Preparation
The day before or in the morning, wash the eggplants and put them directly on 2 oven shelves and in the oven that you will have pre-heated at 300/320°F. Forget them about 1 and a half hour twisting them once during the cooking process though. Once you have turned off the oven, you can let them inside when it's cooling.
When the eggplants are cold enough, cut them in 2 in their length and get the flesh off their skin. Mix it with all the other ingredients and taste to check it's good to you.
Keep it in the fridge before serving with Lebanese bread or tortilla wraps cut in triangles.

• 3 to 4 tbsp lemon juice
• 1 large tsp cumin
• 1 large tsp coriander
• 1 large tsp mild chilli (or paprika)
