STANDARDS: What we stand for

“If you don’t stand for something, You’ll fall for

anything!!”

Low standards are set by institutions (safety net)Higher standards have to be set by individuals (optimum)

Life sets the Standards for Health!!!!

Goal cont

• TOTAL OIL PROGRAM: Short (ALA) Oils plus Long (EPA/DHA) Oils

• FOOD USE OF OILS: Udo’s Choice DHA-Enhanced 3,6,9 Oil Blend

• OILS TO AVOID: ‘Cooking’ Oils, (Fish Oils), Fried Oils, Hydrogenated Oils

• WEIGHT MANAGEMENT: Fuel Shift; Food Shift; Exercise

• Q & A

• Have cancer to look forward to• Doctors and Medicines cannot help• Have background in Biological Sciences• Have done Grad Studies in Biochemistry• Have done Grad Studies in Genetics• See self-help as my only Option• Become super-interested in Health• Start extensively searching the Research Literature on Health• Focus on Fats because Fats are confusing, contradictory, &

poorly understood, and• Pesticides and Fats both have a relationship to Cancer

Beginning, 1980: Poisoned by Pesticides

Page 10: Udo Erasmus Seminar Oct 07

10

• Colorless, odorless, tasteless (white) cooking oils (short form EFAs) are damaged by processes used to extend shelf life

• Include treatment with harsh chemicals and excessive heat: – NaOH, H3PO4: Remove alkali- and acid-soluble ingredients – Bleaching clays: Remove color (add bad odor & bad taste)– ‘Deodorize’ (245°C; 450+°F): Remove bad odor & taste

Problem: Healthful ingredients (phytosterols, lecithin, antioxidants, others) removed; Oil is now unbalanced

Concern 1: Processing Damage

Page 11: Udo Erasmus Seminar Oct 07

11

Concern 1: Processing Damage cont

1 tablespoon of shelf-stable cooking oil that is 1% damaged by processing contains: 60,000,000,000,000,000,000,000 = 6 X 1019 = 1 million unnat-ural molecules for each of body’s 60 trillion cells

(Fish oils may contain 3-5% molecules damaged by processing; 0.5-1% in omega-6 ‘cooking’ oils; omega-3 in fish = 25 times more fragile)

• Omega-6 oils increase cancer, inflammation, CVD• ‘White’ oils cause as much or more damage than white sugar & white

flour

Standard 1: Make short EFA-rich oils with HEALTH rather than shelf life in mind!!!

Page 12: Udo Erasmus Seminar Oct 07

12

Concern 1: Processing Damage cont

Doing the Numbers (Seed Oil)Avogadro’s #: Molecular Weight (MW) in Grams =

6.023x1023 MoleculesMW of Seed Oil TG = about 892; 892g = 64 Tbsp

1 Tablespoon (15ml) contains 14 grams of oil1 Tbsp seed oil 1% damaged has 1.56 million damaged molecules for every one of body’s 60 trillion cells

Page 13: Udo Erasmus Seminar Oct 07

Concern 1: Processing Damage cont

Doing the Numbers (Fish Oil)Avogadro’s #: Molecular Weight (MW) in Grams =

6.023x1023 Molecules

MW of Fish Oil TG = about 1018; 1018g = 80 Tbsp

1 Tablespoon (15ml) contains 14 grams of oil

1 Tbsp fish oil 3% damaged has 3.75 million damaged molecules for every one of body’s 60 trillion cells (5% = 6.25 million)

Page 14: Udo Erasmus Seminar Oct 07

• Organically grown seeds, nuts (low pesticides)

• Fresh, whole, raw intact seeds (no damaged, moldy, waste seeds)

• No chemical treatments that remove or damage important molecules• Protect oil during pressing, filtering, filling, & storage from:

Light Oxygen (air)Heat

• Package oil in dark containers (amber glass within a box)

Result: Possible to make short nutritional oils (basic background fats, foundational oils) free of processing damage & free of industrial toxins

Essential Nutrients (ENs):– Body cannot make ENs– Body must have ENs for health & life– Body must obtain ENs from food or supplement– Too little results in EN Deficiency; – EN Deficiency symptoms are degenerative in nature (look like

degenerative diseases) – EN Deficiency symptoms get worse with time– Too little EN for too long results in death– Return to diet of adequate amounts of EN reverses all

Deficiency symptoms

Concern 2: Essential Nutrient Deficiency

Page 16: Udo Erasmus Seminar Oct 07

16

Essential Nutrients include: 20 Minerals; 14 Vitamins; 8 Essential Amino Acid; 2 Essential Fatty Acids (EFAs)

– Note: There are no ‘essential’ carbohydrates!!

EFAs are Omega-6 (N-6) and Omega-3 (N-3)• N-6: LA (seeds, nuts); Short N-6 EFA;

GLA (evening primrose); Short N-6 EFA derivativeAA (meat, eggs, dairy); Long N-6 EFA derivative

• N-3: ALA (greens, seeds, nuts); Short N-3 EFAEPA, DHA (fish, krill, algae); Long N-3 EFA derivatives

Concern 2: Essential Nutrient Deficiency cont

Page 17: Udo Erasmus Seminar Oct 07

17

• ‘Damaged oil’ (short N-6) industry begins 1900; Grows rapidly • N-6 known to be essential by 1930; ‘Damaged N-6’ intake doubles in 100

years; Cancer grows (1/30 to 1/4)– Damaged (N-6-rich; N-3-poor, ‘white’) cooking oils increase cancer,

inflammation, degenerative disease; recommend against using damaged N-6 oils

– Most ‘frying’ oils are damaged (hence toxic) N-6 rich oils; are damaged further by frying

– 100 years ago, most foods were cooked in water (steam, poach, boil, pressure cook)

– 100 years ago, butter and lard (hard fats) were used for frying; hard fats are damaged far less by heat than N-6 rich oils

N-6 EFA

Page 18: Udo Erasmus Seminar Oct 07

18

All Seeds, Nuts, & Oils Contain short N-6 EFAs:

Safflower, corn, sunflower, grape seed, sesame, almond, peanut, olive all contain only N-6 and no N-3 EFAs

Evening primrose contains only N-6 and no N-3 EFAs

(Soy, walnut, hemp contain lots of N-6, a little N-3)

(Mustard, canola contain a little N-6, a little N-3)

N-6 EFA cont

Page 19: Udo Erasmus Seminar Oct 07

19

• N-3 established to be ‘essential’ 1981 • N-3 intake is 16% of 1850 levels• 1850 intake already inadequate

• 99.9% of population gets less than optimum N-3• N-3 deficiency = most widespread essential nutrient deficiency of our time; • Negative (degenerative) consequences result from getting less than

optimum

• N-3 come as short (ALA) and long (EPA/DHA)• N-3 is 5 to 25 times more sensitive to damage (light, air, heat) than N-6• N-3 need special care to prevent damage by careless processing• N-3 is a manufacturer’s nightmare, especially long N-3s

N-3 EFA

Page 20: Udo Erasmus Seminar Oct 07

There are few good N-3 sources: – Greens (0.1% ALA; 60kg/day = my optimum of ALA); short– Flax Oil (57% ALA; too little N-6); short

(((Fatty Fish (salmon herring sardines trout tuna mackerel) contain up to 30% EPA + DHA, along w pesticides, dioxins, PCBs, furans)));

(((Fish Oils processed similar to cooking oils; EPA & DHA is 25 times more sensitive to damage than N-6; partly damaged; also, toxic residues remain)))

Recent Long Addition:– Algae Oil available free of pesticides, dioxins, PCBs, furans; long

Standard 2: Return N-3 to the food supply which lacks them!!!

• Develop Flax Oil (short) by my method for making oils with health in mind

• Flax = richest source of N-3: 57% N-3; 14% N-6; (19% N-9: non-essential); Almost 2X more N-3 than fish oils (30% N-3), in its most basic, stable short form;

• Organic seed, grown without pesticides;

• No harsh chemicals or high heat; Protect oil from light, oxygen, & heat during manufacture;

• Package in dark bottles for protection from light

• **No fish oils; Concerns: Processing damage, Industrial toxins, stocks**

Result: Fresh, clean, rich source of short N-3 is now available

1986: A Standard for N-3 Intake

Page 22: Udo Erasmus Seminar Oct 07

22

Recommend: Body needs and oil change, just like the car; Dirty damaged cooking oil out; Clean oil in

Amount per day = same as usual: 2, 3, 4 Tablespoons/day

One tablespoon per 50 pounds (25Kg) of body weight per day

Spread intake out over the day; Mix in foods

Prevent: nausea from exceeding liver’s capacity

Not recommended off spoon (memory of yucky cod liver oil experience)

Recommendation re: Use

Page 23: Udo Erasmus Seminar Oct 07

23

• Soft, smooth, velvety Skin (later, skin deteriorates again)

• Increased Energy & Stamina

• Better Mood

• Calmer

• Smarter: Process thoughts better

• Less cravings for carbs; Easier weight management

Early Results

Downside of Flax Oil: Contains so little N-6 that its use can lead to N-6 deficiency

I develop classic N-6 deficiency symptoms from exclusive use of flax oil as source of fat in the diet

Symptoms: Dry eyes; Skipped heart beats; Arthritis-like pain in finger joints; Thin papery skin

Symptoms reported by others: Eczema- and psoriasis-like skin problems; Increased incidence of infections

Symptoms suggested by research: Increased incidence of prostate cancer; Possible increased risk of breast cancer

Standard 3: Optimize N-3/N-6 ratio; Prevent N-6 deficiency

Concern 3: N-3/N-6 Ratio

N-3 EFA cont

Research carried out over the past 20 years shows that increasing N-3 intake improves the symptoms of most major degenerative diseases of our time

Significance: To the extent that diseases improve by increased intake of N-3, they must be caused by insufficient or sub-optimal N-3

***N-3 will not improve symptoms of Magnesium, Zinc, or Vitamin C deficiency, but N-3 do improve symptoms of N-3 deficiency!!

Page 27: Udo Erasmus Seminar Oct 07

1993: A Standard for N-3/N-6 Ratio

Oil Blend N-3/N-6 ratio = 2/1; Consistently get best results with this ratio

Flax oil N-3/N-6 ratio = about 4/1; Leads to n-6 deficiency

50% ALA (N-3); 25% LA (N-6); both undamaged—made with health in mind; 19% OA (N-9)

Blend: Is rich in phytosterols (48mg/Tbsp) with immune and heart health benefits

Contains GLA (from evening primrose oil)

Contains both natural and added antioxidants for freshness

Contains GMO-free lecithin: better emulsification, digestion, & absorption

Estrogen mimickers leach from plastic into environment & change reproductive structures & functions in animals; Alligators with bent penis 1/3rd the normal size; Cannot reproduce

Researchers surprised; I’m surprised; Study plastics extensively

More surprises about plastics: Oils swell plastics; Ingredients in plastics leach into oil even more rapidly than into water; Water in plastic bottles acquires taste of plastic packaging material

Other molecules/minerals found in black plastics: Polycyclic Aromatic Hydrocarbons (PAHs); Furnace Black (from cars’ oil change); Irganox (30 minutes into plastic) & Irgafos (stabilizers); Aluminum & Lead; There’s more in plastic than plastic; Manufacturers are secretive

Standard 4: Glass is better packaging for liquids made with health in mind, especially oils, but also water, vinegar, alcohol, milk, & juices; Switch to amber glass bottle in 1993; Box around bottle cuts out all light

Concern 4: Packaging

Q: Can the body convert short ALA to long EPA & DHA?

A1: Fish oil industry: No. 20 years of market controversyThe body can’t convert.

The body of some people can’t convert.

The body of some people can’t convert enough.

The body of some people can’t convert enough, maybe.

Conversion from Short N-3 to Long N-3

Q: Can the body convert short ALA to long EPA & DHA?A2: Culture: Yes.

300 million Hindu vegetarians; 5,000 years; No fish, no fish oils, no meat, no eggs

One milk product (no DHA); Same function of DHA in brain, eyes, & sperm

Body converts short ALA from greens, lentils, chickpeas, and psyllium seeds into long EPA & DHA

May have been selected for survival by ability to convert?

Recommended intake of EPA+DHA: 500-1000mg/day

Actual average daily intake in North America : 130mg of n-3:EPA: 78mg DHA: 52mg

3 caps 18/12 fish oil (3g) of per day provide 900mg: EPA: 540mg; DHA: 360mg;

At 1Tbsp of oil blend/50 pounds of body weight/day, 2%-5% conversion:100lb person can make EPA: 560 to 1,400mg/d; DHA: 280 (224) to

700 (560) mg/d; 150lb person can make EPA: 840 to 2,100mg/d; DHA: 420 (336) to

Decreased by: – CLA; trans fats; low B6 Mg Zn B3 C; Carbs; Sat fats; Mono fats; N-6; DHA;

• Being male (females convert more effectively due to estrogen); (Slow Genes)

Increased by: – High N-3/N-6 (2:1); Phytosterols; GLA; Phytoestrogens (WFFB); Protein in diet;

• If DHA = low, it lasts 2X longer (need half as much); If lots of DHA, body turns it over faster

• *ALA to DHA in Brain = 2-6x faster than in other tissues

• **Optimize amount of starting material—ALA—in diet; Conclusion: Ample conversion to DHA if optimize ALA (short form N-3)

intake; Optimum conversion to DHA if optimize diet—live in line with Nature: Less poisons and interfering nutrients; More key nutrients

Reasons for Avoiding Fish Oils:

1. Industrial Toxins: PCBs, Dioxins, Furans, Pesticides, (Hg, Pb)– Damage liver, kidneys, brain; Cause mutations, cancer, birth defects

– Researchers say there are no ‘acceptable’ amounts of these toxins

– ‘Acceptable’ limits of industrial toxins too high for Health (90 ppb: US; 0.2 ppb: EU)

Toxic/Damaged Fish Oils?

Page 42: Udo Erasmus Seminar Oct 07

42

Reasons for Avoiding Fish Oils:

2. Processing & Processing Damage (PD)– Have increased over past 20 years; (PCBs and Dioxins are lower)– Less rancidity, but more of other kinds of damaged molecules

– Studies pre-2003 show better results than studies post-2003– PD molecules in fish oils = 300,000+ times higher than industrial toxins– Molecules damaged by processing:

– Seed oils = 0.5% to 1% (5-10 million ppb) – Fish oils can be as high as 3% to 5% (30-50 million ppb)

– Manufacturers don’t talk about processing damage; Focus only on industrial toxin levels

Toxic/Damaged Fish Oils?

Page 43: Udo Erasmus Seminar Oct 07

43

Questions to Ask Fish Oil Suppliers:In the finished product, what is the percentage of1. PCBs, pesticides, and dioxins; Mercury; Lead? What are the limits of detection for each of

the listed toxins?

2. Cross linked molecules?

3. Cyclized molecules?

4. Fragmented molecules?

5. Double bond shifted molecules?

6. Trans fatty acids?

7. Polymerized molecules?

8. What is the highest temperature reached during deodorization/molecular distillation/wiped film evaporation? What is the duration of time involved in each of these steps? How many repetitions are done for each high temperature step (eg Wiped Film Evaporation)?

9. (Why do studies published pre-2003 show better results than studies published post-2003?)

Toxic/Damaged Fish Oils?

Page 44: Udo Erasmus Seminar Oct 07

44

Reasons for Avoiding Fish Oils:3. Depletion of Fish stocks from over-fishing is a serious problem

– East Coast, North America– Iceland– Europe– Asia– Africa

Standard 5: Find clean, non-fish DHA/EPAsource (20 years)

Toxic/Damaged Fish Oils?

Page 45: Udo Erasmus Seminar Oct 07

45

Two Main Isomers:C9,t11 and t10,c12:

– t is abbreviation for trans-– CLA contains about 70% trans- fatty acids– Interfere with conversion of both n-3 and n-6 EFAs– Different from trans- fatty acids in dairy products – To get 3 grams of trans- fats, must eat 1.25 lb of butter – Manufacturers trying to get CLA exempted from trans- fatty

acid category

These are Damaged N-6 Products!!

CLA: Trans- Fatty Acids

Page 46: Udo Erasmus Seminar Oct 07

46

Toxic Unsaturated Pyrrolizidine Alkaloids:– Found in Plant, in Seed, and in Oil– Cumulative liver toxins; Interfere with Respiration; Cross-link

DNA and Protein – Same toxins that caused Comfrey to be banned– To remove, need NaOH, H3PO4, Bleach, & Deodorization– Up to 4ppb remain – Evening Primrose Oil: Found to be ‘remarkably non-toxic’

Processing-Damaged or may contain Toxins!!

Borage Oil

Cleanest source of DHA:

Red-brown algae: source of DHA/EPA for entire food chain

Grown in controlled environment

• Free of PCBs, dioxins, furans, pesticides, Hg, Pb

Unrefined: Same standard of quality as short N-3-rich seed oils

• No processing damage

A Clean Source of DHA?

Page 48: Udo Erasmus Seminar Oct 07

48

Three Ways to get EPA in DHA Oil Blend:

1. Forward conversion from ALA to EPA takes place effectively in the body: 5-10%; See Slide 49. **

2. Backward conversion from DHA to EPA in the body: up to 10%

3. 2-5% EPA naturally present (along with 30-40% DHA) in algae oil

Grown in environment free of PCBs, dioxins, furans, pesticides, Hg, Pb

Unrefined: Same standard of quality as short N-3-rich seed oils; No processing damage

**Ensure adequate intake of ALA: 1Tbsp/25kg (50lb) of body weight/day

A Clean Source of EPA?

Page 49: Udo Erasmus Seminar Oct 07

49

Isn’t 3,6,9-Oil Blend Enough?

1. DHA requirement is higher during pregnancy, lactation, infancy, andearly childhood brain development

2. Additional DHA can bring adequate conversion to optimum conversion3. Anyone on a poor diet will slow down body’s ability to convert (see

slide ); Additional DHA makes up for poor diets; Who is on a poor diet? Almost everyone; Overweight; People who do not eat fresh, whole, raw, organic

4. No PCBs, dioxins, pesticides; no processing damage; 5. Highest standard of DHA available6. EPA is made by forward conversion from ALA, backward conversion

from DHA, and some EPA is also in the algae oil

Why Add A Clean Source of DHA?

A 2-Step Total Short + Long Oil Program

1. Major nutrient short N-3 oil base (background fats): Protectively proc-essed (undamaged), high energy N-3/N-6 ratio (2/1), organic (pesticide-free), blended seed oil: – 1Tbsp/50 pounds of body weight per day = optimum; 1tsp/day =

minimum– Mix in foods (enhance flavors; improve absorption of oil-soluble

nutrients in foods)– Spread out over course of day, if necessary (to prevent heavy or

nauseous feeling)

2. Add clean, uncontaminated therapeutic N-3 long (DHA/EPA) oil for further health benefits (slow genes, poor food habits, ad confusion)

Standard 6: Short & Long N-3 Together

Why use it?1. Background Fats: Are major nutrients; Better than damaged

‘cooking’ oils for health; Need short background fats plus longEPA/DHA oil to get optimum health; Using only long EPA/DHAoils is not enough; Even good fish oils are not enough

2. Vegan/Vegetarian source of short plus long N-3 EFA for body, brain, eyes, pregnancy, fetal, infant, child development, & more

3. Can stop using damaged &/or toxic Fish Oils, without fearing damage to health

4. Health-building: Health is the cure of all diseases; the only other cure is death

Goal: A bottle in 99.9% of all fridges; More vital than bread & milk
