    The Finger Lakes region is worth celebrating. Beautiful lakes. Natures bounty. The friendliest people. In one weekend, we celebrate it all! Join us on Saturday, Aug. 9, and Sunday, Aug. 10, for our sixth exciting year of the Riesling Festival, presented by LNB. More than 100 vendors, including nearly 20 wineries, 10 breweries, restaurants, cheese makers, artists, craftsmen and musicians, gather in one place to bring everything that makes our region so special.

    Set along the Canandaigua City Pier and the New York Wine & Culinary Center, the festival offers something for everyone. Riesling tastings and seminars, craft beer tastings and New York artisan cheese samplings, and a harvest-fresh farmers market with vendors galore to please your palate. New this year, festivalgoers are invited to try grape stomping! Live entertainment, food demonstrations, arts and crafts, an obstacle course and family fitness classes will also complement this years lively festival activities.

    A portion of the festivals proceeds will benefit the Canandaigua Family YMCA, to help individuals attend and participate in programs and activities offered there. According to Canandaigua YMCA Executive Director and CEO Laurie OShaughnessy, the festival is the biggest fundraiser of the year for the organization. To date, more than $150,000 has been raised, which

    helps pay for kids, adults, teens and seniors to attend the Y.

    For the second straight year, the Riesling Festival has teamed up with the Canandaigua Rotary to bring you the Canandaigua Rotary Festival and Pier Dance, with extended hours for live music, dancing, food and fireworks until 10 Saturday night. Proceeds will also benefit the charities of the Canandaigua Rotary.

    The festival is not only a great way to raise money to benefit a local cause, but it showcases the great Finger Lakes region. It has something to offer everyone! The festival continues to grow and provides an opportunity for the Finger Lakes region to enhance its reputation for world-class culture.

    As the Riesling Festival continues to grow and expand, our hope is to make the New York Wine & Culinary Center and the Canandaigua City Pier its permanent home, said Lauren Dixon, Dixon Schwabl chief executive officer and festival co-founder. The beautiful backdrop of the lake and the renowned culinary center are the perfect location to grow the festival and region, bringing guests from all over the country to a centralized place.     6 pounds onions, sliced4 slices bacon1-16 ounce container sour cream 4 eggs2 tablespoons all-purpose flour1/2 teaspoon salt1/2 teaspoon caraway seeds2 recipes pastry for a 9 single crust pie

    German Zwiebelkuchen (Onion Pie)

    Preheat oven to 425F. Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.Saute onion in a skillet until translucent and pour

    cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, chop and add to onion; mix well.Stir in sour cream. Beat eggs enough to break up yolks, then mix into pie mixture. Add flour to thicken mixture (onions will create a lot of water) then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seeds.Bake in preheated oven for about one hour, or until onions start to turn golden brown on top. Visit Anthony Roads website for more great recipes!

    Ann and John Martini first planted grapes in the early 1970s. They sold the fruit to Taylor Wine Company and other smaller wineries and some juice to home winemakers. Ann did the majority of the vineyard work, while John worked at the New York State Experiment Station in Geneva.

    In the late 80s they decided whether or not to continue on in the grape business. They discussed this with family and friends and decided to continue in the industry and work towards opening Anthony Road Wine Company.

    Over the years they have replanted the vineyards with vinifera grapes and have expanded from 3,000 cases to 16,000 cases of wine produced (with estate grown or Finger Lakes sourced fruit).

    John has been making the trek to NYC and the Union Square Green Market every weekend for close to 20 years. Ann continues to oversee donations, off-site tastings and works in the tasting room and gardens. Three of their four children are involved in the winery/vineyard on a full-time basis; their son Peter is vineyard manager, Sarah is

    now business manager and Elizabeth is the tasting room manager. Maeve helps occasionally with events and outside tastings. You will often see or hear their grandchildren around the tasting room and vineyards either working or just having fun!

    The vineyards, retail shop and production facilities are located in Yates county on the west side of Seneca Lake in the Finger Lakes region. Just 10 miles south of Geneva, 25 miles off the New York State Thruway, the winery is an easy

    drive from all of New York states major population centers.

    Our Visitors Center Tasting Room and Gift Shop is located in our vineyard and is open year round Monday through Saturday, 10 am until 5 pm and Sundays noon until 5 pm. Stroll through our lovely garden and bring along a picnic lunch to enjoy with your wine purchase.

    The reasoning behind cooking with wine is to intensify and enhance the flavor of food. Wine is known to release flavors in many foods that otherwise would not be experienced. It is amazing the difference that cooking with wine can make in a wide variety of foods and how very simple it is.

    How much wine? Many people dont cook with wine because they are unsure of how much to use. The flavor of wine in cooking is derived from the nature of the wine, not the alcohol. Most of the alcohol evaporates and very little is left in the finished dish. Boiling down wine concentrates the flavor, including acidity and sweetness. Be careful not to use too much, as the flavor could overpower your dish. The first step is to try a small amount so the flavors will blend and not become overpowering. As you are cooking, try sampling your dish and add as needed.

    What kinds of wine to use for cooking. The type of wine you use is very important. Cook only with wine that you would drink. Dont purchase a lower cost wine. Conversely this doesnt mean that you need a very

    expensive bottle. A well made medium grade for under $10 is just fine.

    Mainstream white or reds are a good place to start. As you get accustomed to using wine as an ingredient in your dishes, you will be more likely to experiment with different varietals, such as sauvignon blanc as a white wine for sauting, marinating and in sauces for seafood and chicken. You may want to try a cabernet sauvignon or merlot for meats and meat-based sauces.

    It is best to stay away from wines that are heavily flavored with oak. They tend to give off a bitter taste. If a wine is extremely fruity, sour, or unsavory, these characteristics will be also be emphasized during cooking. The trick is to experiment. The more you cook with wine, the better you will become at predicting how a specific wine will enhance your menu.

    Ideas for using wine in your food.

    When a recipe calls for water, replace the water with a favorite wine.

    Stir in 1 to 2 tablespoons of a full-bodied red into brown gravy. Let simmer to create a rich brown gravy for red meat.

    Mix wine with your favorite oil to baste meat and poultry.

    For meat dishes calling for wine, first heat the wine. Do not boil the wine, this will loose the flavor.

    Adding cold wine tends to make meat tough, while warm wine helps tenderize it.

    Dry red wines have better chemistry with heavier red meats.

    2 oz. butterSplash of grape seed oil 2 onions, finely chopped4 oz. bacon sliced into thin strips4 garlic cloves, thinly sliced8 chicken pieces on bone, (thighs and drumsticks work best)8 oz. mushrooms, sliced (such as shitake or oyster ) 8 oz. Riesling 4 oz. creamSalt & pepper to tasteHandful chopped parsley & oregano (fresh is best)

    Coq au Riesling

    Melt the butter and oil together in a large pan. Brown chicken pieces all over and remove from

    the pan. Add onions and bacon and allow to fry until the onions are soft and translucent and the bacon has rendered its fat. Add the garlic and allow to saute for another 30 seconds before removing the mixture from the pan (leaving the fat behind). Add the mushrooms and allow to fry for 5 minutes. Add the onion and bacon mixture along with the browned chicken back to the pan.

    Pour in the wine and allow to come up to a simmer. Turn down the heat and cover. Allow to simmer for 15-25 minutes or until the chicken is cooked through. After 15 minutes, uncover, turn up the heat and add the cream. Allow to cook for another 10 minutes.

    Add the chopped parsley, oregano and season to taste. Serve with rice, pasta or crusty bread.

    When you are visiting the Penn Yan area, you may come across a property once named Abandon Acres. Its now known as Abandon Brewery. This amazing setting for the brewery has many attributes for you to take in.

    Their mission ... A respect for things of age and tradition, the precision to turn raw ingredients and natural surroundings into things of beauty, and dedication to the finest craftsmanship and quality.

    Owner Garry Sperrick purchased this property years ago with the idea of building a geothermal-powered craft brewery. With a background in engineering, he decided to use this method for the brewery. Not only is it better for the brews, but also for the environment. There are not many local breweries that approach this way of crafting beers.

    Master Brewer, Jeff Hildebrandt and Assistant Brewer, Jeff Fairbrother have enjoyed the approach of using local ingredients, such as acres of grapes, hops, barley, herbs, honey, nut trees and apples along with interesting yeast strains.

    ABANDON BREWERY

    Batch by batch the traditional farmhouse-brewed, old world Belgium-style, handcrafted beers are made in the early 1800s barn. The barn is truly amazing with a design that other breweries dont have. The farmhouse has been turned into the brewery that overlooks scenic Keuka Lake.

    Those that go to enjoy a taste in the taproom can look out over the lake while contemplating the history of beer and the way it was created.

    Sperrick has decided to build an event structure aptly named the Beer Hall, hoping the project will be completed by August. This will be open for weddings and many other events.

    Sperrick is pleased with all that has been accomplished since October of last year.

    The brewery offers beers styles they hope beer lovers will find interesting and appealing and they trust you will taste the difference.

    Abandon Brewery is creating quite a buzz in the beer world with their location, brews and upcoming events.

    Winery Highlights

    Work on the 8,900-square-foot Finger Lakes Community College Viticulture Center began in fall 2013 on the grounds of the Cornell Agriculture and Food Technology Park. The new educational facility will be built on the corner of Pre-Emption Road and Empire Drive over the next year with an opening January 2015. Each room has been designed with input from wine industry professionals and Cornell University representatives to provide students in the FLCC viticulture and wine technology degree program with extensive hands-on winemaking experience.

    The facility will feature a teaching winery, enology

    laboratory, aging rooms, wine storage, a crush pad, a classroom and office space. A vineyard with vines in all stages of production will be planted adjacent to the center. The viticulture center has been designed to meet the U.S. Green Building Councils Leadership in Energy and Environmental Design (LEED) silver rating.

    Construction will be funded with a grant that state Sen. Michael Nozzolio and Assembly Minority Leader Brian Kolb successfully advocated for in the 2012-13 New York state budget as well as private contributions raised by the FLCC Foundation. The FLCC Student Corporation has also contributed to the project.
