SKILLET MEAL (GRILLED FISH AND cORN): Fresh, local fish on bamboo skewers (pictured here, Mahi and Grouper from Abundant Seafood) • Fresh corn on the cob, halved • Roasted Okra • Homemade Comeback sauce • Old Bay Seasoning • Salt & pepper to taste • Lemons and limes, quartered. Prepare outdoor grill to medium high heat (spray generously with grill non stick). Cut fish into 1-1.5 inch pieces. Carefully place chunks on skewers and brush all over with olive oil, seasoning with salt and pepper. Lay fish skewers on the grill for a few minutes (usually around 5) until you can lift the fish without it sticking to the grill and there are distinct grill marks. (Test by gently lifting a piece—if it sticks, leave on longer. Gently turn skewers over and cook until firm to the touch, about another 5 minutes. Grill corn by placing on upper rack or on side away from charcoal. The corn will brighten in color, and get brown grill marks as the kernels caramelize. Roast okra and mix comeback sauce as directed on lily-magazine.com. Serve family style in skillet.

THE FLUORIDE CONUNDRUM it’s an interesting question: should any community be able to subject its residents to a chemical additive in their water supply that has this much controversy? we’re not sure about this either - but here’s what a subversively cool org called Fluoride action network claims about this common by product:

1. most developed countries do not fluoridate their water.

2. Fluoridated countries do not have less tooth decay than non-fluoridated countries.

3. Fluoride affects many tissues in the body besides the teeth.

4. Fluoridation is not a “natural” process.

5. 40% of american teenagers show visible signs of fluoride over-exposure on their teeth (it’s the yellowish markings that don’t go away with brushing).

6. For infants, fluoridated water provides no benefits, only risks.

7. Fluoride supplements have never been approved by the Fda.

8. Fluoride is the only medicine added to public water.

9. Swallowing fluoride provides little benefit to teeth.

10. disadvantaged communities are the most disadvantaged by fluoride.

here are some quick facts and an amazing food chart that will get you excited about nutrition as preventative medicine now that we’ve piqued your interest! Bon appetit, y’all!

those radical free radicals! let’s simplify that for ya...we hear the terms “free radicals” and “antioxidant” and “flavonoids” an awful lot. here is the world’s shortest lily-style explanation of what these terms mean:

Free radical - An official dictionary definition says this: an atom or molecule that bears an unpaired electron and is extremely reactive, capable of engaging in rapid chain reactions that destabilize other molecules and generate many more free radicals in the body.

we found a relatively simple explanation of this process at healthchecksystems. com: Free radicals are very unstable and react quickly with other compounds, trying to capture the needed electron to gain stability. generally, free radicals attack the nearest stable molecule, "stealing" its electron. when the "attacked" molecule loses its electron, it becomes a free radical itself, beginning a chain reaction. once the process is started, it can cascade, finally resulting in the disruption of a living cell.

some free radicals arise normally during metabolism. sometimes the body’s immune system’s cells purposefully create them to neutralize viruses and bacteria. however, environmental factors such as pollution, radiation, cigarette smoke and herbicides can also spawn free radicals.

normally the body can handle free radicals, but if antioxidants are unavailable, or if the free-radical production becomes excessive, damage can occur. of particular importance is that free radical damage accumulates with age.

studies show that free radicals are responsible for a multitude of degenerative diseases and processes, especially atherosclerosis (causing heart attack, stroke and vascular disease), cancer, diabetes, inflammatory joint disease, asthma and dementia (among others).

Antioxidants - these are compounds that are produced by the body—they basically prevent and fight damage done by “oxidative stress” that is caused by free radicals.

Flavonoid - these are micronutrients that are synthesized only in plants. so they are found in veggies, fruit and even herbs (there are also studies that show it is in wine).

So you see, flavonoids produce antioxidant activity within the body. and that activity is what declares war on the free radical activity that causes disease. studies also suggest that flavonoids are responsible for anti-viral and anti-bacterial effects in the body and even helpful in combatting allergic reactions!

Some say that’s the secret to amazing ribs. 6 hours in a smoker or smoke for 3 hours, followed by 2 hours cooking wrapped in foil, and finally 1 more hour unwrapped.160 degrees is the magic “inner temp” # for rib meat.remove the membrane from the ribs before cooking. Many say “dry” ribs are the

way to go. nix the BBQ sauce until AFtEr cooking. to keep moist, add 2 tablespoons of a dry rub to one cup of apple cider vinegar or beer and “mop” ribs once an hour during cooking.Coat ribs with honey or olive oil before cooking.Season ribs with a dry rib rub. 2 tablespoons for every pound of meat is a good rule of thumb. Sprinkle dry rub

onto ribs and rub it into the meat, evenly coating both sides.Make sure ribs are room temp before beginning to cook.Pre-heat your smoker to 255 degrees.Add wood chips to your smoker for awesome flavor.Be sure your exhaust damper is wide open to avoid bitter taste in your meat.
