And if today we are paying more and more attention to the origin of our food, we may still overlook where our beverages come from… At Rouge Tomate Chelsea, the core of our program is to offer our guest tasty, complex, exciting wines, spirits, liquors, beers, teas, coffees and any liquid you can dream of drinking from the most careful, dedicated, responsible producers. Behind the certifications and labels, we are looking to create human relationships with all the farmers we are working with – because, at the end, all of our producers are first and foremost farmers – supporting an idea of farming respectful of the future. Protection of the biodiversity, observation of the natural cycles, enlightened agriculture without the abuse of synthetic chemicals, human-sized farms… these allow our producers to vinify, brew, and distill complex, flavorful ingredients with the fewest additives possible, and to encapsulate a real transparency of place, time and culture in a glass of wine or a cup of tea. This is what we are looking for. By our choices, we are engaged citizens of this world, and it is not only good for the planet, it is also good for us, and good for the palate! human-sized farms… these allow our producers to vinify, brew, and distill complex,

flavorful ingredients with the fewest additives possible, and to encapsulate a real

ORGANIC

Organic wines are produced using methods that do not involve modern synthetic

inputs such as synthetic pesticides and chemical fertilizers, do not contain

genetically modified organisms, and are processed using a minimum amount of

authorized additives. Low amounts of added sulfites are generally acceptable. Due

to the various food standards agencies throughout the world, there are many

different guidelines and regulations that determine whether a wine can bear an

organic seal in a particular country.

BIODYNAMIC

Biodynamic viticulture is a method of organic farming that originated out of the

work of Rudolf Steiner in 1920’s Europe. It considers the vines and the winery as a

part of the larger environment, balancing the soil, plants and animals in a self-

nourishing, living system. Methods unique to biodynamic farming (not found in

organic viticulture) include the use of fermented herbal and mineral preparations as

compost additives and the use of an astronomical sowing and planting calendar. Very few additives are used in the grape growing and winemaking. Very low

amounts of added sulfites are generally acceptable. There are independent

certification agencies for biodynamic products, most of which are members of

Demeter International.

NATURAL

There is no official definition or classification system for natural wines. Simply put,

natural wine is just fermented grape juice. No added ingredients whatsoever. While

you may not be able to taste the difference between an organic/biodynamic wine

and its mass-produced equivalent, you most certainly will find natural wines to be

unique in both nose and palate.
