RECTOR WRITES
Dear Parishioners,
St. Francis Hospice, Dublin 15
I was pleased to attend and take part in the blessing of
St. Francis Hospice (beside Connolly Hospital). The
official opening took place on Saturday 23rd May.
The Minister of Health, Leo Varadkar, officially opened
the 24-bed facility. We hope it will make a real
difference to patients and their families.
St. Francis Hospice in Raheny has been providing
palliative care to the North side since 1989. In 2001 it
also took over the provision of services for the wider
area of Dublin North West.
The need for another facility in Dublin West was
identified a number of years ago and Blanchardstown
was chosen as the most suitable location.
The hospice is here today because of the support of the
local community. In his speech, Father Eugene
Kennedy, formerly of St. Thomas’ Laurel Lodge,
expressed his thanks to the Church of Ireland for our
generous support.
The new hospice also acts as a base for the community
palliative care team, an education centre and a hospice
day care centre that opens two days a week. It is hoped

ARCHBISHOP OF ARMAGH’S ADDRESS AT 200TH
COMMEMORATION OF THE BATTLE OF WATERLOO SERVICE AT
ST PATRICK’S CATHEDRAL, DUBLIN
The Most Revd Dr Richard Clarke,
Archbishop of Armagh and Primate of
All Ireland, gave the address at a service
to commemorate the 200th anniversary
of the Battle of Waterloo at St Patrick’s
Cathedral, Dublin on Thursday 18th June
2015.
Drawing on the image of ‘closing the
gates on war’, Archbishop Clarke said
that ‘“Closing the gates on war” is a fine and noble aspiration as a fitting memorial of the
Battle of Waterloo, but it will not be painless if it is being taken seriously. It will mean
closing the gates firmly on all narrow nationalistic pride, on all that makes for the indignity
and degradation of others, whether racially, economically or socially. It means standing
firmly against a pseudo–liberalism that quickly turns into a cruel totalitarianism when
dealing with minorities whose understanding of life does not conform to the fashionable
consensus. It means closing other gates against an avaricious pillaging of the environment
that will ultimately (if not today or tomorrow) drive others into violence as the only means of
their survival. “Closing gates on war” will only ever be a sanctimonious cliché if it is not
seen as carrying a real cost and a serious price–tag.’
He continued by reflecting on Psalm 24 and ‘the opening gates so that a new order of things
may enter and come into being’, by saying: ‘It means opening gates to people and to ideas
not of our own choosing. It means opening gates to a new courtesy and a sacrificial
generosity in our dealings with others.’
Two hundred years on from Waterloo, Archbishop Clarke concluded: ‘We have much still to
learn, and perhaps not as much time as we would like to imagine in learning it. Closing
gates on future war and opening gates on authentic harmony is not the softest option, but it
should surely be the only proper option.’

PARISH ORGANISATIONS
Boys’ Brigade
The Boys’ Brigade weekend in Castle Saunderson in Cavan gave
everyone a chance to challenge themselves. Rock climbing,
archery, paintballing, orienteering to name but a few of what was
laid on, plus of course some Haute Cuisine meals cooked by the
leaders and devoured by all that came along. A big thank you to
the leaders who helped supervise some very easily supervised
kids. Most of all thanks to the Juniors for enjoying such a super
weekend. A special thanks to the Youth Service in
Blanchardstown for the use of the minibus. Techno on the
cd/radio as I was driving is a joy which a lot of people miss out
on.

Knit & Natter Notes
The Natter may have ceased but the knitting continues
through the summer months or maybe ‘tis the other way
around – the natter continues and the knitting ceases!! We
try to meet up every fortnight from September through to
April and we thank the ladies for hosting these evenings.
Some 42 Matinee Coats, 63 Baby Bonnets, 59 Cot Blankets,
a couple of adult hats and scarfs along with a couple of little
teddys were produced plus 480 Hats for The Big Knit 2014
Innocent Drinks Age Action charity. We donated €224.80 to
the Parish Caring & Sharing Fund and all being well we will
be back in full action Knitting and Nattering in September.

Castleknock Sunday Club
Another year of Castleknock Sunday Club has flown past. This
year we were blessed with great attendance each week. Our Sunday
Clubbers came along with bags of enthusiasm, questions and a
brilliant sense of fun. Looking back over the year we enjoyed
wonderful lessons, kindly provided by Beryl Stone, the kids
especially enjoyed the Palm Sunday lesson where we had a play and
an interactive map to trace Jesus steps, it really brought the scripture
alive for them.
Parish News Page 7 May 2015
We enjoyed a wonderful Christmas party where all of the Sunday Clubs for the parish came
together to celebrate. The party certainly had a magical touch as we were greatly
entertained by the magician (thank you again Beryl for organising). We were a bit nervous
when he brought out the guillotine but thankfully all’s well that ends well and all brave
volunteers went home without a scratch.
Time for some thank yous! I would like to take this opportunity to thank our wonderful
Sunday Club leaders Sandra Condell, Judith O’Connor, Jillian Connolly, Linda Smullen
and Rebecca Connolly. A special note of thanks to Edwin Waters who sadly retires this
year, thank you Edwin for your service to the club over the last number of years, you will
be greatly missed. Thank you Mums, Dads, Grans, Granddads and guardians for your
support and last but by no means least, thank you to our lovely Sunday Clubbers for
coming along each week, without you, there would be no Sunday club!
See you all in September.

Castleknock National School:
We are fast approaching the end of another busy school year. Congratulations to our pupils
in 4th and 5th Class who won a 'Creative Schools' Award. Well done to them and their
teachers. We also won a number of prizes in the 'Write-a-Book' and 'Scríobh Leabhar'
Competitions.
In Sport, we won the Dublin 15 Girls Cricket Blitz and the Dublin 15 Athletics Shield. Our
Athletes also did very well at Santry Sports.
We are all looking forward to the end of term with Sale, Tours and Plays.
We wish our 6th Class pupils all the very best in their new schools as they leave us. May
we all have a restful summer break and we look forward to welcoming a full class of new
infants at the end of August!

Notes from the Kitchen Elf!
This year I’m attempting (yet again) to
grow some produce for eating on those
warm summer days – well, you can
always dream ! To date the tomatoes
have been planted (two given to me to
help start off on my self-sufficiency
quest, a yellow and a beefsteak, the other
four I don’t know what they will produce,
as bought with no labels) – Red pepper
(one); strawberries; micro greens;
radishes and some edible flowers for
chefy decoration – not a lot – but then not
having a proper greenhouse - just a little
3ft x 6ft ‘pretend’ one – of which I lost
the plastic cover during that storm we had
a week or so back – despite it being
zipped right down to the ground! There
is an ongoing battle with magpies, and a
squirrel, as to who gets to the
strawberries first every morning so far is
Magpies 5 – Me 3!!
In anticipation of using up the tomatoes
when they finally appear - this recipe is a
lovely side dish, with grilled meat or fish,
or a light lunch with plenty of crusty
bread. It will serve 6.
TOMATO AND COURGETTE BAKE
3 tablespoons olive oil
1 large onion, sliced
1 large pepper, sliced
2 garlic cloves, crushed
6 firm tomatoes, sliced
3 large courgette, sliced
1 tablespoon fresh oregano leaves
50g Parmesan, grated.
1. Heat 2 tablespoons olive oil in a
large pan, and gently fry the onion
and pepper for 10 mins until
softened. Add the garlic and fry
for 1 minute. Season.
2. Heat the oven to 190 (170 fan)
gas mark 5) Put the onion
mixture into the base of a greased
oven-proof dish. Cover with
overlapping layers of tomatoes
and courgettes (alternate
tomato/courgette as you go
around the dish). Season well and
drizzle with the remaining oil.
Scatter with the oregano.
3. Bake for 25 mins, then sprinkle
with Parmesan and return to oven
for 5 mins to brown.
Keeping with the Tomato theme – this is
a great way to deal with a glut of
tomatoes – you can make as much or as
little as you wish, and there’s no need to
measure!
PASSSATA
Very ripe tomatoes, as many as you like.
Couple of bay leaves
Couple of sprigs of rosemary, thyme or
oregano (optional).
1. Roughly chop the tomatoes and
put into a large pan with the herbs
if you are using them. Bring to
the boil, then simmer gently until
the tomatoes have softened,
broken down and reduced – the
juices should be thick and
Parish News Page 16 May 2015
tomatoey. This could take
anything from 30 – 60 mins
depending the variety and ripeness.
Don’t overdo the simmering,
though, as you want to retain the
fresh taste.
2. Push the tomatoes through a sieve
to remove seed and skin. The
passata should be fairly thick – if it
isn’t return to the rinsed-out pan
and reduce until you are happy
with the consistency.
3. Pour into sterilised jars and seal, or
freeze in freezer-proof containers.
Depending on Magpies, I may just have
enough Strawberries for the following
unusual combination of Strawberries and
Prawns.
PAN-FRIED PRAWNS WITH
STRAWBERRIES AND A
STRAWBERRY VINAIGRETTE (to
make the vinaigrette you need to make
Strawberry Vinegar 2 days in advance)
serves 4.
250ml good white wine vinegar
250 strawberries, hulled and sliced in half
Salt and pepper
1½ tablespoons strawberry vinegar (see
below)
3 tablespoons rapeseed oil, plus a little
extra for frying
1 bag missed baby salad, washed (or your
own from the garden!)
16 large tiger prawns, peeled and dried
with kitchen paper.
For the strawberry vinegar: pour the
white wine vinegar into a bowl, add half
the strawberries, (reserving the other half
for the salad). Cling wrap and leave to
stand at room temperature for 48 hours.
Strain the vinegar to remove the
strawberries, pour into a bottle with a tight
lid and store in a cool dark place.
For the strawberry vinaigrette, pour the
strawberry vinegar into a bowl. Slowly
pour in the oil whisking all the time until
all the oil is incorporated, season with salt
and pepper to taste.
Place a pan on a medium heat, when hot
add a small drop of oil and when this is
hot add the prawns. Fry for a couple of
minutes till they turn a lovely pink colour
and are cooked through. Take off the heat
and drizzle a little of the vinaigrette.
Dress the salad leaves with the strawberry
vinaigrette and arrange on a serving
platter, scatter with the reserved
strawberry halves and then the warm
prawns and serve.
Enjoy ! . . .
Happy Cooking from the Kitchen Elf

GREETINGS FROM MADAGASCAR!
Just to update you since my last email. We discussed the kind donation of €200 from the
Parish of Castleknock and Clonsilla with Mulhuddart with Sister Jacqueline at Convent
Hasina on Wednesday 22nd April. She said that because of their workload with the Feeding
Centre and the Health Clinic, they were overworked and burdened, as we witnessed from our
visits in the previous weeks. Sr. Jacqueline suggested some electrical kitchen appliances,
and some other kitchenware, which she said would made life easier for all. They presently
cook all their rice on a charcoal
stove and carry it from the Convent
up to the Feeding Centre.
We met Sr Odette on Wednesday
morning, 29th April at 9 o’clock in
the morning and went into Tana
(Antananarivo) in a friend’s taxi,
which myself and Marie hired for
the day. We visited a hardware
shop (for cups and plates for the
children at Akany Hasina); one
roadside shop (for the meat-
grinder); an outdoor market (for a large cooking pot) and four separate stores for an electric
mixer and blender, an electric slow-rice cooker; a pressure cooker and a set of rice flasks (to
keep the rice, which they bring to the sick of the district, hot!). Sr Odette is obviously the
nun with the purchasing skills, for she bargained over every purchase, getting the price
reduced by between Ariary 2,000 and 7,000 per item (between 66c and €2.33), but no mean
feat in any climate. We got a great laugh over that. After three hours shopping, we retired to
the four-star Colbert Hotel (our treat) for coffee and cakes; it was Sr Odette’s first time there
and she really enjoyed the experience. Incidentally, just sitting beside us was a young
Dublin chap, Patrick from Booterstown, in Madagascar for two years with the local Ministry
for Finance. We hope to meet up with him later this month.
We arrived back at Convent Hasina at about 2 pm, and had a lovely lunch of pancakes with
lemon and sugar, followed by a beautiful spaghetti salad. The nuns couldn’t wait to inspect
the new equipment, and as we were on the way out saying our goodbyes, the boxes were
being joyfully opened. We left them to it.
Arts and Crafts sessions at Akany Famonjena
Parish News Page 18 May 2015
On Saturday we were in the Anglican orphanage, Akany Famojena, where we volunteer
every second Saturday, and we had a lovely Arts and Crafts session with the children (36 in
total, ages from five up to 20). We did three separate activities with them, colouring-in for
the young children, and I did a post-card of a boat, with the boat, sail and flag all from Nice,
patterned cardboard, which they glued on, and they then decorated and coloured the inside
and back pages. They loved it; the third group Marie did a beautiful project which absorbed
the children – a cardboard cut-out fairy with paper wings; we got five in Dunnes Stores in
February – they were €5 before Christmas, then reduced in stages to 50c. When we bought
them they were 25c each! Marie had this idea of using the ones we bought as samples, and
she got the children to draw out the parts on coloured cardboard (which we brought with us).
They then cut out the parts and decorated them with some bling and sparkle. Well they
loved it and after two hours were still working on their masterpieces! The children get so
little that they used some of the bling to decorate themselves with, for example sticking it on
their foreheads, arms and ears! They gave us a lovely lunch as they usually do and drove us
back to our village afterwards. The orphanage is run by the Mothers’ Union and was
founded by a Canadian lady with funding from the Canadian Anglican Community.
Kind regards,
Bernard and Marie
