David Piquard, Founder and Owner, Maître Patissier (Master Pastry Chef) – Born in Metz in the Alsace-Lorraine region of France, Chef David’s love of patisserie began
in his grandfather’s kitchen, where Grand-père Jules Piquard instilled a love of the French art and science of dessert in his grandson. Decades later, that grandson is now a powerful creative force, wielding 20 years of experience on the French culinary scene in his role as Chief Creative at Gaby et Jules. As a young chef pursuing his executive chef training at at Lycée des Métiers de l’Hôtellerie Raymond Mondon, David was dubbed by his peers “golden hand” – la main d’or – for his natural gift in working with pastry. Inspired to specialize and pursue his passion for creating the most beautiful pastries in the world, Chef David completed his training at the renowned French institutions of Lenôtre and Ladurée. He left an award-winning career in France to pursue his own American dream, when restaurateur Fred Rongier recruited him to become a pioneer of French patisserie in

Pittsburgh, Pennsylvania, first at Paris 66 Bistro and now as Master Pastry Chef and head of the Gaby et Jules, a Parisian-style patisseries located in the heart of Pittsburgh’s East End.
Chef Piquard is known for his exacting standards and unflinching commitment to using the finest quality ingredients available to craft his beautiful pastries. From grinding his own almonds for the flour of his signature macarons, to insisting on the world’s best natural flavorings in their fillings, his commitment to the finest natural ingredients goes hand in hand with the source of his most profound creative and artistic inspiration: a love of nature.
In 2016, Chef Piquard was selected by a panel of XXXX to travel to Alto el Sol, an organic, sustainable cacao plantation in the Peruvian Amazon, a trip that combined these passions. Working with the world’s finest chocolate every day, Chef Piquard gained a new perspective from seeing the cacao beans growing in their raw state. His professional respect for the farmers and cacao experts grew immensely as he saw the labor of love that is required in the time-intensive processes of growing, harvesting, fermenting and preparing the cacao beans. The awe and gratitude he experienced in the beautiful natural setting of their native environment further inspired his work and he continues to express his love for his craft through a panoply of wonderful creations.

In 2011, restauranteurs Fred and Lori Rongier, proprietors of the successful French bistro Paris 66, wanted to share their love of authentic French pastry with the city
of Pittsburgh by investing in a top-tier pastry chef for the restaurant. While traveling in France, they recruited longtime friend and award-winning chef David Piquard to head up pastry operations for Paris 66. His signature macarons soon become a Pittsburgh favorite.
Mr. Rongier and Chef Piquard soon discovered that both of their grandfathers had dreams of opening pastry shops -- dreams never realized due to war, marriage, and

children. Inspired by this mutual connection, and recognizing that Piquard’s talent and training commanded a larger stage, Piquard and Rongier began making plans to open a patisserie. From the beginning, they envisioned a contemporary, gleaming, jewel-box of a shop, just like one that might be found in Paris today on the Champs-Elysées.
In August 2013, after two years of planning, saving, renovating, and dedicated hard work, the Rongiers and Piquard realized their shared American dream when they opened the door of the shiny red façade for the first time to the public as Gaby et Jules Patisseries et Macarons – named for their grandfathers, Gabriel “Gaby” Rongier and Jules Piquard.
A GIFT OF LOVEGaby et Jules is the realization of a dream that spans many generations. The shop’s mission - and its tagline -- is “A Gift of Love”. It is a gift of love given to their families in honor of those who came before, and to the city of Pittsburgh, so that their talents might bring joy to their customers.
