THE ORIGIN - Hainanese Delights In the late 18th century, the British voyaged to the East Indies for trade and commerce. Many workers from all over the region also migrated to Malaya and Singapore in search of a better life. They left their homeland and worked as cooks under the Colonial British Administrators and the Military. Their repertoire and recipes were adapted to the taste buds of the British colonial community as well as the local population. Eventually, they developed a British colonial cooking style with a touch of Asian flavor that is unique to Malaya and Singapore such aschicken chop, fish and chips or oxtail stews. These celebrated dishes that have gained tremendous popularity in Malaysia and Singapore today include Hainanese Chicken Rice, Kapitan Curry Chicken and Inchi Kabin (Nyonya Fried Chicken). Buah Keluak Chicken is a staple dish of the Peranakans, descendants of early Chinese migrants who settled

in Singapore, Malaysia and Indonesia. This dish is unique for its use of the seeds of the kepayang, a tall tree native

to the mangrove swamps of Malaysia and Indonesia.

During the colonial era, the British administration in Malaya employed Chinese merchants as “Captain”. The locals mispronounced their titles and called them

KAPITAN instead. Prominent Kapitans married Peranakan ladies and fell in love with the Peranakan cooking,

particularly their curries. Thus, KAPITAN Curry was created.

Nyonya-style fried chicken marinated with over 10 spices and coconut milk. This popular dish was commonly

cooked on the ship for sailors. When the meal is ready, the chef will inform the sailors

“Encik dalam cabin, chicken siap” (translation: Mister in the cabin, your meal is ready)
