    Vietnamese Culinary Culture

    The Vietnamese adopted Conucianism, Buddhism, chopsticks and the wok rom China, yet Vietnamese

    ood has retained its own character. No meal is complete without resh vegetables and herbs. A key

    portion o every meal; north, south and central, is a platter containing cucumbers, bean threads, slices o

    hot pepper, sprigs o basil, coriander, mint and a number o related herbs ound principally in SoutheastAsian markets.

    Vietnamese ches like to reer to their cooking as the nouvelle cuisine o Asia. And indeed, with the

    reliance on rice, wheat and legumes, abundance o resh herbs and vegetables, minimal use o oil, and

    the treatment o meat as a condiment rather than a main course, Vietnamese ood has to be among the

    healthiest on the planet.

    Rice and Noodle

    The Vietnamese eature rice as a staple in their everyday diet and typically, ragrant rice is served with a

    plethora o vegetarian and meat dishes.

    Vietnamese noodles are also the alternative to steamed rice as a staple and there are many dierent types.

    To name a ew: bee soup noodles (pho), crab noodle (bun rieu), spring rolls (nem) and sticky rice cake

    (chung cake). Noodles are eaten wet and dry, in soup or accompanied with soup, and are made in dierent

    shapes and thicknesses o wheat, rice and mung beans.

    Spices and Herbs

    Vietnamese ood would not be complete without the inclusion o herbs. The textures, avors, scent and

    overall reshness that these herbs contribute to everyday Vietnamese dishes is what makes the cuisine

    stand alone.

    Eaten generously alongside almost every meal, these resh leaves & stems create a unique & delicious

    layer o avour to the already dynamic tastes o Vietnamese cuisine. Raw herbs are torn, topped, tossed,
