Mention theword “marijuana,” or better yet pull out your stash, and the firstthought that springs tomost stoners’minds is rolling a joint, packing a pipe,toking a bowl, hitting a bong, or putting a flame to some other smokingaccessory.Butitwasn’talwaysthatway.
Ancientpeoplealmostexclusivelyatetheircannabis,savingseedsforfood,andusingtheresinousflowersformedicinal,recreational,andspiritualuse.Oneofthe oldest recipes for cannabis-infused sustenance comes to us from India.Called bhang, this legendary cocktail of cannabis, milk, almonds, and garammasalaaddsapotentpunchtoaHindureligiousfestivalcalledHoli,celebratedeachspringinhonorofthecannabis-lovingdeityLordShiva(seeShiva’sSativaBhang).Meanwhile,OneThousand andOneNights, the classic text of ninth-centuryIslamicliterature,includesastoryabouttwohashisheaters—apracticegratefullyemulatedbyParis’slegendaryClubdesHachichinsofthenineteenthcentury, which saw Baudelaire, Dumas, and other leading lights of Frenchliterarysocietymixingtheirhashishintocoffeeforatrulyinspiringelixir.
In the Western world, cannabis tinctures, which dissolve the plant’s activeingredients into an alcohol solution, would remain widely available inpharmacies until the late 1800s, offered over the counter as a treatment formelancholia, pain, stomach cramps, and other common maladies. But theconcept of smoking pot didn’t become fashionable in the United States untilearlyinthetwentiethcentury,whenmigratingMexicanworkersintroducedthepracticetotheSouthwest,andtravelingjazzmusicianssubsequentlyspreadittotherestofthecontinent.
So while smoking herb boasts a long and impressive pedigree in themodernworld, never forget that eating cannabis is a hallowed human tradition that’sliterally older than history. UnderstandingCannabis sativa as simply anothernourishing, healing, helpful flower is key to removing much of the fear andmisunderstandingheapeduponahaplesspublicandalargelyharmlessplantbydecadesofgovernmentpropaganda.
Potbrownies,amainstayofcounterculturecuisinesince the1950s, remain themost common way modern people first ingest cannabis. Usually these “dopedesserts” arrive as a rite of passage—eatenwith your stoner circle in order toenhance summer concerts, 3-D sci-fi movies, camping trips, or backyard“potlucks.” Senior citizen and tireless activistBrownieMary earned the ganjabrownienew respect in1992, after her third arrest fordistributingher famouschocolate medicinals to AIDS patients in San Francisco made her a causecélèbrefortheearlymedicalmarijuanamovement(seerecipe).
In the ‘60s and ‘70s, the food revolution became a part of the generalcountercultural lifestyle, as hippies went vegetarian and investigated ethnicfoods previously unheard of in the United States, such as tofu and seaweed,falafelandhummus,curriesandlentils,burritosandarepas.Morethananything,they sought something authentic to eat in a country quickly surrendering itsculinaryheritageinfavoroffastfoodandplastic-wrapped,frozen,prepackagedTV dinners. And while the unfair stereotype of stoners as junk food junkiespersists to thisday, thefactremainsthatcounterculturecuisinechampionedbyganja-lovinghippiesandhealthfoodieshasprovidedaparallelfoodmovementbased on good nutrition and organic farming that our increasingly unhealthysociety sorely needs. Indeed, the emergence of the local-food movement andembraceofseasonal,sustainablecookingbychefsnationwideowesitsrootstoahippiesensibilitythat’sgreeninallsensesoftheword.
In1996,thehistoricpassageofCalifornia’sProposition215effectivelylegalizedmedicalmarijuanainCalifornia,openingthedoorformoreandmorepeopletorealize the benefits of eating their stash instead of smoking it, which includepreservingthehealthoftherespiratorysystem,reducingthesmellofpotsmokeon hands and clothes, and the ability to discreetly medicate in many placeswhere smokingwould be inappropriate—not tomention illegal.Cannabis alsoproduces profoundly different effects when ingested through the digestivesystem, rather thanabsorbedby the lungs,withmostusers reportinga longer-lastingexperiencethatprovidesahighforboththebodyandmind.
So why has the humble brownie remained so popular, when cannabis can beinfusedintoanyfoodordrinkthatcontainsbutteroroil?Partlyithastodowith“tradition,”butperhapsit’salsobecausechocolateveryeffectivelycoversuptheflavorofmarijuana,renderingitmorepalatableforthosewhoareunaccustomedtothetaste.Hopefully,asmarijuanabecomespopularassimplyanotherculinaryherb, we’ll see increased appreciation for its unique flavor profile and cease
attemptingtohideit.
Cannabis as a whole plant is extremely versatile as an ingredient. Lately, themedical marijuana “edibles” industry has been the key to moving beyondbrownies,expandingourpotpalatesastronomically,ascreativecanna-chefsinanow competitive field have infused the herb into just about any dish you canimagine. You can find prepared, herb-infused salad dressings, savory dips,powdered drinks, sodas, smoothies, baked goods, and sweets in manydispensaries, not to mention topical lotions, massage oils, and soaps usingcannabisasanactivehealingingredient.
HEMPVS.CANNABIS
Thenewlyemergingmedicalcannabisediblesindustryisarecentphenomenon,but hemp foods and body-care products have been amainstay inmany healthfoodstoresfordecades.Hempandcannabisarerelatedplantsbutdifferentinafewimportantways.HempcontainslittletonodetectableTHC,andsoitisnotpsychoactiveinanyform.Butwhilehempintrinsicallylacksthechemicalsthatmake humans euphoric, it still contains many healthful amino acids andantioxidants.Hempalsocontainscannabidiol(CBD),animportantcannabinoidwithmanymedicinal effects.Hemp flour,oil,proteinpowder, seeds, andmilkare staples of a healthydiet.Natural food companies have startedusinghempseedsandflourinfrozenwaffles,granolabars,breakfastcereal,andotherfooditems.
Hemp can also be found as an ingredient in many soaps, lotions, and balms,whilethefibersoftheplantcreatedurablepaperandtextiles.Eventhoughhempis the sober botanical cousin to cannabis, growing a hemp crop in theUnitedStates is still illegal due to themisguidedwar onmarijuana, and soAmericacontinuestoimporthempfromCanadaandChinatouseforfoodandclothing.
COUNTERCULTURECUISINE
Recently,thearchetypeof“stonerchef”hasgainedtractioninpopculture,andwhenyouwatchthesecannabis-friendlycooksplytheirtrade,itbecomesprettyobvious that they find their inspiration by taking breaks from the heat in thekitchen togooutsideand sparkupa jay.Andwhynot?Cannabis is a sensualenhancer that fits seamlessly into the foodie lifestyle, heightening the entireexperience, fromselectingproduce tocooking,plating,andeating (andmaybe
evenwashingthedishes).
Butwhat isstonercuisine?Themainstreammediawould jeer that it’snonstopgorgingon low-qualitysnack foods likecheesypoofs,potatochips,andcandybars, but in reality these stoner chefs most often express themselves byreimagining traditional foods and fusing formerly foreign flavors together innew, fun ways. Sometimes stoner cuisine is simply stuff you eat only whenyou’re stoned (grilledNutella andbananapanini), but at thehighest level, it’sreally about the recipes that are createdwhile stoned, including unusual foodcombinationsthatsoundstrangeatfirstbutthenturnouttobewonderful.
InTheOfficialHighTimesCannabisCookbook,we’veattemptedtopresentallfacetsofthisnew“stoner-stylecuisine,”alifestylethatbalanceshealthychoiceslike raw juice and meatless meals with occasional decadence in the form ofmeltedcheeseandrichdesserts.Sincemarijuanais“thehealingofthenations,”allmannerofethnicrecipeshavebeenadoptedasourown,suchasTime-WarpTamales andPsychedelicSpanakopita.And of course,we’ve infused all thesedisheswithalittlebitofcannabisessence.
KITCHENSAFETYMEETING
Measure your dosage, and your intake, carefullywhenmaking or serving pottreats.
Medical marijuana patients use “medibles” for a variety of reasons. Somepatientsneedtoavoidsmoke,whileforothers,it’ssimplyanothertooltousetotreat chronic pain, insomnia, wasting syndrome, nausea, or seizures. Peopledealingwithserioushealthissuesoftenneedahigherdoseofcannabinoids,andsowe sometimes recommend two dosing levels, one formedical patients andanotherforrecreationalconsumers.
Theprimarypsychoactivecomponentsofcannabisarefat-soluble,meaningthemolecules that produce highness bind onto any sort of lipid, including wholemilk;butter;cream;orcoconut,olive,orvegetableoil.Inthese“phatty”forms,THCandothercannabinoidscanmosteasilyabsorbintothebloodstream,thusprovidingyouwiththestrongestpossiblepsychoactiveeffectfromyourstash.Italsomeansyoushouldnever,ever,simplyaddyourpreciouscannabisdirectlyinto some brownie mix and call it a day. Without binding the THC to a fatmoleculeinacompoundlikecannabutter(seerecipe),mostoftheeffectwillbelost,leadingtowastedtime,wastedherb,andbunkbrownies.
Thekeychemicalreactioninvolvedindoingitrighttakesplacewhencannabisis combined with your chosen fat and heated at a low temperature (122°F–145°F) for no less than twenty minutes, and ideally up to an hour or more,stirringoften.Long-heldhippiewisdomdictatessimmeringthebutteroroilforup to eight hours, but this is difficult to accomplish without a Crock-Pot.Anyway, after sixty minutes you can rest assured that most of the THCmoleculeswillhave left theplantmatterandmigrated to thebutteroroil.Theprocess is called “decarboxylation,” which describes a chemical reaction thatconverts non-psychoactiveTHCacid found in the rawplant intopsychoactiveTHC. Cooking cannabis over high heat for too long will degrade the THC,hurtingpotency,whichmakesusingadoubleboilerorCrock-Potvital.
After you’ve infused your butter or oil, strain it carefully to discard all thecannabis fiber and particulatematter—it’s no good for anything but compost.Cannabis fiber in the formof fresh raw leafor crispy cooked leafwill irritatesensitivestomachsandmaybedifficulttodigestduetomicroscopichairsonthesurfaceoftheleafcalledcystoliths.
WHATTOEXPECTWHENYOU’REINGESTING
The biggest difference between eating pot and smoking it is the intensity andtypeofhighthatresults.Eatingcannabisbringsonamorephysicalsensation,or“bodyhigh,”whichsoothessoremuscles,easespain,aidsrelaxation,andfightsinsomnia,whileprovidingfeelingsofwarmthandpleasanttingling.Ediblescanalsoproduceapowerfullypsychedeliceuphoria,whichcanlastfar longer thanthetypicalhighfromsmoking.
Always keep in mind that everyone’s tolerance is different, and individualsrespond to ingestingcannabis indifferentways.Usually,youwillnot feelanyresults immediately after eating cannabis, since it needs tobedigested to takeeffect, a process that can take anywhere from thirty minutes to two hoursdependingonhowmuchyouingest,andwhetherit’sonafulloremptystomach.So startwitha small servinganddonot eat anymorepot food for at least anhourafterthefirstserving.
Thosewho’veeatentoomuchcannabismayfeelpanicky,anxious,agoraphobic,uncoordinated,oronthevergeofatotal“freak-out.”Fearof“losingitentirely”hasalsobeenreported.Shouldthishappentoyou,retreat toasafeplacetoliedown, dim the lights, breathe deeply, drink plenty of fluids, eat non-pot food,anddistractyourselfbylisteningtoyourfavoritemusicorwatchingamovieyoulike. Most probably, you’ll end up napping, and in a few hours all theuncomfortablefeelingswillhavesubsided.
Keepinmindthatitishumanlyimpossibletofatallyoverdoseoncannabis,evenif you’ve just eaten an entire birthday cake frostedwith cannabis buttercream.It’sestimatedthattheamountofTHCrequiredtocauseafataloverdosewouldbe four million milligrams, or about nine pounds of pure hashish—and youdefinitely didn’t eat nearly that much, or you wouldn’t be able to read thissentence.
Always clearly label and securely store cannabutter or pot foods to avoidaccidentalingestionbyaroommate,familymember,neighbor,orpet.Andneverfeedanyonecannabiswithouttheirknowledge,sincethiscouldresultinaveryunpleasant experience or even a potentially dangerous one! Do not drive oroperateheavymachineryaftereatingpotfoods.
Ifyourpetaccidentallyeatsacannabisedibleorabudandisactingstrangely,
contactyourveterinarianimmediately,thoughtheywillverylikelyrecoverjustfineonce theeffectwears off.And remember, cannabis isn’t fatal to pets, butchocolate can be, so if your dog scarfs down a brownie, respond quickly andseekavet’shelprightaway.
GENETICS
Marijuana can be easily divided into two subspecies (indica and sativa), withcountlessgeneticvariationscalledstrains.Eachindividualstrain,whetherindicaor sativa, has unique properties that affect its psychoactive and therapeuticproperties.Forourpurposes,anystrainofcannabisbredandgrownforsmokingwill also work formaking edibles. Extremely potent varieties should be usedwithcaution,andperhapsreservedforsmoking,sincetheactiveingredientscanjustaseasilybeextractedfromlessprized(andlessexpensive)varieties.
Cannabissativa is theequatorialformoftheplant,bredinthetropicstoreachheightsabovetenfeettall.Sativastakealongtimetomatureandproducesmall,wispybuds.Thiscombinationofalonggrowingseasonandalowyieldmakescultivating purebred sativas impractical for most growers, which is a shame.SativaplantshaveahigherTHC-to-CBDratio than indica plants,producingahighthat’senergetic,creative,anddaytime-appropriate.CBD,oneof themanycannabinoidsfoundintheplant,hasaconfoundingeffectonTHC,balancingthepsychoactiveeffectandinhibitingthehigh.
TheindicaspeciesoriginatedhighintheKushmountainsofAfghanistan,whereashortgrowingseasonandhighaltituderesultedinamorecompactshrubofaplant.IndicascontainahigherratioofCBD-to-THClevels,producinganeffectthat’ssedativeandrelaxing,perfectforanightcap.
Almost all modern cannabis is a hybrid combining both sativa and indicacharacteristics, so it’s important to research the genetic backgrounds ofindividualstrainsyou’recookingwith,especiallyifyou’dlikeyourpotfoodstohaveaspecificmedicinaleffect.Scientificanalysisof thecannabinoidprofilesofdifferentstrainshassofarbeenlargelystymiedbyprohibition,butvisionarymedical cannabis dispensaries inCalifornia andColoradohave recently beguntesting their cannabis with gas chromatography and mass spectrometry todiscoverwhichcannabinoidsaremosteffectiveattreatingdifferentmaladies.
CANNABINOIDS
The same laboratory techniques that reveal the different genetic profiles ofvariouscannabisstrainscanalsoexaminetheirchemicalcomposition.Nomatterwhatthevariety,marijuanacontainsmorethanfourhundredactivecompounds(calledcannabinoids),themostwell-knownbeingTHC.ThesecannabinoidsarethesubjectofmuchexcitementandgroundbreakingresearchintheUnitedStatesandabroad.
ThelatestbuzzinthemedicalmarijuanacommunityinvolvesemergingevidencethatCBDhasidentifiablemedicinalproperties,includingcancer-fightingability,immunesystemsupport,andanti-inflammatorypowers.CBDalsomitigatesthepsychoactive effects of THC, taking the edge off the high and reportedlylesseningtheanxietythatcanaccompanylargedoses.
Sincemarijuanarich inCBDdoesn’tgetasmokerashigh,generationsofbudbreedershave,overtime,selectedplantswithincreasinglysmalleramounts.Asaresult, CBD has been virtually bred out of modern marijuana, a process thatProjectCBDisattempting to reverse.Thousandsofsamples fromdispensarieshavebeenanalyzedaspartoftheongoingproject,ahandfulofwhichhavebeenidentifiedashavingCBDlevelshighenoughtoserveasthebuildingblockforanewgenerationofCBD-richstrains.
FLAVORSANDTERPENES
Terpenes are a group of chemicals found in plants that determine smell andflavor, among other things. Different terpenes give cannabis strains theirdistinctivearomas.Forexample,ifyourganjasmellslikecitrus,itisbecauseofaterpenecalledlimonene,alsofoundnaturallyinlemonpeels.Rich,ripe,fruityaromasemanatingfromyourbagofherbcomefromaterpenecalledmyrcene,alsofoundinlemongrassandmangoes.Hintsofpineneedlescomecourtesyofterpenes alpha- and beta-pinene, also naturally present in rosemary. Peppery-tastingmarijuanacontains sabinene, a terpenealso found in tea treeoil.Mint-flavoredcannabishasalpha-phellandrene.
This field of knowledge should expand considerably in the coming years, aschefs learn to pair different strains of cannabis with specific foods. Thepossibilitiesaredazzling:forexample,pairingaHazestrainrichinsabineneandmyrcenewithfoodscontainingthesameterpenes,suchasaThai-stylesoupwithmango and lemongrass (like Tom Yum Ganja). Savory dishes like rosemaryroasted potatoes would sing with the addition of cannabutter from a strain
containing pinene. And naturally you’d have to finish up with a chocolatedessertinfusedwithamintycannabisstrainhighinalpha-phellandrene.
SEARCHINGFORINGREDIENTS
The entire cannabis plant is suitable for cooking, but the various parts varywidelyinpotency,flavor,andefficiency.Forallyoufreeganstonerswhoabhorwastinganypartoftheplant,therearerecipesoutthereutilizinghoardedstems,trimmed leaves, and scraped-outpipe resin (gross!),whileon theother endofthestonerspectrum,well-heeledheadswill likelygethedonisticandchoose tocookwithconnoisseur-qualitycannabisflowersorsiftedtrichomes.Eitherway,neverforgettomindyourdosagecarefully.
Ingeneral,ifyouhaveaccesstotrimmedleaves,suchasthelargefanleavesorsmaller “sugar” leaves trimmed from the cannabis plant just after harvest, thismaterialwillprovethemostaffordableandefficientwaytoincludecannabisinyourcuisine.Ifyoudon’thaveanypotleaves, thenthepowdery“shake”fromthebottomofastashjarwillworkbestwithoutbreakingyourbudbudget.
When a recipe calls for commercial-grade cannabis, this simply means amedium-quality type of bud. Much commercial-grade cannabis comes fromCanadaandisalsocalledBeasters—aslangtermforB.C.bud.Thelowestgradeofcannabisisreferredtoasschwag,andthisistypicallycompressed,importedMexicanbrickweed.Eitherofthesetypesissuitableforcooking.
Themanymethodsofmakinghasharebeyond thescopeof thisbook,but themostpopularwaytodayistouseacoldwaterextraction.Waterhashiscreatedby immersing leafy trimorcannabisbuds into icycoldwater, thenagitating itwith an electric mixer. The oily trichomes break off, and the water is thenfilteredthroughaseriesofmeshbagswhichcollectthetrichomesinincreasinglyfinergrades.Thewetmessoftrichomesisthendriedoncardboardorascreen.Thisunpressedhashisveryusefulinavarietyofrecipes,andwhenwecallforunpressedfood-gradehash,wemeanthetrichomesfromthelargestmicronbags.Thisisthecoarsestgradeofhash.
No matter what kind of kind bud you’re cooking with, begin by shredding,chopping,orgrindingyourbudsordried leavesasfinelyaspossible.Acoffeegrinderreservedespeciallyforthispurposeworkswell,oryoucanuseasimpleherbgrinderorasharppairofscissors.
PHATTYACIDS

2.Afteryouhavecompleted the thirdsimmeringsession,prepare forstrainingwhile the mixture is still hot. Position your metal strainer over the secondstockpot,andcarefullypourthewater,butter,andmarijuanamixturethroughthestrainerintothestockpot.Thisiseasiesttodointhesink.Thestrainerwillcatchall the plant matter, so use the back of a large spoon to push the marijuanaagainst themesh and squeeze out all the butter. Compost the plantmatter, ordiscardit.
3.Ontothechillingprocess,whichwillseparatethecannabutterfromthewater.Ifyour stockpot is toobig to fit inyour refrigerator, pour the cannabutter andwater mixture into a large glass bowl, and refrigerate for 24 hours. Thecannabutterwillrisetothetopandsolidify.

TINCTURES
At theirmost basic, tinctures are simply plantmatter soaked in alcohol.Yourlocalhealthfoodstorehasmanytincturesofdifferentmedicinalplantsavailable,likedamiana and echinacea.Tinctures are an excellentway to ingest cannabisfor a few key reasons: They are very portable and discreet, you avoid extracalories frommedicinal desserts or fatty THC-oil-soakedmeals, and it’s veryeasy to measure your dose. Simply squeeze the dropper top, and release thedropper underneath your tongue. Let it sit there for several minutes. This iswhere it’s easiest for the tincture to be absorbed. You’ll begin feeling effectswithin ten to thirty minutes, so tinctures are faster-acting than digesting amedible. Simple tinctures made with vodka or rum can become the base forcannabiscocktails(seerecipesforvodkaandrum).

6.Next,fillthecookedpiecrustwiththemeatandveggiemixture.Coveritwiththeother,uncookedpieshell,pressingdowntheedgeswithafork.Piercethepiewithyourforkafewtimestovent.
7.Here’s an optional extra step to give the pie a lovely decoration: Take thatthirdpiecrustandcutoutapotleaforwhateverothershapeamusesyou.Setit

8.Brushtheeggwhite,ifusing,ontopoftheuncookedpiecrust.Thiswillgiveyourcrustabeautiful,glossyappearance.
