PEARL MORISSETTE 2013 CHARDONNAY Cuvée Dix-Neuvième Vinification & Élevage: This cuvée is 100% Chardonnay sourced from our 19th street vineyard on Twenty Mile Bench. It was harvested in early October, hand sorted and whole bunch pressed. Fermentation was done using only indigenous yeast in a combination of new French oak barriques (10%) and old, large format oak barrels. Primary and secondary fermentation was completed by early 2014 and the wine was left on primary lees, without battonage until bottling. 2013 Chardonnay Cuvée Dix-Neuvième was bottled unfiltered and un-fined in early September 2015. pH: 3.48 Total Acidity: 6 g/L FS02: 21ppm at bottling Alcohol: 13.5% /vol Residual Sugar: 2.2 g/L Average Brix at harvest: 22 Total Production: 842 cases of 12 bottles.
