Recipe for the beach cupcakes

Ingredients

• 3 eggs

• 6 oz. self-rising flour

• 6 oz. butter or margarine

• 6 oz. caster sugar

• Few drops vanilla essence

• Dash of milk

• Blue food colouring

• Digestive biscuits.

1) Simply mix all of the ingredients together in a bowl,

using a mixer.

2) Spoon the mixture into cupcake cases, filling each

one 2/3rds full.

3) Then bake in a muffin tin for 25 minutes at 180

degrees.

4) To make the topping, mix half a cup of icing sugar

with a few drops of warm water and stir until runny.

5) Add a few drops of blue colouring to make it look

like the ocean, then spread it over each cake, once

they were cooled.

6) Bash 5 digestive biscuits until they resembled

breadcrumbs.

7) Sprinkle this all over the icing, covering it up.

8) To finish them off, stick a beach umbrella cocktail

stick into the top of each one
