Founded in the province of Reggio Emilia, Italy in 1967, PreGel has become an international powerhouse in the foodservice sector of manufacturing and distributing specialty dessert ingredients and semi-finished goods for artisanal gelato, sorbetto (dairy-free gelato), premium ice cream, soft serve, pastry, and frozen yogurt.

Halal:Halal-certified products have been certified to follow Islamic food preparation and ingredient standards in keeping with the Halal lifestyle.

PreGel base products are quintessential ingredients in powder form for the creation of customized artisanal frozen desserts. Our premium bases provide the necessary foundation to promote optimal consistency, creaminess, scoopability, and texture in gelato, ice cream, sorbetto, sherbet, frozen yogurt, and soft serve.

Offering options for both Cold and Hot Process machines, our bases were specifically designed to achieve the necessary balance of sugars, fats, and solids to meet the needs of all gelato makers. The overall goal of our bases is to streamline production while maintaining the highest standards in all areas of consumer needs including those with dietary restrictions such as dairy-free, wellness, diabetic-friendly, vegan, and additive-free bases.

HOT PROCESS BASES PreGel’s Hot Process Milk Bases are proprietary powdered blends of stabilizers and/or emulsifiers developed with the most advanced formula that is activated by heat. Gelato or ice cream created with a Hot Process Base have sweeter flavor, as the heat also acts as a flavor-enhancer.

All Hot Process Bases must be heated before the mixture goes into the batch freezer. The overall process is quite simple. First, heat the milk in the pasteurizer to 35°C–40°C/95°F–104°F. Next, add the solids, mixed well, to complete the heating phase. Once the temperature reaches 85°C/185°F, cool the mixture down to 4°C/39.2°F and let it rest for at least 1.5 hours. Remove the appropriate amount of mixture from the pasteurizer and add in the PreGel Fortefrutto® or Traditional Paste of your choosing, blending well before pouring into the batch freezer.

HOT PROCESS BASES ARE NOTED WITH THE ICON

COLD PROCESS BASES PreGel’s Cold Process Milk Bases are the answer to gelato makers’ need for a quick method of achieving a greater amount of gelato without compromising taste. The formula for these Bases was designed to eliminate the need to heat the mixture, saving time and money. These are artisan Bases because they still give each gelato maker the option to balance and personalize their recipe to taste. The Cold Process consists of thoroughly mixing all ingredients together, then letting it rest for at least 30 minutes in a refrigerator before processing it in the batch freezer.

Please note that all PreGel Cold Process Bases can be pasteurized if desired.

However, PreGel is now offering a new spin on gelato with Always Fresco powdered bases, the pinnacle of gelato freshness. Consumers can enjoy soft serve gelato fresh out of the machine and still experience the intense taste, texture, and density of traditional gelato.
