My name is Mustapha Haddouch. I am the founder of Mustapha’s Mediterranean Products.

Not the Mediterranean most are familiar with, however. I was born and raised in Morocco. Although I have lived and worked in the food business in the U.S. for 30 years, I have been involved with and loved the foods of Morocco, Spain, Portugal and other parts of North Africa all of my life. It is the flavors from this “other Mediterranean” I would like to introduce to you.

My personally selected line of wonderful and vibrantly spiced products comes directly from the finest sources in Morocco and the “other Mediterranean.” These include first cold press extra virgin olive oil, peppery harissa, smoky argan oil, sweet and fragrant preserved lemons, natural sea salt, tangy capers, and caper berries.

I feel confident in saying that any of these products will add a rich and delicious flavor to your current favorite foods. Use them with either familiar or new recipes, and create dishes your friends and family will truly enjoy.

I hope you will try some of the spices and flavors that have so long been a well-loved part of my life in your own cooking. I think you, too, will come to appreciate all that the “other Mediterranean” adds to your meals. Salud!

Mustapha’s harissa is the gold standard and no other harissa compares! Harissa is a traditional hot sauce that originated in North Africa but is now popular across the Mediterranean and beyond. The exact recipe varies by region and family tradition; ours is Mustapha’s personal recipe, which he spent many hours perfecting in his kitchen. It is an all-natural harissa made in Morocco with Agadir peppers, preserved lemons, spices, and tomatoes, and contains no artificial preservatives. This delicious hot sauce has flavors of pepper and lemon, and delivers a temperate heat that delights the palate. Culinary uses: Harissa can be used to intensify the flavor of mild foods such as couscous and can be added as an ingredient to cooking sauces for an extra layer of flavor. It is also a delicious marinade or accompaniment for meat, poultry, and seafood, and can be incorporated into tagines (stews) and soups to heighten flavor. The vibrant, complex flavor profile of harissa makes it a very adaptable and fascinating ingredient to cook with.

CAPERSMustapha’s Capers are the flower bud of the low-growing, deciduous caper shrub that grows wild in Morocco and across the Mediterranean. Ours are hand-harvested from wild caper bushes in Northern Morocco, near Fes. Once harvested, the buds are separated by size, cured, and packed in brine. Caper buds have a delightfully intense, peppery, tangy flavor, making them the perfect zesty accent for many dishes. Non-pareil capers are the smallest buds, with a pleasantly firm texture, while surfine capers are slightly larger in size, with a slightly softer texture.

Culinary uses: Capers lend a zesty accent flavor to many foods. They are a delicious addition in sauces, puttanesca, antipasto, and over seafood. Also try them as a topper for bagels with cream cheese and smoked salmon for a savory breakfast or snack.

Mustapha’s Caper berries are the teardrop-shaped fruit of the caper bush, which is a low-growing, deciduous shrub that grows wild in Morocco and across the Mediterranean. Caper berries mature once the flower of the caper bush has bloomed. Our caper berries are harvested by hand from wild caper bushes in Northern Morocco, near Fes. Once harvested, they are separated by size, cured, and packed in brine. The flavor profile is milder than that of caper buds, but caper berries still possess some of the characteristic tartness found in the buds.

Culinary uses: Caper berries are milder than caper buds and make a delicious snack on their own. They are also excellent sliced and fried as a salad topping, eaten with antipasto, or in martinis.

Mustapha’s high-quality extra virgin olive oil is made from the first cold press of 100% Picholine du Languedoc olives grown in the foothills of Morocco’s Atlas mountain range. The olives are grown in well-established groves and hand-picked when the fruit reaches its optimum quality and the oil level in the fruit is at its prime. The olives are then washed and meticulously crushed using a process that preserves the quality of the fruit, and hence the quality of the oil. This process results in an olive oil with low acidity, allowing the smooth, buttery, green fruit flavors of the Picholine du Languedoc olive to shine through.

Culinary uses: Extra virgin olive oil is an excellent dipping or cooking oil. It brings aromatic flavor to green salads and can be used to finish soups, antipasto, vegetables, and pasta dishes.

Mustapha’s Argan oil is extracted from the nuts found inside the fruit of the Argan tree, which is an ancient tree native to Morocco that grows between the base of the Atlas Mountains and the Atlantic Ocean. Argan fruit resembles a large olive, with a thick green skin. The fruit is dried and the skin removed to reveal a hard shell, which is stone-crushed to access the nuts found inside. These nuts are toasted and then crushed and pressed to make Argan oil. The precious oil extracted during this process has rich, buttery, toasty nut aromas that accurately hint at the oil’s unique flavor profile: nutty, toasty, with an amazingly light mouth feel.

Culinary uses: Argan oil is excellent for bringing light, nutty flavor to many foods. It can be used similarly to olive oil, and brings unique flavor to vinaigrettes, couscous, simple vegetables, soups, grilled meat, and seafood. Also try it drizzled over ice cream for a light but decadent dessert.

Mustapha’s preserved lemons are made with Beldi lemons, which are recognized as one of the best varieties for pickling. Beldi lemons are mildly sweet and exceptionally fragrant, and their delicious flavor is only intensified during the pickling process. Ours are grown in Southern Morocco near Marrakech, Agadir, and Taroudant. The lemons are cured in sea salt, then sliced and mixed with pulp and brine for home chefs. This confit-style preparation is convenient and takes much of the prep work out of using preserved lemon as an ingredient. For professional chefs we offer whole preserved lemons in brine, which offer maximum flexibility for a variety of applications. Both preparations are characterized by intense citrus notes that are bright but not overly sour.

Culinary uses: Preserved lemons are ready to use as an ingredient in stews, sauces, marinades, and cocktails, and brings delicious flavor to chicken, fish, red meat, pasta, and green salads.

SEA SALT Mustapha’s sea salt is harvested from the salt flats near Oualidia, between Essaouira and Casablanca on the western coast of Morocco. It is an all-natural product created by pumping water from the Atlantic Ocean onto the salt flats and holding it there until it has evaporated over a period of months, leaving the natural sea salt behind. The result is a salt rich in minerals, with a pleasant texture and mouth feel.

Culinary uses: Our sea salt dissolves easily and is a great seasoning for grilled meats, fish, and simple vegetable dishes. It is also excellent for baking, curing, and general use as a table salt.

Mustapha’s Saffron is a tantalizing spice harvested from the stigmas of the saffron crocus. Ours comes from flowers grown in Taliouine, high in the Atlas Mountains in southeast Morocco, without the use of chemicals or pesticides. Saffron from this region is recognized as some of the most fragrant and flavorful in the world, and Mustapha has developed a close relationship with growers in the region over many years of doing business together. The annual saffron harvest takes place each October, and can only be done in the early hours before the daylight prompts the flowers to open. The flower stigmas are carefully harvested by hand, then dried and stored in a dark environment to maintain their quality.

Culinary uses: Saffron is a traditional ingredient in paella and bouillabaisse, but its uses extend well beyond these classics. It brings aromatic flavor to many meat and seafood preparations, and can be added to tea blends for flavor, aroma, and warmth.
