    The taste, flavour and

    texture of the kangaroogoes so well with thesweetness of the mango

    in this salad.

    Serves2 asa main

    Preparationtime: 10minutes (plus20 minutes

    marinating time)

    Skillsneeded:Basic

    1largemango,sliced1/4 redcapsicum, finelychopped

    1smallthaichilli,finelychopped1/2 redonion, finelysliced

    Limejuice

    2kangaroofillets

    Lemonmyrtlebushspice1/4 cupoliveoil

    1clovegarlic, chopped

    1zucchini,thicklysliced onthediagonal

    Rocket

    Combinemangoslices,capsicum,chilli, redonionandlimejuice ina bowl.Marinate thekangaroofilletsin thelemon

    myrtle bushspice,oliveoil andgarlicfor about20minutes.Grill thezucchini onhotbarbecueor panuntil

    golden andtenderon eachside,set aside.Grill thekangaroofilletson both sides forfive

    minutes,set aside torest.Ina mouldsuch asan eggring,arrangelayers

    of theslicedzucchiniand themangosalsa,making sureto ensurethe zucchiniand salsa isfirmly packed.Remove thering.Slice thekangarooand arrangeon topof the

    mango stack.Garnish with rocketand serve.
