Julep Family

Your choice of spirit, mint & sugar

From £12.00

The origins are clouded and may never be definitively known. The first appearance of a “mint julep” in print came in a book by John Davis published in London in 1803.

Sour Family Your choice of spirit, lemon juice, sugar, egg white

From £12.00

Appearing in the early 1800s the sour, and in particular its “whisky” incarnation, became one of the cardinal points of American drinking from roughly the 1860s to 1960s.

Daisies, Fizzes & theCollins FamilyDaisy: Your choice of spirit, tac grenadine sYrup, lemon juice, seasonal fruits

Fizz: Your choice of spirit, simple sYrup, lemon juice, egg white, soda water

Collins: Your choice of spirit, simple sYrup, lemon juice, soda water

From £12.00

In the early 1800s the mix of sour with fizzy water was born. Was it a Collins? A Daisy? A Fizz? Eventually, each of these names would be applied to its own class of drinks, all broadly similar but nonetheless possessing the small, idiomatic differences that are abartender’s delight.

Bijousipsmith vjop gin, cocchi torino, green chartreuse, orange bitters

— £12.00

Bijou, meaning “jewel” in French, is said to have been invented by Harry Johnson. This cocktail is called Bijou because it combines the colours of three jewels: gin for diamond, vermouth for ruby and chartreuse for emerald. An original-style Bijou is made stirred with ice as Harry Johnson’s 1900 “New and Improved Bartender Manual” states. Then “mix well with a spoon and serve.”

Some cocktails may contain egg white and traces of nuts. Prices include VAT. A discretionary 13 ½ % service charge will be added to your bill.

Knickerbocker a la monsieur

Zacapa 23Yrs, cointreau, tac raspberrY sYrup, lemon juice

— £15.00

First listed in 1888 by Harry Johnson in the “New and Improved Bartenders’ Manual”. “Father Knickerbocker” was the allegorical patron saint of New York City and generations of native New Yorkers claimed kinship to him.

Hanky Panky tanqueraY 10 gin, cocchi di torino vermouth, fernet branca

— £15.00

The recipe first featured in the 1930 “Savoy Cocktail Book”, but the actual formula dates back to 1893. Ada Coleman, who created the cocktail, was the face of the Savoy bar during this era. At the same time toiling out back in the dispense bar, was a young, un-assuming Harry Craddock.

Royal Bermuda Yacht Club banks rum, cointreau, lime juice, tac falernum sYrup

— £13.00

The Royal Bermuda Yacht Club was established in 1844, largely by officers in the British Army 20th Regiment, stationed in Bermuda. The drink is very simple and an early example of a tiki drink.

Champagne Cocktail remY martin vsop, brown sugar, angostura bitters, champagne

— £15.00

The first evolved cocktail on record, but the record is silent as to who came up with the idea of replacing the spirits in a cocktail with Champagne. Its first appearance was in San Francisco in 1850 and it is pleasant to imagine Jerry Thomas laying out a round of these for a party of black-fingered sons of toil, as they poured the gold dust out on the bar.

Brandy Crusta remY martin vsop, cointreau, lemon juice, sugar, angostura bitters

— £12.00

Crustas were a fancy twist on the basic cocktail created by Joseph Santini, who opened the Jewel of the South saloon in 1852 on Gravier Street in New Orleans. Many authorities on the history of drinks believe it is the progenitor of the mighty Sidecar.

the ForD sipsmith vjop, cocchi americano, dom benedictine, orange bitters

— £11.00

Dating from 1895 and introduced in George Kappeler’s “Modern American Drink” that year, the Ford Cocktail definitely predated Henry Ford’s rise and that of the horseless carriage that bore his name. It is possible the drink was named for Malcolm Webster Ford, famed champion athlete, journalist, and great-grandson of Noah Webster.

Brooklyn bulleit bourbon whiskY, drY vermouth, amer picon, maraschino liqueur

— £12.00

The Brooklyn is one of five cocktails named for the boroughs of New York City, along with the Bronx, the Manhattan, the Queens and the Staten Island Ferry. It resembles a Manhattan, to which it is often unfavourably compared. It largely fell into obscurity after the end of Prohibition, but experienced resurgence in the 1990s.

Appeared in Harry Johnson’s “New and Improved Bartender’s Manual” of 1882. “East India” was named not for the eastern part of India but for all of it and more. The English holdings were known as Hither India and Further India; “East Indian” was the cocktail of the British Raj, rulers of Queen Victoria’s East Indies Crowd Colonies.

The basic trunk from which all other Cobblers branched. The Sherry Cobbler was the afternoon drink of Charles Dickens and we like to imagine him drinking them at The Arts Club in 1863.

“This wonderful invention, Sir …it is called a Cobbler. Sherry Cobbler, when you name it long; Cobbler when you name it short.”From Martin Chuzzlewit - Charles Dickens 1844

It is widely accepted that the Martinez had direct influence on the creation of the Martini. In 1887, the professor Jerry Thomas put it into print. And it was Thomas who is credited with creating the sweet drink while working in California for a patron travelling to Martinez.

Sazerac

Your choice of cognac or rYe whiskeY, absinthe, peYchaud bitters, sugar

— £12.00

The history of The Sazerac is so intricate. In1850 the Sazerac Company of New Orleans acknowledged the creation of this drink and said it was served at the Sazerac Coffee House in the French Quarter. The potion combines whiskey, absinthe and Peychaud’s bitters and it was Peychaud himself who is credited with serving it as early 1838.

red wine, oranges, wholenut, cloves, ginger, cinnamon, star anice, nutmeg, vanilla

£11.00

Mulled wine dates back to Roman antiquity, but it wasn’t until the 14th century that the mix of wine, fruit and spices gained its name, from an Old English

word meaning “muddled.” While the word “muddle” is most commonly used today to denote a generally confused state, in its original meaning, that confused state was brought about with alcohol. It is thought that the process of mulling wine

was first employed as a way to save wine that was about to spoil.

In medieval times these wines were called Ypocras or Hipocris, named after the physician Hippocrates. They were thought to be very healthy, and indeed, with wine

at the time being far more sanitary than water, these heated drinks probably did keep people healthy through the cold winters.

Moving forward to the 1500s, cookbooks listed methods of mulling “Clarrey”, or Bordeaux. Recipes involved honey, cinnamon, cardamom, galingale and of course

French wine. Mulled wine was a favourite in Victorian England, and Negus - a type of mulled wine - was even served to children at their birthday parties.

Today, mulled wine is a staple at many holiday parties.

Charles Dickens gets the credit for elevating mulled wine into a traditional holiday drink. While mulled wine appeared in several of the beloved novelist’s

books, it was its appearance in his popular short story, A Christmas Carol, that sealed its place in Christmas culinary history.
