Thanks to the effort and commitment of many years and the invaluable help of a group of friends, this dream has become a reality. VINEYARD: The varieties of Garnacha and Syrah, which are PdM Moncayo wines, grow on over 7 acres of vineyards belonging to the Aibar family, which guarantees quality vineyard management. The richness of these vineyards named La Marga and Blanquizales, which are located in the municipalities of Magallon and Bisimbre, allows us to maintain the finest production to elaborate this outstanding wine. FERMENTATION & AGEING: Every season, we pick the grapes by hand and transport them in small boxes of no more than 20 Kgs to protect the fruit. The grapes, partially destemmed, are placed in open vats. Each vat normally holds the result of an entire day of harvest. The grapes are macerated here for a week before the start of the alcoholic fermentation. After the start of fermentation, we crush the grapes under foot; the artisanal method developed to ensure the maximum extraction of the grapes’ potential and also the correct maceration process and grape colour extraction. After fermentation the wine is separated from the fermentation residue by a traditional manual pressing system. This guarantees the highest quality of the wines. WINEMAKER'S NOTES: A color of mature cherries. The nose has tones of red Mediterranean fruits particular to the garnacha. The presence of the Syrah becomes evident by the soft hints jam. In mouth it is silky. Very easy to understand and enjoy. SERVICE SUGGESTIONS: We suggest serving at a temperature of 14 ° C, as an accompaniment to red meats with red fruit sauces, stews and pasta dishes.
