SAUVIGNON BLANC Origin Leyda Valley Variety 100% Sauvignon Blanc Terroir Soils of volcanic origin, formed from igneous rocks, both volcanic and intrusive. The soils are clay loam, thin, with good drainage and very low fertility in the upper profile, followed by a subsoil of decomposed granitic origin, which contributes a great variety of minerals. The Pacific Ocean (14km away) has a great influence; morning fogs, coastal winds, moder- ate temperatures in the summer months, which vary between a minimum of 6ºC-12ºC and a maximum of 23ºC-24ºC. These conditions ensure that the grapes ripen slowly, have a high concentration of aromas and complexity, maintain their freshness and have increased acidity. Average rainfall is 320 mm per year. In the vineyard, canopy management and irrigation are very important to ensure the high organoleptic quality and perfectly healthy clusters, right up to the moment of harvest.

WinemakingThe grapes were hand-harvested and carefully transported to the winery. The process begins with a rigorous selection of clusters, eliminating leaves and dehydrated grapes. After destemming and crushing; the juice and crushed berries are placed in a stainless steel tank, where they undergo through a cold skin maceration for 12 hours at 4º-6ºC, in a completely oxygen-free environment, to draw out high aromatic intensity.After the maceration is complete, the free run juice is racked into another tank and the skins are sent to the press. The free run must is then subject to natural cold settling, where clear juice is obtained, ready to ferment. The alcoholic fermentation takes place in stainless steel tanks, using selected yeasts. Strict temperature control ensured that it remained at 12ºC-15ºC throughout the process. After fermentation is finished, the wine is racked into another tank, and is aged over its fine lees using the battonage process. A small part of the blend ferments and is aged in used barrel, for 6 to 8 months, giving complexity and creaminess to the blend.

Tasting NotesTectonia Sauvignon Blanc faithfully expresses the active principles of nature. This wine is bright greenish-yellow in colour. An enig-matic, austere and serious wine at the beginning. Herbal notes of nettles and green pepper are in perfect harmony with a touch of lime and pink grapefruit appears after; in addition to a delightful minerality. A fresh and nervous mouth, characterful, creamy, somewhat saline and very elegant.Accompany with white meat, oily fish like salmon, tuna, conger; crustaceans, seafood such as oysters, salad, pasta with soft sauces, goat cheese.
