The steam oven with microwave is referred to in the following instructions assteam oven.

This appliance complies with all current local and national safetyrequirements. However, inappropriate use can lead to personalinjury and damage to property.

Please read these operating and installation instructions carefullybefore using the steam oven for the first time. They containimportant information on safety, installation, use and maintenanceof the appliance. This prevents both personal injury and damage tothe steam oven.

In accordance with standard IEC 60335-1, Miele expressly andstrongly advises that you read and follow the instructions in“Installation”, as well as in the “Warning and Safety instructions”.

Miele cannot be held liable for injury or damage caused by non-compliance with these instructions.

Keep these instructions in a safe place and pass them on to anyfuture owner.

Correct application

This steam oven is designed for domestic use and for use insimilar environments by guests in hotel or motel rooms, bed &breakfasts and other typical living quarters. This does not includecommon/shared facilities or commercial facilities within hotels,motels or bed & breakfasts.

The steam oven is not suitable for outdoor use.

The steam oven is intended only to steam, defrost, reheat andcook food.Any other use is not permitted.

Fire hazard due to flammable materials.If flammable items were dried using microwave power, the moisturein the items would evaporate. This could cause the materials to dryout and possibly self-ignite.Never use the steam oven to store or dry items which could igniteeasily.

This appliance is not intended for use by persons (includingchildren) with reduced physical, sensory or mental capabilities, orlack of experience and knowledge, unless they have been givensupervision or instruction concerning its use by a person responsiblefor their safety, and are able to recognise the dangers of misuse.

The oven compartment is equipped with special lamps to copewith particular conditions (e.g. temperature, moisture, chemicalresistance, abrasion resistance and vibration). These special lampsmust only be used for the purpose for which they are intended. Theyare not suitable for room lighting. Replacement lamps may only befitted by a Miele authorised technician or by Miele.

Safety with children

Activate the system lock to ensure that children cannot switch onthe steam oven inadvertently.

Young children must not be allowed to use this appliance.

Older children may only use the appliance if its operation hasbeen clearly explained to them and they are able to use it safely.They must be able to understand and recognise the possibledangers caused by incorrect operation.

Cleaning may only be carried out by older children under thesupervision of an adult.

Please supervise children in the vicinity of the steam oven and donot let them play with it.

Risk of suffocation from packaging material. Whilst playing,children may become entangled in packaging material (such asplastic wrapping) or pull it over their head with the risk of suffocation.Keep packaging material away from children.

Risk of injury caused by hot surfaces and steam. Children's skin isfar more sensitive to high temperatures than that of adults. Duringoperation, steam will escape out of the ventilation outlet. The doorglass and control panel of the steam oven heat up.Do not let children touch the steam oven when it is in operation.Keep children well away from the steam oven until it has cooleddown and there is no danger of injury.

Risk of injury from the open door. The oven door can support amaximum weight of 8 kg. Children could injure themselves on anopen door.Do not let children sit on the open door, lean against it or swing on it.

Technical safety

Unauthorised installation, maintenance and repairs (includingremoval of any cover) can cause considerable danger for the user.Installation, maintenance and repairs must only be carried out by aMiele authorised technician.

Radiation by microwaves:Service or repairs which necessitate the removal of any casing or thedoor must only be carried out by a suitably trained servicetechnician.

A damaged appliance is dangerous. Check the appliance for anyvisible damage. Never install or attempt to use a damagedappliance.

Check the door and door seal for any sign of damage. If anydamage is noticed, the oven should not be used again in any ovenfunction using microwave power until the fault has been rectified bya service technician.

Operating a damaged appliance can result in microwave leakageand present a hazard to the user. Do not use the steam oven if:

– the door is warped,

– the front of the oven compartment is dented or bowed,

– the door hinges are loose,

– holes or cracks are visible in the casing, the door, the door seal orthe oven interior walls,

– there is moisture between the door panes.

Reliable and safe operation of this oven can only be assured if ithas been connected to the mains electricity supply.

The electrical safety of this appliance can only be guaranteedwhen continuity is complete between it and an effective earthingsystem. It is most important that this basic safety requirement ispresent and tested regularly and, where there is any doubt, thehousehold wiring system should be inspected by a qualifiedelectrician.

Before connecting the appliance to the mains supply, ensure thatthe connection data on the data plate (voltage and frequency)matches the mains electricity supply. This data must correspond inorder to avoid the risk of damage to the appliance. Consult aqualified electrician if in any doubt.

Do not connect the appliance to the mains electricity supply by amulti-socket adapter or an extension lead. These do not guaranteethe required safety of the appliance (e.g. danger of overheating).

For safety reasons, this appliance may only be used after it hasbeen built in.

This appliance must not be installed and operated in mobileinstallations (e.g. on a ship).

Tampering with electrical connections or components andmechanical parts is highly dangerous to the user and can causeoperational faults. Do not open the outer casing of the appliance.

The manufacturer's warranty will be invalidated if the appliance isnot repaired by a Miele approved service technician.

Faulty components must only be replaced by genuine Miele spareparts. The manufacturer can only guarantee the safety of theappliance when Miele replacement parts are used.

If the plug has been removed or the connection cable is notsupplied with a plug, the steam oven must be connected to themains supply by a suitably qualified electrician.

If the mains connection cable is damaged, it must be replacedwith a special mains connection cable (see “Installation – Electricalconnection”).

During installation, maintenance and repair work, the appliancemust be disconnected from the mains electricity supply. It is onlycompletely isolated from the electricity supply when:

– it is switched off at the mains circuit breaker, or

– it is switched off at the wall socket and the plug is withdrawn fromthe socket. Do not pull the mains connection cable but the mainsplug to disconnect your appliance from the mains electricitysupply.

If the steam oven is installed behind a furniture front (e.g. a door),do not close the furniture front while the steam oven is in use. Heatand moisture can build up behind a closed furniture door. This canresult in damage to the steam oven, the housing unit and the floor.Leave the furniture door open until the steam oven has cooled downcompletely.

In areas which may be subject to infestation by cockroaches orother vermin, pay particular attention to keeping the appliance andits surroundings clean at all times. Any damage caused bycockroaches or other vermin will not be covered by the warranty.

Correct use

Risk of injury caused by hot surfaces and steam. The steam ovengets hot during operation. You could burn yourself on the ovencompartment, shelf runners, accessories, food or steam. Wear oven gloves when placing food in the oven or removing it, andwhen adjusting oven shelves etc. in a hot oven.

Risk of injury caused by hot food. Food may spill or splash around when placing it into the oven orremoving it. The food can cause burns. When placing cooking containers in the oven or removing them,make sure that the hot food does not spill.

Risk of injury due to hot water.At the end of a cooking programme, hot water left in the steamgenerator is pumped back into the water container. Take care not totip the water container when taking it out of the appliance.

Do not use the steam oven to heat up or bottle food in sealed tins.Pressure will build up inside them and they can explode causingdamage to the appliance, as well as the risk of injury and scalding.

Plastic dishes which are not heat-resistant and steam-resistantmelt at high temperatures and can damage the appliance.Use only heat-resistant (to 100 °C) and steam-resistant plasticdishes for steam cooking. Follow the manufacturer’s instructions.

Food which is left in the oven compartment can dry out and themoisture released can lead to corrosion damage in the steam oven.Do not leave food in the oven compartment and do not use anycooking containers which are susceptible to corrosion.

Risk of injury from the open door. You could bang into the opendoor or trip over it. Avoid leaving the door open unnecessarily.

The door can support a maximum load of 8 kg. Do not sit on orlean against an open door, and do not place heavy objects on it.Also make sure that nothing can get trapped between the door andthe oven compartment. The steam oven could get damaged.

When using a small electrical appliance, e.g. a hand-held blender,near the steam oven, care should be taken that the cable of theappliance cannot get trapped by the steam oven door. The insulationon the cable could become damaged, giving rise to an electric shockhazard.

Microwave function

Please be aware that durations when using microwave power areoften considerably shorter when cooking, reheating and defrostingthan when using functions without microwave power. Excessivelylong cooking times can lead to food drying out and burning or couldeven cause it to catch fire.

The Microwave  function is used to reheat food andbeverages. Do not use the Microwave  function for dryingflowers, herbs, bread or other flammable materials which couldcatch fire and cause injury by burning.

It is important that the temperature in the food being cooked isevenly distributed and sufficiently high.This can be achieved by stirring or turning the food, and observing asufficiently long standing time (see charts), which should be addedto the time needed for reheating, defrosting or cooking.During the standing time, the temperature is distributed evenly in thefood.

Risk of injury caused by hot food. When heating food up, the heatis created directly in the food itself. For this reason, the crockery willremain cooler than the food (except when using ovenproofstoneware). The crockery is only warmed by the heat of the food.Before serving, always check the temperature of the actual fooditself after taking it out of the oven. The temperature of the containeris not an indication of the temperature of the food or liquid in it. Thisis particularly important when heating food for babies, children,and the elderly or infirm. After reheating food, especially food forbabies and small children, stir the food or shake the container andcheck that the temperature does not pose any danger of burning.Double check after it has been left to stand.

The Microwave  function is not suitable for cleaning ordisinfecting items because it may involve high temperatures. There isa risk of burning when items are removed from the oven.

Risk of injury from increased pressure in sealed containers orbottles. Pressure can build up when reheating food or drinks insealed containers, jars or bottles, which can cause them to explode.Never cook or reheat food or liquids in sealed containers or bottles.Open containers beforehand. In the case of baby bottles, the screwtop and teat must be removed.

When heating food, and in particular liquids, using theMicrowave  function, the boiling point may be reached withoutthe production of typical bubbles. Liquids do not boil evenlythroughout. This boiling delay can result in the liquid boiling overexplosively. Take care when taking the container out of the oven, asthe hot liquid can cause severe scalding. Under certaincircumstances, the pressure can be so high that the door opensautomatically.Stir liquids well before reheating or cooking. After heating, wait atleast 20 seconds before removing the container from the oven. Inaddition, a glass rod or similar item, if available, can be placed in thecontainer during heating.

Eggs can be cooked without their shells using microwave poweronly if the yolk membrane has been punctured several times first. The pressure could otherwise cause the egg yolk to explode.

Eggs in their shells will explode if cooked with microwave power,even after taking them out of the oven.They can only be cooked in their shells using the Steam cooking function or in an appropriate Automatic programme. Hard-boiledeggs must not be reheated with microwave power either as they toowill explode, even after taking them out of the oven.

Food with a thick skin or peel, such as tomatoes, sausage,potatoes and eggplants can burst when heated or cooked.Pierce or score the skin of these types of food several times to allowsteam to escape.

Do not use the Microwave  function to heat up cushions orpads filled with cherry kernels, wheat grains, lavender or gel, such asthose used in aromatherapy. These pads can ignite when heatedeven after they have been removed from the oven.

To avoid fuelling any flames, do not open the oven door if there issmoke inside the steam oven. Interrupt the programme by switchingthe steam oven off and disconnect it from the mains electricitysupply. Do not open the door until the smoke has dispersed.

Crockery and lids with hollow handles or knobs can collectmoisture in the hollow spaces. When the moisture evaporates,pressure can build up and the item can explode. If the hollow recessis sufficiently ventilated, the item can be used.Do not use crockery with hollow knobs or handles when using theMicrowave  function.

Non-microwave safe plastic dishes can sustain damage ordamage the steam oven if used with the Microwave  function andmicrowave functions.Do not use any containers or cutlery made from or containing metal,aluminium foil, lead crystal glassware, temperature-sensitive plastics,wooden utensils or cutlery, metal clips or plastic or paper coveredwire ties. Do not use bowls with milled rims, or plastic pots with thefoil lid only partially removed (see “Microwave operation - Suitablecontainers for microwave use”).

Fire hazard due to containers made of flammable materials.Plastic disposable containers must meet the requirements specifiedfor crockery in “Microwave operation - Suitable containers formicrowave use”.Do not leave the steam oven unattended when heating or cookingfood in disposable containers made of plastic, paper or otherinflammable materials.

Heat-retaining bags usually contain a thin layer of aluminium foilthat reflects microwave radiation. Because of this, the papersurrounding the aluminium foil can become so hot that it combusts.Do not use heat-retaining packaging, such as bags for grilledchicken, for warming food with functions that use microwave power.

If the steam oven is used without food or the food is loadedincorrectly when using the Microwave  function or functions thatuse microwave power, the steam oven can become damaged. Donot use the Microwave  function or functions that use microwavepower to pre-heat crockery or to dry herbs. Never start theMicrowave  function when the oven compartment is empty.

Cleaning and care

Risk of injury due to electric shock. The steam from a steamcleaning appliance could reach electrical components and cause ashort circuit. Never use a steam cleaner for cleaning.

Scratches on the door glass can result in the glass breaking.Do not use abrasive cleaners, hard sponges, brushes or sharp metaltools to clean the door glass.

The shelf runners can be removed (see “Cleaning and care –Cleaning the shelf runners”).Refit the shelf runners correctly.

The shelf runners fit into plastic bushes. Check the bushescarefully for damage. If the bushes are damaged, do not use anymicrowave functions until the bushes have been replaced.

Try to avoid the interior walls being splashed with food or liquidscontaining salt. If it does happen, wipe these away thoroughly toavoid corrosion on the stainless steel surface.

Accessories

Use only genuine original Miele spare parts. If spare parts oraccessories from other manufacturers are used, the warranty will beinvalidated, and Miele cannot accept liability.

Disposal of the packingmaterialThe transport and protective packaginghas been selected from materials whichare environmentally friendly fordisposal, and can normally be recycled.

Recycling the packaging reduces theuse of raw materials in themanufacturing process and alsoreduces the amount of waste in landfillsites. Ensure that any plasticwrappings, bags etc. are disposed ofsafely and kept out of the reach ofbabies and young children. Danger ofsuffocation.

Disposing of your oldapplianceElectrical and electronic appliancesoften contain valuable materials. Theyalso contain specific materials,compounds and components, whichwere essential for their correct functionand safety. These could be hazardousto human health and to the environmentif disposed of with your domestic wasteor if handled incorrectly. Please do not,therefore, dispose of your old appliancewith your household waste.

Please dispose of it at your localcommunity waste collection / recyclingcentre for electrical and electronicappliances. You are also responsible fordeleting any personal data that may bestored on the appliance prior todisposal. Please ensure that your oldappliance poses no risk to childrenwhile being stored prior to disposal.

Data plateThe data plate located on the frontframe of the oven is visible when thedoor is open.

The data plate states the modelnumber, the serial number as well asconnection data (voltage, frequencyand maximum rated load).

Accessories suppliedThe accessories supplied with yourappliance, as well as a range of optionalones, are available to order from Miele(see “Optional accessories”).

On/Off sensorThe On/Off sensor is recessed andreacts to touch.

Use this sensor to switch the steamoven on and off.

DisplayThe display is used for showing thetime of day or information aboutfunctions, temperatures, cookingdurations, Automatic programmes andsettings.

After switching the steam oven on withthe On/Off  sensor, Select function willappear in the main menu.

Sensor controlsThe sensors react to touch. Every touchon the sensors is confirmed by akeypad tone. This keyapd tone can beswitched off by selecting the Volume |Keypad tone | Off setting.

If you want the sensor controls torespond even when the steam oven isswitched off, select the Display |QuickTouch | On setting.

Sensor controls under the display

Sensor Function

If you want to control the steam oven from your mobile device,you must have the Miele@home system, switch on the Remotecontrol setting and touch this sensor. The sensor then lights uporange and the MobileStart function is available.

As long as this sensor is illuminated, you can control the steamoven via your mobile device (see “Settings – Miele@home”).

Use this sensor to start the Quick MW function. The cookingprogramme runs with the maximum power level (1000 W) and acooking duration of 1 minute (see “Quick MW”). Touching thesensor control repeatedly increases the cooking duration inincrements.

This function can only be used when no other cookingprogrammes are in use.

Depending on which menu you are in, this sensor control willtake you back a level or back to the main menu.

If a cooking programme is in progress at the same time, use thissensor control to change values and settings such as thetemperature or cooking duration for the programme, or to cancelthe programme.

 

      

In the navigation area, use the arrow sensors or the areabetween them to scroll up and down in the selection lists. Themenu options will be highlighted one after the other as you scrollthrough them. The desired menu option must be highlightedbefore you can select it.

You can change the values or settings that are highlighted byusing the arrow sensors or the area between them.

Sensor Function

OK Functions highlighted in the display can be selected by touchingthe OK sensor. The selected function can then be changed.

Confirm with OK to save changes.

If information appears in the display, select OK to confirm themessage.

If no cooking programme is in progress, you can use this sensorto set a minute minder (e.g. when boiling eggs on the cooktop) atany point.

While a cooking programme is in progress, you can set a minuteminder, the cooking duration and a start or finish time for theprogramme.

Select this sensor to switch the oven interior lighting on and off.

Depending on the setting selected, the oven interior lightingswitches off after 15 seconds or remains constantly switched onor off.

SymbolsThe following symbols may appear in the display:

Symbol Meaning This symbol indicates that there is additional information and

advice about using the appliance. Select OK to confirm theinformation.

Minute minder A tick indicates the option which is currently selected.

Some settings, e.g. display brightness and signal tone volume,are selected using a segment bar.

The OK sensor lights up orange as soonas a value, setting or prompt needs tobe confirmed.

Useful tip: If you press and hold thearrow sensor, the list continues scrollingautomatically until you release the arrowsensor.

Changing a setting in a list Touch the  or  arrow sensor or

swipe to the right or left in the       area until you reach thedesired value or the desired setting ishighlighted.

Useful tip: A  tick will appear besidethe current setting.

Changing the setting with asegment barSome settings are represented by a       bar with seven segments. Ifall of the segments are illuminated, themaximum value is selected.

If none or only one of the segments isilluminated, the minimum value isselected or the setting is switched offaltogether (e.g. volume).

Touch the  or  arrow sensor orswipe to the right or left in the       area until you reach thedesired setting.

Confirm your selection with OK.

Steam cooking function

Water container

The maximum filling volume is 1.5 litresand the minimum is 0.5 litre. There aremarkings on the water container. Theupper marking must never beexceeded.

Water consumption depends on thetype of food and the cooking duration.The water may need to be topped upduring cooking. Water consumption isincreased if the door is opened duringcooking.

The water container is removed using apush/pull system: push gently on thewater container to remove it.

At the end of a cooking programme, hotwater left in the steam generator ispumped back into the water container.The water container must be emptiedafter each use involving steam.

Temperature

Some functions are allocated with arecommended temperature. Therecommended temperature can bealtered within the given range for anindividual cooking programme orprogramme stage, or for every time thatprogramme is used You can alter therecommended temperature in 5 °Cincrements, or 1 °C increments in sous-vide cooking (see “Settings –Recommended temperatures”).

Duration

You can set the cooking duration from1 minute (00:01) to 10 hours (10:00). Ifthe cooking duration exceeds59 minutes, you have to enter it in hoursand minutes. Example: Cookingduration 80 minutes = 1:20.

During steam cooking, the cookingduration does not begin until the settemperature is reached.

Noises

You will hear a pumping sound whenthe appliance is switched on, duringuse and after switching it off. This is thesound of water being pumped throughthe system and is quite normal.

When the steam oven is in use, you willhear a fan noise.

Heating-up phase

During the heating-up phase the displaywill show Heating up and thetemperature in the oven compartmentas it rises.

The duration of the heating-up phasewith steam cooking will depend on thequantity and temperature of the food. Ingeneral, the heating-up phase will takeapprox. 7 minutes. It will be longer ifyou are cooking refrigerated or frozenfood. The heating-up phase may alsotake longer when cooking at lowertemperatures and when cooking withthe Sous-vide  function.

Cooking phase

The cooking phase begins when the settemperature is reached. During thecooking phase, the duration remainingwill be shown in the display.

Steam reduction

If you are cooking at a temperatureabove approx. 80 °C, the steam ovendoor will automatically open a littleshortly before the end of the cookingduration to allow some of the steam toescape. Steam reduction appears in thedisplay. The door will then closeautomatically.

Steam reduction can be switched off(see “Settings - Steam reduction”).When steam reduction is switched off, alarge amount of steam will escape whenthe door is opened.

Microwave power

How it works

The steam oven contains a magnetronthat converts electrical energy intoelectromagnetic waves (microwaves).These microwaves are distributedevenly throughout the ovencompartment and are reflected off themetal appliance walls.

The microwaves penetrate the foodfrom all sides. Food consists of manymolecules. When subjected tomicrowave energy, these molecules(particularly the water molecules) startto oscillate. This heats the food fromthe outside to the inside. The morewater a food contains, the faster it isheated or cooked.

Advantages of the microwave oven

– Food can generally be cooked withlittle or no liquid or cooking oil.

– The times for defrosting, reheating orcooking are shorter than with acooktop or oven.

Suitable crockery

In order for microwaves to reach thefood, they must be able to penetrate thecrockery being used. Microwaves canpass through porcelain, glass,cardboard and plastics, but not metal.Therefore, do not use metal containersor crockery that contains metal. Metalreflects the microwaves which cancreate sparks and the microwaves arenot absorbed by the metal.

Risk of injury from increasedpressure in sealed containers orbottles.Pressure can build up whenreheating food or drinks in sealedcontainers, jars or bottles, which cancause them to explode.Never cook or reheat solid or liquidfood in sealed containers or bottles.Open containers beforehand. In thecase of baby bottles, the screw topand teat must be removed.

Fire hazard due to usingunsuitable crockery in theMicrowave  function.Non-microwave safe dishes used inmicrowave mode can suffer damageor cause damage to the steam oven.Only use microwave safe crockery inthe Microwave  function.

The material and shape of containersused affect cooking results and times.Heat distribution is more even in roundand oval shaped flat containers than inrectangular containers, providing betterresults.

Suitable containers

Fire hazard due to inflammablematerials.Disposable containers made out ofplastic, paper or other inflammablematerials can ignite, causing damageto the steam oven.Do not leave the steam ovenunattended when reheating orcooking food in disposablecontainers made of plastic, paper orother inflammable materials.

You can use the following crockery andmaterial:

– Heat-resistant glass and ceramicglassException: crystal glass as it containslead and may crack.

– Porcelain

– Without metallic decorationMetallic decoration (e.g. gold rimsor cobalt blue) can cause sparking.

– Without hollow knobs and handlesMoisture can gather in the hollowknobs and handles. When themoisture evaporates, pressure canbuild up and the item can explode.

– Unpainted stoneware and stonewarewith underglaze paints

Risk of injury caused by hotcrockery.Earthenware can get very hot andmay crack.Wear oven gloves when usingstoneware.

– Plastic containers and plasticdisposable containers with theMicrowave  function

Useful tip: To protect the environment,avoid the use of disposable containers.

Plastic dishes and bags that are notheat-resistant may deform and fusewith the food inside.Only use plastic containers or bagsthat are heat-resistant. The plasticcontainers and bags must be able towithstand temperatures of at least110 °C.

– Microwave safe plastic containersSpecial plastic containers designedfor use in microwave ovens areavailable from retail outlets.

– Styrofoam containersFor briefly heating food.

– Plastic boiling bagsFor cooking and reheating. Theyshould be pierced beforehand. Theholes allow the steam to escape. Thisprevents a build-up of pressure fromforming and the bag from bursting.There are also special bags availablefor steam cooking which do not needto be pierced. Please follow theinstructions given on the packet.

– Roasting bags and tubesPlease follow the manufacturer'sinstructions.

Fire hazard due to metal parts.Metal parts such as metal clips orplastic and paper ties that have wirerunning through them can heatinflammable materials until they burn.Do not use metal clips, or plastic andpaper ties containing wire.

– The rack and cooking containerssupplied are only suitable forcooking programmes in the Rapidsteam cooking  function and infunctions that do not use microwavepower.

– Aluminium foil trays without lids fordefrosting and reheating ready mealsThe food is only heated from the top.If you remove the food from thealuminium foil container and transferit to crockery suitable for use in amicrowave oven, the heat distributionwill generally be more even.

Using aluminium foil trays andaluminium foil can cause cracklingand sparks.Place aluminium foil trays on theglass tray.Aluminium foil and aluminium foiltrays must not touch the ovencompartment walls and must remainat least 2 cm from the walls at alltimes.

– Metal meat skewers or clampsThe size of the cut of meat must bemuch larger than the metal skewersand clamps.

Unsuitable containers

Crockery and lids with hollowhandles or knobs can collectmoisture in the hollow spaces. Whenthe moisture evaporates, pressurecan build up and the item canexplode. If the hollow recess issufficiently ventilated, the item canbe used.Do not use crockery with hollowknobs or handles for cooking.

Do not use the following crockery andmaterial:

– Metal racks (including the suppliedrack) are not suitable for use with theMicrowave  function.

– Containers made from metal andstainless steel (including the cookingcontainers supplied) are not suitablefor use with the Microwave function.

– Aluminium foilException: for even defrosting,reheating or cooking unevenlyshaped cuts of meat, e.g. poultry,small pieces of aluminium foil may beused to cover thin parts for the lastfew minutes of the programme.

– Metal clips, plastic or paper tiescontaining wire

– Plastic containers where thealuminium lid has not beencompletely removed

– Crystal glass

– Cutlery and crockery with metallicdecoration (e.g. gold rims, cobaltblue)

– Crockery with hollow handles

– Plasticware made of melamineMelamine absorbs microwave energyand gets hot.When purchasing plasticware, makesure that it is suitable for use in amicrowave oven.

– Non-heat-resistant plastic containersand bags

– Wooden dishesWater contained in wood evaporatesduring the cooking programme. Thiscauses the wood to dry and crack.

Placing a dish in the oven

Place the glass tray on shelf level 1.

The dish containing the food shouldbe placed in the middle of the glasstray.

Placing the food directly on the floorof the oven would give unsatisfactoryand uneven results as the microwaveswould not be able to reach the foodfrom below.

Cover

Useful tip: Covers are available fromretail outlets.

– A cover prevents too much steamescaping, especially when cookingfoods which need longer to cook.

– It speeds up the heating process ofthe food.

– It prevents food from drying out.

– It helps keep the oven interior clean.

Use a glass or plastic cover suitablefor microwave use for cookingprogrammes with theMicrowave  function.

Alternatively, use a cling film suitablefor use in a microwave oven. Heat cancause normal cling film to distort andfuse with the food.

The cover should not form a sealwith the container. If the containerhas a narrow diameter, the steammay not be able to escape. Thecover could get too hot and start tomelt.Use containers with a sufficientlylarge diameter.

Do not use a cover for reheating thefollowing types of food:

– Food coated in breadcrumbs

– Food that needs to be heated orcooked using the Rapid steamcooking  function

Glass trayFunctions/Applications involving steam:When using perforated containers,place the glass tray on shelf level 1.This collects any drops of liquid andallows it to be removed easily.

The condensate cannot evaporateproperly if the glass tray is on thefloor of the steam oven.Place the glass tray on shelf level 1.

Microwave  function:Always use the glass tray on shelflevel 1 as a surface to place containerson.

Oven interior lightingFor energy saving reasons, the oveninterior lighting has been set at thefactory to go out after the programmehas begun.

If you want the lighting to remain onduring cooking, the relevant settingneeds to be changed (see “Settings -Lighting”).

If the door is left open at the end of acooking programme, the oven lightingwill switch off automatically after5 minutes.

The lighting can be switched on for15 seconds by pressing the buttonon the control panel.

Miele@home

Your steam oven is equipped with anintegrated Wi-Fi module.

In order to use it, you need:

– a Wi-Fi network

– the Miele@mobile App

– a Miele user account. The useraccount can be created via theMiele@mobile App.

The Miele@mobile App will guide youas you connect your steam oven to yourhome Wi-Fi network.

Once your steam oven is connected toyour Wi-Fi network, you can use theApp for a number of actions, includingthe following:

– Call up information on the operatingstatus of your steam oven

– Retrieve information on cookingprocesses that are in progress

– End cooking programmes that are inprogress

Connecting your steam oven to yourWi-Fi network will increase energyconsumption, even when the steamoven is switched off.

Make sure that the signal of your Wi-Fi network is sufficiently strong in theplace where your steam oven isinstalled.

Availability of the Wi-Fi connection

The Wi-Fi connection shares afrequency range with other appliances(including microwave ovens and remotecontrol toys). This may result insporadic or even complete connectionfailures. Therefore, a constantavailability of featured functions cannotbe guaranteed.

Miele@home availability

The ability to use the Miele@mobile Appdepends on the availability of theMiele@home service in your country.

The Miele@home service is notavailable in every country.

Risk of injury caused by hotsurfaces.The steam oven gets hot duringoperation.For safety reasons, the steam ovenmay only be used when it has beenfully installed.

The steam oven will switch onautomatically when it is connected tothe electricity supply.

Contact your local water supplier tofind out your local water hardnessrange if necessary.

Completing the commissioningprocess

Follow any further instructions in thedisplay.

The appliance is now ready for use.

Cleaning for the first time Remove any protective foil and

stickers, except the data plate, fromthe oven and accessories.

The appliance has undergone afunction test in the factory. Residualwater from this testing may havetrickled back into the cabinet duringtransportation.

Cleaning the water container

Remove the water container.

Remove the spill guard.

Rinse the water container by hand.

Cleaning the accessories/ovencompartment

Take all accessories out of the ovencompartment.

Wash the accessories in a mildsolution of washing-up liquid and hotwater or in the dishwasher.

The interior of the steam oven hasbeen treated at the factory with aconditioning agent.

To remove this, clean the oveninterior with a mild solution ofwashing-up liquid and warm waterapplied with a soft sponge, and thendry thoroughly with a soft cloth.

Setting the correct boilingpoint for waterBefore cooking food for the first time,you must adjust the boiling temperatureof the water, which varies depending onthe altitude of where the steam oven islocated. This procedure also flushes outthe waterways.

This procedure must be carried outto ensure efficient functioning of yourappliance.

Distilled or carbonated water or otherliquids could damage the steamoven.Only use cold, fresh tap water(below 20 °C).

Remove the water container and fill itup to the maximum marker.

Push the water container into theappliance.

Opening the “Settings” menuIn the Other  | Settings  menu, youcan personalise your steam oven byadapting the factory default settings tosuit your requirements.

Clock format

The time of day can be displayed in the24 or 12-hour format (24 h or 12 h).

Set

Set the hours and then the minutes.

If there is a power cut, the current timeof day will reappear once power hasbeen restored. The time of day is savedfor approx. 150 hours.

If the steam oven has been connectedto a Wi-Fi network and signed into theMiele@mobile App, the time will besynchronised based on the countrysetting in the Miele@mobile App.

– DurationThe maximum cooking duration thatcan be set depends on themicrowave power level selected:80–300 W: maximum 10 minutes450–1000 W: maximum 5 minutes

PopcornA microwave power level of 850 W anda cooking duration of 2:50 minutes ispreset so that you can start cooking abag of microwave popcorn immediately.These settings match themanufacturer’s instructions on mostbags of microwave popcorn.

Keeping warmUsing the Keeping warm function, youcan keep food warm after cooking.Food is kept warm at a presettemperature or microwave power for amaximum of 15 minutes. You cancancel the keeping warm process byopening the door or touching thesensors.

Please note that delicate food,especially fish, can continue cookingwhilst being kept warm.

Steam cooking

– OnThe Keeping warm function is switchedon. If a temperature of at least 80 °Cis selected, this function will switchon after approx. 5 minutes. The foodis kept warm using a temperature of70 °C.

Microwave

Steam reduction– On

If you have cooked at a temperatureabove approx. 80 °C, the steam ovendoor will automatically open a littleshortly before the end of the cookingduration. This is to prevent a largeamount of steam escaping when thedoor is opened. The door will thenclose automatically.

– OffIf steam reduction is switched off, theKeeping warm function is alsoautomatically switched off. Whensteam reduction is switched off, alarge amount of steam will escapewhen the door is opened.

Recommended temperaturesIf you frequently cook with differenttemperatures, it makes sense to changethe recommended temperatures.

After selecting this option, a list of ovenfunctions will appear in the display.

Select the function you want.

The recommended temperature willappear together with the range withinwhich it can be changed.

Change the recommendedtemperature.

Confirm with OK.

Recommended power levelsIf you frequently cook with differentpower levels, it makes sense to changethe recommended microwave powerlevels.

You can change the recommendedpower levels for the Microwave function and for the Rapid steamcooking  function combining steamcooking and microwave cooking.

Water hardnessTo ensure that the steam oven workscorrectly and to ensure that descaling iscarried out at the correct interval, itmust be set to the local water hardnesslevel. The harder the water is, the morefrequently the steam oven needs to bedescaled. Contact your local water supplier to findout your local water hardness range ifnecessary.

If you are using bottled drinking water,e.g. mineral water, use non-carbonatedwater. Select settings according to thecalcium content. The calcium content isgiven on the label of the bottle in mg/lCa2+ or ppm (mg Ca2+/l).

The degree of hardness can be setbetween 0.2 mmol/l (1° dH) and12.5 mmol/l (70° dH). The hardness levelis set to 2.7 mmol/l (15 °dH) at thefactory.

Safety

Sensor lock

The sensor lock prevents the cookingprogramme being switched off bymistake or settings being changed.Apart from the On/Off  sensor, theactivated sensor lock prevents thesensors and fields in the display fromworking a few seconds after aprogramme has been started.

– OnThe sensor lock is switched on.Touch the OK sensor for at least6 seconds to deactivate the sensorlock for a short period of time.

– OffThe sensor lock is deactivated. Allsensor controls react to touch asnormal.

If you want to switch off the oven withthe sensor lock activated, touch theOn/Off sensor until the ovenswitches off.

System lock The system lock prevents the appliancebeing switched on by mistake.

The minute minder and the MobileStartfunction can still be used when thesystem lock is active.

The system lock will remain activatedeven after a power failure.

Miele@home

The steam oven is a Miele@homecompatible appliance. Your steamoven is fitted ex-works with a Wi-Ficommunication module and is suitablefor wireless communication.

There are a number of ways ofconnecting your steam oven to your Wi-Fi network: We recommend connectingyour steam oven to your Wi-Fi networkwith the help of the Miele@mobile Appor via WPS.

After installing the Miele@mobile Appon a mobile device, you can do thefollowing, depending on your appliance:

– Operate your appliance remotely

– Call up information on the operatingstatus of your appliance

– Call up information on theprogramme sequence of yourappliance

– Set up a Miele@home network withother Wi-Fi enabled Miele appliances

– ActivateThis setting is only visible ifMiele@home is deactivated. The Wi-Fi function is reactivated.

– DeactivateThis setting is only visible ifMiele@home is activated.Miele@home remains set up, the Wi-Fi function is switched off.

– Connection statusThis setting is only visible ifMiele@home is activated. The displayshows information such as the Wi-Fireception quality, network name andIP address.

– Set up againThis setting is only visible if a Wi-Finetwork has already been set up.Reset the network settings andimmediately set up a new networkconnection.

Remote controlIf you have installed the Miele@mobileApp on your mobile device, haveaccess to the Miele@home system andhave activated the remote controlfunction (On), you can use theMobileStart function to retrieveinformation on steam oven cookingprogrammes currently in progress or toend a programme in progress.

Activating MobileStart

Select the  sensor to activateMobileStart.

The  sensor lights up. You canoperate your steam oven remotely withthe Miele@mobile App.

Directly operating the steam oven viathe touch display takes priority overoperating it via the remote controlfunction on the App.

You can use MobileStart as long asthe  sensor is lit up.

Remote update

The Remote update menu option is onlydisplayed and can only be selected ifthe requirements for usingMiele@home have been met (see“Before using for the first time –Miele@home” or “Settings”).

The RemoteUpdate function is used forupdating the software in your steamoven. If an update is available for yoursteam oven, it will automaticallydownload it. Updates will not beinstalled automatically. They must beinitiated manually.

If you do not install an update, you cancontinue to use your steam oven asusual. However, Miele recommendsinstalling updates.

Switching on/Switching off

RemoteUpdate is switched on asstandard. Available updates will bedownloaded automatically and will onlybe installed if you initiate it.

Switch off RemoteUpdate if you do notwish any updates to be downloaded.

Running a RemoteUpdate

Information about the content andscope of an update is provided in theMiele@mobile App.

A message will appear in your steamoven display if a software update isavailable.

You can install the update immediatelyor postpone this until later. When thesteam oven is switched on again, youwill be reminded about the update.

Switch RemoteUpdate off if you do notwish to install updates.

The update can take several minutes.

Please note the following informationabout the RemoteUpdate function:

– You will only receive a message whenan update is available.

– Once an update has been installed, itcannot be undone.

– Do not switch the steam oven offduring the update. Otherwise, theupdate will be aborted and will not beinstalled.

– Some software updates can only becarried out by a Miele servicetechnician.

Software versionThe software version menu option is foruse by Miele service technicians. Youdo not need this information fordomestic use.

Showroom programmeThis function enables the steam oven tobe demonstrated in showrooms withoutheating up. Do not activate this settingfor domestic use.

Demo mode

If you have activated Demo mode,Demo mode is activated. The appliance willnot heat up will appear when youswitch the steam oven on.

– OnTouch the OK sensor for at least4 seconds to activate Demo mode.

– OffTouch the OK sensor for at least4 seconds to deactivate Demo mode.You can use the steam oven asnormal.

Factory default– Appliance settings

Any settings that have been alteredwill be reset to the factory defaultsettings.

– User programmesAll User programmes will be deleted.

– Rec. power levelsMicrowave power levels which havebeen changed will be reset to thefactory default settings.

Using the Minuteminder functionThe  minute minder can be used totime other activities in the kitchen,e.g. boiling eggs on the cooktop.

The minute minder can also be used atthe same time as a cooking programmefor which the cooking duration start andfinish times have been set (e.g. as areminder to stir the food or addseasoning, etc.).

The maximum minute minder timethat can be set is 59 minutes and59 seconds.

Setting the minute minder

If you have selected the Display |QuickTouch | Off setting, you will needto switch the steam oven on beforesetting the minute minder. The minuteminder can then be seen countingdown in the display when the steamoven is switched off.

Example: You want to boil some eggsand set a minute minder time of 6minutes and 20 seconds.

Select the  sensor.

Select Minute minder if a cookingprogramme is in progress at the sametime.

The prompt Set 00:00 min will appear.

Using the navigation area, set 06:20.

Confirm with OK.

The minute minder duration is nowsaved.

When the steam oven is switched off,the minute minder time will count downin the display and  will appear insteadof the time of day.

If you are cooking at the same time, and the minute minder time willappear at the bottom of the display.

If you are in a menu, the minute minderwill count down in the background.

At the end of the minute minder time will flash, the time will start countingup and a buzzer will sound.

Select the  sensor.

If required, confirm with OK.

The buzzer will stop and the symbols inthe display will go out.

Changing the time set for the minuteminder

Select the  sensor.

Select Minute minder if a cookingprogramme is in progress at the sametime.

Select Change.

Confirm with OK.

The minute minder time selectedappears.

Switch the steam oven on.

The main menu will appear.

If you want to cook using a steamfunction, fill the water container andfit it back in place.

Distilled or carbonated water or otherliquids could damage the steamoven.Only use cold, fresh tap water(below 20 °C).

Place the food in the oven.

Select the function you want.

The function will appear in the display.Based on the function you haveselected, the recommended powerlevel, recommended temperature andcooking duration will appear one afterthe other on the display.

Change the recommended values forthe cooking programme and set thecooking duration if required.

Using the  sensor, you can changethe recommended values later ifneeded.

Confirm each entry with OK.Confirming the temperature starts thecooking process for functions whichdo not use microwave power.

For functions which use microwavepower, a summary of the settingsappears and Start is highlighted in thedisplay.

Use the OK sensor to start thecooking process for functions whichuse microwave power.

The set values appear and the cookingduration counts down in the display forall functions.

If you have set a temperature, you willsee the temperature increasing. Abuzzer will sound when the settemperature is reached for the first time.

The oven stops generating microwavepower when you interrupt the cookingprogramme or open the door. You cancontinue the programme with theOK sensor.

After cooking, select the sensor forthe selected function to end thecooking programme.

Risk of injury due to hot steam.When using a cooking programmeinvolving steam, a lot of hot steamcan escape if the door is opened.The steam can cause burns.Step back and wait until the hotsteam has dissipated.

Take the food out of the oven.

Cleaning the steam oven

Risk of injury due to hot water.At the end of a steam cookingprogramme, hot water left in thesteam generator is pumped back intothe water container.Take care not to tip the watercontainer when taking it out of theappliance.

Remove the water container asrequired.

Remove the spill guard and emptythe water container.

After each use, clean and dry thewhole appliance as described in“Cleaning and care”.

Make sure the spill guard engagescorrectly when installing it.

Leave the appliance door open untilthe oven interior is completely dry.

Refilling the water

If water needs replenishing during thecooking programme, a tone will soundand the display will prompt you to refillthe container with fresh water.

Remove the water container and fill itwith fresh tap water.

Push the water container into theappliance.

The cooking programme will continue.

Changing values and settingsfor a cooking programmeDepending on the function, as soon asa cooking programme is in progress,you can use the  sensor to changethe values or settings for thisprogramme.

Select the  sensor.

Depending on the function, thefollowing settings appear:

Changing the temperature

You can permanently reset therecommended temperature to suityour cooking preferences by selectingOther  | Settings  | Recommendedtemperatures.

Select the  sensor.

Select Temperature and confirm withOK.

Change the target temperature via thenavigation area.

Confirm with OK.

The cooking programme will restart withthe new target temperature.

Changing the microwave power level

You can change the microwave powerlevel in the Microwave  and Rapidsteam cooking  functions.

Select Other  | Settings  |Recommended power levels topermanently set the recommendedpower level to suit your personalcooking preferences.

Select Power level and confirm withOK.

Change the microwave power levelvia the navigation area.

Setting cooking durations

Cooking results can be adverselyaffected if there is a long delaybetween the food being placed in theoven and the start of cooking. Freshfood can change colour and evenspoil.Select as short a time as possibleuntil the start of the cooking process.

Example: You have placed the food inthe oven compartment, selected afunction and the required settings suchas the temperature.

By entering Duration, Finish at or Start atvia the  sensor, you can automaticallyswitch the cooking programme off or onand off.

– DurationEnter the required cooking durationfor the food. The heating will switchoff automatically once this durationhas elapsed. The maximum cookingduration that can be set depends onthe function that you have selected.

– Finish atSpecify when you want the cookingprogramme to finish. The ovenheating will switch off automaticallyat the time you have set.

– Start atThis function will only appear in themenu if you have set a Duration orFinish at time. With Start at, you haveto specify when you want thecooking programme to start. Theoven heating will switch onautomatically at the time you haveset.

Select the  sensor.

Set the required times.

Confirm with OK.

Touch the  sensor to return to themenu of the selected function.

Tip: In functions involving steam, youcan also adjust the cooking durationdirectly using the navigation area.

If you are cooking at a temperature ofapprox. 80 °C or above, Steamreduction will appear in the displayshortly before the end of the cookingduration and the door willautomatically open a little. The doorwill then automatically close.

Wait until Steam reduction goes out inthe display before opening the doorand removing the food from the oven.

A new cooking programme can onlybe started if the automatic doorrelease is retracted into its originalposition. Do not push it in manuallyas this could damage it.

Changing the set cooking durations

Select the  sensor.

Select the time you want.

Confirm with OK.

Select Change.

This menu option does not appear ifyou want to change the cookingduration for functions which usemicrowave power, as these functionsalways require a set cooking duration.

The time will be highlighted.

Change the set time.

Deleting the set cooking durations

For a function which uses microwavepower, you can only delete the settimes for Finish at and Start at. Thecooking duration must always be set.

Select the  sensor.

Select the time you want.

Confirm with OK.

Select Delete.

Confirm with OK.

Touch the  sensor to return to themenu of the selected function.

If you delete Duration for a functionwhich does not use microwavepower, the set times for Finish at andStart at are also deleted.

If you delete Finish at or Start at, thecooking programme will start usingthe cooking duration set.

Interrupting the cookingprocess for functions whichuse microwave powerYou can interrupt cooking when usingthe Microwave  and Rapid steamcooking  functions and pause thecooking duration.

During the cooking duration, Stop will behighlighted.

Interrupting the cookingprocess for functions involvingsteamIn functions involving steam, openingthe door will interrupt the cookingprogramme. The oven heating switchesoff. Set cooking durations will be saved.

Risk of injury due to hot steam.A great deal of hot steam can escapewhen the door is opened. The steamcan cause burns.Step back and wait until the hotsteam has dissipated.

Risk of injury caused by hotsurfaces and food.The steam oven gets hot duringoperation. You could burn yourselfon the oven compartment, shelfrunners, accessories or the fooditself.Wear oven gloves when placing foodin the oven or removing it and whenadjusting oven shelves etc. in a hotoven.When placing cooking containers inthe oven or removing them, makesure that the hot food does not spill.

The cooking programme will resumewhen the door is closed.

When the door is closed, the pressurehas to equalise, which can cause awhistling sound.

The steam oven will heat up again andthe display will show the temperature inthe cooking compartment as it rises.Once the set temperature has beenreached, the display will show the timeleft as it counts down.

The cooking process will be endedearly if the door is opened in the lastminute of cooking time.

A microwave power level of 850 W anda maximum cooking duration of2:50 minutes are preset. These settingsmatch the manufacturer’s instructionson most bags of microwave popcorn.

The maximum cooking duration thatcan be set is 4 minutes. The microwavepower level is set and cannot bemodified (see “Settings – Popcorn”).

Follow the manufacturer’sinstructions regarding the cookingduration on the packaging. Changethe preset time if necessary.

This section contains generalinformation. You will find more detailedinformation about particular foods andhow to cook them in the other sections.

The advantages of cookingwith steamAlmost all vitamins and minerals areretained as the food is not immersed inwater.

Cooking with steam also retains thetrue taste of the food better thanconventional cooking. We thereforerecommend seasoning the food after ithas been cooked. Food also retains itsfresh, original colour.

Suitable containers

Cooking containers

This steam oven is supplied withstainless steel cooking containers.Other containers, in a variety of sizes,both perforated and solid, are availableas optional extras (see “Optionalaccessories”). This enables you tochoose the most suitable container forthe food you are preparing.

Where possible, it is best to useperforated cooking containers for steamcooking. The steam can reach the foodfrom all sides and the food is cookedevenly.

Your own containers

You can also use your own containers.However, please note the following:

– Containers must be heat-resistant to100 °C and able to withstand steam.With plastic containers, please checkwith the manufacturer that they aresuitable for use in a steam oven.

– Thick-sided containers made fromporcelain, ceramic, or stoneware arenot very suitable for using withsteam. Due to their thick sides, theydo not conduct heat well and as aresult cooking durations will beconsiderably longer than those givenin the charts.

– Place the cooking container on therack or in a suitable container, andnot on the oven floor.

– Ensure that there is a gap betweenthe upper rim of the container andthe top of the cooking compartmentto allow sufficient steam into thecontainer.

Glass trayWhen using perforated containers,place the glass tray on shelf level 1.This collects any drops of liquid andallows it to be removed easily.

The condensate cannot evaporateproperly if the glass tray is on thefloor of the steam oven.Place the glass tray on shelf level 1.

Shelf levelYou can select any shelf level for thecooking containers and the rack. Youcan also cook on several levels at thesame time. This will not alter thecooking duration.

When using more than one deepcontainer at the same time for steamcooking, it is best to offset them ontheir runners and to leave at least onelevel free in between them.

Always insert cooking containers, therack and the glass tray between therails of the shelf runners so that theycannot tip.

FrozenThe heating-up phase for frozen food islonger than for fresh food. The greaterthe quantity of frozen food, the longerthe heating-up phase.

TemperatureDuring steam cooking, the temperaturedoes not exceed 100 °C. Almost allfoods can be cooked at thistemperature. Some types of food, suchas berries, need to be cooked at lowertemperatures to prevent them frombursting. See the relevant sections inthese operating instructions for moredetails.

DurationDuring steam cooking, the cookingduration does not begin until the settemperature is reached.

In general, the cooking durations forcooking with steam are the same as forcooking food in a saucepan. Moreinformation about any factors whichmay affect the cooking duration is givenin the relevant sections.

The quantity of food does not affect thecooking duration. 1 kg of potatoes willtake the same time to cook as 500 g ofpotatoes.

Cooking with liquidWhen cooking with liquid, only fill thecooking container ²/₃ full to prevent theliquid spilling when the cookingcontainer is removed from the oven.

Your own recipesFood which is cooked in a pot or a pancan also be cooked in the steam oven.The cooking durations in the steamoven will be the same. Please note thatfood will not be brown or crisp whencooking with steam.

Eco Steam cookingYou can use the Eco Steam cookingfunction to save energy during steamcooking. This function is suitable mainlyfor cooking fish and vegetables.

We recommend using the cookingdurations and temperatures given in thechart under “Steam cooking”. You can cook for longer if necessary.

Vegetables

Fresh

Prepare fresh vegetables in the usualway, i.e. wash, clean and cut them up.

Frozen food

Frozen vegetables do not need to bedefrosted beforehand. Exception: thevegetables have been frozen together ina block.

Frozen and fresh vegetables which takethe same length of time to cook can becooked together.

If vegetables have frozen together inclumps, break these up before cookingwith steam. Follow the manufacturer’sinstructions on the packaging regardingcooking duration.

Cooking containers

Food such as peas or asparagusspears, which have little or no spacebetween them, will take longer to cookbecause the steam has less space towork in. For an even result, it is best touse a shallow container for these typesof food, and only fill it about 3 - 5 cmdeep. When cooking large quantities,divide the food between 2 or 3 shallowcontainers rather than using one deepone.

Different types of vegetables which takethe same length of time to cook can becooked together in one cookingcontainer.

Use solid containers for vegetableswhich are cooked in liquid, e.g.cabbage.

Shelf level

When cooking vegetables with adistinctive colour (e.g. beetroot) in aperforated container at the same timeas cooking other foods in othercontainers, place the solid tray directlyunderneath the perforated container tocatch any drips and therefore avoid anycolour transfer.

The cooking duration depends on thesize of the food and how well cookedyou want it, just as it does withconventional cooking methods.Example:Firm potatoes, cut into quarters: approx. 12 minutesFirm potatoes, cut in half: approx. 17 minutes

Fish

Fresh

Prepare fresh fish in the usual way, i.e.clean, gut and fillet.

Frozen

Fish does not need to be fully defrostedbefore cooking. Defrost so that thesurface is sufficiently thawed to takeherbs and seasoning. Depending on thethickness of the fish, 2–5 minutesshould be enough.

Preparation

Add some lemon or lime juice to fishbefore cooking. The citric acid helps theflesh stay firm.

It is not necessary to season fish whencooking with steam as this methodretains the minerals which give the fishits unique flavour.

Cooking containers

If using a perforated container, grease itfirst or line it with baking paper.

Shelf level

When cooking fish in a perforatedcontainer at the same time as cookingother types of food in other containers,place the container with the fish directlyabove the glass or collecting tray(depending on the model) to catch anyliquid and so avoid any transfer offlavours to other food.

Temperature

85 °C – 90 °C For gently cooking delicate types offish, such as flounder.

100 °CFor cooking firmer types of fish, e.g.salmon.Also for cooking fish in sauce or stock.

Duration

The cooking duration depends on thethickness and the texture of the fish,and not on the weight. The thicker thefish, the longer the cooking duration. A3 cm thick piece of fish weighing 500 gwill take longer to cook than a 2 cmthick piece of fish weighing 500 g.

The longer fish cooks, the firmer itsflesh will become. Use the cookingdurations given in the chart. If you findthat the fish is not cooked sufficiently,only cook it for a few minutes more.

When cooking fish in sauce or stock,we recommend that you increase thecooking duration quoted by a fewminutes.

Useful tips

– Adding herbs and spices, such asdill, will help bring out the full flavourof the fish.

– Cook large fish in the swimmingposition. To help maintain thestructure of the fish, place a smallcup or similar upside down in thecooking container. Arrange the fishbellyside down over the cup.

– You can use any fish scraps, e.g. fishheads, bones, tails etc. to make afish stock. Place the fish scrapstogether with some mixed vegetablesin a solid cooking container and addcold water. Cook at 100 °C for 60 to90 minutes. The longer the cookingduration, the stronger the stock.

– Preparing fish au bleu is a methodinvolving cooking the fish in waterwith vinegar, at different proportionsdepending on the recipe. It isimportant not to damage the skin ofthe fish. This method is suitable forcooking trout, tench, eel and salmon.

Prepare the meat in the usual way.

Frozen

Meat should be thoroughly defrostedbefore cooking in the steam oven (see“Special applications - Defrosting withsteam”).

Preparation

Meat which needs to be seared beforebeing cooked, e.g. stewing steak,should be seared in a pan on thecooktop.

Duration

The cooking duration depends on thethickness and the texture of the meat,and not on the weight. The thicker thepiece of meat, the longer the cookingduration. A piece of meat weighing 500g which is 10 cm thick will take longerto cook than a piece of meat weighing500 g which is 5 cm thick.

Useful tips

– To retain the flavourings, use aperforated cooking container. Placean unperforated cooking containerunderneath in order to collect theconcentrate. You can use theconcentrate to enhance your saucesor freeze it for later use.

– Boiling chicken, back or top rib andmeat bones can be used to makestock. Place the meat together withthe bones and some mixedvegetables in a cooking containerand add cold water. The longer thecooking duration, the stronger thestock.

Shellfish

Preparation

Defrost frozen shellfish before cooking with steam.

Peel, remove and discard the intestines, and then wash the shellfish.

Menu cooking

Before cooking meals with themanual Menu cooking function,switch off steam reduction (see“Settings – Steam reduction”).

Menu cooking involves cooking variousfoods with different cooking times inorder to serve them all together in onemeal, e.g. rosefish fillet with rice andbroccoli. Foods are placed in the steam oven atdifferent times so that they are all readyat the same time.

Shelf level

Place foods that produce a lot of liquids(e.g. fish) or have a distinctive colour(e.g. beetroot) directly above the glasstray or condensate tray (depending onthe model). This avoids any transfer offlavour or colour to other food bypreventing liquid dripping onto foodbelow it.

Temperature

Whole meals should be cooked at atemperature of 100 °C as this is thetemperature required to cook themajority of foods. Do not cook a whole meal at the lowesttemperature when differenttemperatures are required for differenttypes of food, e.g. 85 °C for seabreamand 100 °C for potatoes.

If the recommended cookingtemperature for the food is 85 °C forexample, try cooking it at 100 °C andtesting the result. Some delicate typesof fish with a soft structure, e.g.flounder will become very firm whencooked at 100 °C.

Duration

If you increase the recommendedtemperature, shorten the cookingduration by approx. ¹/₃.

With this gentle cooking method, foodis cooked slowly and at a low, constanttemperature in vacuum packaging.

With vacuum cooking, no moistureevaporates during cooking and allnutrients and flavours are retained.

The cooking result has an intensivetaste and food is cooked evenly.

Use only fresh food which is in agood condition.Ensure hygienic conditions and thatfood has not been out of therefrigerator too long, e.g. duringtransportation.

Use only heat-stable, boiling-resistant vacuum bags.Do not cook food in the salespackaging, such as vacuum-packedfrozen food as it is possible that thepackaging used is not suitable forvacuum cooking.Do not use the vacuum bag morethan once.

Important notes on useFor an optimum cooking result:

– Use herbs and spices more sparinglythan with conventional methodsbecause the impact on the taste ofthe food will be stronger.You can also cook the foodunseasoned and add seasoning aftercooking.

– The cooking duration is reducedwhen salt, sugar, and liquids areadded.

– The food becomes firmer if acidicfoods, such as lemon or vinegar areadded.

– Do not use alcohol or garlic as thiscan cause an unpleasant taste.

– Only use vacuum sealing bags thatmatch the size of the food. If thevacuum bag is too big, too much aircan remain inside.

– If you want to cook several pieces offood in one vacuum bag, put themside by side in the bag.

– If you want to cook food in severalvacuum sealing bags at once, put thebags side by side on the rack.

– The cooking durations depend on thethickness of the food.

– With higher temperatures and/orlonger cooking durations, theappliance may run low on water.Check the display from time to time.

– Keep the door closed during thecooking process. Opening the doorextends the cooking process and canchange the cooking result.

– Cooking at a lower temperature andfor a longer duration can result inincreased residual water in thecooking compartment. This does notaffect the cooking results.

– Temperatures and cooking durationsfrom sous-vide recipes cannotalways be emulated exactly. Alter thesettings to achieve the degree ofcooking you want.

Useful tips– In order to reduce cooking times, you

can vacuum seal food items 1–2 daysbefore the cooking programme. Storethe vacuum-sealed food in therefrigerator at no more than 5 °C. Inorder to preserve quality and flavour,the food should be cooked no laterthan 2 days afterwards.

– Freeze liquids such as marinadesbefore vacuum sealing to preventthem from escaping from the bag.

– Fold the edges of the vacuum sealingbag outwards for filling. This will giveyou clean, perfect weld seams.

– If you do not want to eat the foodstraight after cooking, put it in icedwater immediately and allow it to cooldown completely. After this, store thefood at temperatures no greater than5 °C. This way, you can retain the food’squality and flavour while keeping itfresh for longer. Exception: Poultry must be eatenstraight after the cooking programme.

– After cooking, cut the vacuum bag onall sides for easier access to thefood.

– Briefly fry meat and firm types of fish(such as salmon) before serving. Thiswill help to develop a roasted aroma.

– Use the brine or marinade ofvegetables, fish, or meat to make asauce.

– Serve the food on pre-warmedplates.

Using the Sous-vide function Rinse the food with cold water and

dry it.

Place the food in a vacuum bag andadd spices or liquid if desired.

Vacuum seal the food in a chambersystem vacuum sealer.

Place the glass tray on shelf level 1.

For the best cooking results, placethe rack on shelf level 2.

Place the vacuum-sealed food on therack (next to each other if there areseveral bags).

Select Sous-vide .

Change the recommendedtemperature if necessary.

Confirm with OK.

Set further settings as necessary (see“Operation”).

Possible causes for poorresultsThe vacuum bag has opened:

– The weld seam was not clean orstable enough and came undone.

– The bag was damaged by a sharpbone.

The food has an unpleasant or strangetaste:

– Incorrect storage of the food; thefood was kept out of the refrigeratorfor too long.

– The food was contaminated withbacteria before it was vacuumsealed.

– Too much of ingredients such asspices were added.

– The bag or weld seam were not inperfect order.

– The vacuum was insufficient.

– The food was not eaten or chilledimmediately after cooking.

ReheatingOnly reheat brassicas, such as kohlrabiand cauliflower, in combination with asauce. Without sauce, an unpleasantcabbage-like taste and grey-browncolour may develop.

Foods with a short cooking time andthose which have a different degree ofdoneness when reheated, e.g. fish, arenot suited to being reheated.

Preparation

Immediately after cooking, place thefood in ice cold water and leave forapproximately one hour. The rapidcooling inhibits continued cooking ofthe food. This means the ideal degreeof doneness of the food remains as it is.Store the food afterwards in therefrigerator at max. 3 °C.

Reheat with steam

To reheat food which was cookedusing the sous-vide method, use theSous-vide  function (see “Sous-vide– Reheating”).

The steam oven is very effective atreheating food gently, without drying itout or cooking it further. The foodreheats evenly and does not need to bestirred during the reheating process.

You can reheat individual dishes orplated meals which have been preparedpreviously (e.g. meat, vegetables andpotatoes).

Suitable containers

Small quantities can be reheated on aplate, larger quantities should be placedin a cooking container.

Duration

The number of plates or containers hasno bearing on the time.

The times listed in the table relate to anaverage portion per plate. Increase theduration for larger quantities.

Useful tips

– Do not reheat large items, such as ajoint of roast meat, whole. Divide itinto portions and reheat these asplated meals.

– Compact items, such as stuffedcapsicum, roulades or dumplings,should be cut in half.

– Reheat sauces separately. Exceptionsare dishes such as goulash, which iscooked in sauce.

– Cover food when reheating it. Thiswill avoid steam condensing on thecrockery.

– Please note that breaded items, suchas schnitzel, will not retain theircrispness when they are reheated.

Defrost with steamIt is much quicker to defrost items in thesteam oven than at room temperature.

Risk of infection from bacteria.Bacteria such as salmonella cancause life-threatening foodpoisoning.It is particularly important to observefood hygiene rules when defrostingfish and meat, and in particular whendefrosting poultry.Do not use the liquid producedduring defrosting.Process the food as required as soonas it has been defrosted.

Temperature

60 °C is the best temperature fordefrosting.Exceptions: 50 °C for minced meat andgame.

Before and after defrosting

Remove any packaging beforedefrosting. Exceptions: Leave bread, biscuits andcakes in their packaging as otherwisethey will absorb moisture and becomesoft.

Allow food to stand at roomtemperature for a few minutes afterdefrosting. The standing time isnecessary to allow the even distributionof heat from the outside to the inside.

Cooking containers

Use a perforated container with a glasstray or condensate tray (depending onmodel) underneath it when defrostingfood which will drip, such as poultry.This way food will not be lying indefrosted liquid.

Foods which do not drip can bedefrosted in a solid cooking container.

Useful tips

– Fish does not need to be fullydefrosted before cooking. Defrost sothat the surface is sufficiently thawedto take herbs and seasoning.Depending on the thickness of thefish, 2–5 minutes is generally enough.

– When defrosting food which hasfrozen together, e.g. berries and meatportions, separate them half-waythrough the defrosting time.

– Do not refreeze food once it hasthawed.

BlanchBlanch fruit and vegetables beforefreezing them. Blanching helps maintainthe quality of the produce when it isfrozen.

Blanching vegetables also helps themretain their original colour.

Put the prepared vegetables(cleaned, washed, chopped etc.) intoa perforated cooking container andplace in the steam oven.

Once blanched, plunge thevegetables into ice cold water to coolthem down quickly. Drain them well.

BottlingOnly use unblemished, fresh producewhich is in good condition.

Glass jars

Use clean glass jars and accessoriesand check them for any defects. Glassjars with twist off lids or glass lids with arubber seal are suitable.

Make sure that all the glass jars are thesame size so that bottling is carried outevenly.

After you have filled the jars with thebottled produce, clean the glass rimswith a clean cloth and hot water andthen seal the jars.

Fruit

Sort fruit carefully, rinse it briefly butthoroughly and allow it to drain. Takegreat care when cleaning soft fruit as itis very delicate and squashes easily.

Remove any peel, stalks, cores orstones. Cut up large fruit. For example,cut apples into slices.

If you are bottling fruit with stones (e.g.plums, apricots) without removing thestones, pierce the fruit several timeswith a fork or wooden skewer asotherwise it will burst.

Vegetables

Rinse, clean and cut up vegetables.

Vegetables should be blanched beforebottling to help them retain their colour(see “Special applications –Blanching”).

Fill volume

Fill the glass jars with produce up to nomore than 3 cm below the rim. Do notpack it down as this will damage thecell walls of the produce. Tap the jargently onto a cloth to help distribute thecontents evenly. Fill the jars with liquid.The produce must be completelycovered.

Use a sugar solution for fruit and a saltor vinegar solution for vegetables.

Meat and sausages

Briefly fry or cook the meat beforebottling. Use the juices with someadded water, or the broth in which themeat was cooked, as the liquid contentof the jars. Make sure there is no greaseon the rim of the jars.When bottling sausages, only fill thejars to halfway as the meat will riseduring the bottling process.

Useful tips

– Make use of residual heat by leavingthe jars in the oven for 30 minutesafter it has switched off.

– Then cover the jars with a cloth andallow to cool for approx. 24 hours.

Bottling food

Place the rack on shelf level 1.

Place the closed jars on the rack. Thejars must not touch each other.

Disinfect itemsThe steam oven will disinfect babybottles and other containers so that atthe end of the programme they are asgerm free as they would have been ifboiled. Check beforehand that all parts,teats etc. are declared by themanufacturer to be heat resistant to100 °C and also that they can withstandhot steam.

Dismantle, clean and thoroughly rinsebaby bottles. Reassemble the bottlesonly after they have completely dried.This prevents recontamination.

Place the individual items on the rackor in a perforated container (on theirsides or with the opening facingdownwards) ensuring that they do nottouch one another. This will allow hotsteam to reach them from all sides.

Make yoghurtTo prepare yoghurt, you will need milkand live culture or yoghurt starterpowder, e.g. from a health food store.

Use natural yogurt with live culture andwithout additives. Do not use heat-treated yogurt.

The yoghurt must be fresh (shortstorage time).

You can use either unchilled long-lifemilk or fresh milk. Long-life milk can be used as it is – nofurther preparation is required. Freshmilk must first be heated to 90 °C (donot boil it) and then cooled down to35 °C. Fresh milk will give a better setthan long-life milk.

The yoghurt and milk should have thesame percentage fat.

Do not move or shake the jars while theyoghurt is fermenting.

Immediately after preparation, leave theyoghurt to cool in the fridge.

The firmness, fat content and culturesused in the yoghurt starter all affect theconsistency of homemade yoghurt. Notall yoghurts are equally suitable asyoghurt starters.

Useful tip: If you are using yoghurtstarter powder, you can prepare theyoghurt from a mixture of milk andcream. For that, mix ³/₄ litre milk with ¹/₄litre cream.

Mix 100 g yoghurt with 1 litre of milkor make up the mixture with yoghurtenzyme, following the instructions onthe packaging.

Pour the mixture into glass jars andseal the jars.

Place the sealed jars in a perforatedcooking container or on the rack. Thejars must not touch each other.

Straight after the cooking durationhas finished, place the jars in therefrigerator. Take care not to shakethe jars unnecessarily.

Extracting juiceThis appliance is ideal for extractingjuice from soft, firm and hard fruit.

It is best to use overripe fruit, as theriper the fruit, the greater the quantity ofjuice produced. Very ripe fruit will alsoproduce a more intense flavour.

Preparation

Sort and rinse the fruit, and cut out anyblemishes.

Remove the stalks from grapes andmorello cherries as these are bitter.Berries do not need to have their stalksremoved.

Dice larger fruit such as apples intoapproximately 2 cm cubes. The harderthe fruit, the smaller the pieces shouldbe.

Useful tips

– Try experimenting with mild and tartflavours. For example, mix appleswith elderberries.

– Adding sugar will increase thequantity of juice produced andimprove the flavour. Sprinkle the fruitwith sugar and leave to absorb for afew hours before juicing. For 1 kg ofsweet fruit add 50–100 g of sugar,and for 1 kg of tart fruit add 100–150 g of sugar.

– If you wish to bottle the juice ratherthan consume it straight away, pour itwhilst hot into hot, sterilised bottlesup to the rim, and then sealimmediately with sterilised rubbertops.

Extracting juice from fruit

Put the prepared fruit (cleaned,washed, chopped etc.) into aperforated cooking container.

Place a solid container or a glass trayor condensate tray (depending on themodel) underneath to catch the juice.

You can defrost, reheat and cook food with a combination of steam andmicrowave power in the Rapid steam cooking  function.

During the heating-up phase, the oven compartment is initially heated to the settemperature using just steam power. As soon as this temperature is reached, themicrowave switches on so that the steam generator and magnetron are bothswitched on throughout the entire cooking phase.

Just like cooking with steam only, the cooking duration does not begin until the settemperature is reached.

The combined Rapid steam cooking  function has a number of advantages,including the following:

– Food takes less time to cook, as it cooks more quickly than using the steamfunction alone

– Food will not overcook or dry out as it can with microwave power

– Food can be defrosted and reheated in a single process

DefrostGentle defrosting of frozen goodsmeans that the vitamins and mineralsare generally retained.

Risk of infection from bacteria.Bacteria such as salmonella cancause life-threatening foodpoisoning.It is particularly important to observefood hygiene rules when defrostingfish and meat, and in particular whendefrosting poultry.Do not use the liquid producedduring defrosting.Process the food as required as soonas it has been defrosted.

Useful tips

– Place the food to be defrosted on theglass tray without its packaging. Forlarger food quantities, place thefrozen goods in a microwave safecontainer and place this onto theglass tray.

– Frozen ready meals can be defrostedand then heated at the same time.Follow the instructions on thepackaging.

ReheatIt is essential that “Warning and Safetyinstructions - Correct use” is observed.

Risk of injury caused by hotfood.If food for babies and children isheated at too high a temperature,they can burn themselves.Only heat food for babies andchildren for 60–90 seconds at 450 W.After heating food, especially foodfor babies and small children, stir thefood or shake the container andtaste the food so that children do notget burned.

Risk of injury from increasedpressure in sealed containers orbottles.Pressure can build up whenreheating food or drinks in sealedcontainers, jars or bottles, which cancause them to explode.Never cook or reheat food or liquidsin sealed containers or bottles. Opencontainers beforehand. In the case ofbaby bottles, the screw top and teatmust be removed.

Risk of injury caused by hot liquids.When heating food, and in particularliquids, using theMicrowave  function, the boilingpoint may be reached without theproduction of typical bubbles.Liquids do not boil evenlythroughout.This boiling delay can result in theliquid boiling over explosively. Takecare when taking the container out ofthe oven, as the hot liquid can causesevere scalding. Under certaincircumstances, the pressure can beso high that the door opensautomatically.Stir liquids well before reheating orcooking.After heating, wait at least20 seconds before removing thecontainer from the oven.In addition, a glass rod or similaritem, if available, can be placed inthe container during heating.

Usage notes– The degree of cooking is represented

by a bar with seven segments. Youcan set the desired degree ofcooking using the navigation area.

– The weights specified in theAutomatic programmes refer to theweight per piece. For example, youcan cook just one piece of salmonweighing 250 g or 10 pieces ofsalmon, each weighing 250 g, at thesame time.

– The oven interior needs to be at roomtemperature before starting anAutomatic programme.

– When you place food in the hot ovencompartment, be careful whenopening the door. Hot steam mayescape. Step back and wait until thesteam has dissipated. Avoid contactwith hot steam, and do not touch thehot oven compartment walls. Dangerof burning and scalding.

– For some Automatic programmes thestart time can be delayed using Startat or Finish at.

– Select the  sensor to cancel anAutomatic programme. When Cancelprocess? appears, select Yes andconfirm with OK.

– If by the end of an Automaticprogramme the food is not cookedenough, select Continue cooking.

– Automatic programmes can also besaved as User programmes. To do this,select the  sensor after anAutomatic programme has finished.

You can create and save up to 20 ofyour own programmes.

– You can combine up to 9 cookingstages to accurately programme yourfavourite or most frequently usedrecipes. In each cooking stage, youcan select settings such as thefunction, temperature and cookingduration.

– You can enter the name of theprogramme for your recipe.

When you call up and start yourprogramme the next time, it will runautomatically.

There are different ways of creating aUser programme:

– At the end of an Automaticprogramme or Special application,save it as a User programme.

– After running a programme with a setduration, save it.

Then name the programme.

Creating a User programme Select User programmes .

Select Create programme.

You can now specify the settings for thefirst cooking stage.

Follow the instructions in the display:

Select and confirm the desiredsettings.

Select Complete cooking stage.

All settings for the first cooking stagehave now been set.

You can add more cooking stages, forexample, if you want to add anothercooking function to follow on from thefirst.

If additional cooking stages arerequired, select Add cooking stage andproceed as you did for the firstcooking stage.

If you want to check the settings or tochange them at a later date, select thecooking stage in question.

When you have finished setting all thecooking stages, select Save.

Enter the programme name.

Select .

A message will appear in the displayconfirming that the new name has beensaved.

Confirm with OK.

You can start the saved programmeimmediately, delay the start or changethe cooking stages.

Starting a User programme Place the food in the oven.

Select User programmes .

Select the required programme.

Select Allow.

Depending on the programme settings,the following menu options will appearin the display:

– Start nowThe programme will startimmediately. The oven heating willswitch on immediately.

– Finish atSpecify the time at which theprogramme should finish. The ovenheating will switch off automaticallyat the time you have set.

– Start atSpecify the time at which you wantthe programme to start. The ovenheating will switch on automaticallyat the time you have set.

– Show cooking stagesA summary of your settings willappear in the display.

Select the required menu option.

The programme selected will beginstraight away or at the time set.

At the end of the programme, selectthe  sensor.

Changing cooking stages

Cooking stages in an Automaticprogramme that you have renamed asa User programme cannot bechanged.

Select User programmes .

Select the programme you want tochange.

Select Change programme.

Select the cooking stage that youwant to change or Add cooking stageto add another cooking stage.

Select and confirm the desiredsettings.

If you want to start the modifiedprogramme without changing it,select Start programme.

Select Save when you have changedall the settings.

A message will appear in the displayconfirming that the new name has beensaved.

Confirm with OK.

The saved programme has beenchanged and you can start itimmediately or delay the start.

Risk of injury caused by hotsurfaces.The steam oven gets hot duringoperation. You could burn yourselfon the oven compartment, shelfrunners or accessories.Allow the oven compartment, shelfrunners and accessories to coolbefore cleaning.

Risk of injury due to electricshock.The steam from a steam cleaningappliance could reach electricalcomponents and cause a shortcircuit.Never use a steam cleaner forcleaning.

All surfaces could be discoloured ordamaged if unsuitable cleaningagents are used.All surfaces of this appliance aresusceptible to scratching. Scratcheson glass surfaces could cause abreakage in certain circumstances.Only use cleaning agents designedfor domestic use.Remove all cleaning agent residuesimmediately.

Do not use cleaning agents orwashing-up liquids containingaliphatic hydrocarbons as thesecould cause the seals to swell.

Stubborn soiling could damage thesteam oven in certain circumstances.Once the oven has cooled, clean theoven compartment, the inside of thedoor and the door seal. Waiting toolong can make cleaningunnecessarily difficult and in somecases impossible.

Operating a damaged appliance canresult in microwave leakage andpresent a hazard to the user.Check the door and door seal for anysign of damage. If any damage isnoticed, the oven should not be usedagain with microwave functions untilthe fault has been rectified by aservice technician.

The appliance and accessoriesshould be cleaned and driedthoroughly after each use.

Leave the appliance door open untilthe oven interior is completely dry.

Useful tip: If the steam oven is notgoing to be used for a longer period oftime, it should be thoroughly cleanedand dried beforehand to prevent thebuild-up of odours and so on. Leave thedoor open afterwards.

Cleaning the steam oven front Clean the appliance front with a

clean, soft sponge and a solution ofwarm water and washing-up liquid.

After cleaning, wipe the surfaces dryusing a soft cloth.

Useful tip: A clean, damp microfibrecloth without cleaning agent can alsobe used.

Cleaning the ovencompartmentThe oven compartment, the door seal,the inside of the door and the dripchannel should be cleaned and driedafter each use.

Remove:

– condensate using a sponge orabsorbent cloth,

– light, greasy soiling with a spongeand a solution of washing-up liquidand hot water.

After cleaning, wipe the surface withclean water to remove any cleaningagent residues.

Then wipe the surfaces dry using acloth.

Cleaning the Automatic door opener

Ensure that the door opener doesnot become soiled with foodresidues.

Wipe away soiling immediately witha clean sponge and a solution ofwashing-up liquid and hot water.

After cleaning, wipe the surface withclean water to remove any cleaningagent residues.

Cleaning the water container Take out the water container after

each use involving steam.

Remove the spill guard.

Empty the water container.

Rinse the water container by handand then dry it to prevent limescale.

Refit the spill guard on the watercontainer. Make sure the spill guardengages correctly.

Accessories

All accessories are dishwasher-safe.

Cleaning the glass tray, rack andcooking containers

Wash and dry the glass tray, rack andcooking containers after each use.

Any bluish discolouration on thecooking containers can be removedwith vinegar. Rinse afterwards withclean water.

Cleaning the shelf runners

The shelf runners are suitable forcleaning in a dishwasher.

Pull the runners out of the holder (1)at the front of the oven and then pullthem out of the oven (2).

The shelf runners can be washed inthe dishwasher or by hand with asolution of warm water and a littlewashing-up liquid applied with aclean sponge or cloth.

Refit in the reverse order.

Refit the shelf runners carefully.

If the shelf runners are not correctlyinserted, there is no anti-tipprotection.

The shelf runners are fitted in plasticbushings. Check the bushings fordamage.If the bushings are damaged, do notuse any functions involvingmicrowave power until the bushingshave been replaced.

Maintenance

The Finish at and Start at functions arenot available in maintenanceprogrammes.

Descaling the steam oven

We recommend using Miele descalingtablets (see “Optional accessories”) todescale the appliance. These havebeen specially developed for use withMiele appliances to optimise thedescaling process. Other descalingagents, which contain other acidsbesides citric acid and/or otherundesirable substances, such aschlorides, could cause damage to theproduct. Moreover, the descalingresult required could not beguaranteed if the descaling solutionwas not of the appropriateconcentration.

Do not spill descaling agent ontometal surfaces. This can causemarks to appear.However, should any descalingagent get onto these surfaces, wipeit away immediately.

The steam oven has to be descaledafter a certain number of operatinghours. When the time comes to descaleit, the number of uses remaining lightsup in the display. Only cookingprocesses that use steam are counted.The appliance will lock after the lastremaining cooking process.

We recommend that you descale theappliance before it locks out.

During the descaling process, the watercontainer must be rinsed out andrefilled with fresh water.

Switch the steam oven on and selectOther  | Maintenance | Descale.

The message Please wait will appear onthe display. The descaling process isbeing prepared. This may take severalminutes. As soon as the appliance isready, you will be prompted to fill thewater container.

Fill the water container with lukewarmfresh tap water up to the levelmarker  and drop 2 Miele descalingtablets in it.

Wait until the descaling tablets havedissolved.

Push the water container into theappliance.

Confirm with OK.

The time remaining will appear in thedisplay. The descaling process will nowbegin.

Do not switch the steam oven offduring the descaling process,otherwise the whole process will haveto be started from the beginningagain.

During the course of the descalingprocess, the water container needs tobe rinsed and filled with fresh watertwice.

Follow the instructions in the display.

Confirm each with OK.

Once the time remaining has elapsed,Finished will appear in the display and abuzzer will sound.

Switch the steam oven off.

Remove the water container andremove the spill guard.

Empty and dry the water container.

Let the oven cavity cool down.

Then dry the oven compartment.

Leave the appliance door open untilthe oven interior is completely dry.

Soak

Stubborn soiling can be soaked usingthis maintenance programme.

Let the oven cavity cool down.

Remove all accessories from theoven.

Remove coarse soiling with a cloth.

Fill the water container.

Select Other  | Maintenance | Soak.

The soaking process takes approx.10 minutes.

With the help of the following guide, minor faults in the performance of theappliance, some of which may result from incorrect operation, can be remediedwithout contacting Miele. This will save you time and money because you won'tneed a service call.

Please note that a call-out charge will be applied to unnecessary service visitswhere the problem could have been rectified as described in these operatinginstructions.

Problem Possible cause and remedy

You cannot switch theappliance on.

The circuit breaker has tripped. Reset the circuit breaker in the mains fuse box

(see data plate for minimum fuse rating).There may be a technical fault. Disconnect the appliance from the mains

connection for approximately 1 minute by:– switching off at the wall socket and withdrawing

the plug, or– switching off the mains circuit breaker or residual

current device. If, after switching the circuit breaker or residual

current device back on, the steam oven will stillnot switch on, contact a qualified electrician orMiele.

The oven does not heatup.

Demo mode is active.The steam oven can be operated, however theheating elements will not work. Deactivate Demo mode (see “Settings -

Showroom programme”).The oven cavity has been warmed up by a warmingdrawer in operation underneath it. Open the door and let the oven cool down.

Problem Possible cause and remedy

The sensors do notrespond.

You have selected the Display | QuickTouch | Off setting.Therefore, when the steam oven is switched off, thesensors do not respond. As soon as the steam oven is switched on, the

sensors will respond. If you want the sensors toalways respond even when the steam oven isswitched off, select the Display | QuickTouch |On setting.

The steam oven is not connected to the powersupply. Check that the steam oven plug is correctly

inserted into the socket. Check if the circuit breaker has tripped. Contact a

qualified electrician or Miele.There is a fault with the control unit. Touch and hold the On/Off  sensor until the

display switches off and the steam oven restarts.

The fan can still beheard after theappliance has beenswitched off.

The fan is still running. The appliance is fitted with a fan which removessteam from the oven. The fan will continue to run fora while after the appliance has been switched off. Itwill switch itself off automatically after a while.

A humming sound canbe heard after switchingon the appliance, duringoperation and afterswitching off theappliance.

This is not a fault. It is made by water being pumpedthrough the system.

After moving house, theappliance no longerswitches from theheating-up phase to thecooking phase.

Altitude affects the boiling point of water. If you movehouse, the appliance will need to be reset for the newaltitude if this differs from the old one by more than300 m. To adjust the boiling temperature, you need to

descale the steam oven (see “Cleaning and care –Descaling the steam oven”).

During operation anunusually large amountof steam escapes orsteam escapes fromparts of the steam ovenwhere it does notusually.

The door is not properly closed. Close the door.

The door seal is not correctly fitted. If necessary, press it in all the way round the door

to make sure it is fitted evenly.The door seal is damaged, e.g. cracked.

The door seal needs to be replaced. Call Miele. Do not use any microwave functions until the door

seal has been replaced.

A whistling sound isheard when theappliance is switchedon again.

When the door is closed, the pressure has toequalise, which can cause a whistling sound. This isnot a fault.

The Start at and Finish atfunctions are notavailable.

The temperature in the oven compartment is too high,e.g. after a programme has finished. Open the door and let the oven cool down.

These functions are not generally available inmaintenance programmes.

After long cookingcycles with microwavepower , there arehigh levels of moisturein the cavity.

The steam oven with microwave is a fully fledgedsteam oven. The cavity is therefore completelysteam-tight. In contrast, a conventional microwaveoven is not air-tight. As a result of the steam-tightcavity, during long cooking cycles with microwavepower , condensate will develop on the side wallsand the inner door panel. The quantity of condensatedepends on the cooking duration and the level ofmoisture in the food.

The food is notsufficiently heated or isnot cooked at the endof a set duration whenusing theMicrowave  function.

The oven was not restarted after interrupting acooking programme. Restart the cooking programme to ensure the food

is heated or cooked properly.When cooking or heating with microwave power, theduration set was too short. Check that the correct duration is selected for the

microwave power level. The lower the microwavepower level, the longer the cooking duration.

With a very small amount of food, the steam ovenautomatically reduces the power level to suit theactual amount of food as a safety precaution. Thedisplay still shows the previously set initial powerlevel. Restart the programme with a lower microwave

power level to ensure the food is heated or cookedproperly.

Food has cooled downtoo quickly after beingheated or cooked usingthe Microwave function.

When cooked by microwaves, food begins to cookfrom the outside first, the inside of the food relying onthe slower conduction of heat. If food is cooked at ahigh microwave power level, it is possible that theheat may not have reached the centre of the food, soit is hot on the outside but cold in the centre. Duringthe standing time, the heat is transferred to the centreof the food. When reheating food with different densities, such

as with menu cooking, it is sensible to start with alow microwave power level and select a longerreheating duration.

Less than half of thepopcorn has poppedwhen using thePopcorn  function.

The oven interior was too warm and/or too damp. Allow the oven compartment to cool and/or dry it

with a towel.The cooking duration was too short. Change the preset time. The maximum cooking

duration that can be set is 4 minutes (see “Settings– Popcorn”).

The oven lightingdoesn't come on.

The lamp needs to be replaced. Call Miele to have the lamp replaced.

Safety instructions for installation

Risk of damage from incorrect installation.Incorrect installation can cause damage to the steam oven.

The steam oven must only be installed by a qualified person.

The connection data (frequency and voltage) on the steam oven’sdata plate must correspond with those of the electricity supply inorder to ensure that no damage can occur to the steam oven.Compare this data before connecting the appliance. If in any doubt,consult a qualified electrician.

Multi-socket adapters and extension leads do not guarantee therequired safety of the appliance (fire hazard). Do not use them toconnect the steam oven to the power supply.

The socket and on-off switch should be easily accessible after thesteam oven has been installed.

The steam oven must be positioned so that you can see thecontents of a cooking container placed on the top shelf level.Otherwise there is a risk of injuries or spillages of hot food.

Installing the steam oven Connect the mains connection cable

to the appliance.

Risk of damage from incorrecttransportation.Lifting the steam oven by the doorhandle could cause damage to thedoor.Use the handle cut-outs on the sideof the casing to lift the appliance.

The steam generator maymalfunction if the steam oven is noton a level surface.The maximum deviation from thehorizontal that can be tolerated is 2°.

Push the steam oven into the housingunit and align it. When doing so, make sure that themains connection cable does not gettrapped or damaged.

Open the door.

Secure the steam oven to the sidewalls of the unit using the woodscrews supplied (3.5 x 25 mm).

Connect the appliance to the mainselectricity supply.

Check the appliance for correctfunction in accordance with theoperating instructions.

Electrical connectionWe recommend that you connect thesteam oven to the electricity supplyusing a suitable switched electricalsocket. This simplifies servicing. Thesocket must be easily accessible afterthe steam oven has been installed.

Risk of damage from incorrectconnection.Danger of injury! Miele cannot beheld liable for unauthorisedinstallation, maintenance and repairwork as this can be dangerous tousers.Miele cannot be held liable fordamage or injury (e.g. electric shock)caused by the lack of or inadequacyof an on-site earthing system.If the plug is removed from theconnection cable or if the cable issupplied without a plug, the steamoven must be connected to theelectrical supply by a suitablyqualified and competent electrician.If the socket is no longer accessible,or if a hard-wired connection isplanned, an additional means ofdisconnection must be provided forall poles. Suitable means ofdisconnection include switches withan all-pole contact gap of at least3 mm. These include miniature circuitbreakers, fuses and relays. Theconnection data is given on the dataplate. Please ensure this informationmatches the household mainselectricity supply.After installation, ensure that allelectrical components are shieldedand cannot be accessed by users.
