GettingstartedCarefullyunpackyourWood-firedOutdoorOven,it’snottooheavy,butusetwopeopletoliftitoutofthebox.BesuretoplacetheOutdoorOvenonanoncom-bustiblestand,suchastheKitchenWoodbox/Standkitwithgranitetop.Removealltheprotectivefilmanddiscard.Assemblethepizzaovenaccordingtotheinstruction.Hint:SeasontheOutdoorOvenpriortouse.Burntwoormoretimes,allowthethermometertoreach650°Fandletthefiredieout.
Theartandscienceofwood-firedcookingCookinginyourOutdoorOvenismuchlikeusingtheoveninyourhome.Youwillquicklylearnhowtoregulatethetemperature,usedifferentwoodsforflavor,andbeamazedathowgoodthefoodtastes.Anyonecanbakedeliciouspizzaandbread,roastmeatandvegetables,grillfishandseafood,andcreatemouthwateringdesserts.
TheCookingStoneandDomeofyourOutdoorOvengiveoffradiantheatfromallsides,creatinganaturalconvectionthatbakeseverythingtoperfection,whilethefireonthesidebringsoutauniquecrispandsmokytaste.Anyvarietyofoven-safemetal,ceramicorglasspancanbeusedtocookinyourOutdoorOven.

StartthefireintheOutdoorOvenapproximatelyonehourbeforecooking.Splitwoodintosmallpiecesabout10"longby1/2"thick.Themaximumloadingis3.5KG.Usingkindlingandnewspaper,startamatchlitfireinthecenteroftheCookingStone.Continuetofeedthefirewithtwoorthreelargerpiecesuntilitbecomeswellestablished.Atthispoint,putthefiretotheleftsideoftheOutdoorOvenusingtheAshSweep.Hint:itdoesn’ttakemuchwoodtobringtheOvento650°Fonthethermometer.ClosetheOutdoorOvendoor,ventedenoughtokeeptheflameburning,andcontinuetoaddwoodasneeded.Theflamewillreachthetopofthedomeandcurvearoundtotheotherside;thisisnormal,justmakesuretheflamesdon’tcomeoutoftheOutdoorOvenopening.ThegoalisfortheCookingStoneandDometoabsorbtheheat.Oncethethermometerreachesbetween620°F-650°Fyouarereadytostartcooking.
GetcookingHighTemperatureCooking:WhentheOvenStoneisbetween620°F-650°F,youareataperfecttemperaturetocookpizza.Pizzasareplacedwiththe11.5"SquarePeelontheCookingStoneandtakelessthan3minutes.Remembertorotatethepizza,withthe8.5"RoundPeel,toensureevencooking.Hint:Agreattricktocheckifyourpizzacrustisfullybaked,istoliftyourpizza(whilecooking)withthe8.5"RoundPeel.Ifthepizzafoldsoverthesidesofthepeel,thecrustisnotfullycooked.MediumTemperatureCooking:WhentheCookingStoneisbetween450°F-600°F,youareatagoodtemperaturetoroastmeat,vegetables,fishandseafood.Dependingonthedish,youmaywanttocoveritinitiallytoallowittocookfullybeforeremovingthecoverforbrowning.Youwillalsowanttorotatethepansandroasts,alternatingthesidefacingthefire.LowTemperatureCooking:WhentheCookingStoneisbetween325°F-425°F,youareatagoodtemperatureforbakingbreads,piesanddesserts.Generallythisiseasiesttodoafterallofyourcookingiscomplete,andbyremovingalltheembersfromtheOutdoorOven.KeepinmindthattheOutdoorOvenwillhavetobepre-heatedwellinordertoretainenoughheatforcookingwithoutfire.SomakesuretheCookingStoneis500°Forhigherforatleast15minutesbeforeremovingalltheembers.Hint:Alwayswearbarbecuemittswhencookingoradjustingtheventsaswellaswhenusingachimneystarter.Whenpreparingfood,adjustingthevents,placingwoodandusingthethermometerorlidalwayswearbarbecuemitts.Pleaseusegrillgloves(heatprotected),thegrillglovesmustbeinaccordancewiththedirective89/686/EEC(forexample:performancelevel2forresistantforcontactheat,(inaccordancetoDINEN407))CleaningtheovenOncetheOutdoorOveniscold,usethe11.5"SquarePeelandtheAshSweeptobrushtheCookingStonetoremovealltheashanddebris.Neverextinguishthefirewithwater.Neverusechemicalcleaners.IfyouwishtocleanthesurfaceofyourCookingStone,adampclothworksbest.
