Our Palestinian culture has always had its own special stamp. People at that time were interested in soul feeders, such as arts, songs, customs ……etc. however, they did not forget the body feeder ,food, and they left an immortal mark in the history of food.

The traditional Palestinian food characterized by its simplicity, because it depends on the ground crop at that time, so people use what is available in their hands, and from their lands to cook the meals. In addition, this food was and still gives a sense of warmth and familiarity.

One of these amazing meals, which people were and still are used to cook on special events and feasts, is Mosakan. It consists mainly of Arabic traditional bread, that is cooked on tabun oven, onions, which is taken directly from the ground, olive oil extracted from the olive trees, that was wide spread in those days, and at last some roast chicken, which is raised in homes .

Another great meal is Maqluba, it’s a simple meal, which is made of rice ,fresh eggplant, cauliflower, chickpea grains and chicken or meat, that are placed in layers, and then it should be inverted. And from there it took its name(maqluba in Arabic means inverted in English ), beside it you can eat either yogurt or the traditional Arabic salad.

Maftool is also one of the famous meals. It’s made of wheat flour and grit, then they are rubbed for along time, until it becomes like small balls. After that they are cooked it on steam. At last some chicken are put over it, and it would become ready to eat.

People also used to make Thyme Pastry as breakfast or dinner. It is made of homemade dough, fresh thyme from the land, onions and olive oil , then it is baked in the tabun oven. It owns a strong smell laden with the smell of the earth.

Food took a large part of the life of our ancestors. Despite the entry of many modern meals on our schedule of food, we have been able to maintain this legacy, and people are still clinging to traditional food for the pride and dignity it suggests.

Wherever you go in Palestine,

and Whenever you walk in its streets, you will always find the smell of civilization and originality spread all over the place, and then you can discover this fabulas culture in all its aspects, then you will understand the real taste, which its ownes.
