Middle Eastern cuisine or West Asian cuisine is thecuisineof the various countries and peoples of
theMiddle EastandWestern Asia. The cuisine of the region is diverse while having a degree of
homogeneity.[1]
Some commonly used ingredients includeolivesandolive
oil,pitas,honey,sesameseeds,dates,[1]
sumac,chickpeas,mintandparsley. Some popular dishes
includekibbehandshawarma. Many Middle-Eastern dishes are made with a paste calledtahini. Tahini is
asesamepaste made with hulled seeds, unlike its Asian counterpart. It is used to make such popularmeze, or
appetizers, asbaba ghanoushandhummusalong with pungent dipping sauces served
withfalafel,keftesorkoftaand vegetables.[2]
Hummus is made fromchickpeas, which are staples of the diet.
History and influences
The Middle East was where wheat was first cultivated, followed
bybarley,pistachios,figs,pomegranates,datesand other regional staples.Fermentationwas also discovered
here to leaven bread and make beer. As a crossroads between Europe, Asia and Africa, this area has long
been a hub of food and recipe exchange. During thePersian Empire(ca. 550330 BCE) the foundation was
laid for Middle-Eastern food whenrice,poultryand fruits were incorporated into their diets. Figs, dates and nuts
were brought by Arabian warriors to conquered lands.
The area was also influenced bydumplingsfrom Mongol invaders;turmeric,cumin,garlicand other spices
from India;cloves,peppercornsandallspicefrom theSpice Islands;okrafrom Africa; andtomatoesfrom the
New World, via the Moors of Spain. Religion has also changed the cuisine as neither Jews nor Muslims eat
pork, makinglambthe primary meat. Since theQur'anforbids alcohol consumption, the region isn't noted much
for itswine.[1][3]
Under theOttoman Empire, the sweet pastries of paper thinphyllodough and the dense, sweetcoffeewas
brought to the area; coffee is now consumed throughout the Middle East.
Beverages
Aside from Middle Eastern coffee, there is also an alcoholic drink calledarak. Arak has a high alcohol
content, so water and ice is almost always added, producing the drink nicknamed "the milk of lions."[4]

In some areas in the Middle East, especially in the Persian Gulf countries, it is common for people
to take their food from a common plate in the center of the table. Rather than employing forks or spoons,
people may scoop up hummus and other foodstuff with pita bread. Among Muslims in particular, the left hand is
reserved for bodily hygiene and considered unclean. Thus, the right hand should be used for eating; shaking
hands or handing over an item with one's left hand is an insult.
Turkish cuisine
Turkish cuisine(Turkish:Trk mutfa) is largely the heritage ofOttoman cuisine, which can be
described as a fusion and refinement ofCentral Asian,Middle EasternandBalkancuisines.[1][2]
Turkish cuisine
has in turn influenced those and other neighbouring cuisines, including those of western Europe. The Ottomans
fused various culinary traditions of their realm with influences fromMiddle Eastern cuisines, along with
traditionalTurkicelements fromCentral Asia(such asyogurt), creating a vast array of specialities many with
strong regional associations.
Turkish cuisine varies across the country. The cooking of Istanbul, Bursa, Izmir, and rest of the Aegean region
inherits many elements ofOttoman court cuisine, with a lighter use of spices, a preference for rice overbulgur,
and a wider use of seafoods. The cuisine of theBlack Sea Regionuses fish extensively, especially theBlack
Sea anchovy(hamsi), has been influenced byBalkanandSlaviccuisine, and includesmaizedishes.

The cuisine of the southeast Urfa,GaziantepandAdana is famous for itskebabs,mezesand dough-
based desserts such asbaklava,kadayfand knefe(kanafeh).
Especially in the western parts of Turkey, where olive trees grow abundantly,olive oilis the major type of oil
used for cooking.[3]
The cuisines of theAegean,MarmaraandMediterraneanregions are rich in vegetables,
herbs, and fish. Central Anatolia is famous specialties, such askekek(kashkak),mant(especially
fromKayseri) andgzleme.
A specialty's name sometimes includes that of a city or region, either in or outside of Turkey, and may refer to
the specific technique or ingredients used in that area. For example, the difference between urfa
kebabandadana kebabis the thickness of the skewer and the amount of hot pepper that kebab contains. Urfa
kebabis less spicy and thicker than adana kebab.
Bahraini cuisine
Bahraini cuisine refers to the cuisine ofThe Kingdom of Bahrain, a smallislandstate near the western shores
of thePersian Gulf. Bahrain produces only a small amount of its food requirements due to limited land space,
and imports much of its food.[1]
Its primary crops aredates,bananas,citrus
fruits,pomegranates,mangoes,cucumbersandtomatoes.[1]
Due to limited land space, there are only a few
thousand goats, cattle and sheep, but fishing provides significant amounts offishandshrimp.[1]
Bahraini cuisine includes food staples such as meat, fish, rice, and dates.[1]
One of the traditional dishes
ismachboos(), which consists of meat or fish served with rice. Another known food ismuhammar(),
which is sweet rice served with dates or sugar. Bahrainis also eat other Arabian food such asfalafel, fried balls
of chickpeas served in a bread, andshawarma, lamb orchickencarved from a rotating spit and wrapped inpita
bread. Traditional snacks includesamboosaand pastry.
Another significant part of the Bahraini diet is the fresh fish of thePersian Gulf, of which the king is
the Hamour() (grouper), typically served grilled, fried, or steamed. Other popular local fish
include Safi() (rabbitfish), Chanad() (mackerel), and Sobaity() (seebream). Most of the
time, fish is eaten with rice. A century of British rule in thePersian Gulfhas also madefish and chipspopular in
Bahrain.
A delicacy is Qoozi() (Ghoozi), which is grilledlambstuffed with rice, boiled eggs, onions and spices. The
traditionalflatbreadis calledKhubz(). It is a large flatbread baked in a special oven.
Numerous Khubzbakeries dot the country. It is often served withmahyawafish sauce.

Coffee, called Gahwa() locally, is considered a part of the traditional welcome in Bahrain. It is usually
poured into a coffee-pot, which is called dalla() in Bahrain. It is served in a small cup made for coffee
called finjan().

Breadforms the backbone of Egyptian cuisine, . Bread is consumed at almost all Egyptian meals; a working-
class or rural Egyptian meal might consist of little more than bread and beans. The local bread is a form of
hearty, thick,glutenouspita breadcalled Eish Masrior Eish Balad(Egyptian Arabic: [e];Modern
Standard Arabic:ay) rather than the Arabic ubz. The word "[e]" comes from theSemitic root---
I-with the meaning "to live, be alive."[1]The word ayitself has the meaning of "life, way of living...; livelihood,
subsistence" in Modern Standard andClassical Arabic; folklore holds that this synonymity indicates the
centrality of bread to Egyptian life.[1]
In modern Egypt, the governmentsubsidizesbread, dating back to
aNasser-era policy. In 2008, amajor food crisiscaused ever-longerbread linesat government-subsidized
bakeries where there would normally be none; occasional fights broke out over bread, leading to fear
ofrioting.[2]
Egyptian dissidents and outside observers of the formerNational Democratic Partyregime
frequently criticized the bread subsidy as an attempt to buy off the Egyptian urban working classes in order to
encourage acceptance of the authoritarian system; nevertheless, the subsidy has continued after the2011
Revolution.
On a culinary level, bread is most commonly used as an edibleutensilbesides providing thecarbohydrateand
much of theproteinin the Egyptian diet. Egyptians use bread to scoop up food, sauces, and dips and to
wrapkebabs,falafel, and the like in the manner of sandwiches. Most pita breads are baked at high
temperatures (450F or 232C), causing the flattened rounds of dough to puff up dramatically. When removed
from the oven, the layers of baked dough remain separated inside the deflated pita, which allows the bread to
be opened into pockets, creating a space for use in various dishes.
Aish Merahrah[emer]is an Egyptian flat bread made with 5-10% groundfenugreekseeds andmaize.
It is part of the traditional diet of the Egyptian countryside, prepared locally in village homes. The loaves are flat
and wide, and usually about 50 cm in diameter. The bread is made of maize flour that has been made into a
soft dough that is fermented overnight with a sourdough starter, shaped into round loaves that are then allowed
to rise or "proof" for 30 minutes before being flattened into round disks, which are then baked. They can be
kept for days in an airtight container. The addition of fenugreek seeds increases the protein content, storage
length and digestibility of the bread; on the other hand, it causes the eater to exude a distinctive odor in his or
hersweat, which is occasionally mocked by more urban Egyptians.

Iranian cuisine or Persian cuisine is one of the world's most ancient and developed styles of cooking.
Situated between theMediterranean Seaand theIndian subcontinent, Iranian cuisine has a shared history and

Fresh green herbs are frequently used along with fruits such
asplums,pomegranates,quince,prunes,apricots, andraisins. TypicalPersianmain dishes are combination

taste, characteristic Persian flavorings such assaffron, driedlimes,cinnamon, andparsleyare mixed delicately
and used in some special dishes.
Iraqi cuisine
Iraqicuisine or Mesopotamian cuisine has a long history going back some 10,000 years - to
theSumerians,Babylonians,Assyrians, andAncient Persians.[1]

Israeli cuisine
Israeli cuisine( ) comprises local dishes byJewsnative to Israel and dishes brought
toIsraelby Jews from theDiaspora. Since before the establishment of theState of Israelin 1948, and
particularly since the late 1970s, an IsraeliJewishfusion cuisinehas developed.[1]
Israeli cuisine has adopted, and continues to adapt, elements of various styles ofJewish cuisine, particularly
theMizrahi,Sephardic, andAshkenazistyles of cooking.[1]
It incorporates many foods traditionally eaten

Other influences on cuisine are the availability of foods common to the Mediterranean region, especially certain
kinds of fruits and vegetables, dairy products and fish; the distinctive traditional dishes prepared at holiday
times; the tradition of keepingkosher, which affects the preparation and availability of specific foods; and
foodcustomsspecific toShabbatand differentJewish holidays, such aschallah,jachnun,malawach,gefilte
fish,cholent(hamin) andsufganiyot.
New dishes based on agricultural products such asoranges,avocados, dairy products and fish, and others
based on world trends have been introduced over the years, and chefs trained abroad have brought in
elements of otherinternational cuisines.[4]
Israels culinary traditions comprise foods and cooking methods that
span three thousand years of history. Over that time, these traditions have been shaped by influences from
Asia, Africa and Europe, and religious and ethnic influences have resulted in a culinary melting pot. Biblical and
archaeological records provide insight into the culinary life of the region as far back as 968 BCE, in the days of
the kings ofancient Israel.[5]
During theSecond Templeperiod (516 BCE to 70 CE),HellenisticandRomanculture heavily influenced
cuisine, particularly of thepriestsand aristocracy ofJerusalem. Elaborate meals were served that included

Thefood of the ancient Israeliteswas based on several products that still play important roles in modern Israeli
cuisine. These were known as theseven species: olives, figs, dates, pomegranates, wheat, barley and
grapes.[6]
The diet, based on locally grown produce, was enhanced by imported spices, readily available due to
the countrys position at the crossroads of east-west trade routes.[5]
Lebanese cuisine
Lebanese cuisine includes an abundance of starches,fruits,vegetables, freshfishandseafood; animal fats
are consumed sparingly. Poultry is eaten more often thanred meat. When red meat is eaten it is
usuallylambon the coast, andgoatmeat in the mountain regions. It also includes copious amounts
ofgarlicandolive oil, often seasoned bylemon juice.[1]
; olive oil, herbs, garlic and lemon are typical flavours
found in the Lebanese diet.
Most often foods are either grilled, baked or sauted in olive oil; butter or cream is rarely used other than in a
few desserts. Vegetables are often eaten raw or pickled as well as cooked. Herbsandspicesare used and the
freshness of ingredients is important. Like most Mediterranean countries, much of what the Lebanese eat is
dictated by the seasons.
InLebanon, very rarely are drinks served without being accompanied by food. Similar to thetapasof
Spain, mezeluriofRomania, andantipastoof Italy,mezzeis an array of small dishes placed before the guests
creating an array of colors, flavors, textures and aromas. This style of serving food is less a part of family life
than it is of entertaining and cafes. Mezze may be as simple aspickled vegetablesor raw vegetables,
hummus,baba ghanoujand bread, or it may become an entire meal consisting of grilled marinatedseafood,
skewered meats, a variety of cooked and raw salads and an arrangement of desserts.
Although simple fresh fruits are often served towards the end of a Lebanese meal, there is alsodessert, such
asbaklavaandcoffee. Although baklava is the most internationally known dessert, Lebanese sweets have got
a lot more to offer.
A typicalmezzewill consist of an elaborate variety of thirty hot and cold dishes and may include:
Salads such as thetabboulehandfattoush, together with dip such ashummus,baba
ghanoushor moutabal, andkebbeh.
Some patties such as theSambusac.

Family cuisine offers also a range of dishes, such as stews oryakhnehs, which can be cooked in many forms
depending on the ingredients used and are usually served withmeatandrice vermicelli.
