After eight years working in the hospitality scene in Melbourne, Liinaa Berry left Australia in 2013 to start her career as a sommelier in the luxury resorts

of the Indian Ocean. The Constance Group of Hotels & Resorts has won many awards of

excellence, including Best Winelist.Maitre Jerome Faure, Corporate Sommelier and Group Wine Buyer is a

dedicated Frenchman who has set up a high level of sommelier training across all resorts and is an unparalled mentor for Liinaa. Two years working in both the Seychelles and Mauritius under such strong mentorship has seen Liinaa

evolve with a special interest in French wines. In 2014, she became Head Sommelier of the Best Fine Dining Restaurant

in Mauritius, the Blue Penny, and led a passionate team working with French gastronomic chef, Frederic Goisset.

In 2015, she was a finalist at the Best Sommelier of the Festival Bernard L'Oiseau where she was trained up by World's Best Sommelier 1989, Serge

Dubs and World's Best 2007, Andreas Larson.She has also created a number of outstanding wine dinners with the likes of

Louis Mitjavile from Tertre Roteboeuf et Roc de Cambes, Alex Gambal from Beaune, Mons Borie from Ducru Beaucaillou, and many more...

Today, Liinaa is in Adelaide as a result of a serendipidous enocunter with co-owners of the Crafers Hotel, Ed and Julie Peter.

They met in Mauritius at the Constance Belle Mare Plage Resort where Liinaa was at the helm of the Blue Penny Restaurant. After a few bottles of

Burgundy, Ed asked her to set up the Wine Room at the Crafers Hotel. Six months later, Liinaa arrived...

Welcome to The Crafers Cellar!The compilation of wines in the Wine Room are a result of a lifetime of

collective wine experiences. Each bottle has a story with many of the wines collected by

Ed and Julie Peter.

Liinaa, as the Wine Director, has also influenced the broad offering that makes up our Wine Room. We now have a comprehensive list of our favourite

wines from the most prestigious vineyards in Burgundy to the more elusive varieties of Corsica.

Our intention is to show the vast landscape of wines with a focus on Australia and France.

Included in the collection are some of Ed's experimental aged Aussies along with all the big names from Bordeaux, with some dating back nearly a hundred years! Renowned publican Brett Matthews has had a big influence

on the Chablis section, while Liinaa has introduced an A-list of top Burgundy producers and showcased the renaissance of Australian Minimum

Interventionist, organic and natural wines, as well astheir old world counterparts.

Our gourmet French Bistro style food is curated by Chef Ben Carli. The dishes will take you to the countryside of the Old Continent.

You can enjoy a typical and delicious Lyonnaise roast pork or a Boeuf Bourgignon.

In this section, you can find the Grandes Maisons or Negociants Manipulants (NM) who buy grapes from growers and make a consistent non-vintage Brut every year as well as

special cuvees and brut vintages on special years.

You will also find an A List of Champagne Growers or Recoltants Manipulants (RM) that make Champagne from their own Domaines, using the same concepts of terroirs as in

Burgundy. These wines are more expressive of their vintage and their soils since they are not being blended with previous vintages. Most of them do not have dosage.

For this reason, some of these soulful and individual wines might deliver a little bit of austerity at first… We normally serve them like we would for a complex white wine, in larger glasses while some might even need decanting. We encourage to enjoy most of

these with food. I have a special affection for Egly Ouriet and Cedric Bouchard.

Egly Ouriet is also known for his elegant dry red Pinot Noir from the vineyards of Ambonnay that are south facing and unusually warm for Champagne. This famous red from a very talented artisan vigneron of Champagne, is assertive and delivers a superb wine for the Pinot Noir lover.

Vouette Et Sorbee RM – Buxières-sur-Arce , Cote Des Bars

Artisan Champagne from the Aube region, certified bio since 1998. Due to its proximity to Chablis, the vineyards grow on Kimmeridgian marls and Portlandian limestone, so the resulting wines have a striking sense of place and a biting minerality. The very low yields make a concentrated powerful wine that needs a princely stage to fully express itself. It went through prolonged vinification in barrel, disgorged ‘a la volee’, zero dosage and use of only native yeast.

I would serve it in large Montrachet glasses. It is a restraint style, stylistically not for everyone. Champagne for grown-ups, for those who want to drink and contemplate. Let us decant this wine for you or open it in advance. And if you love Grower Champagne like me, you will be pleased to know that the producer Bertrand Gautherot was mentored by Anselme Selosse from majestic estate, Domaine Jacques Selosse.

Nv Vouette Et Sorbee - Fidele, Brut Nature 175

Unlike Gautherot's other cuvées, which come entirely from a single vintage, Fidèle includes roughly 5-10% reserve wine (from a perpetual reserve started in 2001). The remainder of the wine comes from a single vintage, in this case '12, which is stated on the back label with an "R" number (R being an abbreviation for Récolte, or vintage)

Burgundy is one of the most famous regions in the world, along with Bordeaux, but it is actually fairly small. It runs 15 miles from Dijon to Lyon and it has 4 subregions : Côte de Nuits, Côte de Beaune (both

are part of the Côte d’Or), Côte Chalonnaise and Le Maconnais. It is four times smaller than Bordeaux.

The wines of Burgundy are displayed in order of appellations situated in the northernmost part of the Côte D’Or which is Marsannay.

As you go down the list, you will leave the limestone escarpment of the Cote de Beaune and enter wine-producing region, Saone-et-

Loire, where vineyards are more scattered, with the wines produced having earlier drinkability. Good spot for good value!

The wines produced in these two regions of the Saone-et-Loire department are going through a revival. There are no Grands Crus here and the wines can be excellent value for money.

Given its warmer climate, the wines tend to be more voluptuous, can be full bodied but the best retain a sharp edge. My favourite is Domaine Valette which has a very distinctive style with an almost, orange-like quality as well as an elusive oxidative salinity that is punchy and refreshing but also, superbly complex.

RIESLINGFrance – Alsace

Alsace seems to be a little unnoticed but did you know that this region has been endowed with the best possible conditions for growing grapes? Protected by the Vosges Mountains, it is a picturesque region blessed with ancient soils and noble grapes.

The Noble grapes are Riesling, Pinot Gris, Gewurztraminer and Muscat. Other grapes are Sylvaner and Pinot Blanc. The region also makes stunning sparkling wines (Cremant d’Alsace), still/dry (Alsace and Alsace Grand Cru) and sweet wines (Selection de Grains Nobles and Vendanges Tardives). Alsace also comprises of 53 appellations, 51 of which are Grands Crus. The Grands Cru wines tend to be textured, aromatic, deep and extremely persistent. This section only covers Riesling. The Wine Summit or Weingipfel 2017 was one of the most memorable wine trips of my life. Not only was it a trip to explore some of the most beautiful

vineyards of Austria but it was also the chosen destination for the ASI (Association de la Sommellerie Internationale) to present the Contest of the

Best Sommelier of Europe Africa 2017.

Vienna welcomed an eclectic group of world-wide sommeliers who came to compete and watch the show. It was a fantastic opportunity to meet passionate

wine professionals of all levels: writers, reviewers, wine merchants, celebrity sommeliers, maître d’s and winemakers. For the record, Latvia was made proud

by Raimond Tomsons for winning the Best Sommelier of Europe that week.

We went to estates dating from 1171, like ancient Schloss Gobelsberg in Kamptal, steeped in history. There was a certain energy about the place.

Other memorable places were in Schonberg, Mollands and Wagram. We also visited the old Roman city of Carnuntum and its ruins.

One of the highlights was the seated blind tasting at Austria’s Best restaurant, and World’s no.10 Best by The World’s 50 Best Restaurant - Restaurant

Steirereck in Vienna. It was hosted by one of my mentors, Willi Klinger, CEO of Austria Wine.

It was good to see an Australian wine in the Chardonnay bracket, the Leeuwin Estate Art Series.

From this heartfelt trip, I came back to Australia and looked around for the gems that I discovered so I could share these delectable wines with you.

2016 Gut Oggau ‘Weiss’ Family Reunion Range Burgenland 135

This is a blend of Gruner Veltliner, Weissburgunder, Gewurtztraminer and Welschriesling. It is a limited special edition from biodynamic producer Gut Oggau, known as top tier for wines made as naturally as possible in Austria. This comes from a very small harvest from a difficult vintage.

The wine is medium bodied, and really evokes the word ‘natty’ which is the term coined by the emerging generation of natural winemakers and drinkers for ‘natural’. There is a bit of funk on the nose but with some time, beautiful aromas of acacia and honeywater develop. On the palate, you immediately taste the chalkiness and engaging acidity that unwinds, focused in its direction, releasing plenty of spice along the way.

Umathum practices biodynamic principles and boasts beautiful insecticide-free vineyards since the 1980s. They strive to produce the purest wines from some of Austria's best soils. The Beerenauslese is a blend of Chardonnay and the indigenous grape variety, Scheurebe. This terrific value dessert wine has good weight on the palate, with some tropical notes of pineapple, exotic fruits, apricot marmalade and some honey. You don’t need to spend that much to enjoy the pleasures of botrytis. The Cheese platter is waiting!

What a fantastic wine region the Val de Loire is! I believe it is the most exciting wine region in the world because of the diversity it offers, the price range and the styles of wines that are emerging from

its terroirs and from the hands of its vignerons. Did you know that the region produces more white wine than any other French region, and is second only to Champagne in sparkling wine production?

You can find a wide range of dry table white and red wines designed for either immediate easy consumption or for ageing, sparkling wines made from Methode Champenois (Crémant de Loire) and

Ancestrale (Petillant Naturel), long lived Botrytis and straw wines to fresh exciting roses produced from a range of red grape varieties like Cabernet Franc, Gamay, Grolleau, Pinot Noir.

The Loire is divided into four main regions. Each sub region has several appellations, expressive of their micro climate and grape variety, but also offers a lot of declassified wines from producers who pursue their own creativity by making incredible wines without necessarily complying to the strict

rules of the AOC.

It is also a region that leads in biodynamic practices with renowned vignerons like Nicolas Joly, who has become a highly respected and cult producer whose ethos is followed by many producers

worldwide.

It is also a stamp for great value wines, unlike Burgundy or Bordeaux, where prices can break the bank. Here, you can find pleasure of Grand Cru quality for less than $200 a bottle. The best and true way

to enjoy these wines is to have an understanding of its diversity and to locate the gems.

Imagine from the coastal Pays Nantais where you can drink fresh Muscadet and eat oysters all the way to the Centre, which isn’t far off Burgundy, where you can find the famous Sancerre wines, how varied

the soils are and how intrinsically different the wines can be. Two of the most important being the Touraine region where you can find long lived Chenin Blanc of outstanding quality and Anjou Saumur

for rare Botrytis wines and the home of Savennieres AOC.

Blend of the noble grapes of Alsace, from the high density planted, low yield Altenberg vineyard, with around 100gm residual sugar per litre. It is a field blend, which means the grapes are co-planted, picked together and co-fermented.

This makes a wine that calls for an unforgettable moment at the table, a vinous experience. It’s silky-like satin on smooth skin. There is an impression of endless caress further than the eye can see, revealing aromas of ripe peach, honey, pudding, sultanas, poached figs and quince, cloves and some vanilla. There is a sweetness that resonates strongly at first encounter on the palate but, as the wine unwraps, it leaves with a superb freshness and a distinct mineral smack that makes the mouth water for some cheese; preferably with a smooth and tangy Munster Gerome. Classic!

Roussette De Savoie - The Mountain Wine If you like Pinot Gris but would like a small change from the routine, then give this a try. The wine comes from the Alps region of the Savoie bordering Switzerland. It has been coined as ‘mountain wine’ by the climbers who drink plenty of it after their daily hike for its light and refreshing qualities.

Roussette de Savoie is the name of the appellation and Altesse is the grape variety. It is a very 'smashable' and light white wine, with a particular alpine freshness that makes this all too easy to drink.

This is a great old-world alternative to a lot of the Adelaide Hills Pinot Gris/Grigio! Pick the Domaine Veronnet if you want a Grigio style as it is super light and crisp.

With Dupasquier, unlike a lot of producers in the Savoie who vinify quickly in steel tanks, he hand picks and leaves his wines on fine lees in old and neutral barrels until the next harvest, then another 18 months in bottle before release. This wine is more voluptuous than Domaine Veronnet.

The 2012 is drinking really well right now: lush, fruity pear, white flowers, textural elements, all sustained by good acidity. Great wines for Raclette or Tartiflette!

Bourgogne Aligote - Burgundy

The other white grapes of Burgundy are Aligote and Pinot Blanc, with much more Aligote around. Let’s say that Chardonnay, being the noble grape, is the golden boy and Aligote the red headed freckled step child. It rarely gets any attention. But if you like light, high acid, crisp wines with simple fruit that can be nervy and super refreshing, then perhaps, give this a try.

And it is also worth noting that prestigious estates like Domaine Coche Dury, Leroy, Ponsot, Roulot and Arnaud Ente proudly work with this variety as it is known to carry a precise terroir expression.

LOIRE ALTERNATE VARIETALSClos Du Tue Boeuf – Les Freres Puzelat!

The wines produced from this estate are made as naturally as possible. As a matter of fact, the two brothers Jean Marie and Thierry are known to be one of the leading winemakers of the natural wine movement in France and have a loyal following worldwide.

Their philosophy is to be gentle in their vinification to let the wine express a sense of where it comes from, a unique personality and of course, a style that belongs religiously to the minimum intervention approach. The textural and aromatic component of the wines are indeed very much a Puzelat taste. For their red wines, please look into the Red Alternate Varieties Section on page 86.

History Fact: Since the Middle Ages, there have been records about the lieu-dit “le Tue-Boeuf” and its excellent wines which were enjoyed by the local nobility and the kings of France. The family name Puzelat is mentioned in 15th century documents. (www.puzelat.com)

The cuvee Frileuse is a blend of equal part Sauvignon Blanc, Fiè Gris and Chardonnay aged on its lees in old Burgundy barrels. It is bright with a hint of minerality, notes of verbena and honeysuckle. As you sip away, you will enjoy notes of pear, quince, spice and lime flower. There is also a certain density on the palate, almost cashew-like but is balanced remarkably well by the citrus freshness.

I discovered this wine thanks to a visit to restaurant Momofuku Seibo in Sydney in September 2017 and friend, Ambrose Chiang, who was the head sommelier at the time, offered me a glass with the Fish Head curry. It was one of the most unforgettable pairing I have ever experienced.

From a microscopic production, this is a late harvest wine but it is not sweet as it is fermented until dry; a very unique wine indeed. Full of subtle stonefruit and citrus notes counterpointed by oxidative salinity and savouriness. You can also enjoy it with cheese, like you would with the oxidative wines of the Jura. Think Vieux Comté, Chevre and even our delicious Chicken Liver Pate, as you will notice a bit of residual sugar in the wine.

The Jura - Savagnin

If you want to have a taste of some amazing idiosyncratic wines, then Jura is a region you need to delve into. The varieties other than Pinot Noir and Chardonnay (Melon d’Arbois), are Trousseau, Poulsard and Savagnin. The wines of the region are very unique and I would urge anyone who enjoys a bit of adventure to be tempted to try.

Vin Jaune

Vin Jaune is the first thing most people think of when they hear about Jura or the grape variety Savagnin.

Vin Jaune happens when 100% Savagnin wine goes in barrels and stays there for six years and three months. Instead of topping the barrels with more wine like you would for a still dry wine, the winemaker chooses to leave the barrel alone. This means some wine evaporates, leaving room for the rest of the wine to be exposed to a more air and develop a ‘voile’ above the surface, similar to the flor in Fino Sherry. The wine, therefore, has extended contact with oxygen but does not spoil as it is protected by its flor.

After its long stay, it gets bottled in unique and traditional Jura bottles called Clavelins (62cl bottles).Visually, the colour is an intense gold, it is bright and clear. The aromas remind me of dried orange peel, almond, stone fruit, washed rind cheese; it is nutty, spicy with a pinch of refreshing sea-spray salinity both on the nose and the palate.

It is often drunk with some aged Comte cheese or you can have it with a spicy Indian chicken curry. It is an experience to live at least once, and who knows, you might really like it.

56The first time I heard of the variety Gamay, it was talked about as the lesser Pinot Noir and was very much associated

with the Beaujolais Nouveau style. A very simple wine. I did not think much of Gamay until I found myself a bottle of Jean Foillard. Now, I do not associate Gamay with Pinot Noir. Gamay is Gamay, an amazing variety that makes so many hearts

happy… and pockets too!

Below is a selection of the various appellations starting from the entry level Beaujolais Villages to the Beaujolais Crus. The wines can vary in style depending on producers as well as AOCs.

Some of the wines are close to a Pinot Noir, in weight and colour while others are closer to a Syrah from the Rhone, spicier and meatier. There are ten crus in the Beaujolais region.

One of the greatest pleasures in discovering wine with a sense of place is to go through the vineyards one by one, drive your way from the top starting with St-Amour, Juliénas, Chénas, Moulin-a-Vent to Fleurie, Chiroubles, Morgon, Régnié, Brouilly, and Côte de Brouilly. I do not feature all the Crus here but you can enjoy most of them, especially my

two favourite; Morgon and Fleurie.

Nebbiolo is like a Pinot Noir but with more attitude. It is known for its incredible structure, firm tannins and its fragrant expression of tar and roses. It is one of the most long lived red wines that can exist; in the same league as high quality Bordeaux, Burgundies and Riojas.

What makes this grape variety even more interesting is its interpretation in the new world. You won’t have to sit down with the intellectual Gertrude Stein this time, for a compelling traditional Barolo conversation; you can just pick an Adelaide Hills Nebb and imbibe freely.

Thanks to the winemakers down under, who are making wine for you to enjoy now with less time in oak, no oak sometimes, gentle extraction, younger vines, different terroir and climate altogether – but with certain similar attributes from its old-world counterparts, you can now drink Australian Nebbiolo if you want something with more tannins than a Pinot Noir.

Shobbrook Wines – Barossa ValleyThe Barossa Valley has been known to produce the quintessential Shiraz wines of Australia for a long time – the product of a warmer climate resulting in jammy and ripe wines that are often very concentrated. Fortunately, some winemakers have found a way to be innovative and vinify wines that are light, fresh, smashable and tasty with a low alcohol content, but still maintain a good aromatic profile in the wines.

Tom Shobbrook is one of these genius vignerons who is remodelling how we interpret wine regions in Australia. His Tommy Ruff selection is a range of wines made entirely for the joy and fun of drinking with your friends. Essentially, he is providing an organic, delicious drink to Australians to quench their thirst, especially in the hot summer days.

It is important to recognize that wines are not just the end product of the expected varietal qualities of a grape – a wine made from Shiraz, can be as light as a Beaujolais Nouveau or as robust as a classic South Australian red. Thanks to the emerging forward movement in the industry, wines are not about grape variety so much anymore. It has become more about style. The Poolside Syrah is labelled Syrah Barossa Valley but once you pour it in your glass, you will be quite surprised to see that the wine is as pale as a Rosé.

When I arrived in Adelaide in November 2015 to start my new job, Director Ed Peter opened the Yarra Yering Agincourt Cabernet Merlot 2005 at a tasting where he was going to introduce me to some of the local winemakers. I

was very impressed with the wine and how well it stood against the First Growth Bordeaux. What strikes me about Yarra Yering is that it makes almost all the wines that I love to drink. From Sauvignon Semillon blend, to Chardonnay and Pinot Noir, to Shiraz and Cabernet Blends, there is an important influence of our favourite

regions like Burgundy, Rhone and Bordeaux. I find them particularly interesting to use during our sessions of blind tastings of new world versus old world.

Ed and Julie have a special relationship with Yarra Yering. I have asked Ed to share their story here:

“At the beginning of the 2000’s, Julie and I had moved to Hong Kong & one night in the Hong Kong Country Club, I came across a YY Pinot Noir from 1999 – we were with a group of friends and decided to try an Aussie Vs a Frog

Pinot. We looked at a 1998 Clos Vougeot form one of the top growers vs the YY – blind – and all twelve people at the dinner thought the YY was the Clos Vougoet (as we assumed that was going to be the better wine). The YY blew us

away, and doing the same blind tasting against other frog wines over the next few months had the YY always winning. This was the beginning of the love affair.

In 2004, I decided to visit YY with a group of fifteen colleagues. We had been to two or three other cellar doors earlier in the day, so when we arrived at YY we were an hour late, and even worse, we showed up in a bus!

Bailey Carrodus stormed out of the cellar door when we arrived and told us to bugger off as we were in a bus (he had a no bus policy). He was really angry when he realised that we were the people that had not showed up

on time for our appointment.

There was no way he was going to show us his wines. I then said, could I buy a couple of cases of the Pinot and

explained how I found it in HK and had arranged this whole trip just to come to YY. A bit of flattery never hurts and he agreed to let the group try the Pinot.

Our try led to 20+ cases of the Pinot being sold to the group – so he agreed to let us try the Dry Red 2 with a similar

result. Which led to the Dry Red 1 and Agincourt (which blew everyone away). In the end, about two hours later he had sold a rough 100 cases of wine.

Later that evening with 4 wineries visited and cases of tons of different wine – the whole group only wanted to have

the Agincourt, and again after the second day of tasting everyone just wanted to go back to the Agincourt. The 2005 is still one of my favourite wines of all time…

After that, once or twice a year I would drop in on Bailey and I would buy wine and we would go to lunch and talk about

French wine and Aussie wine and have a great chin wag.

In 2007, at one of these lunches he floated the idea of me buying YY – I remember being very shocked at the price: double digit millions.

He passed away about 6 months afterwards and as the financial crisis unfolded, YY dropped from my thinking – until one day in October 2008 when I got a phone call from one of the executors of the estate asking if I was putting in a

bid for YY. I said, I didn’t think so – until he said: “Bailey really wanted you to have it"He thought you would respect it. Please put in a bid.

A bit later on that week I was at a charity function and bumped into a friend – Richard Megides and mentioned that I was going to put in a bid. He then said, “oh it is for sale – it’s my wife Arianne’s favourite wine – I’m going to outbid

you!” Needless to say that kicked off a bit of an argument which ended up in us agreeing to do it together!!!!

So goes the tale!”

A blend of Pinot Noir and Shiraz, could it be the best of both worlds? I have asked talented winemaker Sarah Crowe, awarded Halliday Best Winemaker of the Year in 2017. She has, not only introduced the Pinot Shiraz blend to a

strongly established winery but also the screw cap closure. She tells us more about these two major changes here:

“This wine was created in part due to my time Winemaking in the Hunter Valley but mostly because I wanted to give people permission to buy and drink Yarra Yering. Most often our wines are special occasion wines, bought by wine

collectors who wait patiently for many years before they find the right time, occasion and people to share their precious bottle with. The style of the Pinot Shiraz is very different to the rest of our range being reflected in the name

Light Dry Red it’s highly aromatic and juicy with no new oak used, it is made for early consumption and frivolity.” As for the introduction of the screw cap, which is a fierce ongoing debate in the wine industry in Australia, she says:“The time and resources along with passion and enthusiasm that go into making our wines are enormous but none of that matters if the wine is spoilt and someone’s occasion is ruined because the closure did not perform as it should. I

no longer wanted to talk about our wine being ‘a good bottle’, they should all be good! Screwcap makes that possible. I think you choose screwcap with your head (technical) and cork with your heart (emotional).

My enthusiasm for screwcap is matched by Ed’s for cork and eventually we agree to disagree on this one. Compromise came in the form of continuing to produce some cork for the export market”.

The DRY RED NO 2 series is mainly Shiraz blended with some Viognier, Mataro and Marsanne. The ratio varies according to vintages. If I have to pick my favourite wine from the Yarra Yering range, it would be this cuvee. I think the blend works exceptionally well.

It is a wine that exudes such sensuality! The aromatic component of the Viognier and Marsanne, plus the texture of Mataro with the spice of Syrah makes a well-balanced,

complex wine with an incredible suppleness. The tannins glide on the palate like a ribbon of silk but also offer enough structure to make this a fine wine. Medium-bodied, it is a

dignified example of cool climate Australian Shiraz, with a good amount of concentration, fruit purity and elegance.

DRY RED NO 1 is a Bordeaux style blend of Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. Coonawarra and Margaret River can probably vie for the leading regions for quality Cabernets but Yarra Valley is equally as important if you consider the wines from

estates like Yarra Yering and Mount Mary.

I do have a great appreciation for the Yarra Valley as a region and have visited many times. I have to admit that I personally prefer the Cabernets here than anywhere else in Australia.

I find them really well balanced, not as ripe, not as overly rich and with a fine grain and superb black fruit characters that stay well tucked in the overall structure.

Grenache also known as Cannonau, Garnacha, Garnatxa or Grenache Noir has long been a blending component for the famous Grenache Syrah Mataro (GSM) blends. It was too long ignored or regarded as lesser. It was also the inferior grape in both Rioja and Navarra, where

Tempranillo reigns. But today, we are seeing a revival!

They say Grenache delivers what Pinot Noir promises. Indeed, the first thing you will notice with a 100% Grenache is that it can be almost as light in colour as a Pinot but the intensity on the

nose and palate is much more overt and more often readily enjoyed than the latter. Grenache likes a warmer climate; it can make bold wines and can be gutsier when paired with

Syrah and Mourvèdre, but can also be as elegant as a Pinot, depending where it is from and how it is handled by the winemaker.

In the Barossa and the famous McLaren Vale’s Blewitt Springs, I have come across some stunning examples of wines that exude these typical aromas of freshly picked raspberries,

candied cherries, sometimes orange rind, garrigue, lavender and herbs like thyme or oregano and tobacco. Such a pleasure to drink, hardly ever too complicated to understand.

In the Wine Room, we have wines that celebrate this grape in all its splendour, ranging from youthful, vibrant examples like the Fugazi Grenache from Ochota Barrels to more aged and

revered wines like Chateau Rayas!

This estate can be classified as fifth growth but there is no doubt that the quality of the wine exceeds its classification. It is one of my top five favourite wines from Bordeaux.Owner Alfred Tesseron says: “I am not a winemaker. My team members are not winemakers either. If you ask any Sommelier, there is always this one wine that got them into wine. Mine was Laurent Vaille’s cult wine Domaine de la Grange des Peres.

It was April 2014, I was working at the Leading Hotel of the World, Constance Lemuria Resort in the Seychelles. I was a commis sommelier and only finding my way with wine. There were more

moments of hardship than pleasure, as the task at hand was monumental. A five-star venue with a 2000-bottle wine list and a huge cellar – I was a little bit intimidated and still in doubt that,

perhaps, this job wasn’t for me… but then, I tasted La Grange des Peres!

It was my birthday, my boss Cedric Jacob surprised me with a blind of the 2010 red which is a blend of Syrah with some Mourvedre, Cabernet Sauvignon and Counoise. I remember this

moment like it was only yesterday. Even though, I was too inexperienced to know anything about the wine during the blind tasting, I knew I loved it and I knew how to describe the emotions I felt,

rather than the technical notes. Then, I had an epiphany.

I realised that knowing a lot about wine meant nothing if, in essence, we could not sell it, share it, talk about it in such a way that people would listen to us, engage and share a great time.

My job was to make people dream.

By means of a bottle of wine, I could entertain them as if I was on a stage and I was performing.I understood that I could use poetry and playfulness as my approach to wine service.

Cedric Jacob encouraged me knowing very well that he was my main influencer and kept on mentoring me very strongly. Until today, I have found no one as pertinent as him, as eccentric, as passionate and as crazy! I started looking at wine, not like a task anymore, but like an adventure.

For the next month or so, I sold all the stock we had of that wine. Mr Jacob kept opening new bottles for the team to try and every time, I was falling in love with a new wine, a new producer

and a new style.

I took these new discoveries to the restaurant and, every day, I was doing my show. I was unstoppable! That, ladies and gentlemen, was my debut!

Attaining cult wine status is not an easy feat, and certainly not when the odds are stacked against you. Laurent Vaillé has achieved what others thought impossible. Having spent his early career training under such masters as Jean-François Coche-Dury (Meursault), Gérard Chave

(Hermitage), and Eloi Durrbach (Domaine Trévallon, Provence), he settled in the l’Hérault of the Languedoc and purchased his own land in 1989, near Aniane. In this area of the region, where the limestone is hard and abundant and the soil poor, no one thought he would ever have any success

planting a vineyard on his plot of choice.

Though it took dynamite and bulldozing to clear twice the amount of limestone, boulders, and glacial scree that is found in neighboring vineyards, he found a great terroir for his grapes. He did

not have to look far to find ideal bud wood, either.

He sourced his Syrah, Marsanne, and Roussane cuttings from Gérard Chave and his Cabernet from Domaine Trévallon. Laurent’s South-facing vines get very low yields. The simultaneous

restraint and power of his wines makes them ideal for ageing.

As for the skeptics, they are currently eating their words. His area of the Languedoc has since become known to produce some of the greatest wines in the region, with the new appellation of

Terrasses du Larzac, of which he is technically part, reaping attention and praise. In his words, “Nature gave us a partition of land. It is up to us to interpret it.”

Let me assure you that when this wine is in your glass, it becomes a moment to cherish very dearly. No one says it better than on the website, so I thought it worthwhile to add some information about the winemaking behind this fine wine.

‘After its fermentation, its goes through what is probably the world's longest ageing of a red wine, almost 10 years between wood and bottle. The different stages take place in different types of barrel: American and French wood, new and used 225-litre barrels, 20,000-litre vats, each batch is what determines the type of wood and the time spent in each container.After the stage in the wood, it is aged in the bottle to complete a long and complex ageing process. It will normally spend 6 years in wood and three in the bottle.

The different elements in its preparation are fine-tuned in the search of the master line that has guided the wine. Único remains true to a clear and well-defined style, with an inimitable character and style; elegance, strength, ageing capacity... One of the rarest wines in the world. An elixir crafted only in 1947, 1990, 2011 and 2015. An exquisite Chenin Blanc with 230grams of residual sugar as a result of 70% Botrytis, able to evolve over the course of 100 years.

Philippe Foreau, a true Jedi Master of the highest order, has devoted his life to his land, and when he speaks, it is with an authority and clarity afforded only to those who have lived and breathed this experience of understanding nature’s way for an entire lifetime. I really value his work and this Goutte d’Or which literally means Drop of Gold, is one of the most precious nectar you can find. This is a very special wine and needs more time in bottle at this point - we can only dream for now.

Jacquesson’s Cuvée 739 Extra-Brut is based on the 2011 vintage and 31% Reserve wines, all from Grand and Premier Cru sites in the Côte des Blancs and Vallée de la Marne. The 739 is an assemblage of 57% Chardonnay, 21% Pinot Noir and 22% Meunier, all fermented with indigenous yeasts and aged in foudres. The unfiltered wine was disgorged in July 2014. Very fine perfume incorporating warm bread aromas, citrus pith and mixed candied citrus peel, dried apple, wet slate-mineral-like wafts. It’s got velocity in the palate, chalky, edgy, crystalline, more ‘mineral-like’ flavour and feel, set within the frisky tang of fruit and whoosh of firm bubbles. Really easy to drink, has a succulence in all the mix of things. Great!

‘No good wine is made without beer’, says all the winemakers during vintage in the Adelaide Hills! At the Crafers Hotel, we are proud to be a pub in a wine region and a reliable water hole

for all our locals and visitors. We offer an eclectic ever-changing list of beers on tap featuring as many small breweries as we can.

We are such passionate of the hooch that we have opened our own brewery up the road, the Uraidla Brewery attached to the

Uraidla Hotel, also owned by our Directors. Local young brewer, Oscar Matthews with Head Brewer Greg Ryan, have created

our very first beer called the Third Eye Pale Ale. Oscar has worked with some of the leading brewers at Pirate Life but also, has done a few stints in California working at SLO Brew, which is also co-owned by the Directors. Greg Ryan is the infamous

publican of the Hills and the Guardian of the Kegs.

You can also enjoy all the standard ales, especially our favourite knock-off at the bar – the Coopers Sparkling Ale in a longneck!

Trois pepins is made by Methode Ancestrale with indigenous

yeast and from old orchards; using ancient varieties namely Vranja quince, Maude pear and Pomme de Fer apples. More than 3 years old now, Trois pepins is dry and crisp with a very fine mousse, tres refreshing with a biting acidity balanced by the fruitiness of the pears. Tomme cheese is probably one of the best pairing here. Enjoy!

Paloma 24 This is Tequila wearing a pastel pink dress in a summer dream. Two shots of Artenom Bianco, grapefruit juice, Agave nectar and dash of soda served on ice and a grapefruit wedge. Zippy!
