ELABORATION
Elaborated from a carefully grape selection with higher polyphenol load from selected strains each year, source of little production and harvested during the night at its optimal moment of maturation. Blend is carried out once the barrel ageing is finished in order to look for the best assembly. Temperature fermentation control between 77°F and 82°F (25° - 28°C). Minimum ageing of 12 months in american and french oak barrels. Rest in bottle during 12 months in the stillness and calmness of our cellar.
GASTRONOMYGood pairing with cheese, meat, stews and hunting meat.
SERVIC E 61° - 65°F (16° - 18°C).
PRODUCTION Limited, 15.000 bottles.
TASTING NOTES
Intense cherry red colour with purple undertones, clean and shine. Deep intensity roasted aroma, cacao, ripe red fruits and spices aromas flavours, open gradually towards new other nuances.In mouth it emphasizes a perfect assembly between wood, cacao, roasts and vanilla with red fruits. Very long well balanced tannin, giving rise to an extraordinary, pleasant and delicious wine.
