Over Memorial Dayweekend, Hounds ofJezebel owned the stage atScout Bar during the TexasBuzz show. Individually,each band member is a“seasoned professional,”and collectively they arequite a musical force. It waslike everyone within thevenue stopped what theywere doing and made theirway up to the stage.

Hounds Of Jezebel arerelatively new. Officiallythough, John Curry (vocals,guitar), Chris Loveless (gui-tar), "Rooster" Rodriguez(bass) and Mike Neyra (drums) metthrough a mutual friend in the middle of2010. That long hot summer was pro-ductive as the guys wrote and bangedout around 20 songs A.K.A. “some musicfor the soul.” Prior commitments set inand the fledgling musical group was puton hold until January 2011. To say thatHounds of Jezebel is well worth the waitis a bit of an understatement.

Their music is fresh and I tend to usethat word sparingly. In fact, as I writethis, it has been 24 hours since the show,and the words to completely describe HoundsOf Jezebels’ songs are still a bit elusive. Thetunes are definitely familiar with a ’90s rockvibe with undertones of bluesy, Southern rock.

But the term “distinctly original” is quite fitting.Onstage, the band is on fire. It was truly asolid show.

If you haven’t been to Scout Bar recently, it’s time to go back.

Scout Bar is now a non-smoking venue, and it’s in the process ofgetting some pretty cool updates.

“The new non-smoking policy has had an “overall positive” reac-tion,” says Thomas Wilson, Scout Bar’s owner. He did not want anysmokers to feel alienated, so Scout Bar has two designated smokingareas outside on the back patio and in the courtyard area. Wilson alsosays plans are in the works to enhance the patio and add a full servicebar, TVs and speakers.

The interior has also been the recipient of change: After enteringScout’s main room, there is a very cool piece of art with a crow andguitar. Adding to the new artsy feel is a Pablo Picasso saying nowon the back wall that says “Every act of creation is first of all an actof destruction.”

The scene is Clear Lake on a recent evening. Sailboats of all shapes and sizes are competing in theWednesday Night Races. Many feature bright and colorful spinnakers, which only adds to the

beauty of an already visually-appealing sight as the sun prepares toset.

But one sailboat keeps catching my attention. Not be-cause of an eye-catching spinnaker; and not because shesports sleek lines or a particularly attractive shape as shecuts through the water. While this vessel, which flies a pi-rate’s Jolly Roger (skull and crossbones), is far from thefastest boat in the race, you know she means business.And so does “The Crew.”

The Alyzarian is a 26-foot Pearson that, at morethan 40-years-old, is likely the elder boat in the raceon this evening, if not most. Captain Marc Bordedescribes her as “a beast.”

When asked how the Alyzarian fared followingthe race, Borde answered,“We finished.”

One must understand that for Borde and his crew,the Wednesday Night Races aren’t about winning or

losing butthey serve as

training for a fargreater adventure that

quickly approaches.

Starting July 1, Borde andcrewmates Ryan Beard and Charlie

Danford set sail on an epic voyage lastingmore than a month that will take themdown the Texas Coast and back.

What makes this voyage epic is that Borde,Beard and Danford aren’t recreational sailorstaking a month of from work for some freshair and adventure. No, this crew is made upof lead singer/songwriters and will be sail-ing the Alyzarian to work -- specifically anambitious schedule of live performancesat music venues and bars in coastal com-munities along the Gulf of Mexico.

Borde is well known locally for frontingthe popular reggae band Shark Attack,which has developed a strong followingafter 12-plus years, including toursthroughout the US. Beard, a key memberof Shark Attack, also fronts and writesthe music for Mama Tried, whichblends Southern country with punkrock and bluegrass for a very uniquesound (and sight). Danford is thefront man and songwriter forFootpie, one of Houston'shottest reggae rock bands.

Withthe heat of summer upon us, Pier 27 is on our listof cool places to be. We caught Fidelity Maxx heat-ing up the full house this month... Cheers! While on the topic ofcool spots, Sherlock’s and Katie’s has it down with live musicseven nights a week. Stay tuned...

NEW SCENE STOPS: We stopped intoSmokin’ J's, an established neighborhood bar andfairly new to the SCENE. On stage was Magazinewhom we've frequently covered and reckonedwe’d have this place figured out in no time, butthis time, Marty was packing along different ped-als and pumping out a totally different soundwith playlists we’ve haven’t heard before. Fig-ures... Smokin' J's? It's a great place with coldbeers where you can easily blend in -- A goodthing!

Heading east, we stopped in at The Road-house 146, a new SCENE stop finding a friendlystaff, cold beer, plenty of games, David Schwopespinning the disks and The Sharks playing out thesounds -- A super place to get away! The Sharkswas the first band I recorded live (at Smokin' J's, in fact) and gotta say they sound asgood today as they did back then, possibly even better with JZ on lead, which makessense for this La Porte-based outfit. Something about musicos from the Gulf Coast re-gion that has a nitty and gritty integrity to them inside and out. If you're looking for aSCENE stop along 146, this place is ready to go! UNDER THE INFLUENCE of the La Porte area that is... Up and down the 146 corri-dor is a nitty and gritty musical ethos you simply can't find anywhere else. We know ‘cuzyou’ve told us. From this musically fertile area comes David Hargrave who played in hisfirst band at age 11 some 45 years ago. Playing out and about in the ’80s, David took astage hiatus while working as full-time school teacher.

Also this month, we caught some undergroundtunes from The Last Cigarette and Grizzly. NEW BAND ALERT: Last month, we suggested The Remedyand starting to see them appearing out on the beat. This month,we caught aTrip to Cascityout on theSeagull patio,and dig it.This duet ofTony Bastidaand Lee DelMoral are nostrangers tothe musicSCENE. Tony is an instrumental piece with 94.5FM Buzz TexasMetal band of the Year, Metavenge while Lee operates PyramidStudios in San Leon. Most duets hitting the SCENE have beengoing unplugged, but Jimmy Page didn't on the MTV show, andneither do these two cats keeping it totally electric *and* keepingit in the 75-80 db range making for an enjoyable tonal experi-ence. We sat through a couple sets on the Cockeyed Seagull patioand the playlist never centered on a specific genre. Rather, thetranscendental state of being there in a Jimmy Spheeris Isle ofView (with a splash of metal) sort of way. Get it? We have Trip toCascity on our watchlist. Put them on yours! Union Tavern has a wel-coming and casual neigh-borhood bar atmosphere.The tavern has been aneighborhood go-to placein Webster for almost a yearnow.

One this particular night,Friday the 13th, no onewas feeling any dread orsense of foreboding. In-stead, Union Tavern wascelebrating the day with amusical event. The venuewas bustling with a funcrowd who were lining thebars and taking advantageof drink specials, hanging out listening to the live bands, andplaying friendly games of pool.

Union Tavern was the conceptual brainchild of Nick andMoMo - two long term friends from the home of the CheeseSteak sandwich. You guessed it – Philly. Both men held bluecollar jobs and would wind down in the pubs and taverns afters hard day’s work in their Philadelphia neighborhood. I seeyour look of confusion. Why would Nick and MoMo open atavern in Webster, Texas? Well, besides Webster being an awe-some place to be, they had friends who were also fellow busi-ness owners in the area. So, it was a natural step to bring thetavern experience to the working man (and woman) here!

Don’t let the name “Union Tavern” bristle your Southern ten-dencies. It’s not a Yankee thing and does not refer to unionworkers, the Philadelphia Eagles or anything else Northern for

that matter. The bar name pays homageto the common man and woman. It’s allabout the working class people plainand simple.

Well, that’s not ALL Union Tavern isabout… Did someone say BEER?

It’s Rat Ranch.

Of course, a Kid Rock song is onlyone of many top hits to be heardwhen you see this magnetic band per-form live. Prepare to be treated to “clas-sic rock, current radio hits andeverything in between.” The SCENEMagazine caught up with Rat Ranch atSherlock's Baker St. Pub - Clear Lake lastmonth. It was a little tough to maneu-ver the crowded dance floor, but well worth it. These guys are sogood at what they do. I mean, of course, it’s about delivering themusic with “maximum impact and rock concert-like energy,” but thestage show is so much fun to watch! The interaction between KentNewman (guitar/vocals), Brett Axelson (guitar/vocals), Rick Valadez(drums) and Scott Madigan (bass/vocals) are priceless.

Rat Ranch came into existence in 1989. Today, they perform over200 shows a year and “entertain thousands of people every week

in clubs across Texas.”Thankfully Sherlock’sbooks Rat Ranch regu-larly on multiple nights,so there is never a rea-son to miss a show!And during the sum-mer months at theKemah Boardwalk, thisband will “Rock TheDock.” Though they area cover band whenperforming live, RatRanch has released three original CDs: “TALES” (1997), “TOO MANYSHOES” (1999) and “CLEAR” (2001). PROOF TEST:When I heard Madigan was stopping into BigBen Tavern for an evening, I simply had to check it out and ampleased to say, "It worked!" Dale and Hector had the indoor stagelooking and sounding great, of course. Add to the ambiance awell-staffed bar, a full house, the band itself and you get an "in-

Fast Forward two years later. Theband has grown by at least 20 members, the full houseturnout is now spilling around the entire block, and the showwas followed with a loooong set "bonus encore." Rhyder Ready to Rock the Boardwalk June 29Mark your calendar now for 7:30

p.m. on June 29! Texas performer, song-writer and recording artist Brandon Rhy-der will be the special guest performinglive at the Event Plaza on the KemahBoardwalk.

"All I’ve heard is great things about theKemah Boardwalk, and I'm really lookingforward to rocking the boat!!" Rhyder en-thusiastically told The SCENE Magazine.

Rhyder, who is a Carthage native (andcoincidentally, so is The SCENE Maga-zine’s editor...), says that his latest effortand sixth record to date “Head AboveWater” (Reserve Records/Smith MusicGroup, 2010) is “by far the best workI’ve ever done.”

The CD contains 12 solid tracks and abonus tune. “This is not a book with twelve or thirteen chapters. It’s acollection of completely different books that ebb and flow to newhighs and new lows,” Rhyder comments.

His first three original singles have all topped the Texas MusicChart. And the current and fourth single, a remake of the classic DonWilliams song “Lord I Hope This Day Is Good” is also a chart topper

but there is a twist. The single isactually a live version that wasrecorded in February for Rhyder’s“Live at Billy Bob's Texas” CD/DVDset to drop July 26.

Rhyder doesn't really fit into theclassical country genre. His music ismore of the new country rockgroove that bleeds a bit of “red

dirt.” But in all honesty, he is really an amazing storyteller whois a legend in the making and doesn’t fit into any niche. Plus,the song lyrics are as real as they come.

It has been said the he doesn’t write for a genre, but in-stead for the inspiration he receives. “I take pride in the songsthat I write and want to be able to sing many of them foryears to come,” Rhyder states. “Quite frankly music changeslives. I want to be a part of that.”

ALL A-BORDE: Continued From Page 59Shark Attack, Mama Tried and Footpie join a host of other

bands and performers including Sundrunk, Soul Fire and ShaunMichael on the growing roster of Borde Room Entertainment,often called The Bee Room. Borde describes The Bee Room as an“artist network and management group.” They also have recentlygotten into putting on events such as the 420 Pogo Festival inSeabrook at Texas Hippie Connection and the All A-Borde Festivalon Friday, July 1 at Cabo in Seabrook which will kick off the tour

by boat.

Along with SharkAttack, Mama Triedand Footpie, the AllA-Borde Festival willfeature Faceplant,The Crisis, CB Kingsand possibly a spe-cials guest or five.There will also be

vendors, activities, drink and food spe-cials and more. Basically, an all-out majorbash.

From Cabo, the crew of Borde, Beardand Danford will set sail for Galvestonfor the first of no less than 15 showsover the next 30 days. Some shows willjust be the three performing as “TheCrew.” While for some of the biggerweekend shows, a land crew consistingof full bands (Shark Attack, Mama Tried,Footpie, and more), vendors, tour sup-porters, local musicians, artists, entertain-ers, fans, support staff and more will joinup with the sailors.

Borde was quick to point out “TheCrew” is willing -- if not hoping -- to addadditional gigs to the schedule.

“We aren’t above playing a living roomunder the right situation,” Borde joked.“Our goal is to bring original music toplaces that usually don’t get it.”

If all goes according to plan, the triohopes to return to Clear Lake the week-end of August 7 and 8 for a major con-cert and event, most likely at back atCabo where it all started.

And if it doesn’t go according to plan, it’could spell bad news for Borde as thestakes are higher than you yet realize. Notonly is the Alyzarian Borde’s boat, but it ishis house -- yep, HOUSE! -- and also SharkAttack’s recording studio. So the impor-tance of those training sessions during theWednesday Night Races can’t be over-stated.

The Crew also will be putting in practiceon their performances as a trio with a cou-ple Thursday acoustic gigs this month(6/16 and 6/30) at Zone 504 in Kemah.

So come out to Zone for one of theperformances and out to the Wednes-day Night Races to see them sail. But nomatter what, don’t miss kicking off yourJuly Fourth Weekend at Cabo on Friday,July 1 for the All A-Borde Fest.

The 2011 Summer NationalSenior Games are coming toHouston and is the largest multi-sport event in the world foradults 50 years old and over. TheGames will feature athletes fromacross the country that finished inthe top of their age group andmeet the minimum performancestandards. 2011 National SeniorGames competitions include 18medal sports and two demon-stration sports. This biennial eventcelebrating healthy activelifestyles, competition and sports-manship will be held June 16 to 30 with most of the athletic compe-tition being held at the George R. Brown Convention Center.

But the softball portion of the completion will be held right here inLeague City at Big League Dreams Sports Park!

AMOCO Federal Credit Union Raises$6,500 for American Cancer SocietyWith an initial goal of $1,500, AMOCO Federal Credit Union

quickly blew their goal out of the water. By rallying together tofundraise for their teamcontribution, staff atAMOCO sold “AMOCOFights Cancer” wristbands, blinky cups andaccepted donations ateach branch locationduring their four-weekfundraising effort. Thehard work paid off andin less than 30 days,they had already raised$5,000. But they weren’tdone, they increasedtheir goal and organizeda team that would par-ticipate in the May 13 American Cancer Society’s annual Relay ForLife walk, held at Dickinson High School’s Sam Vitanza Stadium.

According to the American Cancer Society Relay For Life’s web-site, the walk is a life-changing event that gives everyone in com-munities across the globe a chance to celebrate the lives of peoplewho have battled cancer, remember loved ones lost and fight backagainst the disease. During the Relay For Life event, teams of peo-ple camp out at a local high school, park, or fairground and taketurns walking or running around a track or path. Each team isasked to have a representative on the track at all times during theevent. Because cancer never sleeps, Relays are overnight events upto 24 hours in length. AMOCO Federal Credit Union holds the American Cancer Soci-ety near and dear to their heart. They have several employees thathave battled and survived cancer. The 4th Annual TEXAS OUTLAW CHALLENGE is takingplace this month, June 24 and 25.

This Texas weekend is focused on high-end performanceboating starting with a welcoming “Stampede Street Party”on Friday evening featuring a $2,500 Miss Outlaw BikiniContest, waterfront viewing of performance boats and ven-dor displays, Texas champion BBQ cooking teams, and liveentertainment.

The Saturday “Gunslinger Poker Run” and “Outlaw GPSShoot-out” competitions are an exciting combination ofpoker running while logging an event certified GPS MPH.

GPS hand-held units are issued to each Captain at the safety meet-ing prior to the 70-mile run. The final stop involves the posting ofthe GPS recall feature (highest speed attained throughout the day)by event officials, in addition to the winning poker hands.

This event has become a true “East meets West” party with manyout-of-town performance boat friends enjoying the unforgettableTexas hospitality while supporting proceeds for local volunteeraquatic conservation efforts and selected charities.

National marine industry support for this event has been strongsince the inaugural year, with sponsorships from Cigarette, Donzi,Fountain, Pier 57, Florida Powerboat Club, Bullock Marine, ClearLake Marine, Victory Marine, Rtech Performance and Endeavour Ma-rina.

Previous year’s events have included teams representing morethan half a dozen states and Canada, all vying for the now-infamoussix-shooter Gunslinger trophies in over 20 classes, membership intothe notorious Outlaw 100+MPH Club, or for the fastest entry, theBig Gun Shootout Award.

Producers have awarded more than $32,000 in cash prizes to par-ticipants throughout the first three years of this event, and this yearthe Texas Outlaw Challenge is welcoming all original “Outlaws” whohave participated in previous years to pre-register for 2011 at nocharge, by bringing two new registered boats and friends to the2011 event. With a committed invitation and participant apprecia-tion like that, event organizers are predicting more than 100 partici-pating in the event this year.

This year’s regatta is comprisedof several different events to in-clude a golf tournament, a Blueson the Bay Fundraising Party, aKickoff Party in Houston, a Sip andSail and culminating with the re-gatta June 24-26. The golf tour-nament, Blues on the Bay andKickoff Party were held last monthand were a huge success, accord-

Just in time for Father’s Day and graduationceremonies, a new and relevant book is onthe market, Daddin’ – The Verb of Being aDad.

This book, written by local author DionMcInnis, reflects on being a dad and the differ-ent stages that redefine fatherhood and re-in-troduce the word “dad” as a verb.

When asked about what the title means,McInnis (Associate Vice President for Office ofUniversity Advancement for University of Hous-ton Clear Lake) commented, “In our society, mothers mother. Theycare for, nurture and love children in ways that give meaning andunderstanding to the verb “to mother.” He continued to explain,“When we talk about a man fathering a child, the intended mean-ing is usually that the man sired a child. What are the verbs thatdescribe what happens each day for a father? The verb of being adad is now daddin’.”

This is a word we will hear more and more because it makessense by definition. We have all seen the plaques “Anyone can bea Father, but it takes someone special to be a Dad”, but the verbdaddin’ took it a step further.

This book blends stories and insights of being a son to a fatherand father to three sons, over the years. The break down ofDaddin’ is into chapters that define the milestones as a part of thedaddin’. The chapters are Havin’, Learnin’, Listenin’, Lovin’, Playin’,Fishin’, Growin’, Leavin’ and Livin’. Each one of these chapters isfrom the perspectives of being a father of three boys and as a son.Not only will the reader know and enjoy his stories and poems, butthrough this book there will be stories that the reader could learnabout his or hers family and their own process.

When talking about why create the book, McInnis answers thathe never had a choice but to create the book and preceded witha quick poem.

McInnis had a box of “treasures” that most parents posses thatare full of homemade cards, gifts and accomplishments from hischildren. But it was how to develop the stories and the book con-cept that took years. He struggled with how to organize it all andcame up with the verb. To be a father is to live out verbs in mo-ments. This is a book of moments and world of daddin’.

Not only is Dion McInnis a university administrator, his bio readslike the ultimate Renaissance Man with an modern version of dis-playing expressions. He is a poet, author, photographer, public

speaker and lovinghusband and father.He brings his love ofstories, images andwords together toshare with audiencesthe wisdom, beautyand joy of life, expres-sion, creativity and humanity. Bothperformances were absolutely amazing. (I admit to googlingbelly dancing lessons when I got home!) Opa!

Lastly – and so interesting – Skippers’ history: The owners areJohn and Terry Psarovarkas. They were introduced in 1971 inNew York and married six months later. Based on the recom-mendation of a friend, John and Terry moved to Houston in1978. In 1994, Skippers GreekCafe opened in Clear LakeShores. They are hands on. Infact, Terry was at the registerwhen we visited. She is the matri-arch in the family friendly atmos-phere.

On this particular Friday, Nikkiwas my “guide” for the evening andhelped me choose “Saganaki” to try.Saganaki is a Greek cheese that is seton fire at the table and eaten withpita bread. You are supposed to uselemon wedges to put the fire out, but(oops) my husband used them to fla-vor his water. Nikki did not judge!Opa!

Second and very important is theentertainment. The music was pro-vided by George Kitidis (bouzouki)and Nikkos Leontoudis (accordion). Ki-tidis is very smooth like a Greek FrankSinatra. His voice is deep and rich.Leontoudis’ deft fingers mastered theaccordion keys. Kitidis introduced thebeautiful belly dancer named Jahari asshe danced gracefully with swayinghips and clicking finger cymbals.

I started working on the line at the ageof 18 at the Petroleum Club in Fort Worth. I worked my way up to Sous Chef underDavid Hester who was the Executive Sous. After that I moved to Denton to work fortwo Jamaicans at the Banana Tree (Ital Food). Then moved to The Greenhouse,which had a split menu of vegetarian and carnivore. I ran the vegetarian side.

I moved back to Houston in 2003 where I started work and culinary school. (Previ-ously, I had been a poli sci major.) I went to work for Jason Kerr at Zula. Left thereto work for Monica Pope and Jonathan Jones at Beaver’s.

January 2009, I opened my own place, Holister Grill. But was forced to leave dueto being diagnosed with Cancer. I spent May 2009 through July 2010 goingthrough various surgeries and chemotherapy. I was cleared to work January2011, and started at Signature Bistro. I was offered the Executive Chef position inlate February. I brought on Mike Blanchard – who I’ve known for the better part ofa decade – as my Sous Chef. I could not do what I do if it weren’t for him.

Specialty: Seafood / New American.

Signature Dish: Crispy skin snapper with tequila infused South Western roasted corn salsa over spinach risotto.

Have you prepared a meal for anyone famous? Mike from Phish used to eat my vegi burritos when I toured with them. I also usedto cook for various Houston Oilers. I worked with The Big Wu and would cook for them when they were in Texas.

When I pass by a pool hall, my stomach doesn’t exactly rumble.Typically, pools halls aresmoky, dusty and featurepizza that tastes like card-board or tortilla chips cov-ered in fake cheese. When Isunk my teeth into a tenderribeye at Casper’s, however, Iinstantly changed my way ofthinking.

There’s something uniqueabout San Leon – it’sgot some of the bestfood in the Bay Area(and it won’t breakthe bank either).When Captain Roybuilt his pool hall, hedecided folks mightwant to enjoy theirtime at their ownpace – maybe havea few drinks and

some dinner and then a couple ofrounds of pool. He decided tobuild in San Leon in order to getaway from all the crowds down-town (the view of the Bay doesn’thurt either). His no-rush approachhas created a pleasant atmospherethat just doesn’t seem to exist atyour average pool hall.

As I was chomping down thatribeye, Roy informed me that everypiece is cut separately, each time asteak is ordered. I seriously felt like Iwas in a bona fide steakhouse –only, this pound of beef is $14.95.But that was Roy’s steak. I had the chicken fried steak sandwich –on special for $4.50, along with a variety of other choices Tuesdaythrough Friday from 11 a.m. to 2 p.m.

For half of what it should cost, that hefty sandwich could easilybe split between two people. I’m proud to say I finished it all bymyself and enjoyed every minute of it. And granted, Leighann be-hind the bar told me the kitchen might have spoiled me a bit sinceI was from The SCENE and all.

Remembering those who made the ultimate sacrifice

Publisher’s Note: Just as we were putting the final touches on this issue, I recieved a Memorial Day e-mail fromPete Olson, U.S. Representative for Texas’ 22nd Congressional district. I decided to scrap my original plans for acolumn in this space in favor of sharing Rep. Olson’s message.

Dear Friend,

Memorial Day weekend is the time when we as anation collectively pay tribute to the servicemen andwomen who have died in service to their country.

America was founded on the basic principles offreedom that many take for granted today. Theright to life, liberty and the pursuit of happiness, andthe right to representation when your money isbeing taxed are ingrained in our psyche. The free-dom to worship as you choose or have a voice inyour own future are also God-given rights that weAmericans enjoy.

These freedoms come at a high price. The pricehas been the blood, sweat, tears and lives of hun-dreds of thousands of brave Americans. They havegiven all so that we may enjoy those freedoms.

For a decade, our nation has been fighting terror-ists and those that harbor them, primarily in Iraq andAfghanistan. In Iraq, 4,454 US servicemen and inAfghanistan, 1,582 U.S. servicemen have paid theultimate price for our freedom. Thousands of otherbrave soldiers have come back wounded to a grate-ful nation and we owe them dignity, honor and thebest resources possible to re-engage in civilian ornon-combat life.

It is truly a special day of remembrance because itis the one forged in the blood of over 2.7 million ofAmerican servicemen and women. Those lives wereprecious and it is incumbent upon us to rememberthem, honor them and ensure that their sacrifices

count. Every single oneof those lives matteredto someone, and sothey should matter to allof us.

This is an importantopportunity to remem-ber those from our com-munities who gave theirlives in service to ournation. Here is a list ofresidents (listed at right)of the 22nd Congressional District of Texas whowere killed in service to our nation and for the free-doms upon which our nation was founded. Ihumbly thank them for their sacrifice and honortheir memory. God bless them and their families.

On this Memorial Day, we also remember themany brave patriots who defended our nation inprevious wars and the sacrifices they gave for our lib-erty. We also remember the families of our service-men. They too make huge sacrifices and worry andpray for the safety of their loved ones. This is a timefor our nation to reflect on the sacrifices that havebeen made by the generations of Soldiers, Sailors,Airmen, Marines and Coast Guardsmen who havehonorably defended our freedoms and way of life.On this Memorial Day and every day, may they andall of the fallen throughout history always be in ourthoughts and prayers. With the Dickinson Bayou me-andering nearby and tall pineshugging its banks, the smell ofaromatic smoke hovering in thebreeze is a sure sign that Texascooking is also nearby.

From police chiefs to mayors tolocal citizens, they come into Dick-inson Bar-B-Que & Steakhousedaily, grab a tray and watch asheaps of brisket and ribs are piledhigh on their plates. Or they mayopt for juicy hand-cut U.S.D.A.Choice steaks, hand-batteredchicken fried steak with creamgravy, or something off the chalkboard, regular menu, or partakeof one of the daily specials.

If the tables were removed,you’d think you might be in aTexas dance hall due to the highcedar ceilings, polished concretefloors, corrugated tin, and west-ern murals on the walls. Outside,Texas wildflowers are in full bloom and picnic tables invite you tosit a spell on the wrap-around front porch or even dine outside.

Under the ownership of Keith and Holly Lilley for almost twoyears, the Lilleys have developed quite a loyal following and havescored several prestigious awards, like the 2011 North GalvestonCounty's Small Business of the Year, and the Galveston CountyHealth Department's Gold Ribbon Award.

“Over the last year, I began tweaking the menu,” says Lilley,“and it has now grown into a classic Texas style cafe with not

only the best Bar-B-Que in GalvestonCounty, but freshseafood (from Hill-man’s), hand-cutU.S.D.A. Choicesteaks, burgers andhome style cook-ing.” Lilley is all

about quality, so he started buying Angus Choicemeats, sausage from Snook (Texas), and freshchicken from local Texas producers. “We try to al-ways buy Texas agriculture and produce, and aremembers of the Go Texan program through theDepartment of Agriculture,” adds Lilley. The catfishis U.S.A. farm raised, the hamburgers are thick and

juicy, and the 20-plus scratch-made desserts by Anna are irre-sistible. With a good selection of Texas wine and beer, old-fash-ioned fresh-brewed sweet tea is also on the menu, and always,four flavors of Blue Bell ice cream.

“We’re more than just an outstanding bar-b-que restaurant—we have something for everybody,” says Lilley. “We do the bestbar-b-que in Galveston County with awards to prove it, but wedo everything else well, too,” he adds. With two enormous smok-ers in the back, the cooking process is a guarded secret as are thesauce recipes.

“We have people who come here just to eat our 8-ounceNorwegian salmon,” says Lilley, reminding me of the versatilityof the menu. “Many come in just for our flat-grilled burgers, oth-ers just for steaks or seafood, and some for our famous chef sal-ads (dressings all homemade) or scratch-made desserts.”

It was important to Lilley to offer a wider selection of side or-ders, so he added turnip greens, real mac/cheese, black-eyedpeas, jalapeño pinto beans, baked beans, dirty rice, fried okra,garlic mashed potatoes and many other items such as the TexasCaviar (black-eyed pea salad), while keeping the famous signa-ture redskin potato salad and cole slaw. Onion rings are hand-battered, so you definitely want to try those.

Speaking of hand-battered, the chicken fried steaks andchicken are dipped in buttermilk and Lilley’s special seasonedbreading.
