About WWEP:
Registered in 2015, World Wide Education
Project is a young UK based charity that
creates access to quality education through
school design, teacher training, psychosocial
support and classroom supplies in
developing, disaster and conflict affected
countries. We highlight these activities and
projects to UK schools through our Refugee
Education Experience.
Recent news:
In March 2015, 3 of our volunteers spent 2
weeks in Kakuma Refugee Camp, Northern
Kenya home to over 189,000 refugees from
22 countries. Our volunteers delivered
teacher training and psychosocial support to
the teachers of Hope Primary School- a
school where one teacher, teaches between
150-200 students each.
We’re recruiting volunteers!
We depend on the support of our volunteers to create
and deliver some of our essential services. We are
currently looking for volunteers in the following areas:
Fundraising- seeking funders, writing
bids and potentially organising
events
Refugee Education - Experience-
coordinating, networking,
marketing and facilitating the
delivery of the activities in UK
schools.

The Loss of Rowanberry
The end of an era came last month
with the last Liz Turner pasty rolling
off the assembly line. We have been
pleased to support the Turner
Enterprise (aka Rowenberry Cakes)for
the past 8 years, selling her pasties,
cakes, mince pies, biscuits, and
chutneys to a grateful public. A
support line is available at the shop for
those suffering from RPW
(Rowenberry Pasty Withdrawal)
symptoms.
However,
Saker Foods,
purveyors of
finest
flapjacks and
sos rolls, have
stepped into
this gap, supplying a wide range of
scrummy pasties for our discerning
punters. And Janine, who has long
been supplying her glorious cakes to
Yaffle Cafe, has agreed to provide our
cake-less clientele with her amazing
and decadent sweet-treats. Happy
days!
Organic Veg This time of year brings us a great deal of those fresh
tasting salad staples - lettuces a-plenty, cucumber,
fantastic UK tomatoes etc. We’ve had a really good
crop of UK new potatoes at a reasonably early time this
year, perhaps due to
milder weather early on.
Looking into the crops of
UK aubergines and
courgettes for the next period, along with
the rhubarbs, chard and khol rabi to be
grown locally too. Oh, and UK onions will
be on the near horizon! This is the time of
plenty!
What’s...............New?
On the Shelves Every few months we see some of our old favourites disappear from our
lives, but endeavour to find great new things to fill that void.
For this quarter, we have brought to you:
• Nakd Nibbles! Fab healthy little nuggets of awesome, from the ever
popular and unbeatable Nakd bar folks, with 7 totally new flavours
to choose from, and perfect lunchbox size to boot.
• Seaweed crispies - excellent snack packs of seaweedy goodness, for
those of us that can’t get enough of the stuff
• Organic bean pastas!! Mung bean fettuccini or a black been
spaghetti, made entirely from bean flour, making them an excellent
source of protein and minerals while lower in carbs, and they keep
their excellent texture. Great feedback so far…
• Incredible bread from the incredible bread company. I know, I
know, sounds like an
oversight, but in fact this is
the best textured stuff
we’ve ever come across in
the gluten free world.
Great and fluffy, and with
a range of excellent kinds
we’re hopeful this will be
a welcome addition to our
gluten free customers
Rooms for Hire and Therapies
Upstairs - Yaffle Cafe Bookshop For most of the week the first floor is taken over by the marvellous
Yaffle Café. See insert. Yaffle also put on private dinner parties!
The room is also available for hire while the café is not open, for
meetings, workshops, exhibitions, and therapists, standard hire rate
£6.50/hr. Some evenings and Sundays may be possible by
arrangement. See Sound Bites’ website or contact the shop. We also
have a meeting room for hire on the second floor which is available
during the week, also £6.50/hr, or for long-term rent as an office.
Soil Soil Soil…..
Looking after your soil is very
important in organic gardening.
Without an abundant amount of
micro-organisms in the soil, plants
cannot grow healthily, and you can
improve the health of your soil by
following some of the suggestions
below.
Check out the website of Charles
Dowding, innovative gardener,
author of seven books on caring
for soil and growing vegetables.
He also shares knowledge through
talks, courses and regular
magazine articles which won him
the award of 2014 Garden Media
Guilds ‘Practical Journalist of the
Year’.
The site shows productive ways to
grow food, and with less
weeding, using a lovely way of
caring for soil – undug and with a
light covering of compost on top,
based on his experience of
growing vegetables without tillage
for thirty years. Charles Dowding
runs courses on his Somerset small
holding throughout the Summer.
Chris recommends growing
perennial vegetables, which he has
been doing in the last growing
season. Try some perennial kale,
broccoli, spinach, and Good King
Henry which makes a good
spinach substitute. Perennial
vegetables fit in well with a no dig
system, which is better for the soil.
Another development in good soil
gardening is Paul Gautschis’ ‘Back
to Eden’ style of gardening, which
involves mulching with woodchip.
This method eradicates the need
for watering and digging. It
suppresses weeds and imitates
nature by creating a soft spongy
layer that you would find on a
forest floor. Reclaiming rough land
can be done with thick layers of
newspapers then covered heavily
with woodchip. The plot is not dug
but the woodchip is slowly
incorporated into the soil over
several years. Plants are planted
through the woodchip so that
nitrogen isn’t robbed from the soil
through its decomposition. For

Gluten fact or fiction? In the next newsletter, we’ll go
into more detail about food
avoidance and symptoms, but I
just wanted to touch on food
psychology here. Gluten free
demand has risen dramatically in
the last few years - primarily due
to self diagnosis, and this can
leave a diet lacking in the
important nutrients in whole
grains. The brain and the gut are
intrinsically linked, so for many
people, gluten becomes a placebo.
People may attribute a range of
unrelated symptoms to this now
popular buzzword, but actually it
is the expectation of a reaction
creating the reaction itself. Crazy
right? Unless diagnosed a celiac,
gluten is safe for your diet, and
cutting it out needlessly can really
affect your ability to have a fully
balanced diet. In the next issue, I
will go into super detail about this
issue, so that you good folks can
better understand for yourselves
and your
close ones

can have on

Aqua Faba
We have recently stumbled on this great
magical vegan ingredient which we
would normally throw away when using
a can of beans.
Aqua faba:- (coined by Goose Wohlt) for
the liquid drained off a can (or pot) of
chickpeas, or other legumes. (Loosely,
Latin for water = aqua, bean = faba.) It
can be used as an egg replacer, including
for making meringues, cakes, macaroons,
mayonnaise. No unusual ingredients are
needed and it is slowly stirring up quite a
following.

We have tried making the meringue
recipe from Goose’s blog:
Ingredients
The liquid from one can of chickpeas
1/2 cup granulated sugar
Method - Whip the liquid until it
forms firm peaks, then very slowly pour
in the sugar while whipping at high
speed. Once it is firm enough to turn the
bowl upside down without losing any,
put 2 inch dollops on parchment paper
and bake at 100C/200F for 1.5 hours.
Then let them cool... You can add a touch
of vanilla or other flavouring; or, even
increase the sugar up to 4x as much for
stiffer meringues! Some people feel more
comfortable adding a pinch of cream of
tartar or vinegar to help form the initial
peaks.
Verdict - We used a Braun
handheld electric mixer. It didn’t form
peaks at first, but adding 2 tsp of vinegar
got round this. We didn’t whisk as firm
as it said, as our mixer got very hot, as it
was a lot of whisking! We put our oven
on Gas mark 1. They tasted good, with a
hint of Horlicks in there. We think vanilla
essence may be a good addition.

There will be all the ongoing land management
and conservation jobs, (including checking in on
the trees we planted over the Winter, maybe a bit
of pot hole filling on the lane, ditch and dry stone
wall maintenance), general house maintenance
jobs, and possibly some work on the first stages
of work on the new extension...how can you
resist! Just give us a ring/email nearer the time if
you would like to know more details about the
jobs planned for each weekend.
They'll be the usual mix of working, eating,
hopefully an outside fire in the evenings, nice
walks from the doorstep, the river and sky and
wild geese to enjoy...
People are welcome to arrive from late Friday
afternoon, and stuff will be going on until late
Sunday afternoon. If you need to stay Sunday
night because of travel issues, please let us know
in advance-cheers.
All food vegan and provided by Wild Peak. If
you are thinking of coming let us know as soon
as possible so we can sort food shopping and
accommodation. (We have a limited amount of
accommodation in indoor spaces, so it really
helps to give as much notice as possible so we
can work out where everyone is going!) For
people who are up for camping we have loads of
camping space. Let us know whether you will be
bringing your own tent or whether you will need
to borrow one for the weekend.

I Want Your Finery!

Hello everyone. I'm going to keep it
relatively short and sweet this time! I
recently found out about a non-profit
organisation based in Stockport called 'A
Moment In Time'. This organisation
provides formal wear, free of charge, to
disadvantaged young people who might
not otherwise have an outfit to attend
their prom in. The idea is that regardless
of their financial circumstances, every
young person should be able to enjoy a
special evening. The service is done by
referral only, through schools and other
groups that have contact with children.
A Moment In Time are looking for
donations of formal wear suitable for
females and males - prom dresses, suits,
shoes and accessories. I am currently
collecting things together with the aim of
taking a carload of suitable donations up
to them (and probably swinging by The
Globe Inn in Glossop on the way for a
vegan pub lunch!) . The more outfits and
accessories they are given, then the
greater the choice that the young people
have. Can you help? You can bring any
donations to me at Sound Bites on
Wednesdays or Fridays and I'll make
sure they get there safely!

Two Beetroot, raw.
Five carrots.
Two apples.
One large orange.
Tablespoon of grated ginger
Big splash of Balsamic vine-
gar.
Another splash of Olive oil.
Tablespoon of agave syrup.
Handful of Pumpkin seeds
Handful of Sunflower seeds
Teaspoon cumin seeds.
Two teaspoons of oil for
frying.
Wash and peel the beetroot,
apple and carrots, then
grate into a bowl. Finely
grate the ginger and add to
the bowl. Peel and chop the
orange, add that too. Add
the balsamic vinegar, olive
oil and agave syrup, until
salad is glossy and wet. In
a frying pan toast the pump-
kin, sunflower and cumin
seeds. Once brown add these
in. Stir well, and serve
fresh. Yummy!
