Tequila Take a seat and have a read we’re gonna take some time to talk about tequila and why its great. If that’s not your jam read no more and just order any one of these fine nectars. This is our core range of tequilas with plenty more behind the bar. Tequila was first made when the Spanish, thirsty after all their conquering, had run dry of their brandy supplies and began distilling an Aztec broth made from fermented agave. Agave is a type of succulent that takes about 8 years to mature! There are many varieties of agave but only Blue Weber agave may be used to make tequila. The town of Tequila is where the first batch was made and by approval of the King of Spain the Cuervo family was given permission to start producing the first commercial quantities of tequila. From small beginnings tequila has grown to become a highly sort after tasty delight sipped, shaken, stirred and shotted there’s no wrong way to enjoy it. One of the best things about tequila is that no matter how long it’s aged for, it has fantastic flavour profiles that suit everyone. BLANCO tequila is the traditional way most Mexicans enjoy their national spirit. It can only be aged for a maximum of 60 days. It’s spicy and full of metaphorical beans, Blanco is the hyperactive toddler of tequila. REPOSADO means rested and can sit in a barrel from 2 months and up to no more than 12. Spending a little bit of time in a barrel means it usually mellows out a bit and gains some caramelising qualities. ANEJO means aged and that it must spend at least 1 year in a barrel. After all that time warming up and chilling out, Anejo’s are usually a nice shade of gold. Smooth and often sweeter than the others, Anejo should be sipped real slow. Mezcal Mezcal is like the granddaddy of Tequila, it was made first and usually has a bit more kick to it. Mezcal doesn’t have to be made using blue agave and is produced in different regions of Mexico. One of the major differences between Mezcal and Tequila is the agave for Mezcal is smoked rather than steamed. Using giant fire pits the agaves are roasted imparting a certain smokiness to the finished product.
