The Summer Collection by National Tea Day is bringing you the very best must have teas this summer. AMBER ROSE FLOWERY EARL GREY ICE CREAM

WHAT YOU WILL NEED250ml of double cream

250ml of milk

5 egg yolks

80g of caster sugar

40ml of liquid glucose

10g of Amber Rose Tea Company

Flowery Earl Grey tea leaves

Ideal for a hot summers day when you need to cool down but still need the delightful taste of Earl Grey!

Start by adding the cream, milk and glucose to a pan and bring to the boil.

Whilst this is heating up, whisk together the yolks and sug-ar in a heatproof bowl until pale and smooth.

You then pour the boiling liquid into the eggs, whisking until

smooth.

This is when you add the tea leaves and set aside to cool and infuse for at least 30 minutes.

Pass the custard through a fine sieve and churn in an ice cream maker. Once churned, store in the freezer until ready to use.

GREEN LADY FRU-TEA JELLY WITH SPARKLES

WHAT YOU WILL NEED8 punnets raspberries (can be any

berries of your choice)

4 leaves beef gelatine

140 ml elderflower cordial

half heaped tablespoons caster sugar

425 ml Green Lady Sparkling Tea, chilled

A truly delicious and easy to make summer dish which will delight your taste buds and impress your friends!

You can make one large jelly in a tureen mould or dish, or you can do individual ones and the best bit is you can use any combination of fruit (except not pineapple or kiwi fruit, as the jelly won’t set if you do). Before starting, decide if you want to make one big jelly (ideal for sharing at home) or small individual ones (ideal for sharing on a summer picnic).

If you choose to make a big one, it’s a good idea to line the bowl with cling film first, you can then put your ripe fruit into your mould(s) and refrigerate. Put your gelatine leaves into a bowl with a little cold water to soak for a minute, then drain and add the gelatine back to the bowl with the cordial. Rest above a

pan of water over a medium heat and stir constantly until the gelatine and cordial become a syrup. Now you can add your

sugar, stir till dissolved, then remove the bowl from the heat and let it sit at

room temperature for a minute.

Take your fruit and Green Lady sparkling tea out of the fridge.

Your fruit moulds and your Green Lady Sparkling tea are

both chilled, so the bubbles stay in the jelly when it sets

and they fizz in your mouth when you eat it - just beau-

tiful! Pour the Green Lady into

your cordial mix, and then pour this over your fruit. Some of the fruit might rise to the top, so using

your finger, just push the fruit down into the jel-ly mix so that it is sealed and will then keep

well in the fridge.

Put back into the fridge for an hour to set.

To serve, dip your mould into a bowl of hot water to loosen the

outside of the jelly, then turn it out on to a plate. Great

served with a little crème fraiche but just as good

on its own.

NEWBY TEAS ORIENTAL SENCHA CHEESCAKE

WHAT YOU WILL NEED8 oz. cream cheese, at room

temperature

1/4 cup granulated white sugar

1 tsp pure vanilla extract

1 cup heavy whipping cream

2 Tea bags of Newby Teas OrientalSencha steeped

3 egg yolks

A delightful summer cheesecake with the gorgeous delicate notes of Sencha tea to compliment.

Start by steeping the Newby Teas Oriental Sencha tea bag in the 3 tablespoons of water.

Place the cream in a sauce pan and bring it to a boil. Place the teabag and sugar into the cream and mix occasionally until all the sugar is dissolved. Let both the tea and the cream steep for at least an hour although if possible preferably overnight. (Be sure to remove the tea bags before the next step!)

Put water into the bottom of a double boiler and start it heating without the top part of the pan in place. Place the cream cheese and sugar into the bowl of your food processor or blender right near the stove. Into the top pan of the

double boiler, whisk egg yolks, vanilla, and tea.

Put the pan onto the double boiler and whisk constantly until the con-

tents are a light-yellow foam. (Do this for about 5 minutes.)

Pour the warm cooked egg yolks and tea into your blend-

er or food processor and im-mediately begin to pulse.

Whip the cream in a mixer until stiff peaks appear.

Slowly fold in the tea-in-fused cream cheese

mixture.

Either pour the resulting batter into a spring form pan or divide it into individual serv-

ing size ramekins. Cover and put into the freezer for 1/2 hour before serv-

ing. 2 hours in the fridge is better, but you can cheat by putting it in

the freezer if you’re short on time!
