food while Dean Martin sings “That’sAmore” on the record player. Then itsinks in – you’re not at a trattoria,you’re at Fido’s! Yes, Fido’s has done it again. Thelargest palapa in San Pedro alreadyhouses a great restaurant offering freshseafood and other dining specials; a

sushi bar, and now their steakhouse has added classicItalian dishes to their menu! Combining the Steakhouse with an Italian flair, ownerDavid Schmidt aims to appeal to a variety of customerswho love good Italian and scrumptious steaks. The SanPedro Sun had the tasty opportunity to stop by and samplesome of the Italian specialties now offered at Fido’sItalian Steakhouse. Managing to snag a table on the verandah, we sit andenjoy a few refreshing drinks prepared by bartenderFabio Palma. What drinks those were! Fabio trulymakes the best Mai Tai on the island, and the RumPunches and Classic Cosmos were a treat too! Whilewe sip our drinks, David comes over to chat for a bit,and we find out how he plans to expand on the Italianfare to offer family friendly platters at affordable prices.He recommends trying out a sampling of the differentmeals, and in true family style, we pass the food around

Rum or Bourbon BallsOriginal recipe yield: 4 dozenIngredients:*1 cup semisweet chocolate chips*1/2 cup white sugar*3 tablespoons corn syrup*1/2 cup rum*2 1/2 cups crushed vanilla wa-fers*1 cup chopped walnuts*1/3 cup confectioners’ sugarDirections: Melt chocolate chips over lowheat. Remove from heat and stirin sugar and corn syrup. Blend in rum or bourbon. Addcrushed vanilla wafers and chopped

nuts. Mix well. Cool in refrigerator until hardenough to roll into small balls. Roll balls in a mixture ofground nuts and confectioner’ssugar, or just plain confectioner’ssugar. Store in lightly covered con-tainer for a week before serving.

Peanut Butter KissesOriginal recipe yield: 3 dozenIngredients:*2 egg whites*1/8 teaspoon cream of tartar*2/3 cup white sugar*1/2 cup creamy peanut butterDirections: Beat egg whites and cream of tarter

until soft peaks form. Gradually addsugar, beating constantly until stiff.Fold in peanut butter until just mixed. Drop by teaspoon onto greasedcookie sheet. Bake at 300 degrees F(150 degrees C) about 25 minutes un-til lightly browned. Remove fromcookie sheet at once and cook com-pletely on racks.
