2.Sprinklesaltonthecabbageasyougo. Thesaltpullswateroutofthecabbagethroughosmo-sis. Thiscreatesthebrineinwhichthecabbagecanfermentandsourwithoutrotting. Thesaltalsokeepsthecabbagecrunchybyinhibitingcertainorganismsandenzymesthatsoftenit.Inevermea-surethesalt,Ijustshakesomeonafterchoppingthroughandstuffingthecontainerwithcabbage. 3Tbspofpinksaltisgoodfor5lbsofcabbage.

ChecktheKrauteverydayor2. Thevolumereducesasthefermentationproceeds. Sometimesmoldappearsonthesurface.Thisiscalled“scum.” Skimwhatyoucanoffofthesurface;itwillbreakupandyouwillprobablynotbeabletoremoveallofit. Don’tworryaboutthis. It’sjustasur-facephenomenon,aresultofcontactwiththeair. Thekrautitselfisundertheanaerobicprotectionofthebrine.Rinsethelidoffandtastethekraut.Generally,itstartstobetangyafterafewdays,andthetastegetsstrongerastimepasses. 5-7daysshouldbesufficientforthefermentationprocess.

8. Onceyouarereadytoeatthekraut,putitintherefrigerator. Thecoolnessoftherefrigeratorwillslowdownthefermentationprocess.
