What is a RECIPE?

A recipe is a set of

instructions for preparing

a specific food.

A good recipe contains:

• Ingredients• Amounts of

ingredients• Instructions• Temperature• Yield

– how many people the recipe will serve

• Pan size• Cooking time

Standard Form

• Ingredients listed first

• Instructions in paragraph form following ingredients

• MOST COMMON and easy to follow!

STANDARD RECIPE Ex:Quiches

(makes 2 pies)

8 eggs

1 ¾ c milk

salt & pepper to taste

2 deep dish pie shells

1 c swiss cheese

1 c ham pieces

1 jar bacon bits

1 c shredded cheddar cheese 

Pre-heat oven. Allow pie shell to thaw about 10 min. Then, using a fork, prick edges and bottom (to allow air to escape).  Bake pie shells @ 450 until golden brown – 5 min. Reduce heat to 350.

Mix egg and milk with a fork to blend. Fill cooked pie shells with cheese and meat (one with swiss and ham, one with cheddar and bacon). Pour egg mixture over meat (add more milk/egg if not enough to cover).

Bake 35-40 minutes until a knife in center comes out clean.

SUBSTITUTIONS

If you don’t have:• 2 egg yolks• 1c cake flour• 1oz. Baking chocolate• 1 T fresh, chopped herbs• 1c buttermilk

You may substitute this:• 1 egg• 7/8c sifted, all purpose flour

• 3T cocoa & 1T butter• 1 t dried, crushed herbs• 1 T lemon juice or vinegar

+ enough fat free milk to equal 1 cup

OR 1c plain, nonfat yogurt

Sometimes you will need to substitute ingredients because you don’t have the ingredients on hand.
