The gas production process occurs during dough mixing and rapid because baking soda mixed dough should be baked. Baking Soda (Soda Cake) mixed with other ingredients during last been throughly blended before baking so that when baked gas produced at the time of mixing is not much missing.Baking Powder is Sodium Bicarbonate (baking soda) that are mixed with acid and a drying agent (starch). Baking Powder 2 types, they are single-acting and double acting. Single Acting activated when exposed to liquid (when mixing) because it was after mixing the dough must be baked. Saat Baking Soda tercampur dengan cairan dan bahan bahan yang mengandung asam (Yoghurt, coklat, susu, madu dll) maka akan menghasilkan gas karbondioksida yang membuat kue mengembang. Proses penghasilan gas ini terjadi pada saat pencampuran adonan dan berlangsung cepat karena setelah baking soda dicampurkan adonan harus segera dipanggang. Baking Soda (Soda Kue) dicampurkan terakhir pada saat bahan lain sudah tercampur rata sebelum dipanggang sehingga pada saat dipanggang gas yang dihasilkan pada saat pencampuran tidak banyak yang hilang.Baking Powder merupakan Sodium Bikarbonat (soda kue) yang sudah dicampur dengan asam dan bahan pengering (pati). Baking Powder ada 2 jenis, yaitu satu aksi dan dua aksi. Satu aksi diaktifasi pada saat terkena cairan (saat pencampuran) karena itu setelah pencampuran adonan harus segera dipanggang. Sedangkan dua aksi pada saat pencampuran adonan, gas yang terbentuk mulai muncul tetapi mayoritas gas terbentuk pada saat suhu adonan meningkat yaitu waktu dipanggang. Karenanya adonan tidak masalah jika harus menunggu sebelum dioven.Semua bubuk pengembang roti mengandung sodium bikarbonat (seperti baking soda). Tapi baking powder juga mengandung dua asam . Salah satu asam ini disebut monocalcium fosfat . Monocalcium fosfat tidak bereaksi dengan natrium bikarbonat ketika dalam keadaan kering . Tapi begitu baking powder diaduk ke dalam adonan basah atau adonan , dua bahan mulai bereaksi , melepaskan gelembung CO2.
