    The Gerson TherapyThe basic idea of the Gerson Therapy is to stimulate the body's owndefences, the immune system, to do what it normal ly does in a healthybody, namely to destroy and eliminate the cancer cells which we allproduce. However, a debilitated immune system is unable to do this.The Gerson Therapy aims to remedy this by supplying the body withoptimum nutrition consisting of an over-abundance of fresh, organicfruits and vegetables in the form of juices, salads, and cooked foods, r ichin enzymes and vitamins. The diet is supplemented with variousdigestive enzymes, vitamins and other natural substances, as well as upto five coffee enemas a day to aid detoxif ication.Apart from three square meals a day, the intensive therapy also supplies13 fresh. organic juices a day. These consist of 8 carrot and applejuices, 4 green juices and 1 orange julce ", daily. (See pages 36/37 foran Hourly Sbedute, and pages 38/39 for a Daily Wall Chart.'For the less intensive, or modified, therapy (which should NOT be usedin the treatment of cancer, but only for NON-MALIGNANT diseases], 1orange juice" plus 6 - 8, 8 fl oz glasses of juice daily may be made, usinga combination of carrots, apples and green leaves, instead of makingcarrot and apple juice and green juice separately.     WhyOrganic Food?Only organic produce should be used

    Dr Gerson referred to the soil in which produce is grown as our "externalmetabol ism". He recognized, early on, the fol ly of deplet ing soi l throughcommercial farming techniques, then adding back individual nutrients tothe soil, and the deleter ious effects of pestic ides on the ecosystem ofthe soil.Since the end of the last war, more and more chemical pesticides andferti lisers have been used. Our food is heavily sprayed with insecticides,herbicides and fungicides. Cereal crops, for instance, are doused aroundfive to eight times during the growing season. For some fruit andvegetable crops, 10- 15 sprayings are normal . After harvest ing they'redoused again with several chemicals to protect them from storagediseases. Such heavy spraying of pest icides and the large amount ofchemical fer til izers used on plants, f inally kil l of f the natural bacter ia andsupport ing life surrounding the plant. This leaves the plants wide opento attack from unwelcome pests. More insect icides and fungicides thenhave to be used in ever increasing amounts in order to combat thesepests. After a while, they become immune to the pesticide being usedand their numbers increase dramatical ly. At this point, new and oftenmore powerful insecticides are used.

    Today, the poor quali ty of conventionally-farmed topsoil yields nutrient-poor defic ient food. Organical ly grown produce is cri tical to healing.Many important minerals, trace elements, enzymes and useful micro-organisms are absent in commercially-grown produce, and even minimalpest ic ide residues become a major factor when concentrated in suchlarge quantit ies of food taken as vegetable and fruit juice.The Gerson Therapy requi res the consumption of pure food and purewater, in order for the body to detoxify and rebuild itself right down tothe smallest cell .     Why .Juice?Why not simply eat the whole fruit or vegetable?It is impossible to eat in solid form the large amount of apples, carrotsand greens needed to be consumed daily.Many fruits and vegetables are about 90% water and nutrients insolution, the remaining 10% being solids - fibrous and cell-wall materials.Wi thin the gaps of these fibres are atoms and molecules in solut ionwhich are the essential nutri tional elements needed by the human body.Inorder to extract this f luid and these nutrients, i t is essential to f irstbreak up all the cel l walls completely to al low all the water and nutrientsto separate themselves from the solids.I t is these atoms and molecules and thei r respect ive enzymes in thefresh, raw juices which aid the speedy nour ishment of the cel ls thatconst itute the t issues, glands, organs and all other parts of the body.When we extract and dr ink the juices of vegetables and fru it . these arevery quickly digested and assimi lated by the body. Solid food, on theother hand, has to be digested over many hours before the nour ishmentbecomes available to the cel ls and tissues of the body. Fruit andvegetable juices, however, only take a matter of minutes to be digested,with minimum effort and exertion on the part of the digestive tract .Juices consist of living matter wi th act ive ferments, fast neutra liz ingox idizing enzymes, which are very necessary for the sick body. Thebody needs a continuous supply of active oxidizing enzymes supplied atregul~r i~tervals throughout the day. These cannot be kept active exceptby drinking freshly pressed juices, given at hourly intervals.Juices aren' t concentrated food, they are a very l iquid food, mostlyorganic water of the f inest quali ty wi th the nourishing atoms andmolecules in comparatively microscopic volume. It is these nourishingatoms and molecules of which the cells and tissues of the body arestarved!Juices should be drunk immediately, especially the green juice, as theenzymes begin to deter iorate rapidly within 20 minutes. The oxidat ionenzymes of these juices, once pressed out of the cells and activated areeasi ly destroyed by oxygen from the air as well as from changes in l i'ghtand temperature. They may lose 60% of thei r active ox idat ion powerwi thin half an hour.

    A WordAbout.Carrots

    From the Latin 'carota' and the Greek 'karoton' - meaning to burn (areference to the colour), carrots are a very valuable vegetable. Carrotsand thei r juice are one of the best detoxif iers when consumed inquantity. They are alkalinizing, cleansing, nourishing, and stimulating toalmost every system in the body. Carrots del iver abundant supplies ofreadily assimilable vitamins, minerals, and enzymes to cells, giving themthe fuel they require to slough off morbid wastes and rebuild healthycells. These enzymes help the body to absorb and assimilate thevitamins and minerals. Carrots are one of the best foods for the l iver anddigest ive tract, they help kidney function, help prevent and treat cancer,balance the endocrine and adrenal systems, depress blood cholesterol,and increase bulk eliminat ion from the colon. Oual ity carrots are veryrich in the antiox idant beta-carotene, the precursor to vitamin A (thatmakes them so beneficial for the eyes and vision). They contain largeamounts of sil icon, which strengthens the connective tissues and aidscalcium metabol ism; also, they contain an essential oil that kil lsparasites and unhealthy intestinal bacteria. Potassium salts in carrotsaccount for the diuret ic act ion, while at the same time carrot soup makesan effective remedy for diarrhea and is easi ly digest ible for thosesuffer ing from stomach and intestinal problems. Finally, they are high inall but two of the amino acids - in other words, they contain muchprotein ..Some babies who are al lergic to all types of milk, including soya, havebeen nourished from the earl iest age on NOTHING BUT carrot juice andhave grown up perfect ly normally. Carrot juice, therefore, is rich enoughto build a whole, heal thy body, being adequate in protein and calcium.

    ... ~p/esApples are named from the province of I taly called Abela, where themodern apple is thought to have first appeared. The heal th benefits ofapples are many. They are natural ly ant itox ic and can modify theintestinal environment by reactivating the beneficial bacteria thatnormally flourish there. They are a highly digestible alkaline food, havinga high water content (around 85%), which quenches both immediate andcel lular level thirst. Apples are f ibrous, juicy and non-st icky, and help toclean the teeth and exercise the gums when eaten raw. They containboth malic and tartar ic acids, which help to remove impurit ies in the l iverand inhibit the growth of ferments and disease-producing bacteria in thedigestive tract. They also contain pect in, a gel-forming fibre which

    supplies galacturonic. acid to prevent the putrefaction of protein. P~ctincontent also helps make apples an excellent intestinal broom, workinq asa bulking agent to gently push through the digest ive tract a.ndcle~nse italong the way. This effect is part icularly not iceable when Impactions arepresent. Pectins are also powerful in protecting against t~e t~xi~ effectsof certain chemicals in the diet, such as cyclamates. Studies indicatethat eating apples daily will help reduce skin diseases, arthritis andvarious lung and asthma problems; European research shows that applepectin binds with radioact ive residues and removes them from the body,along with lead, mercury and other toxic heavy metals. Although theapple itsel f is not part icularly high in iron, it contains an element thatimproves the assimilation of iron in companion foods.

    Which apples are best for the Gerson Therapy?As eating apples, all types are fine. If you prefer one kind of apple,perhaps a sweet one, over a tart one, it's better to eat the sweet onesbecause you' ll eat more. Some apples bake better than other~, andthese are better for cooking. The only time the type of apple IS,important is when juicing, since juicing uses such large quantities ofapples. It is not good for a cancer patient to get too much sugar, .especially in juice form. This sugar passes into the blood stream quicklv,and can raise the blood sugar level enough to feed tumours. Therefore,the best apples for juicing are the less sweet ones such as Bramleys,Granny Smiths or Pippins. However, Golden Delicious and Red Deliciousapples are the only apples that should be avoided for juicing, if at allpossible, as these are too sweet. Should you have to use sweet apples,add a squeeze of lemon juice to overcome the sweetness, and use fewerapples.Around the middle of August, the new crop apples may not be quite ripe.If we eat these we can get gas and stomach upsets. In which case, itmay be best to mix the apples in the juices, some old and sweet andsome new slight ly unripe and tart.

    Beware invisibletoxicantsMouldy or damaged apples may contain a mycotoxin (toxicant frommould growth) called patulin - particularly in and around bruised anddamaged parts of the fruit . I f you're using apples to make, for example,apple sauce or apple juice, don' t be tempted to use damaged apples.Even though they might not seem to spoil the quality of the f inishedproduct, thev may contain patul in. The Ministry of Agriculture, Fisheries'and Food (MAFF) has recently advised manufacturers to make sure theydon' t use mouldy apples. I t's important that you don' t either.

    with space around for air to circulate. Check regularly for damagedor mouldy ones.

    Raw apple juice cleans the teeth, and the apple flesh is firm enoughto push back the gums and rid them of food deposi ts.The stomach can digest a ripe apple in 85 minutes; the frui t sugarspass quickly into the bloodstream to provide energy for the body.There are certain chemical compounds found in foods like apples andonions which may be as important in the fight against heart diseaseas the much-trumpeted antioxidants.

    . LeffuceLettuce is derived from the Latin word lac, meaning milk, which refers tothe plant's white milky, soporif ic juice. This contains a natural morphine-like substance which is a powerful relaxant, so do juice the lettuce stalkstoo. Lettuce is among humankind's most valuable healing foods becauseof i ts large organic water content (from 90-95 %). Nearly all thenecessary vitamins are found in lettuce, with the outer leaves being themost valuable. Lettuce contains the most sil icon of common vegetables,a nutrient that helps renew joints, bones, arteries and all connectivetissues. The best lettuces to use are Cos lettuce, Green or Red Batavias,as these contain the most chlorophyll. Iceberg lettuce shouldn't be usedas it is very pale with hardly any chlorophyll.

    . . . WotercressMake sure that the watercress is washed very wel l before juicing oreat ing. There is a slight possibil ity that watercress can hide the cercariastage of the fluke parasite. Store watercress in bunches in therefrigerator with its leaves, rather than its stems, in water to preventwil ting. As watercress goes off rather quickly, landcress can be used inits place as i t lasts longer: This useful plant can be grown in ordinarygarden soil.

    . . . Oronges/GrapefrultsWhen juicing oranges or grapefruits for the Gerson Therapy, the skinshould never be pressed as this wil l release harmful fatty acids andaromatic substances contained in its surface. Therefore, a citrus pressshould never be used (where a lever mechanism is used to squeeze thewhole fruit). The orange or grapefruit should either be pressed by hand,using an orange squeezer, or with an electr ic juicer, such as the Braun.70 Remember, use ONLY ORGANIC produce

    Can I .JutceBeetroot?

    No, beetroot contains too much sugar. However, 2 - 3 smal l inner leavesof beetroot TOPS can be used (when available).

    ... Celery?No, celery contains too much sodium. However, a lit tle chopped celerycan be used in salads, and, of course, in Hippocrates soup, if celeriac isunavailable.

    . .. Spinach?No, spinach contains too much oxalic acid. Use 2 - 3 small inner leavesof Swiss chard (when available).

    Alfalfa Sprouts?NO! It's definitely not recommended, neither are any other sproutingseeds. The reason is that al fal fa seeds and sprouts are very rich in anamino acid called L-canavanine, which can be very toxic to humans, aswel l as to animals, when taken in quanti ty. L-canavanine is a non-protein amino acid, non-essential to human nutrition, which constitutes1.5% of the dry weight of alfalfa seeds and sprouts. It is not found inquantity in mature alfalfa, apparently being metabolized during thegrowth of the plant.I t was noted at the Gerson hospi tal many years ago, that f lare-ups ofrheumatoid (auto-immune) conditions coincided with the eating of largeamounts of al fal fa sprouts. It was also suspected that excessive use ofthese sprouts may have produced failures in cancer treatment for somepatients. There were many instances of patients who were doing wel lon the Gerson Therapy and who began eating large amounts of alfalfasprouts, which were permitted at that t ime. However, this proved tohave a detrimental effect .There is no question now that alfalfa seeds and immature alfalfa containL-canavanine and that ingestion of sufficiently large amounts will createtoxic reactions in susceptible persons, particularly those with rheumatoidarthritis, systemic lupus erythematosus (SLE) or any other inflammatorycondition.

    Types of JuicerDr Gerson was very specif ic about the type of juicer required by patientson the Gerson Therapy. He found, and it was later confi rmed, that acentrifugal juicer was not acceptable. The best type of juicer shouldhave a separate grinder and a press to accomplish the best extraction.fhere are various types of juicers on the market . Most of the cheaperones are centrifugal juicers. More expensive are nose cone press juicers,such as the Champion Juicer, and the most expensive is the NorwalkJuicer which has an integrated hydraul ic press. Dr Gerson felt that bygrinding the material first, then mixing it all together, the acid of theapples helped the ground carrots release many of their minerals. Thisdoes not happen in a one-process grinder/juicer, such as the Green PowerJuicer. It is for that reason that the Champion and the Norwalk Juicersare preferred.

    Centrifugal Juicer(Not suitable for the Intensive Gersan Therapy)Centrifuqal Juicers use a grater to more or less break up the plant f ibresand cell walls and then spin out the juice by centrifugal action, forcingthe pulp against a high speed revolving basket, thrusting the juicethrough the ho' les in the basket . This is the least expensive method andhence most domestic juicers follow this design. However, these juicersare not suitable for the intensive Gerson Therapy for the followingreasons:(a) There is insufficient access to air in the grinding process. When the

    grinding wheel rotates against a resistance with insufficient accessof air, positive electricity is produced and this induces negativeelectricity on the surrounding wall. The exchange of positive andnegative electricity kills oxidizing enzymes and renders the juicedeficient.

    Ib) The fruit or vegetable is merely grated. At no time is it rubbed orchewed, so the fibres and cel l wal ls are not adequately broken up toallow the extraction of top quality juice.

    (c) The pulp usually remains very moist, sometimes so moist thatconsiderably more juice can be squeezed out even by hand pressure.The juice itself is pale, watery, low in nutrient value and often qui teinsipid in flavour.

    than raw foods because it has not been masticated and mixed withsaliva so that the digestive process can begin.

    (e) This type of juicer is usual ly equipped with a tiny, inexpensive hig.hspeed motor that would break down completely under a ~rue p~lpln9or mastication process. Using this type of juicer for the intensiveGerson Therapy would wear out the motor in no time.

    (f) Separate, continuous removal of the pulp is not always possible. Itis usually necessary to stop the machine at regular intervals, removethe pulp and start again - a tedious process, to say the least,especially if you are on the full Gerson Therapy with 13 hourly juicesa day!

    Nose Cone Pressure (Masticating) Juicers .... Champion Juicer"(Thisis thejuicer used by most Gerson patients)

    The Champion Juicer breaks up the fruit or vegetable material wi th acutter or masticator and then rams the resul ting pulp into a nose conewith a narrow opening. A high pressure builds up in the cone and thejuice is forced out through a stainless steel grid, whi le the pulp finds i tsway out through the opening. This is far more efficient than centrifugalaction. The power required to eff iciently masticate the fruit orvegetables and to build up sufficient pressure in the cone is c~nsi~erable.However, for the purposes of the Gerson Therapy, the Champion IS notused as a juicer. but only as a grinder. A press is also needed (seebelow). This is because the pulp from the Champion Juicer is sti llmoist, and by putting it through a press a further 15% - 20% of juicecan be extracted. Not only that, it is best to put both the pulp and thejuice already retrieved from the Champion Juicer through the press. Thisis because when the juice is put into a fine cloth and pressed, thestrained juice is much more clear and pure and will be free of cell-wallsol ids. This is much more easily digested by the gut.The Champion Juicer produces about 25% more juice than a centrifugaljuicer, whi le the use of a press can produce a further 25%. According towhich fruits and vegetables are being processed. the Champion canextract up to 300% more cell nutrients than a centrifugal juicer, and ifthe press is then used, up to a further 300% more cell nutrients can beextracted. This is an important considerat ion in view of the cost oforganic produce."See picture page 34

    We have carried out a number of def ini tive, measured tests of the GreenPower juicer, comparing i ts abil ity to extract juice with that of theChampion. We juiced measured quantities of carrots, apples, tomatoes,celery, Chinese leaf, alfalfa (lucerne) sprouts, parsley, oranges,grapefruit, lemons, melons and grapes, and compared the quantit ies oforiginal produce, juice and residual pulp. We put the pulp through twicein all instances since this can significantly increase the quantity of juiceextracted by both juicers. From these trials, i t is clear that - in themajori ty of instances - the Green Power and the Champion are verysimilar in performance.With both pulpy produce, such as carrots and apples, as well as veryjuicy fruits like melons and grapes or leafy vegetables like Chinese leaf, ahigh percentage is converted into juice by both the Champion and theGreen Power, with lit tle signif icant difference between them. The GreenPower, for instance, did marginally better with carrots, celery, grapesand apples, but the Champion was better at tomatoes, grapefruit,oranges, lemons, melons and Chinese leaf. Bearing in mind the kitchenconditions of our trials, our margin for error must make it dubiouswhether ei ther juicer is really more efficient than the other. However, theGreen Power probably has a genuine edge over the Champion in someinstances, while the Champion is better in others.Only when juicing wheatgrass and other fibrous herbs is the Green Powerclearly superior.We also pressed the residual pulp from both juicers, achieving similarincreases in juice extracted in both cases. Despite the small amount ofpulp remaining after juicing many fruits and vegetables, it has beenshown by other trials that pressing this pulp results in a significantincrease in the quantity of minerals and nutrients extracted. Theperformance of both the Champion and the Green Power will thereforebenefit significantly from the pressing of their pulp.It became clear during our trials that the sharp-toothed cutter of theChampion is a better macerater than the helical twin-gear crusher of theGreen Power.     were finely broken up by the Champion cutter but passed largelyunscathed through the twin-gears of the Green Power. Further, the GreenPower appears to give a drier pulp because the pulp is compressed to aparticular limited thickness after which no further pressure is applied(unlike the Health Stream Press which attempts to press the pulp to itsabsolute minimum thickness, generating a far greater overall pressure of4 tons).As commented above, one of the reasons for pressing is that a trulymacerated pulp releases considerably more of its minerals and nutrientsduring the pressing process than in the nose-cone pressuring system ofthe Champion or the Green Power. This raises the question of whetherthe juice from the Green Power plus Health Stream Press contains asmuch nutr ient as that from the Champion plus Health Stream Press.Unfortunately, without the very expensive help of a laboratory, we havebeen unable to ascertain this, but they are probably very similar.The slower speed of the Green Power generates less warmth than theChampion. This is an advantage, but it is only really significant whenjuicing considerable quantit ies of hard vegetables such as carrots, orstringy ones like celery, parsley and wheatgrass. This can also be largelyovercome by keeping the vegetables in the refr igerator prior to juicing.It is clear that a great deal of thought has gone into the design of theGreen Power and, compared to the Champion, it is a complex machine.This is ref lected in the t ime it takes to operate. In timing trials, the GreenPower characteristically took two to three times as long as the Championto juice the same quanti ty of frui t or vegetables. It also took at least twoor three times as long to clean and reassemble. Infact , the Green Powerhas so many corners and grooves in which the pulp can get lodged thatthe manufacturers provide a special brush with several shapes and sizesof bristle tufts.The Green Power is also hal f as big again as the Champion. Further, i tcan be more di fficul t to persuade the frui t or vegetable to go down thespout which, being narrower, requires more pre-preparation of the fruit orvegetables. For instance, carrots that would feed straight into aChampion require quartering before they will go into a Green Power,while apples that need only quartering to go into the Champion, need tobe cut into eighths before they wi ll feed into the Green Power.In short, bearing in mind that the Green Power costs considerably morethan the Champion, i t seems that the Green Power wi ll be a juicer forthose who want to juice wheatgrass and herbs in addition to the normal

    range of fruit and vegetables. They must also be prepared to dedicatemore time to making their juice. But if they want the absolute maximummineral and nutrient content from their fruit and vegetables, then the useof.a Health Stream Press is st ill required whether the Champion or theGreen Power is used.

    ~t.is.possible that the Green Power, because of its novel design, complexjurcinq process, good looks, high price and large dimensions will becomea 'cult juicer'. But those may not really be the right reasons for choosinga juicer!

    For Gerson and other similar cancer therapies, the use of a press on theapple and carrot mixture, as well as other fruits and vegetables, is st illrequired to achieve the same level of nutrient extract ion. The GreenPower simply provides an alternat ive pulper to the Champion that canalso do wheatgrass and similar produce.See page 30 for trial results summary.

    5. Place the pan etc. on the octagonal plate, ensuring that it is centraland secure. It is helpful to place a thin piece of wood, the same sizeas the pan, on top of the octagonal plate, so that the plate doesn'tpush through the pan.

    6. Ensure that the press is 'on' by turning the key in the base fullyclockwise, using the slot in one end of the handle.

    7. Position a suitable jug underneath the spout on the pan. Assemblethe two parts of the jack press handle; put the handle in the jackhole and jack the plate, pan and its contents up against the roof ofthe pressing container, making any adjustments to the posi tion ofthe pan as required. The block should be posit ioned against the rearof the pan and should be central to the roof of the pressingcontainer. Since the pan is longer than the block, the front of thepan will project forward from the front of the press. The space atthe front of the block permits the juice to collect there. The bevellededges of the block permit the juice to escape more easily around thesides. Once the pan is in position and you are about to applypressure, remove the neoprene bung.

    B. Raise the pressure slowly, permitting the juice time to come outthrough the spout. Continue pressing until no more pressure can be

    exerted and the handleseems to 'bounce'. This is the effect of anautomatic releasevalve inside the jack which comes into operationwhen the pressurereachesfour tons.

    9. Allow the juice time to drain out. Thepress has biggerfeet at therear than at the front, giving a forward slope to helpthe exit of thejuice. You can assist the process by holding onto the juice jug withone handwhile holding the top handleof the press in the other andCAREFULLYtilting the entire press forward. The press is heavy, sobecareful. Don't tilt it too much.

    10. To releasepressure, turn the key in the baseof the jack anti-clockwise by about half a turn orso. Pushdown onthe block.Do not turn the key by more than one full turn or the hydraulic oilmay come out. Half a turn is usually sufficient.

    11. Note that the height of the octagonal plate can beadjusted, prior tojacking up, by rotating the octagonal plate.Care of the Wooden Press Block1. To clean it, wipe the block with a cloth. Never immerse the block in

    water.2. Never dry orstore the block on any heat source or in an ultra-dry orhot place.3. For Gersonpatients, protecting the wooden block with plastic is not

    recommended, neither is oiling the block with either olive or flaxoils.Rememberthat wood is a natural material and respondsto moisture, air-humidity and temperature. It should therefore beprotected from suddenextremes which may causemild warping or splitting. Note, however,that the block is likely to havea finite lifetime andmay needreplacingfrom time to time.

    InitialStiffness In the Release MechanismIn the current model, anupgraded, high performance, 4 ton hydraulicjack is being used. This gives excellent performance and a long lifetime.(Underthe kind of pressures and usage required for juicing, cheap or low-tonnage jacks burst valves, leak oil and cause other problems).     mechanismmay bea little stiff onthe first few occasions of use. Toreleasepressure the key may be rotated by up to one full turn, thoughhalf a turn is usually sufficient. The key may alsobe tight onthe firstfew occasions.Whenthe key is turned, you will see the pressurebeing released, but tomake the ram come down you needto place one handon eachsideofthe wooden block and leandown heavily on it. This initial stiffness getseasierafter the first few usesand is alsoeasier under warm conditions.

    If Your Health Stream Press Arrives By Carrier, _.If your Health StreamPressarrives by post or carrier, you may needtowatch out for the foliowing:1. It islikely to havespent some of its time on its side orevenupside

    down. This temporarily relocates the hydraulic oil in the ramsuchthat the unit may appearto havenopressingcapability. i.e, nothinghappenswhen you work the handle. Inthis case, check th'lt the keyis fully tightened in a clockwise direction and then allow the press tostand upright for a few hours. On the first few lifts the action maystill not besmooth, while the hydraulic oil gets itself into the correctposition. Once the oil has sorted itself out, there should benofurther difficulty.

    2. The relocation of the oil can beexpedited by leveringthe plate upasfar as possiblewithout letting it come into contact with the top ofthe press casing. Thenrelease the screw by one turn and pushdown on the octagonal plate. Repeatthe process two or three times.

    3. Duringwinter months, especially, the unit is likely to havebeen leftunder cold or even freezing conditions. This greatly stiffens theaction until the oil haswarmed up to room temperature (this cantake several hours)and you may needto leanheavily on the woodenblock to make it godown after releasing the screw by one turn.

    A Few Tips1. The neoprenebungfits either insidethe pan - into the outlet from

    the pan - or you can fit it up the spout from the outside whicheveryou find more convenient.

    2. The slot in the end of the handle turns the pressure-releasekey inthe press base.

    3. When spooning the pulp into the pan, it works better if the pulp iskept as a mound towards the centre and slightly towards the backofthe pan. Then, when pressure isbrought to bear, it spreads outtowards the side. Also - fold the juice cloth neatly over the pulp sothat it cannot escapefrom beneath the block. A little practice willmake perfect!

    4. Don't try to presstoo fast - the juice may squirt out or overf low thepan. Keepan eye on the juice level and adjust your pressingaccordingly. The pulp should not escapefrom beneath the block.This gives space down the sides for the juice to run out, and in anycase pulp not held beneath the block will be inadequately pressed.

    5. If you use fruits and vegetables which are dryish or flaccid, youmay find that the Championwill heat up due to the additional workrequired, or to the friction of masticating the fibrous and drymaterial. The pulp will also tend to back upmore in the body. Thiswill not harmthe Champion, but it is better to use fruits andvegetables in their best condition. The more fluids are in them, themore nutrients can be extracted. Organiccarrots, especially insummer, arethe commonest flaccid vegetables. Floppy lettuces arealsomore difficult to juice. Mixing such vegetables with appleshelps and prevents too much warming of the juice.

    Servicing Your MachineThe Champion _juicerMany Champion Juicers are used year after year without the user givingany thought to maintenance. In most instances, this is OK because thejuicer onlygets usedfor five orten minutes a day, five orsix days a week.Gerson patients, however, are among the most strenuous users of theChampion, and they should be aware of servicing needs. The thing tokeepaneye on is the integrity of the OILSEAL.

    Theo il seal i s the 1'/." circular stainless steel seal with a black plasticcentre, situated in the middle of the front end bell hub, through whichthe main stainless steel shaft of the motor protrudes. Its purpose isto prevent oil from inside the motor running out, and to prevent juicefrom gaining accessto the motor.

    With constant and frequent use,this sealwill wear and will needreplacing. The first sign that it needsreplacing is usually a blackishliquid appearingaround the shaft. Toavoid internal damageoraccumulation ofjuice inside, the oil seal should bereplaced assoonaspossible after the first signs of wear. However, in some instanceswear can take place before any visible signs appearexternally, so it isworth replacing the oil sealevery yearor two if you are using theChampion very heavily (asGersonpatients do).

    To replacethe oil seal, take a Y. " socket wrench and loosenthe fourthrough bolts from the back end of the juicer, so that the front endbell hub can bepulled off the shaft. Avoid withdrawing all the boltsasthey can bedifficult to replace.Removethe old oil sealtsl by using a small plastic or wooden malletto force the sealout of the hub by placing the hub overa 1%" - 2"opening, driving the oil seal out from behind.Note: Older Champions had two oil seals. All new replacement oilseals area new-design, single seal.Placethe new oil sealin position and drive it in from the front, until itis flush with the stainless steel hub. Besure to inspect the seal lip toensurethat i t does not meet with the flat area onthe shaft. I f thishappens,the sealmust beslightly recessedinto the hub until it isclear of the flat area.

    While the front end bell hub is removed, check for internal signs ofwear on the front and rear bearings. In pre-1995 (approx.) models,the front bearing is 114" and the rear bearing 1%". Later models usethe larger 1%" for both the front and rear bearing. These bearingscan also be removed and replaced careful ly with the aid of a woodenor plastic mal let, although this can be quite di fficul t to do.

    Switch ProblemsOne problem that people may'have wIth the Norwalk Juicerconcerns the swItching system

    Also check the main shaft (also cal led the rotor arm or armature), thatruns through the motor, for signs of wear. If it is pitted or lined, itshould also be replaced at the same time. This can happen if the oi lseal is not replaced at the first signs of wear. If the rotor arm is notreplaced at this time, the oil seal is unlikely to last as long as itshould. If juice can still enter the motor along the lines or pits on theshaft, further internal damage to the Champion could result.

    There are in fact two switches on the machine. One being the ON-OFFswitch and the other being a magnetically operated switch whichprovides a safety interlock to ensure that the machine cannot be startedif the tube is not fitted and the motor shaft is exposed.The latter switch is mounted behind the face plate and is operated by asmal l ci rcular magnet mounted in the face of the feed tube. The magnetand switch are on the left hand side of the motor shaft and if there is agap between the tube and the face plate, then the switch may notoperate properly.Oil seals (6.95 plus p&P), as well asother spares,are available from theUKdistributors of the Champion Juicer, the Wholistic Research

    Company. When fitting the tube, most r ight handed people probably tighten the.right hand wing nut first and then the left hand one, but this can result ina gap on the lef t hand side. Consequently, the thing to remember isalways to tighten the left hand wing nut before the right hand one. Inmany cases this wi ll cure the problem. Another thing which may help isto fi t the tube and then turn i t a few degrees anti clockwise beforetightening the nuts, as this alters the relative position of the magnet andthe switch.

    A Problem Starting the Motor of the Champion?The newer Champion juicers have a magnetic switch. On the undersideof the nozzle is an opening where the blanking plate, or sieve, is fi tted.This is held in place by a sliding part. On the front of this sliding part is asmal l rectangular magnet, which operates a magnet ic safety switch. It isimportant that the sliding part is pushed right forward, so that themagnet will operate the switch. Juice Pre55e5TroubleGetting the Cutter Off the Shaft?

    How to refill the bottlejacks which are used in the manualpresses.I f, after using the machine, trouble is experienced pulling the cutter offthe shaft, it could be because the cutter has become vacuum-locked. Toavoid this, try dipping the cutter into water before pushing i t onto theshaft. Apparently, it will then be less likely to get locked on.

    It is important to use Jack Oil which can be bought from motoraccessory shops' such as Halfords who sel l a 500 ml bot tle for about 3.On the left-hand-side of the jack, about three quarters of the way up, is arubber bung which should be removed using a screwdriver. Before doingthis, make sure that the piston rod has been pushed right down. Turnthe press on its side so that the hole is facing upwards and pour in alittle oil. Then turn the press upright. Carryon doing this until the oillevel reaches the bottom of the f il ling hole. Then ref it the rubber bungusing a screw driver to ease it in.As a short term measure, you can reduce the distance which the pistol)

    has to travel by taping a block of wood to the pressureplate.Alternatively, you can screw up the large screw which runsdown themiddle of the piston rod by turning the pressureplate anti-clockwisewhen viewed from above.Whenusing the press it is important to make surethat the pulp iscentralized over the pressureplate as repeated failure to do this results ina breakageof the screw which holds the plate and this results in anawkward repairjob .aswell as putting the press out of action!

    FruitAles Inthe Champion?There has been only one occasion reported of fruit flies causing aproblem in a ChampionJuicer. Upondismantling the juicer for cleaning,a Gersonpatient discovered fruit fly larvae inside. This would havehappenedbecausejuice _wasgetting past the oil seal, behind the frontend bell hub. Timely replacement of the oil seal would havepreventedthis from happening. However, this isn't asoff-putting asit may seemasthe larvae actually help to keepbacteria at bay, by munching theirway through any debris.If you havea problem with fruit flies in your kitchen, why not considerthe following:Leavehalf a glass (balloon-type) of port orstrong red wine next to thefruit (andcarrots). You will find that the fruit flies prefer this to fruit andare quite happy to die in the wine! Becausethe wine has no surfacetension they can't get out of the surface and drown. The inward-curvedsides of the glass help towards this.Themoral of this story is to keepyour Championwell maintained andpractice good kitchen hygiene!

If you're feeling creative, you mightlike to buy juice cloth material, by the yard, from National Filter Media.You can then cut and hem them yourself.Useone ormore cloths or bags for the carrot and carrot/apples juices. Aseparate cloth should beused for the green juices.After making the juice, wash each cloth thoroughly under running, coldtap-water. Use a separate brush (such asa washing-up brush)forscrubbing the insideof the cloths, especially the cloth used for the greenjuices. Rinse in tap water (or distilled water) and squeeze them out.Foldneatly and place in a plastic bag. Store in a FREEZER.Beforeusing for the next juice, thaw by putting the cloths in a dish ofdistilled water. Wring the cloths well before using.Tokeep the cloths free of bacteria, aswell asfreezing, they can besoaked in a solution of distilled water and Hydrogen Peroxide (or cidervinegar) for a few minutes (about 1 Y 2 pints of water to one capful ofH202). This doesn't have to bedoneeach time they're used, butwhenever you think they may needit. Don't buy HydrogenPeroxidefrom a chemist shop, asit will contain stabilizers. 6% HydrogenPeroxide (H202) is available from EchoUK.
