Electrical parts should never be incontact with water: danger of short-circuit! Steam and hot water maycause burns. Never direct steam orwater jets towards the body; specialattention must be paid when touchingthe steam/hot water spout and theheating plate: danger of burns!

This machine must be used exclusivelyfor the purposes it has beenmanufactured.Do not make technical changes for any reasonwhatsoever; any improper use is forbidden, dueto the risks which might occur!

WarningsThe machine shall only be used by adults andproperly instructed persons.

VoltageNever touch parts under current! They mightcause electric shocks, serious injuries and death.The machine must be connected to a socket withsuitable voltage. Voltage must correspond to thevoltage shown on the appliance rating plate.

APower cordNever use the machine with a defective powercord. Replace defective power cords and plugs,contacting authorised personnel . Do not extendthe power cord around corners, sharp edges orover hot parts and protect it from oil. Do not shiftor move the machine by pulling its power cord.Do not unplug the machine by pulling the powercord and never touch it with wet hands. Makesure the power cord does not hang from tablesor shelves.

BKeep children awayDo not allow children to play with the machine.Children are not aware of the potential dangercaused by electric appliances.

PositioningPlace the machine on a plane surface, wherenobody can turn it upside down or be hurt. Hotwater or overheated steam might escape fromthe machine: danger of burns! Never use thecoffee machine outdoors or inside rooms withlow temperature conditions. Do not place themachine on hot surfaces or in the proximity ofopen flames to avoid possible damages of thecase.

CDanger of burnsDo not direct the overheated steam or hot waterjet towards you or other people. Do not touch hotsurfaces, such as the steam/hot water spout.

DNecessary spaceFor a proper operation of the machine it isadvisable to keep to the following indications:- choose a levelled surface- choose a properly lit and hygienic roomprovided with accessible sockets- leave a minimum distance of 100 mm betweenthe machine and the wall

ECleaningBefore cleaning the machine, make sure toswitch off all keys and unplug the machine. Waituntil the machine cools down. Never plunge themachine into water! Do not tamper with the innerparts of the machine and never open the machine.

Repair/maintenanceIn case of defect or suspected damage followinga fall, unplug the machine immediately. Neveruse a defective appliance. Only skilled personnelare authorised to carry out repairs. Themanufacturer declines any liability whatsoever,should repairs fail to be carried out by authorisedpersonnel.

In case of fires, use carbon dioxide (CO2)extinguishers. Never use water or powderextinguishers.

Unpacking/installation

Standard packing is strong enough to protect themachine during mail shipping. Keep this packageto return the machine to the manufacturer,whenever necessary.

Before installing the machine, keep to the safetyindications at page 83.

Whenever possible, use the machine with swivel(24). When installing the machine, make surethe swivel is always fitted in the provided area onthe lower side of the machine.

Power supply connection

Warning: electric current may cause d e a t h !Always keep to safety rules.

The coffee machine must be connected to anadequate socket. Voltage must suit to the voltagespecified on the appliance rating plate.

Never use defective power cords! Defectivepower cords and plugs must be replaced by anauthorised personnel.

Should an extension cord be used, check itsperfect conditions. The extension cord must havea minimum section of 1 mm2 and must besupplied with a three-pole plug/socket.

Starting and use

Parts under current shall never be incontact with water: danger of short-circuit! Overheated steam and hotwater may cause burns. Do not directsteam or water jet towards the body;furthermore, great attention must begiven when touching either the steam/hot water spout or the heating plate:danger of burns!

Never use the machine without water or coffeebeans.

Remove measuring spoon, brush and the centralunit key from the coffee grounds container (1)and keep them within reach.

Unwind the power cord (5) from the rear side ofthe machine.

30Remove the cover (15) and fill the container withcoffee beans (300 g approx.), then, replace thecover. Adjust grinding by means of the grindadjustment lever (17), positioning it on point “5”of the scale.

Never fill the coffee bean container with otherproducts since they might damage the machine!

Before filling the container with coffeebeans ,make sure the pre-ground coffee container (14)is closed to prevent coffee beans from falling intoit. They might damage the machine!

DRAINAGE / PROGRAMMING THE MACHINE 88 PROGRAMMING THE MACHINE87Remove water tank (11) from the machine,remove its cover (12) and fill it with cold water(approx. 2.4l). A valve on the tank bottomprevents water from escaping.

Before installing the water tank in themachine, make sure the coffee beancontainer cover is properly fitted.

31Install the water tank, slightly pressing over it tofit the valve which will open automatically.

Do not fill the tank with an excessive quantity ofwater.

Always fill the tank with fresh water only: hotwater as well as other fluids might damage thetank. Never use carbon dioxide added water.

Do not switch on the machine on if the water tankis empty: always make sure there is enoughwater in the tank!

Connect the plug to the socket and press the mainswitch. The following message will be displayed:

"WARNING UP...... "

Selecting single menus

Select the different menu items by means of thekeys . The key ENT allows you to activate theselected item. It is possible to modify the selectedfigures in a menu item using the keys . The keyENT memorizes the selected options (for instance“ON” for the cup heating plate).

Should you accidentally change some data,press ESC ( ) to leave the menu item withoutsaving the new options which were selectedaccidentally.

Language selectionMove the asterisk to the menu item“LANGUAGE” using the keys . PressENT to activate this item. The following messagewill be displayed:

"LANGUAGE ""ENGLISH "

The keys allow you to change the set options :“DEUTSCH”, “ITALIANO”, “FRANÇAIS”,“ENGLISH”, “ESPAÑOL” or “PORTUGUES”.

Rinsing cycle functionIf the rinsing cycle function is activated, themachine that is started after a period of inactivitystarts a water rinsing cycle to the coffee dispensingunits automatically.Move the asterisk to the menu item RINSINGCYCLE using the keys and press ENT to

activate it.The display shows:

"RINSING ""ON "

You can modify the chosen item with the key: on, off.

Water hardness adjustmentIn order to adjust the water hardness, it is necessaryto test the water using the strip supplied with themachine. Dip the strip into the water for a second,shake off excess water gently, wait approx. 1minute and read the results.

Move the asterisk at the end of the line to themenu item “WATER HARDN.” using the keys

and select it by means of the ENTbutton.The following message will be displayed:

"WATER HARDN. ""HARDNESS 3 "

The keys allow you to change the setoptions:

Drainage

Direct the steam/hot water spout on the drip tray(2). Place a cup or another suitable containerunder the dispensing tube, then turn the steam/hot water knob counterclockwise. The pumpstarts automatically. Wait until a regular water jetis obtained, then close the knob. The machine isnow drained and ready to work.The following message will be displayed:

"SELECT PRODUCT ""READY FOR USE "

Important: It is advisable to drain themachine before the first start, after aprolonged period the machine has notbeen used or whenever the watertank has been completely emptied.Furthermore, should the pump be defective, thedisplay shows:

"VENTILATE "

Programming the machine

Cup heating plate connectionRoyal Professional is equipped with a useful cupheating plate which can be disconnected, ifrequired.Press keys to move the asterisk to item“CUP HEATER”. Press ENT to activate thisfunction.The following message will be displayed:

The keys allow you to change the setoptions “ON” or “OFF”.

Temperature selectionWith Royal Professional a precise adjustment ofthe coffee temperature can be executed. Movethe asterisk at the end of the line to the menu items“Temp. l. coffee”, “Temp. coffee” or“Temp. s. coffee” and select it by means ofthe ENT key.Depending on the selection, the followingmessages will be displayed:

"TEMP. L. COFFEE ""MEDIUM "

The keys allow you to change the set options“Minimum”, “low”, “medium”, “high” or“maximum”.

Pre-brewing functionAs soon as the coffee has been moistened, thepump stops for a while in order to allow a betterutilization of the coffee powder.Move the asterisk at the end of the line to the

menu item “PREBREWING” and select it bymeans of the ENT key.The following message will be displayed:

"PREBREWING ""ON "

The keys allow you to change the setoptions “ON”, “OFF”,“LONG” (in the lattercase the pump stop is longer).

Pregrinding functionBy activating this function, grinding occurs everytime the doser is empty. So a ground coffeeportion is always ready in the doser, allowing atime saving whenever the machine is often used.This function is not recommended in all othercases, because fresh ground coffee is by farbetter.Press keys to move the asterisk to item“PREGRINDING”. Press ENT to activate thisfunction.

The following message is displayed:

"PREGRINDING ""ON "

The keys allow you to change the setoptions “ON”, “OFF”.

Hot water programmingWhenever this function is enabled, the selectedwater amount is constantly dispensed. On thecontrary, whenever this function is disabled hotwater is dispensed until the user stops thedispensing. Hot water amount can onlybe programmed with programmingmode enabled.

The following message will be displayed:

The keys allow you to change the setoptions: “ON”, “OFF”.

Cappuccino programmingWhenever this function is enabled, the sameamount of cappuccino is constantly dispensed.On the contrary, whenever this function is disabled,cappuccino is brewed until the user stops thedispensing. Cappuccino amount can onlybe programmed with programmingmode enabled.Press keys to move the asterisk to item“PROG.CAPUC.”. Press ENT to activate thisfunction:The following message will be displayed:

"PROG. CAPUC. ""ON "

The keys allow you to change the setoptions: “ON”, “OFF”.

Coffee counterPress keys to move the asterisk to item“TOTAL COFFEE” and select it by means of theENT key. The following message will bedisplayed:

"TOTAL COFFEE "" 1234... "

This value cannot be modified. Quit the menu bymeans of the ENT or ESC keys.DescalingMove the asterisk at the end of the line to menuitem “Descaling” and select it by means of theENT key.

The following message will be displayed:

"DESCALING "

For descaling procedure, see page 85.

TimerThe timer enables the automatic switching off ofthe machine after a preset period, which can beset from 15 minutes to 12 hours after lastdispensing. If after a few seconds coffee isbrewed again, the timer is reset. If the value setis 0:00, the timer function is not activated andthe machine does not switch off.

Move the asterisk at the end of the line to menuitem “Timer” by means of the keys .Press ENT to select this item.The following message will be displayed:

"STANDBY ""AFTER 0:00"

By means of the same keys , select thesuitable time and confirm the value through ENTbutton.

When the selected time is over the followingmessage is displayed:

"ENERGY ""SAVING "

The machine stops and can be switched onagain by means of button “standby”.

Vending functionsRoyal Professional is equipped with a counterallowing the machine statistic analysis whiledetecting the different dispensing operations. It isalso equipped with another counter which isable to stop the dispensing operations after acertain number. These functions are protected bya special access code.

Code programmingA code protects the access to the machinecounters; enter it for each programming sectionand before carrying out any modification. Assoon as the code is entered, modifications canbe carried out without entering it again as longas the programming function is enabled.The machine is not supplied with a code. Keepto the following indications for codeprogramming:By means of keys move the asterisk toitem “VENDING” and select it through the ENT

key. The following message will be displayed:

"CODE "" ****"

The following message will be displayed:

"CHANGE CODE "" 0... "

By means of keys enter the number to be set onthe first character and confirm the selectionthrough the ENT key. The entered number issaved and the cursor moves automatically to thefollowing character.

After having entered the complete new code, itis necessary to save it.The following message will be displayed:

"NEW CODE? ""SAVE NO "

By means of keys the code can be savedor not saved: SI or NO.

Code enteringTo enter the code, press keys and movethe asterisk to the counter to be changed; selectit through the ENT button.The following message will be displayed:

"CODE?? "

Enter the number to be set on the first character bymeans of keys and confirm the selection withENT. The entered number is then saved and thecursor moves automatically to the following character.If a wrong code has been entered, the followingmessage will be displayed for about two se-conds:

"CODE FAULTY "

After having entered three wrong codes, theentering procedure is not allowed any longer.

Counter modification

Large coffee counter

"1 LARGE COFFEE ""TOTAL "

The counter shows the large coffee amountdispensed from the last reset.From the VENDING menu, move the asterisk to theLARGE COFFEE menu by means of keys ;confirm the selection with button ENT.By means of the same keys it is possibleto modify the selected value (to reset the counter,for example). Use the ENT button to save a newvalue. Press the ESC button to stop the new valueentering procedure and, as a result, the formercounter setting shall be considered.

Coffee counter

The counter shows the regular coffee amountdispensed from the last reset.From the VENDING menu, move the asterisk tothe COFFEE menu by means of keys ;confirm the selection through ENT.By means of the same keys , it is possibleto modify the selected value (to reset the counter,for example). Press ENT to save a new value.On the contrary, by pressing ESC the new valueentering is stopped and, as a result, the formercounter setting shall be considered.

Small coffee counter

The counter shows the small coffee amount

dispensed from the last reset.From the VENDING menu, move the asterisk tothe SMALL COFFEE menu by means ofkeys ; confirm the selection through ENT.By means of the same keys , it is possibleto modify the selected value (to reset the counter,for example). Press ENT to save a new value.On the contrary, by pressing ESC the new valueentering is stopped and, as a result, the formercounter setting shall be considered.

Hot water dispensing counter

"HOT WATER "

The counter shows the hot water amount (in ml)dispensed from the last reset.From the VENDING menu, move the asterisk tothe HOT WATER menu by means ofkeys ; confirm the selection through ENT.By means of the same keys , it is possibleto modify the selected value (to reset the counter,for example). Press ENT to save a new value.On the contrary, by pressing ESC the new valueentering is stopped and, as a result, the formercounter setting shall be considered.

Counter

"COUNTER "

After a certain number of cycles, this functionallows to stop the coffee dispensing (excludinghot water, steam and cappuccino dispensingoperations). It can also be used, for example, toprogram the machine servicing.If the 0 value is set, the function is disabled.From the VENDING menu, move the asterisk tothe COUNTER menu by means ofkeys and confirm the selection throughENT.Press the same keys to modify the selected value(for example to set a new servicing limit). "SELECT PRODUCT ""READY FOR USE "

Reset the counters by pressing the cappuccinoselection key .

Washing cycleThis appliance is equipped with a rinsing cycleprogram for the usual, daily and weekly rinsing.If regularly used, this program effectively elimi-nates the greasiness of coffee in inaccessibleparts and avoids alterations in the taste ofcoffee.Depending on the way the appliance is used, itis advisable to rinse it every month or after max.250 cups of coffee. The rinsing cycle lasts about5 minutes, and it is divided into 4 cycles,including the rinsing with cold water. Each cycleis followed by a short pause of about 40seconds.

Never stop the rinsing cycle.

Important: before starting the rinsing cycle,always fill completely the water tank and put acapacious container (min. 1 litre) under thecoffee dispensing unit, which is height-adjust-able and can be removed for cleaning.

The rinsing cycle needs about 1 litre of water(including final rinsing). From time to time, emptythe water tank.

Dosage of ground coffee33The coffee dosage adjustment lever (18) allows theselection of the grinding coffee amount from 6 to 9grams. Place lever (18) on the required position.

RECOMMENDATIONS

Prolonged idlenessIf the machine hasn’t been used for a prolongedperiod, it is advisable for hygienic reasons to runa rinse cycle through the machine.

Place a cup under the steam/hot water spout (7)and fill it with water by operating the hot waterknob.

Preheating cupsCups may be preheated by placing them on thespecial cup heating plate.

Should grinding be too coarse, adjust it on a

lower value (e.g. from 5 to 3). On the contrary,should grinding be too fine, adjust it on a highervalue (e.g. from 5 to 7).

Adjust the grind level only when the coffeegrinder is running. Avoid any extreme adjustment(for instance on position 1) whenever possible.It is preferable to try another coffee blend, sincenot all coffee blends are suitable.

Coffee grinding34This machine grinds a portion of fresh coffee foreach cup; for two cups, it grinds two portions ofcoffee, one after the other, thus ensuring optimumcoffee quality.

Adjust the grinding degree according to theinstructions mentioned at page 90.

Direct steam/hot water spout (7) on cup holdergrill (3) and slightly open knob (9), turning itcounterclockwise.Wait until the remaining water has flown out ofthe spout. Then, move the spout outwards andplunge it deeply into the fluid to be heated.

Dispensing may be interrupted by pressing oneof the coffee selection keys, if an excessive wateramount has been selected. Should you interruptthe coffee flow after the first of two coffees, thesecond is not dispensed.

Pre-ground coffee

Make sure to use pre-ground coffee only (mediumground). Never use whole beans or solublecoffee.

Right before brewing coffee, fill the containerwith freshly ground coffee. For best results, makesure coffee blend is fresh.Remember that ground coffee ages soon, thuslosing its quality!

35Important!Use the measuring spoon supplied to fill thecontainer (14) with a single portion of groundcoffee! Use a full measure only.

To dispense coffee, press pre-ground coffee button and the desired selection key (large coffee,

Electronic pump controlThe machine switches off automatically as soonas the water in the tank is under the minimum level

checked by a special water level indicator (73).Fill the tank according to the procedure shown atpage 86.

Electronic temperature adjustmentSaid adjustment controls the correct temperature tobrew coffee and to dispense hot water and steam.Coffee brewing is automatically interrupted shouldthe water temperature be excessive (safetythermostat and overheating safety deviceactivated).

Antigravel deviceEven selected coffees may contain impurities.To avoid damages, the coffee grinder is fittedwith an antigravel device against impurities.Should gravel end up into the coffee grinder, youwill hear a strong and characteristic noise. Stopthe machine immediately otherwise the machinewill automatically stop within 20 seconds thanksto the special electronic protection system.Important: Do not start the machine beforethe foreign body has been removed, otherwisethe motor may be damaged. Procedures: seepage 85, points 45-49.

Cleaning and maintenanceoperations

General cleaningTo ensure a good coffee quality and a longerworking life, always keep the machine clean.

Before cleaning the machine, turn off the mainswitch, unplug the machine and wait until itcools down.

Do not immerse the machine into water or otherfluids: it may be irreparably damaged!

Do not wash parts of the machine in thedishwasher!

Always handdry all parts of the machine, do notdry them in the oven or microwave oven!

Water tank, drip tray, coffee groundscontainer and coffee dispenser39In order to keep the service area and the centralunit (22) clean, daily empty the coffee groundscontainer (1), after machine use.

The water tank (11), drip tray (2), cup holder grill(3) and coffee grounds container (1) should bewashed periodically, using a non-abrasive solventand drying them carefully.

40Coffee dispenser (4) may be removed for cleaningoperations. Unloose the screws and rinse thedispensing tube thoroughly with hot water.

From time to time, clean the machine casing witha damp cloth and dry it.

Clean pre-ground coffee container (14) with theaid of the brush supplied, whenever necessary.

Central unitClean central unit (22) whenever the coffeebean container is filled, or at least once a week.

Switch off the machine and open service door(19). Remove grounds coffee container (1).

41Remove central unit (22), by holding the handleand shortly pressing the PRESS key.

Wash the central unit with hot water; do notuse any solvent.

42Make sure there are no coffee residues on thetwo steel filters: the upper filter can be removedby unloosening and turning the plastic pinanticlockwise using the tool supplied.Dry thoroughly each central unit component, fitthe filter again and tighten it properly with thescrew .

43Remove coffee rest drawer (23) and clean it,using a non-abrasive solvent.Clean the service area thoroughly and fit thecoffee rest drawer again.

44By holding the central unit by its handle, slide itback into its original position, making sure it iscorrectly engaged. Then close the door. Fit thecoffee grounds container again.

When fitting the central unit, do notpress “PRESS” button: it may causeirreparable damages to the machine!

Warning: if the central unit is not correctlyfitted, the following message will be displayed:

"BREW UNIT MISS "

The machine cannot dispense coffee.

DESCALING9945Clean the coffee beans container periodically;this operation should be accomplishedby a qualified technician! Unplug themachine.Empty the coffee container and unloose the twofastening screws. Now, the container can beremoved and cleaned.

46Carefully pull the adjustment lever upwards,previously writing the set grinding degree.

47Turn the adjustment ring counterclockwise, untilthe blue marks coincide.

48Now, it is possible to remove the grinding ringfrom the machine, slightly pulling it upwards.

49With the aid of a brush or a narrow vacuum hose,clean both the gear box and the grind ringsupport.Make sure the position of the grind ring does not shift.

To reassemble the coffee grinder, carry out thereverse sequence, making sure the adjustmentring has not been shifted during cleaning. If thatis the case, turn it until the blue mark coincide withone of the three notches.Assemble the grind ring support and make surethe blue marks coincide.

50Turn the adjustment ring clockwise, to make thered marks coincide.

100Cappuccinatore52To quickly clean the cappuccinatore, immersethe suction pipe into warm water and let waterflow through it.For a more accurate cleaning, remove thecappuccinatore and open cover (29). Clean theoutside part with warm water and rinse it withcleaned water.

Descaling

Warning: The descaling operationsmus be carried out when the machinecomponents are cold.Descaling removes limescale from all surfacesand holes, thus ensuring a perfect operation ofvalves, heating controls and other importantparts.

Note: due to the complexity of the coffeemachine hydraulic circuit, the following descalingcycles (automatic and standard) do not allow thedescaling of all tubes.In fact, easily accessible componentssuch as the central unit (22) and itsplastic connection are excluded.

The machine must be descaled every 3-4 months,depending on the water hardness degree.A more frequent descaling is recommendedwherever the water hardness degree is very high.To avoid dangerous delays to users, this machineis supplied with a special control counter,reminding the user to perform this operation,according to the water hardness degree.In this case, the following message will bedisplayed:

"DESCALE "

When this message is displayed, the machinedoes not stop; however, it is suggested to

descale quickly the machine.To cancel the message, see programming menuindications, page 86.

The machine has been adjusted on a 25°òHvalue, which causes the warning light to switchon after 150 l approx.

Should it be necessary, the water hardness valuemay be exactly programmed, following theinstructions shown at page 88.

The following adjustments are possible:Hardness 4: high water hardness, over 29°òH(14°dH), i.e. 80 l water approx.Hardness 3:medium water hardness, approx.20-29°òH (7-14°dH), approx. 150 l waterpassage.Hardness 2:soft water, approx. 12-20°òH(4-7°dH) approx. 300 l water passageHardness 1:very soft water, less than 10°òH(3°dH), approx. 500 l water passage

In hard water regions, a filter should be usedboth to improve the coffee quality or to protectthe machine, thus reducing the descalingfrequency.

Note: for this purpose, use a descaling productsuitable for coffee machines.Never use vinegar!Descaling can be performed in two ways:

Automatic descalingSelect this mode in the programming menu (seepage 90).By means of keys , move the asterisk atthe end of the line on the menu item Descalingand confirm the selection with the ENT key.The following message will be displayed:

"DESCALING "

Pour a discaling solution into the water tank(according to the instructions on the productpackage). Switch the machine on the programmingmode. Place a large container under the steam/hot water spout and open slowly the steam knob.The automatic descaling starts: Small amounts ofdescaling solution are pumped into the circuit.Then the pump stops to let the solution take effect.During this phase, the following message isdisplayed:

"MACHINE IS ""DESCALING "

After approx. 45 minutes, when the procedure isaccomplished, the following message will bedisplayed:

"DESCALING ""FINISHED "

Close the steam knob. The pump stops.Press ENT button. A display message remindsyou to rinse away any possible descaling residuesfrom the machine.

"RINSE MACHINE "

Remove water tank, rinse it accurately and fill itwith fresh water. Turn the steam knob slowly onand let all the contents come out. The followingmessage will be displayed:

Close the steam knob. Go back to programmingfunction by pressing the ENT key.

Standard descalingSwitch off the machine. Pour a descaling solutioninto the water tank (according to the instructionson the product package). Switch themachine on by pressing the main switch, pressthe hot water key and let the descaling solutionin the water tank pour out of the spout for 1 minuteapprox.

Press hot water key to complete the operation.Switch the machine off and let the solution takingeffect for 5 minutes approx. Repeat this procedu-re two or three times, to empty the water tank.

As soon as descaling has been performed, rinsethe water tank (11) thoroughly and fill it with fresh

water.Switch on the machine again and let water (2l approx.) flow out of the steam/hot waterdispensing tube in order to rinse away residues.

Important:A periodic descaling ensures a correct machinefunctioning and avoids expensive repairs. Themachine warranty does not cover damagesoccurring as a result of the non-observance ofdescaling procedures, improper use and non-observance of any other instruction containedherein. Maintain the manufacturer’s adjustment ifthe water hardness degree is not known.

DisposalMachines which are no longer operationalshould immediately be made non serviceable,by cutting the power cord. Machines should bedelivered to a public disposal centre.Switch off and unplug the machine if it will not beused for long periods.Cut the supply power cord and deliver themachine to a public collecting point.

Should the machine not be used anymore,switch it off and unplug it.

Keep the machine in a dry place, far from thereach of children.Should the machine not be used for a longperiod, keep it from dust and dirt

MaintenancePeriodically check the machine working andclean it in accordance to the instructions.

Troubleshooting

In case of failure, fault or suspected damagefollowing a fall, unplug the machine immediately.
