscores a $100 bottle. And be prepared for your friends to ask that you make a blind tasting part of next year’s party, too.

VINO ROSSO – RED WINE

“ATHENA” DOLCETTO 2007 A varietal native to northern Italy, our Sonoma County “Athena” is a wonderfully fruit forward Dolcetto.

PINOT NOIR 2007 The 2007 Morning Sun Vineyard Pinot Noir is showing amazing richness, depth and purity with aromas of plum, cherry and fresh earth. The flavors unfold into intense black cherry and raspberry with a long elegant finish.

“PICCOLO” SANGIOVESE 2005 Sangiovese is the most widely planted red wine grape in Italy and the hallmark of the Chianti region. This wine has armoas of strawberries, black cherries and dry fruit intermingled with some cedary notes. Finishing with flavors of nutmeg, caramom and black fruit.

“LA NEBBIA” NEBBIOLO 2005 Nebbiolo, a grape native to Italy’s foggy Piedmont, is a light-bodied dry red with forward acidity. A dry red with good acidity, our 2005 “La Nebbia” offers aromas of fresh earth, cranberry and white flowers with flavors of pomegranate, bing cherry and brown spice.

“FARNETA” PRIMITIVO 2006 Primitivo is similar to that of Zinfandel, typically found in the region of Puglia in southern Italy. The grapes for our “Farneta” are harvested right here in Carneros. This wine is boasting with wonderful black pepper, wild berries and raspberries.

MERLOT 2006 Aromas of blackberry and toasty oak open to elegant, complex black cherry, cedar and spice flavors.

FREISA 2005 A common blending grape of northern Italy, this dark and “chewy” food-friendly wine is quite rare in our country.

ZINFANDEL 2006 Ripe yet well focused with aromas of black cherry, crushed black pepper and toasty oak.

SYRAH 2006 A delicious blend of Syrah (94%) and Primitivo (6%), harvested from Bayer Ranch, Emery Ranch & Serres Ranch vineyards.

CABERNET SAUVIGNON 2004 This North Coast Cabernet Sauvignon has very rich and dense aromas with chewy tannins in the finish.

CABERNET FRANC 2004 This Sonoma County wine has rich and intense aromas and flavors. Firm, integrated tannins with a long satisfying finish.

“PRINDELO” RED WINE 2006 A popular proprietary blend of Primitivo (67%), Zinfandel (22%) and Teroldego (11%) from our estate vineyards in Sonoma Valley.

“AUGUSTO” BARBERA 2005 Our traditional, d’Asti-style Barbera has tempting flavors of ripe plums and blackberries with soft tannins and a long, smooth finish.

“THALIA” SANGIOVESE 2005 (90% Sangiovese, 10% Cabernet Sauvignon) Big and powerful, showing loads of ripe blackberries, black cherry & spice that evolves into flavors of wild berries, licorice and dried cherry.

“LORENZO” MERLOT 2006 82% Merlot and 18% Cabernet Sauvignon and aged 16 months in French and Hungarian oak. Aromas of blackberry and toasty oak open to elegant, complex black cherry, cedar and spice flavors. This is a rich supple Merlot with a long smooth finish and soft tannins.

RESERVE CABERNET SAUVIGNON 2005 A Sonoma County blend of 93% Cabernet Sauvignon, 5% Merlot and 2% Cabernet Franc. Our Cabernet Sauvignon is very well balanced with flavors of wild crush berries, earthy, light spice and cocoa with a long finish.

“SAMUELE” CABERNET FRANC 2005 Our 2005 “Samuele” is rich and intense with aromas of toasty oak, dried herbs and fresh crushed blackberries. The flavors turn to black cherry, plum and currants with a long smooth finish framed by firm yet supple tannins.

“V” CABERNET SAUVIGNON 2005 A magnificent blend of Cabernet Sauvignon (76%), Cabernet Franc (13%), and Merlot (11%) sourced from the famed Oakville appellation in Napa Valley.

CHALKS EDGE ALEXANDER VALLEY CABERNET FRANC 2006 Its Chalk Hill slopeside vineyard produces aromas of black cherry, spicy oak and vanilla bean followed by flavors of black raspberry, ripe current and baking spices. It has a soft mouth feel, silky tannins and a long, smooth finish. Drink now through 2019.

GNARLY RIVER ALEXANDER VALLEY CABERNET FRANC 2006 Fruit from old gnarly vines in a hillside vineyard neighboring the Russian River release aromas of boysenberry, pepper and black cherry. Its more rustic flavors tend toward current and dried herbs. The finish has lots of spice and richness. Drink now through 2016.

DUANE’S RANCH SONOMA VALLEY PRIMITIVIO 2007 Our 2007 Primitivo is a rich, full-bodied wine with a well-balanced acidity that has a long smooth finish. This wine has wonderful flavors of fresh crushed berries, white pepper and a hint of light toasty oak.
