Preparation Ingredients Ferraro's Cucina Roasted Root Vegetables Prep Time: 15 Minutes Cook Time: 30 Minutes Total Time: 45 Minutes 1 lb beets, red or golden 1 butternut squash 1 large yam 1 large parsnip 1/2 red onion 6-8 whole garlic cloves 3 tbsp fresh thyme 3 tbsp extra virgin olive oil salt and pepper Preheat oven to 425 F Line baking sheet with tinfoil Clean, peel & dice all vegetables In large mixing bowl toss vegetables in olive oil Add thyme and garlic (Or use Rosemary or Dill!) Spread evenly on baking sheet and cook for 45 minutes (stir halfway through cooking) Add salt + pepper and serve! Chefs Tip: Looking to spice it up? Instead of traditional herbs - mix vegetables in curry powder, paprika and garam maslala to give it a kick!
