Boulouparis
History
When the American troops landed in
New Caledonia during WW2, they brought
with them a wind of change which would
transform the country.
In 1940, following the German invasion of France, New Caledonia rallied to the Free French movement and became an Allied Base, welcoming American troops fighting in the Pacific. On 12 March 1942, several tens of thousands of men landed in New Caledonia. The Americans had arrived! It was an overwhelming experience for such a small island country: “It took three days and nights to disembark thousands of men, with their munitions and rations... I felt like I was dreaming, the whole thing was so intensely emotional” remembers an eye witness. The troops stationed in Nouméa were billeted in various camps dotted around Anse Vata and Vallée des Colons. Aerodromes were laid out (Tontouta, Plaine des Gaïacs), medical centres were set up at Anse Vata, La Conception, Dumbéa and north of Bourail... In the space of a few months, the Americans provided New Caledonia with brand new roads and amenities, many of which are still extant. The Yankees also introduced various novelties symbolic of the American way of life, including dance-halls, Coca Cola and chewing gum...

GETTING AROUND
The flesh of the avocado from Mare is particularly
unctuous and has a delicious nutty flavour. In order to
eat it at just the right moment, you can accelerate the
maturing process by placing it next to an apple or a
banana, or even wrapping it in newspaper. On the other
hand if you wish to slow down the process, put it in the
vegetable drawer of the refrigerator. To peel it easily,
just heat it for a few minutes by rolling it between your
hands. To extract the kernel is not difficult: you just cut
the fruit in two and stab the kernel with the point of a
knife. Once peeled it only remains to sprinkle the flesh
with a dash of lime juice to prevent it turning black.
CRAB-FILLED AVOCADOSIngredients:
3 tbsp olive oil, 1 egg, 1 lemon, 0.5 tsp tomato puree,
Salt & pepper, ½ tsp white mustard, 3 avocados
5 sprigs of parsley, 125 g crab meat
Preparation:
Hard boil the egg. Remove eggshell and crush well with
a fork. Mix mustard, olive oil, tomato puree and lemon
juice to make a vinaigrette and season to taste. Rinse
and chop parsley. Mix crab meat with vinaigrette and
egg. Cut avocados in half, leaving on their skins.
Fill avocado halves with the crab mixture and garnish
with chopped parsley.
