“We believe it is important for us to extend our mission beyond the walls of the hospital and wellness center and support community initiatives that make this a better, healthier place to live,” says President and CEO, Brian Adams.In accordance with that commitment, the hospital provides a number of community outreach activities including health education seminars, screenings and information at onsite

and offsite events. The Healthy Happenings series at the Health & Wellness Center features programs on a variety of health and wellness programs and is open to the community (most programs are free although some have a nominal fee). The hospital also hosted its inaugural Women’s Health & Wellness Day in September with over 700 women in attendance. To provide help to those who lack transportation to access health care, the hospital also supports Pasco County’s Mobile Medical Care Unit with financial support, flu shots and clinical volunteers. The unit serves people who are uninsured or underinsured and don’t have transportation to access health care. Employees and volunteers recently donated over 1000 pairs of socks for those served by the mobile unit. This holiday season, the staff and volunteers at the hospital and health and wellness center wanted to do something more…something beyond providing basic items, something that could help make the holidays special for those

who are less fortunate. So the hospital teamed up with Metropolitan Ministries to collect food and toys and serve as a community drop off site for those in the area. “We know that people in this area are so generous and at this time of year, when people want to give back to help others, we want to make it easy and convenient for them,” noted Connie Bladon, executive director of the

Florida Hospital Wesley Chapel Foundation. “We ask people in the community to join us and donate new toys for children who might not otherwise get gifts.” The Health & Wellness Center at Florida Hospital Wesley Chapel served as a drop off site for food leading up to Thanksgiving and is now collecting toys for children in need.

Toy donations can be dropped off between 5 am to 10 pm Monday through Friday and 7 am to 7 pm Saturday and Sunday in the building’s lobby. According to Metropolitan Ministries, the biggest needs are gifts for infants and teenagers. The organization expects to give toys to more than 23,000 children this holiday season. Metropolitan Ministries is a non-profit, nondenominational, faith based organization that provides programs for poor and homeless families. The organization serves residents throughout Hillsborough, Pasco, Pinellas and Polk counties through hot meals and outreach services. Last holiday season alone, the organization served over 22,000 families.

Wesley Chapel freshman Crowned State Swimming Champion Abby Duncan, a freshman at Wesley Chapel High, won the girls 200 free with a time of 1 minute, 50.82 seconds. Just eight events later, she took second in the 100 butterfly with a time of 56.23 seconds, beating the third-place swimmer by more than two seconds. Cameron Hilgenberg, a Land O’Lakes senior, finished third in the boys 50 free in 21.33. He also took sixth in the 100 breast at the Class 2A state championship swim meet. •

s President of The Greater Wesley Chapel Chamber of Commerce how do you see the future of Wesley Chapel?

First of all, I see the future of Wesley Chapel as extremely bright. Our past has helped shape Wesley Chapel, however I believe our future will transform our community from what had been just a residential area into a vibrant, self-sustaining place for families and professionals to live, work, play and have access to most services and employment opportunities they may need. It wasn’t long ago that it was hard to find a place to eat breakfast with your family here. Go-ing shopping or going to the doctor meant traveling 10-20 miles for basic needs. As more businesses find Wesley Chapel a great place to locate, our residents will have more options to work closer to home, vastly improving their quality of life and lowering commute times. Today, when you look at all of the census tracts that are considered Wes-ley Chapel, we are home to over 70,000 residents. As I look into a crystal ball, I think our future involves not just being a big unincorporated place in southeastern Pasco County, but potentially a defined municipality, having greater flexibility to shape our future as our residents and businesses desire. At some point some community services will better be served by having more local control. Doing so will cause us to think differently, and

become more responsible in what we as a community want for our future. But getting to that point can be controversial, is not an easy step and cannot happen without the support of our residents and leaders. Presently the Chamber can help reignite that type of dialogue.

What does the Chamber currently do to help steer the community in a positive way? By definition the Chamber is a group of businesses seeking to further their collective interests. We tend to focus on five major areas- building a community to which residents, visitors and inves-tors are attracted to; promoting this great community; striving to be pro-business; representing a unified voice of the busi-ness community; and building networks.

How long is the term of President of the Chamber, how is the President elected and what is the President’s specific role/duties? The Chamber’s bylaws designate the President is elected from the Board of Di-rectors annually. I was fortunate to have been elected to a second term. This gives me an opportunity to see some of the longer term strategies and visions that the Board has identified to fruition. In addi-tion to serving as chairperson of the Board and Executive Committee meetings, I help support our terrific staff in their roles. This is a volunteer position, so I spend as much time as possible to support the Chamber in as many of our activities and events. But without the energy of our small staff, and volunteer efforts of the

full Board of Directors and our members, we could not engage in as many things that we do.

How many are on the board, who are they and what are their roles? The role of the board is to oversee and lead. The responsibility of the board is to create the vision or target on which the Executive Director and Staff can focus their energies and efforts. We currently have 13 board members, who are responsible for the Chamber’s operations. The board works together in a leadership capacity to develop policies and procedures that create a climate of co-operation with the chamber. Our Board is represented by large, medium and small businesses covering many industries that are prominent in our community. The

board make-up has evolved as Wesley Chapel has changed, and we are always look-ing to remain as diverse as possible, to best reflect our active

membership base.

What do you do professionally and how does that fit with your role at the Chamber? I am a licensed Professional Engineer and Certified Planner. I serve as one of the managing partners for American Consulting Engineers of Florida, a Wesley Chapel based transportation engineering and planning firm. I tell people more sim-ply, I plan and design roads, bridges and other transportation facilities that people use every day. Although our firm has of-fices throughout the southeast US, Wesley Chapel is our home. We feel it’s impor-tant to be anchored in our communities. While we don’t earn much business as a result of our Chamber membership (not

many people want a new bridge), being connected with the Chamber helps us form a meaningful bond with many local businesses and having a small role in shaping our community where many of our employees live.

When a business joins the Chamber, who wins? The Member wins because membership in the chamber offers numerous benefits and keeps business owners on top of im-portant, ever-changing issues and trends within our community and local market-place. Not only is that, but research points out consumers more likely to do business with a company if it’s a member of their local chamber of commerce.

Are there, or should there be, expectations on either side? What exactly is the ideal relationship? Being a member of the Chamber is an investment in the future of our com-munity. Chamber members are proud to belong to an organization that plays such a key role in the community. They display their membership logos on their windows and advertise their membership in their brochures or advertisements. Holding a membership in an association that is recognized worldwide allows members to promote to the outside world that they belong to something important. But the real value of joining the Chamber of Commerce is the positive perceptions of consumers about membership. A survey by The Schapiro Group found some great results for Chamber members. Consumers believe that businesses that are involved in the community, care about their cus-tomers and that the company is reputable. When a consumer thinks more favorably of a company because the company is a member of its local Chamber of Com-merce, it is because they infer that the company is trustworthy, connected to the community, listens to its customers is successful and is a leader in the business community.

Will you tell us about the Chamber’s Economic Development Council. The Economic Development Council encourages economic development in the Wesley Chapel Area through advocacy, policy and program development support for existing businesses and recruitment of

new businesses. Current priorities are to position the Chamber as a regional leader, and serve as a resource partner with lo-cal economic development entities, and provide infor-mation on new devel-op-ments and local govern-ment topics that may affect your business.

What other organizations does the Chamber partner with? Since Wesley Chapel does not currently have a political government, we believe the Chamber is in prime position to help other local organizations flourish. In the past year we partnered with the Wesley Chapel Lions Club in our inaugural golf outing. We worked closely with the Rotary Clubs here on sharing roles in our respective events. Through our Honorary Mayor program, we are able to help raise funds for charitable organizations selected by candidates. We have also been a long-time supporter of the Pasco-Hernando Hispanic Chamber of Commerce. Many of the leaders of our Chamber members personally belong to other local groups. We believe building a strong community involves not just the business side, but all

aspects that many other groups are better positioned to support.

What role does the new Honorary Mayor, Cathy Bickham, play in the Chamber? Our Honorary Mayor (HM) serves as our external figure head at events. When her term begins on January 1, she will be seen supporting as many ribbon cuttings as she is able and being visible at other activi-

ties. Cathy has been a long-time volun-teer for the Chamber in numerous roles, so it’s great to see her recognized for all of her effort and willingness to serve. Our incoming Honorary Deputy Mayor Mary Ann Yaney will work with Cathy to fill-in when Cathy is not available.

Are there future plans that the Chamber has to enhance its relationship with busi-nesses and the community? One of our premiere annual events is the Pride Awards Breakfast in the spring. Each year, the Chamber recognizes out-standing students and school volunteers in our local public schools. Last year we gave out eight scholarships to high school seniors. For 2014, I have challenged our members to double that number. All businesses know that their future will be

shaped by the future workforce. Sup-porting our students and schools is one way to do that. We have members that serve as community voices on local School Advisory Committees. This year, we as a Chamber will be working more closely with career academies that have already been developed in our area high schools. From a bigger picture, Wesley Chapel itself has been developed by many forces outside of our community boundaries over the years. As a strong voice, we be-lieve the Chamber can play a more promi-nent role in communicating with local and state leaders as Wesley Chapel grows and becomes an even better place to be.

How can a member become more involved with the Chamber? We utilize volunteer leadership through multiple committees to provide members with the opportunity to serve and make their voices heard on policy matters, events, programs and activities man-aged by the Chamber. Many volunteer their time yearly to provide the pivotal direction that leads the organization. The Chamber encourages participation, and in fact relies on the expertise of members to guide the actions of the organization. Service on a committee is an important

way for businesses to play a relevant lead-ership role, increase the value of member-ship and increase visibility among mem-ber businesses. You must be a member in good standing to serve on a committee.

Tell us about ambassadorships. Ambassadors are highly visible, presti-gious volunteers who serve as the Cham-ber’s primary liaison to new Chamber members. Considered the goodwill arm of the Chamber, the Ambassador com-mittee plays an essential role in member recruitment, communication and reten-tion, and each Ambassador is charged with conveying member needs, questions and concerns to Chamber staff, keeping our Chamber in line with our members’ desires. Upon their appointment, each Ambas-sador makes a commitment to build last-ing relationships with the membership, particularly new Chamber members, in order to build a loyal, committed mem-

bership base that will continue to support, participate and invest in the Chamber. Ambassadors commit to spending 1-3 hours per month on their duties as Chamber volunteers.

The realized value of membership is key to a healthy, growing Chamber of Commerce. What value is there for a business now and are there any future plans that may add value for membership? After careful consideration by The Greater Wesley Chapel Chamber of Com-merce Board of Directors, staff and the Membership Committee, the chamber is changing the way members will invest. Like many chambers during the past de-cade, we have recently moved to a tiered dues system which provides benefits based on the investment level a member selects. In the past, businesses joined and paid membership dues solely based on the number of employees in their organiza-tions. With this new structure, members choose the benefits that they want and need, then invest accordingly. The Chamber’s new “tiered” system provides increased benefits with comparable dues – plus many new benefits, even at the Classic entry level. We encourage members to review the new membership levels and, we are con-fident that they will agree that the tiered membership plan recognizes the diversity of our membership and provides tangible value. We are so fortunate that our Cham-ber membership is truly representative of our overall business community -- from the mom and pop businesses to the mul-tibillion dollar corporations -- and from our local enterprises to the multinational firms. We recognize that these different member groups derive different benefits from a Chamber, and with the tiered dues structure we have the ability to meet the diverse, evolving expectations of our local businesses. The new levels are Classic, Premiere, Elite and Executive. Classic Membership is $250, and this membership is designed to enhance the visibility of small businesses through Chamber networking programs and com-munity events. Members of the Chamber’s Premier Membership invest $500.00, membership

is ideal for established businesses within the community marketplace that are look-ing for opportunities to grow their busi-ness and improve their recognition within the region. The Elite Membership invest $1,000 and is recommended for businesses that are poised to expand and take on a larger role within the community and begin to be recognized as social and economic leaders within the region. The Executive Membership is the highest level at $1,500, and members are recognized by the community for their active participation within the community and their ability to promote social and economic prosperity in our region. The staff and Board of Directors are committed to continuing the process of regularly reviewing member benefits and we welcome your feedback. We view our dues as an investment, which is why we are continually updating our services to strengthen our members’ capacity to pros-per and grow. This new dues structure allows us to better support the companies that support our entire membership while preserving the benefits that everyone in our network currently enjoys.

KEM Media Group and the Chamber are partnering in producing an enhanced, magazine-style member directory to be published in January. How do you view the directory’s value in informing the general public and increasing exposure for members? A Chamber’s membership directory is one of the most valuable benefits of membership. All Chamber members are listed in an annually updated direc-tory that’s provided to both members

and non-members for free. The benefits here are twofold. First, your listing in the directory means that other Chamber members who need your type of product are likely to reach out to you before trying non-member businesses in your industry. And second, that directory is a wonder-ful source of leads. At a minimum, the directory provides each member’s contact information and industry. We are excited to be able to produce a new magazine with important informa-

tion for both members and non-members.

Are there any near-term events scheduled by the Chamber? The Chamber

is partnering with the Suncoast Arts Fest at Wiregrass in mid-January. We will be hosting a business mixer at the event to bring the business community in great

touch with local artists. In February, we will be hosting our annual Health and Wellness Fair at the same location. Our large medical providers, Florida Medi-cal Clinic and Florida Hospital Wesley Chapel are supporting us in this event. We hope to provide more wellness items to support the community and our local businesses. Our Pride Awards will be in May at the Performing Arts Center at Wesley Chapel High School (looking for business sponsors for scholarships).

What else would you like our readers, members and potential members to know about the Chamber? Having lived in Wesley Chapel since 1996, I have been fortunate to see this community grow beyond comprehension. My wife and I are watching our youngest daughter move through our local public school system. It is amazing how many more things there are for us to enjoy as a family than when our older daughters were at that age. It’s hard to believe, but just last month the Chamber celebrated our 15th anniversary. Early efforts of the Chamber included instigating changes to the County’s sign ordinance, an overlay district and helping bring more recre-ational opportunities to Wesley Chapel. Back then you would rarely hear much about Wesley Chapel in the greater Tampa area. Most people just figured we were the northern reaches of New Tampa. This community is much larger and stronger than those times. But I see the Chamber will help continue to serve as not only the

business voice of the community, but in many ways help transform Wesley Cha-pel. Our businesses have helped broaden our perspective and make this more than a place with houses. We recently worked to get new road signs installed that help define our boundaries. We will be work-ing with the County and others to help Wesley Chapel grow and expand the ben-efits provided to our residents. Our goal is continue to make Wesley Chapel a jewel of Pasco County, but more importantly a leader in the Tampa Bay region. •

The holiday season brings excitement and commotion associated with shopping, final exams, travel, and other seasonal preparations. In all the activities of the season our beloved pets may be exposed to hazards less commonly found other times of the year. As homes fill with holiday spirit, pets may be intrigued by the new sites, smells and tastes. The following are some of the most common health concerns for your pet during the holidays. If you have specific questions regarding any pet health concern please contact your veterinarian.

Tinsel, Ribbon and other Pretty Things Ribbons, wrapping paper, ornaments, tinsel, extension cords and gifts may be appealing “chew toys” that may make your pet sick. There is something about those shiny strands of Christmas tree decor, which drives kitties wild. Al-though the sight of your cat pawing at the tree may be cute, the ingestion of tinsel can be deadly. Eating tinsel or other string-like items such as ribbon (often called linear foreign bodies) can cause serious damage to the intestine. One end can get stuck while the rest is pulled into the intestine as it contracts; the contractions may cause the ribbon or tinsel to saw through the intestine. If not caught in time, infection of the belly cavity develops and the prognosis for recovery becomes poor. Pets with linear foreign bodies quickly become ill with signs including vomiting, diarrhea, depression, belly pain and sometimes fever. Eating other holiday decorations can cause signs ranging from mild depression to severe vomiting or diarrhea, depending upon whether or not the foreign matter can be passed in the stool or gets stuck along the way. Foreign matter stuck in the intestine often does NOT show up on “x-ray” but sometimes the foreign matter will trap air in the intestine, which helps your veterinarian make a diagnosis. Surgery is required to remove foreign matter that does not pass out on its own.

Holiday Lights Decorative lights are another attraction for pets to chew on. Both indoor and outdoor lights should be carefully examined to ensure safety for your household pets. Electrical shock may occur from de-fective cords as well as from pets chewing on cords. Check cords for any signs of bite marks, loose or frayed wires, proximity to the tree’s water supply or evidence of short circuits. Use grounded “3-prong” extension cords and strictly follow manufacturer’s guidelines for light usage. Electrical shock can cause burns, difficulty breathing, abnormal heart rhythm, loss of conscious-ness, and death. Call a veterinarian immediately if your pet has been injured by electrical shock. Treat-ment will be most effective if begun soon after the shock. Water, Water... Even though they have their own water bowel, there is something enticing about a novel source of

water; whether it’s the toilet bowl or the Christmas tree stand. If you add chemicals to the water meant to keep your tree fresh longer, be sure to read the label to make sure it is safe for pets. Potpourri makes your house smell festive but may be another attraction for pets to drink. Make sure that potpourri pots are covered or otherwise inaccessible to pets. It may be difficult to curb your pet’s fascination with all those pretty decorations. Child gates can be used across doorways to keep your pet away from the Christmas tree and decorations at times they can-not be watched.

Overindulgence Well-intentioned family and friends may share holiday foods with pets causing the pet to develop a stomach upset or worse, pancreatitis (inflammation of the pancreas) which can be caused by eating fatty foods. To control excessive food intake by your pets and meet your guests’ desires to feed the pets, dole out the treats your pets would normally receive and let your guests “treat” the pets. If you want to get festive, mix some of your pet’s regular food with water to make a “dough” and roll out and cut into festive shapes, then bake until crunchy. Extra attention from visiting relatives and friends may be relished by some pets while others seek solitude in their favorite hiding spot. Make sure pets are given some “personal space” if they want to get away from the commotion. Some pets may respond to all the hullabaloo with a change in behavior including bad behaviors like eliminating in the house. Try to spend a little extra “quality time” with your pet to assure them they have not been forgotten.

Chocolate What would the holidays be without boxes of chocolate and warm cocoa in front of the fire? How-

ever, chocolate can be toxic or even fatal to dogs and cats. Chocolate may be mistakenly given to pets as treats and may be irresistible to the curious canine. Chocolate poisoning occurs most frequently in dogs but other species are also susceptible. Theo bromine is the toxic compound found in chocolate. Signs which may appear within 1 to 4 hours of eating chocolate include: • Vomiting • Increased thirst • Diarrhea • Weakness • Difficulty keeping balance • Hyper excitability • Muscle spasms, seizures, coma • Death from abnormal heart rhythm The toxicity of chocolate depends on the amount and type of chocolate ingested:

The amount of Theo bromine in white chocolate or chocolate flavored dog treats is usually negligible. As with any poisoning, call your veterinarian or an emergency veterinary hospital immediately if you suspect your pet may have ingested chocolate. Have the product label information available when you call your veterinarian. There are national and regional poison control hotlines for animals. In general, the treatment of poisonings is most effective if begun soon after eating the poison, before large amounts are absorbed into the blood.

Poinsettias & Mistletoe Poinsettias fill homes with color during the holi-days. Poinsettias have received bad publicity in the past whereas in fact, poinsettias are not very toxic to pets. They do contain a milky sap that can irritate the mouth but if signs develop they are usually mild.Mistletoe can be very toxic to animals and you should seek veterinary consultation immediately if your pet has potentially ingested any part of the plant. Mistletoe can cause vomiting, severe diarrhea, difficult breathing, shock and death within hours of ingestion. Old Glory is flying high and proud from atop a cell phone tower located at Dr. John Long Middle School in the quiet community of Meadow Pointe. Across the country, more and more school divisions are securing cell tower leases or cell phone antenna leases. These leases are a lucrative and easy source of revenue to reduce ever growing budget gaps the Board of Education members across the country are facing. For example, neighboring Hillsborough County Public Schools received $255,246 in revenue to help their budget in 2010 and are guaran-teed to receive $2,905.322 by 2020. According to the 2013-2014 Pasco County Board Budget, “This is the sixth consecutive year of multi-million dollar budget shortfalls. This year the District is faced with a budget short fall of $19.5 million due to non-recurring general fund revenues which were used to balance the 2012-2013 budget”. The revenue additional cell phone tower leases provide can help balance the budget and keep needed services in Pasco County Schools; but at what risk? Pasco County School Board was asked that exact question about the

proposed placement of a cell phone tower at Seven Oaks Elementary School in Wesley Chapel. Tuesday, November 26th about 24 concerned parents won a victory of time; Time to research the effects that children attending Seven Oaks Elementary would be subjected to over the course of an Elementary Education if a cell phone tower were there. The board re-scheduled its VOTE to December 17th with a 6pm evening meeting at the District Office Complex, 7205 Land-O-Lakes Blvd. The meeting is open to the public and ALL are encouraged attend. Though long term health effects resulting from the emitting radiation of these cash generating towers are unknown at this time; i did find the following study which can lead one to proceed with caution. The American Cancer Society had this to say about cell phone towers on its web site: “The energy from a cel-lular phone tower antenna, like that of other telecommunication antennas, is directed toward the horizon (parallel to the ground), with some downward scatter. Base station antennas use higher power levels than other types

of land-mobile antennas, but much lower levels than those from radio and television broadcast stations. The amount of energy decreases rapidly with increasing distance from the antenna. As a result, the level of expo-sure to radio waves at ground level is very low compared to the level close to the antenna. Public exposure to radio waves from cell phone tower antennas is slight for several reasons. The power levels are relatively low, the antennas are mounted high above ground level, and the signals are transmitted inter-mittently, rather than constantly. At ground level near typical cellular base stations, the amount of RF energy is thousands of times less than the limits for safe exposure set by the US Federal Communication Commission (FCC) and other regulatory authorities. It is very unlikely that a person could be exposed to RF levels in excess of these limits just by being near a cell phone tower. When a cellular antenna is mounted on a roof, it is possible that a person on the roof could be exposed to RF levels greater than those typically encountered on the ground. But even then, exposure levels approaching or exceeding the FCC safety guidelines are only likely to be found very close to and directly in front of the anten-nas. If this is the case, access to these areas should be limited. The level of RF energy inside buildings where a base station is mounted is typically much lower than the level outside, depending on the construction materials of the building. Wood or cement block reduces the ex-posure level of RF radiation by a factor of about 10. The energy level behind an antenna is hundreds to thousands of times lower than in front. Therefore, if an antenna is mounted on the side of a building, the exposure level in the room directly behind the wall is typi-cally well below the recommended exposure limits.” •

Specific Health Symptoms and Cell Phone Radiation in Bavaria,

Germany - Evidence of a Dose-Response Relationship

In Selbitz, a town in Bavaria, Germany 251 residents completed a health survey. Citizens were organized in groups, based on their proximity to cell phone transmitters of 3 service providers. Groups were assigned a mean RF exposure value in volts per meter. Group 1 was within 100 meters of the cell antennas. Group 2 was within 200 meters of the cell phone antennas. Groups 1 and 2 had a mean exposure value of 1.17 V/m. Group 3 was within 300 meters and Group 4 within 400 meters. The mean RF exposure value for Groups 3 and 4 was .7 V/m. The control group was in Group 5, outside of the 400 meter radius, with a mean exposure level of .18 V/m. In comparison to the control group, significant (p <0.01, t-test) differences were found for the following symptoms in the four exposure groups 1 to 4 located within 400 meters of the antennas: sleep problems, symptoms of depression, cerebral symptoms, joint problems, infections, skin problems, cardiovascular problems, disorders of the visual and auditory system, as well as hormone system and gastrointestinal problems. The study showed a significantly increased health risk in the vicinity of cell phone antennas. According to the study, “the current exposure limit regulations basically do not provide sufficient protection against health risks.” •

Chocolate Pecan TartUnlike most pies, this tart is just as good when baked a day ahead as long as it is not refrigerated.

Preheat the oven to 400°. Line the bottom and sides of the frozen pastry shell with foil and fill with pie weights or dried beans. Bake for 15 minutes. Remove the foil and weights and bake for about 3 minutes longer to

dry out the bottom. Transfer the pan to a rack and let the shell cool to room temperature. Reduce the oven temperature to 350°. In a small saucepan, melt the butter and honey together over high heat. Add the

brown and granulated sugars and stir until dissolved, then boil for 1 minute without stirring. Add 1/3 cup of the heavy cream and stir constantly until smooth. Remove from the heat and stir in the chopped pecans. Pour the mixture into the baked pastry shell. If necessary, spread the pecans to evenly distribute them over the bottom of the tart. Bake for about 20 minutes, until bubbles appear around the edges and the center is slightly firm. Transfer the tart to a rack to cool. In a small saucepan, bring the remaining 1/4 cup heavy

cream to a boil over high heat. Remove from the heat, add the chocolate and stir until melted. Spread the chocolate evenly over the cooled tart. Decorate the tart. Cut out an 11-inch circle

from a piece of parchment or waxed paper. Fold it in eights, then open it and cut out every other wedge, leaving 4 wedges held together at the center. Place it on top of the tart. Using

a fine sieve, dust the cocoa over the exposed tart. Carefully lift the paper and shake off excess cocoa. Set the paper over the cocoa-dusted sections and sift confectioners'

sugar over the tart. Carefully remove the paper. Remove the rim of the pan and transfer the tart to a serving platter. Place a cluster of mint sprigs in the center of

the tart. MAKE AHEAD The recipe can be prepared 1 day ahead through step 4. Leave the tart out at room temperature, uncovered.

Unexplainable Joy It seemed to come early that year. Hadn’t Halloween just passed? Where did the time go? Time rolls along like the pass-ing of a ship on the horizon. It’s almost imperceptible when the busyness of life takes our eyes off the passing vessel. Joys and sorrows blend together to form the normalcy of life and lull us to sleep as the sun sets and rises day after day. Before you know it the whole ship is out of sight and on the other side of the roundness of the earth. And then you awaken when the waves crash onto the shore. It was only one year ago. My family had just relocated to Florida from 1,000 miles away to a land we didn’t know to start a new church in beautiful Wesley Chapel, Florida. We were still completely unsettled and not even yet in the home we were to close on in just two days. In the midst of that change of epic proportions came the death of my father-in-law, unexpected, without warning, and horrifically timed. Now, we were even a day’s travel away. Suddenly time slows down in those moments

as the grief becomes great and washes over you. Suddenly small things that were so bothersome before become small again and the reality of our limited time on earth is surreal. God can handle it. And when we turn it over to Him the peace that surpasses understanding puts wind back in the sails of our existence. The time when that life is celebrated and the thoughts of those wonderful moments spent together, complete-ly timeless, takes root in just a semblance of joy again. Cast your cares upon Him because He cares about you. This Christmas season trust God with your pain, your joy, and your prayers. He’s listening and loves you.
