In the playing court and on the dining table, Benildeans provedworthy of being made the country’s delegates to the recentlyconcluded Southeast Asian Games in Nakhon Ratchasima, Thailand.
A number of students and faculty members from De La Salle-College of Saint Benilde formed the Philippine delegation that competedin the biennial competitions among ASEAN member-nations.
Leading the Benildean charge were Kerstein Elaine L. Alora, anExport Management student, and Dearlie B. Gerodias, a ComputerApplications major. Both clinched silver medals in their respectivesports events.
Gerodias displayed superb form with her partner in winning thesilver medal in dance sport, while Alora kicked her way to the podium
in women’s taekwondo. Each receiveda cash incentive worth P50,000 fromthe government for their heroicshowing.
Apart from Gerodias and Alora,Benildean coaches also joined thenational contingent. They includedParley D. Tupaz of the men’s beachvolleyball; Marlon M. Maro (headcoach), Alfredo Rey L. It is an event that hascaptured the hearts andimagination of students who willsoon become members of thefood and tourism industry. Quitefittingly, De La Salle-College ofSaint Benilde has played a majorrole in jumpstarting the YoungHoteliers Exposition (YHE).
For its 20th edition lastNovember 12 to 16, 2007, theevent went back to its roots as theDLS-CSB’s AKIC campus playedhost anew to complete ahomecoming of sorts.
After twenty consecutiveYHEs, the event has evolvedterm after term, giving studentsthe chance to showcase theirtalents through differentcompetitions focusing on thethree tracks of the School of HotelRestaurant and InstitutionManagement (SHRIM)-- culinaryarts, hospitality management,and tourism management.
The event has largely lived upto its goals of developing the skillsof SHRIM students by providingthem a venue that serves as atraining ground, as well as anenvironment that promotes healthycompetition among participants.
The executive andorganizing committees, led byfaculty chairpersons GeronimoG. Ele II and Jean Paul Ceronand student chairperson ByronFrancisco, made sure that theevent’s latest staging was filledwith more activities.
Staple competitions such asArtistic Bread, Cake Decorating,and the prestigious Market Basket
were there to provide the usual flairand excitement. But five daycelebration was given a twist withnew contests such as Edible Art --Croquem Bouche, SHRIM AmazingRace, and The Culinary Challenge.
The SHRIM Amazing Racealso made its debut while abazaar, where all sorts of thingsfood could be found, was set upoutside AKIC Campus.

The 20th staging of the Young Hoteliers Exposition (YHE), which hasbecome the most exciting and widely anticipated event for youngpeople wanting to join the hospitality industry, goes back to where itall began — at the DLS-CSB.
In the last issue of the Perspective,we inadvertently omitted the word “not”between the words “should” and “forget” inthe last paragraph of the cover story entitled“Flip, toss, and away.” Also, in the Oct. 29-Nov. 11, 2007 issue, the second to the lastparagraph should have the word “hospitable”instead of “hospitality”. We thank SHRIMfaculty member Ed Valenciano for bringingour attention to this error.
The YHE culminated with theawarding ceremonies and anappreciation dinner held at theSHRIM multipurpose hall. Thehighlight of the emotion-filled dinnerwas the turnover of Batch 2005officers — who will be having theirin-house practicum next term — totheir young Batch 2006 protégés,headed by Michaela Villegas as thenext student chairperson.

Despite her petite physique,Peachy Juban has an unquenchablezest for life, which comes mainly in theform of baking and cooking, as well astalking. She has wisely put these“skills” into good use by putting up abakeshop and by teaching at theSchool of Hotel Restaurant andInstitution Management (SHRIM) of DeLa Salle-College of Saint Benilde.
Juban has been teaching bakingand pastry arts (both lecture andlaboratory) as a subject to SHRIMstudents, some of whom have wonculinary competitions because of herexceptional mentorship.
But Juban, who started baking atthe tender age of eight, never imaginedat first that she could make a career outof baking and cooking because herparents, wanted a more “normalprofession” for their prodigious daughter.
Fate, however, has its own way offollowing what’s inside a person’s heart.And so after taking up Hotel andRestaurant Administration at theUniversity of the Philippines in Diliman inthe early 1990s, she found herselfbecoming an apprentice at the MandarinOriental Hotel under renowned Austrianchef Norbert Gandler.
“After that, an opportunity came toopen up a bakeshop in Parañaque. Thatwas where I also started teaching littlekids how to bake during the summer,” she

said. The bakeshop, called Shortcrust, isnow its 15th year of operations.
As her reputation as a consummateteacher grew in that part of Metro Manila,an offer came for her to teach at DLS-CSB. “It was life-changing,” she shared. “Ithought my first term would be my lastterm. Now, I’m on my 12th term.”
As she came to love her work as acollege instructor, Juban collectedaccolades as a superb coach to herstudents during culinary competitions.She is mainly responsible formasterminding the school’s triumph asback-to-back champion in the Nestlé andGoldilocks baking contests.
“I like the coaching part because Ican get to work one-on-one with mystudents, she confided.” “Success incompetitions is a result of timing andstudent-teacher cooperation.”
Juban attributes her success as ateacher and coach to her concurrent jobas bakeshop owner. “I think I’m effective
as a teacher because I’m still part of theindustry. It keeps me updated with thelatest culinary trends.”
She also credits the variouscooking shows that have sprouted latelyin local television and the global demandfor trained professionals for spurringinterest among the youth to study theculinary craft.
This was unlike in the past, sherecounted, when cooking or baking werejust confined as a mere hobby. “Studentsthought it was easy and glamorous. Butonce they plunge into it, they realize it’sreally hard work.”
As part of the hotel and restaurantindustry, Juban hopes that Filipino foodwill someday get its global recognitionas a unique Asian cuisine much likeJapanese, Thai, or Vietnamese food.
“The Filipino culture is a blend ofdifferent cultures, and that translates toour food. It’s very interesting but it’s notappreciated. But it will come.”

Every December 10, theinternational community, including thePhilippines, celebrates theInternational Human Rights Day tomark the adoption of the UniversalDeclaration of Human Rights.
Last year, the celebration wasmade more significant as it was the60th anniversary of the UniversalDeclaration of Human Rights (UDHR)since it was adopted on December10, 1948.
The UDHR is the first internationalagreement among nations whichidentified and recognized thefundamental and inalienable rights ofall human beings. Sadly, 60 years afterthe adoption of the UDHR, blatantviolations of human rights continues tobe perpetuated. Now, more than ever,the UDHR has become relevant andnecessary in the struggle for therecognition, promotion, protection, andfulfillment of human rights.
For its part, DLS-CSB celebratedHuman Rights Week last December 3to 10, 2007. A special Mass was heldto mark the opening of the celebrationwhile a photo exhibit focusing on the
Knowstate of human rights in thePhilippines was held at the LRC lobbyduring the entire week.
On December 5, the SocialAction Office and Task ForceDetainees in the Philippines (TFDP)held a film showing for a documentaryentitled “Bilanggong Politikal” which
tackled the issue of politicalprisoners. The film showing wasfollowed by a short discussion.
Two days later, the SAO held acontest dubbed “Know Your Rights:An Interclass Quiz Bee on HumanRights” at the Plaza Villaroza. Thecompetition was participated by three

In a newspaper report, it wasrecounted that food cooked by Filipinochefs, mostly SHRIM professors,
made the mess hall at the Athletes’Village, a favorite place for athletes ofdifferent nationalities who want tosatisfy their hunger for good food.
Shirley Ann Joseph, Carlo PaoloKierulf and Cardelon Hernandez, allfrom DLS-CSB, made sumptuousadobo, nilagang baka, sinigang, andeven sinangag that made the Filipinosthe champions on the dining table.
PoliGov (Political Government)classes with each class representedby 15 students. The questions delvedon International Human Rightsinstruments, the PhilippineConstitution, Philippine laws andcurrent events. Krishna Estanislao ofthe PoliGov H20 class emerged asthe winner.
The highlight of the celebrationwas the visit of the members of theDLS-CSB community to politicalprisoners in the National Bilibid Prisonin Muntinlupa on December 8. Thevisit, which allowed DSL-CSB studentsand faculty to interact with politicalprisoners, was facilitated by the TFDP.
CConscious of its societal obligations, DLS-CSB celebrated ‘Human Rights Week’ lastDecember with the view of uplifting awareness of the most important right of them all.
