The Nautilus story began, as so many do, over a few beers after work. Ron, Roz and Jennifer all worked together for many years at another local restaurant where Ron ran the kitchen for 20 years. Jen and

Roz had been waiting tables for a long time. Like a lot of people in this business, we dreamt of one day having a place

of our own. Our conversations quickly progressed from “Wouldn’t it be cool if…” to “How are we going to make this happen?” In February 2012, we got our answer. Ron was driving up Route 1 one evening and saw a for lease sign on the building that would become Nautilus. Two days later, the three of us were planning our restaurant. A week after that, we quit our jobs and started working on Nautilus full time.Our goal was to create a comfortable, casual

environment where people can relax and unwind while enjoying a great meal. Ron wrote a menu that features his signature style of cooking which is innovative while remaining accessible. We cook most everything from scratch, from our pasta sauces to our pie crusts, and you can tell. If you were to look around in our pantry, you would find ingredients, not “product”. We use local produce wherever we can and much of our seafood, including lobster and mussels, come right out of the bay outside our windows. We also carry a wide selection of local beers, wines and liquors at the bar. It’s very important to all of us to serve the best food and drinks, made with the freshest ingredients. We don’t think food has to be fancy to be great. In the dining room, outside on the patio and at the bar, we wanted to create an atmosphere that was inviting and comfortable, special but not stuffy.

In the three years since, we have built a thriving business on Belfast’s East Side with the help of an amazing staff and the support of our loyal customers. While we feel extremely fortunate to have been able to create our restaurant in this location, we were also very excited to start the next chapter of our story. In December 2015, Nautilus moved to the Belfast waterfront. Literally on top of the water and at the beginning of Main St. “We have the best location and view for miles around!” This location, combined with our ongoing commitment to excellent food and service, means a very special dining experience for our guests all year long. We want you, our guest, to feel welcome and taken care of whether you pop over after work or are out for a special evening. Join us, there’s room for everyone at our table.When asked what was the restaurant’s most memorable

day, Roz recalls opening day on April 15, 2012. After working at Darby’s (a restaurant in the same city) for over 30 years, the memory of that day will never fade for the three owners. On opening day, 200 family and friends came for the soft opening for 50% off pricing. ‘Practice day’ was a wonderful success and our dream was real.Ron Mitchell from Nautilus has been doing business

with Northcenter for over 25 years. When asked why he does business with NorthCenter, Ron replied, “The quality of products; consistency in quality as well as delivery times. The salesman’s overall knowledge of products we offer along with the best drivers in the industry.” Account Manager Geoff Smith is the third salesman he has had in 25 years.

West Creek Moonshine BBQ Sauce

Short Rib SlidersIngredients: 1 tablespoon olive oil 2 pounds boneless short ribsSalt and pepper 2 carrots, diced 2 celery stalks, diced 1 yellow onion, diced3 cloves of garlic, minced 1 teaspoon crushed fennel seeds1 tablespoon chopped parsley 2 cups beef broth 1 (32 ounce) can crushed tomatoes½ cup cider vinegar⅓ cup molasses Provolone cheese slicesSlider buns2 cups WC Moonshine BBQ Sauce

Preparation1. Heat the olive oil over medium heat. Season

short ribs with salt and pepper, then brown on all sides. Remove from pan and let rest.

2. Add the celery, onion, carrots, and garlic and cook until they become soft. Add crushed fennel seed and parsley, then stir.

3. Add the cooked vegetables to a slow cooker. Place the short ribs on top of the vegetables and pour over any remaining juice. Add tomatoes, cider vinegar, molasses, and beef broth. Stir together, cover, and cook on low for 9–10 hours.

4. Remove short ribs, shred apart, then return to the slow cooker and stir with the vegetables. Add 2 cups of Moonshine BBQ Sauce, and blend together. Salt and pepper to taste.

5. Spoon shredded short rib mixture onto a slider bun and add a small slice of provolone cheese. Serve.

Baked and Glazed West Creek Carolina Original BBQ Sauce Roasted ChickenIngredients: 8 cut chicken piecesOlive oil Salt and pepper 1 cup WC Carolina Original BBQ Sauce

Preparation1. Preheat the oven to 350 degrees F.

2. Place chicken on parchment lined sheet pan. Coat chicken with olive oil, and sprinkle with salt and black pepper.

3. Bake in oven until the internal temperature reaches 165–175 degrees F. Cooking times will vary based upon traditional or convection oven.

4. Glaze the baked chicken with Carolina Original BBQ Sauce, using clean and sanitized utensils.

5. Let the barbecue caramelize the chicken, but not burn, (approximately 3–5 minutes).

6. Hold till service at 140–150 degrees, covered.

Slow Cooked Baby Back Ribs with West Creek

Jala-Mango SauceIngredients: 1 full slab baby back ribs Salt and pepper Favorite Spice Rub 2 Cups WC Jala-Mango Sauce Glaze

Preparation:1. Run the ribs under cool running water. Then

use a clean kitchen towel to completely dry the ribs. Remove the membrane from the back of the ribs. If this becomes a problem you can score the membrane with a clean and sanitized kitchen knife.

2. Apply salt and pepper and/or your favorite spice rub to the front and back of the ribs. Rub in the spice marinade on both sides. If possible, let the ribs marinate with the dry spices for two hours or overnight under refrigeration.

3. Curl the whole slab of ribs into a crock pot or slow cooker, standing with on its side. Pour in 1½ cups of West Creek Jala-Mango Sauce, reserve the remaining ½ cup for basting.

4. Cook on low for 6–8 hours, to your desired degree of completeness.

5. Remove the ribs from the slow cooker. Place the ribs upon an aluminum lined baking sheet. Brush the ribs with the remaining Jala-Mango Glaze. Place into a pre-heated 190–200 degree oven and bake the ribs for 15 minutes or until the sauce becomes caramelized.

6. Remove and keep warm until ready to serve.

Along the Pacific coast of Ecuador and Peru, the Gulf of Guayaquil takes its name from Ecuador’s Guayaquil River which empties into it. The species' Latin name of our Mexican white shrimp is

Litopenaeus vannamei and Litopenaeus stylirostris. White shrimp is globally the most popular of all shrimp. The meat is firm and tender, and cooks to a pleasant red hue. The flavor is mild and sweet.

A broad assortment of fish and shellfish are born in the warm, clear waters of the sea of Cortez. Among them are the Mexican white shrimp selected for the Bay Winds™ brand. To maintain and respect the natural habitat, small wooden Panga boats are used to troll the waters of the sea and hand nets are used to harvest the shrimp. They are then processed using no artificial flavors or additives resulting in a more natural and fresh flavor.

• Bay Winds™ Mexican shrimp is never twice-frozen. Single freezing ensures that nutrients are at their highest bio-availability and texture remains uncompromised.

• Uniformity and accurate sizing are determined by mechanical grading machines and are then hand packed to re-ensure accuracy and quality. Hand packing has been known to deliver a premium count, weight, and product integrity.

STEP 1

Lay tortilla flat on pre-heated flat top griddle or large non-stick skillet set to medium heat.

STEP 3

Fold tortilla over to form a half-moon shape and cook on both sides, approximately 1 minute per side or until both sides are browned.

STEP 2

Place cheese filling off-center on tortilla and spread evenly to cover ½ of tortilla.

STEP 4

Remove from flat top griddle or large non-stick skillet and ladle sauce onto right ½ of the untoasted side of the quesadilla.
