VOLUNTEERS NEEDED FOR HOME DELIVERED MEALS St. Lawrence County Office for the Aging is seeking volunteers to assist at all nutrition centers and with delivering home delivered meals. Volunteer opportunities include delivering hot meals to homebound seniors in many areas of St. Lawrence County and assisting staff at the nutrition centers. Nutrition Centers are located in: Brasher, Canton, DeKalb, Gouverneur, Morristown, Ogdensburg, Potsdam and Star Lake. If you have a couple of hours available per week or per month to help with this incredibly important program for older adults in St. Lawrence County, please contact:

March is National Nutrition Month
Feeling inspired but not sure where to start? Here are a few great ways to build a healthy lifestyle… Make Smart Choices. Do you know what’s really in your food? How many calories? How many nutrients? The
more you know, the wiser your decisions can be. If you’re shopping in the grocery store, look at the Nutrition Facts labels of foods before you put them in your cart. If you’re dining out, look up the menu online.
Eat and Drink Fewer Calories. Keep empty calories to a minimum and focus on foods like fresh fruits, fresh
vegetables, lean protein sources, low-fat dairy products, and whole grains. These are all keys to a healthful and balanced diet that’s rich in nutrients.
Remember to Exercise! When you exercise regularly, you reduce your risk of chronic diseases like diabetes and
heart disease while increasing your chances of sleeping better and living longer. Plus, physical activity can help you manage your weight. If you haven’t been exercising at all, talk with your doctor about ways to start slow. Go for a walk with a friend or try a beginner exercise class. If you start slowly and keep going, you’ll reap health benefits and reduce your risk of injury or burnout. Find ways to make exercise fun. Meet up with a friend, join a gym class, or find new places to explore. The possibilities are endless! What works for you?

March For Meals
On Wednesday, March 18th, the Office for the Aging Nutrition Program will be participating in a StateWide initiative to highlight the importance of Nutrition Centers and Home Delivered Meals. This year, we have invited our local Legislators, Sheriff’s Department, Department Heads, and State Assembly Representatives and State Senators to participate in this campaign. Representatives from these entities will assist with serving at congregate nutrition centers; as well as assist with home delivered meals. The Nutrition Program is a critical program that assists older adults to age in place. Each month, over 475 home delivered meal clients are served and over 300 congregate diners. Recipe Corner…….. Corned Beef and Cabbage
Looking for the perfect corned beef and cabbage recipe for your St. Patrick's Day dinner? This easy recipe has everything you love about the traditional meal—melt-in-your-mouth corned beef, tender cabbage, and hearty potatoes—plus a delicious horseradish-breadcrumb topping.
Ingredients: 1 (4 lb) cured corned beef brisket (trimmed), 16 cups water,2 cups chopped onion, 1 cup chopped celery, 1 cup chopped carrot, 1 ½ tsp pickling spice,3 garlic cloves (peeled), Cooking spray, 1 tbs caraway seeds, 1 (2 ½ lb) head green cabbage (cored and cut into 1-inch strips), 4 lbs small red potatoes (quartered) , 2 tbs chopped fresh parsley , 2 tsp butter, 2 tsp grated lemon rind , 2 tsp fresh lemon juice , 1/8 tsp black pepper , ½ cup dry breadcrumbs , 1 (5-ounce) jar prepared horseradish (drained and squeezed dry), 3 tablespoons Dijon mustard
Directions: 1. Place corned beef in a large stockpot; add water and next 5 ingredients (water through garlic).
Bring to a boil. Cover, reduce heat, and simmer 3 hours. Remove brisket from pot. 2. Place corned beef on the rack of a broiler pan or roasting pan coated with cooking spray; place
rack in pan. Strain cooking liquid through a colander into 2 large bowls; discard solids. Return liquid to pot. Add caraway seeds and cabbage; bring to a boil. Reduce heat; simmer 20 minutes. Drain.
3. While cabbage is cooking, place potatoes in a large Dutch oven. Cover with water. Bring to a boil; cook 20 minutes or until tender. Drain. Return potatoes to pan. Stir in parsley, butter, rind, juice, and pepper; toss to coat.
4. Preheat broiler. Combine breadcrumbs and horseradish. Spread mustard over one side of corned beef. Press breadcrumb mixture onto mustard. Broil 3 minutes or until lightly browned. Serve corned beef with cabbage and potatoes.

Office for the Aging Home Care Program: If you are 60 or over and in need of home care
services, the Office for the Aging is accepting referrals for the Expanded In-Home Services for the Elderly
Program (EISEP). This home care program assists elderly, fragile, individuals to help maintain quality of
life at home. EISEP provides personal care including bathing, dressing, grooming, and meal preparation
to County residents who are non-Medicaid eligible. Services provided may be on a cost-share basis
depending on income levels.
