Use your Bifinett Automatic BreadMaker only for baking bread for homeuse.

Do not use the appliance for dryingfoodstuffs or other objects.

Setup• After unpacking, check the bread

machine for any damage during trans-portation. In the event of damages,contact the supplier.

• Do not place the appliance near a gasburner, electric stove or other sourcesof heat.

• Do not place the appliance near anyinflammable materials, explosiveand/or self-igniting gases.

• Before connecting to mains, makesure that the power supply and thevoltage match with the ratings speci-fied on the appliance label.

• Do not draw the power cord oversharp edges or close to hot surfacesor objects.This may damage the insu-lation of the power cord.

• To prevent anyone from tripping over,the appliance is provided with a shortpower cord.

• If you plan to use an extension cable,make sure that the maximum permis-sible power rating of the cable corre-sponds with that of the bread maker.

• Place the extension cable in such away as to prevent anyone from trip-ping over it or pulling it accidentally.

During operation• Check the condition of the power cord

and plug frequently. If the connectingcable of the appliance is damaged, itmust be replaced by the manufacturer,his customer service or by a qualifiedtechnician so as to prevent hazards.

• Children using electrical appliances orstanding close to them may be allo-wed only under the supervision of anadult.

• This appliance complies with the nor-mal safety regulations.Inspection,repairs and technical maintenancemay be carried out only by a qualifiedtechnician.

• Do not place any objects on the appli-ance and do not cover it during opera-tion. Fire Hazard!

• Caution: The bread maker becomesvery hot during operation. Only touchthe handles and touch buttons of theappliance. If necessary, use a kitchencloth.

• Before taking out the accessories orinserting them, allow the appliance tocool down and unplug the powercord.

• Do not move the bread maker from itslocation, if hot or liquid contents arestill inside the baking moulds.

• Avoid contact with the rotating knea-ding paddles during operation.Injuryhazard!

• To disconnect, switch the applianceoff (switch is on the rear side of theappliance) and unplug the power cord.

• Do not pull at the cable but pull outthe plug from the socket.

• When not in use or before cleaning theappliance, unplug the power cord as asafety measure.

• Do not use the bread maker to storecooked food or other utensils inside.

Cleaning • Never dip the bread machine in water

or other liquids. Hazard of lethal elec-trical shocks!

• Do not clean the appliance with abra-sive scrubbers. Detached particles of the scrubbermay come into contact with the elec-trical components and cause severeelectrical shocks.

Disposing the packaging materialUnpack your appliance and dispose ofthe packaging material in accordancewith the prevailing regulations.

Initial cleaningBefore starting to use the appliance,wipe the baking moulds, kneadingpaddles and outer surface of the breadmaker with a clean and slightly wetcloth. Do not use any abrasive scrub-bers or cleaning powders. Remove theprotective film on the control panel.

You can use the automatic bread makerto bake according to your taste.• Both the baking moulds allow you

to bake 2 loaves of bread weighing1.0 lb each.

• You can select any of the 10 diffe-rent baking methods

• You can use ready-to-use bakingmixtures.

• You can knead dough for buns andnoodles and also prepare marmala-des.

Note:When the appliance is switched on, thepresetting is at 2.5 lb. Do not changethis setting when using 2 bakingmoulds. Only select the weight whenusing the large baking mould.

Pilot lightThis indicates that the appliance is inoperation.

Start/StopSwitch for starting and ending the ope-ration or for erasing the timer program-ming.

Note: Do not press the Start/Stop key, ifyou wish to only check the conditionof the bread.

Important: When pressing any touch button youmust hear a beep.

Memory functionIn case of a power failure less than 10minutes, the programme will continuefrom the same setting on restoration ofpower. However, this is not applicable, ifthe Start/Stop key is activated for inter-rupting the baking operation.

Note that in this Programme the bread isless fluffy and may not be so tasty.

Baking programme 6: Dough (kneading)For preparing the yeast dough for buns,pizza or plaits. In this programme nobaking is done.

Programme 7: PastaFor preparing noodle dough. In this programme no baking is done.

Baking Programme 8: Buttermilk For breads made with buttermilk orcurds.

Programme 9: JamFor preparing marmalades.

Programme 10: BakeFor re-baking breads if they are too lightor not well baked. In this Programmethere is no kneading or resting. Thebread will be warm for nearly an hourafter the end of the baking operation.This prevents it from becoming messy.

To end this function, switch the applian-ce off or disconnect from the mains.

NoteYou can simultaneously bake

- two different varieties of bread usingthe same Programme,

- two loaves of the same variety or- only a single loaf (in this case place

the second baking mould withoutthe kneading paddles inside theappliance).

8 Baking programme

Using the key Menu, select the desiredprogramme. The corresponding program-me number will be displayed in the displayfield.The baking time depends on the selectedprogramme combinations. For this, refer tothe table "Programme sequence" inSection 15

Baking programme 1: Regular For white and mixed breads made mainlyout of wheat or rye flour.The bread has acompact consistency. You can set thedegree of browning for the bread using thekey Colour.

Baking programme 2: FrenchFor light breads made from fine flour.Normally the bread is fluffy and has a cri-spy crust. This is not suitable for bakingrecipes requiring butter, margarine or milk.

Baking programme 3: Whole-WheatFor breads with heavy varieties of flour thatrequire a longer phase of kneading andrising (for example, whole wheat flour andrye flour). The bread will be more compactand heavy.

Baking programme 4: SweetFor breads with additives such as fruitjuices, grated coconut, raisins, dry fruits,chocolate or added sugar. Due to a longerphase of rising the bread will be light andairy.

Baking programme 5: Super-RapidThe baking operation takes only half thenormal time. For this programme, however,use only such recipes that do not containany heavy ingredients or heavy varieties offlour.

The colon symbol in the display fieldstarts to blink and the countdown forthe programmed time begins to run.On completion of the baking operation,a beep can be heard and the display willshow 0:00.

Example:It is 9.30 hrs and you wish to have freshbread after 8 hours and 30 minutes, thatis to say, at 18:00 hrs. First, select theProgramme and press the Timer key tillyou see 8:30 in the display. This indica-tes 8 hours and 30 minutes needed.Note that the Timer function may not beavailable in some Programmes. (Refer toSection 11)

NoteDo not use the Timer function, if youare working with rapidly perishablefoodstuffs like eggs, milk, cream orcheese.

9 Setting the timer

In the case of Programmes 1, 3 and 4you will hear a beep as the programmeis running.

Soon thereafter, add the ingredientssuch as fruits or nuts.The kneading paddles will not crush theingredients. If you have set the timer, you can putvarious ingredients into the bakingmould even at the beginning of the pro-gramme. In this case, however, fruitsand nuts should be cut into smaller pie-ces.

The Timer function enables you to bakebread while you attend to other work.Using the arrow keys ▲ and ▼ , set thedesired end time for the baking opera-tion.Select a Programme. The display showsthe required baking time. Using the arrow key ▲ you can changethe end time of baking operation insteps of 10 minutes to a later point oftime. Keep the arrow key pressed to carry outthis function faster. The display showsthe total duration of baking time and thedelayed time.

If you overshoot while changing thetime, you can correct it using the arrowkey ▼. Confirm the Timer setting using theON/OFF key.

2. Mount the kneading paddles on thedrive shaft inside the baking mould.Make sure that it is fixed properly.

3. Put the ingredients for your recipeinto the baking mould in the speci-fied sequence. First put the liquids,and then add flour, sugar and salt.Add the yeast at the end.

NoteMake sure that yeast does not comeinto contact with salt or liquids.

4. Place the baking mould inside theappliance. Make sure that it is posi-tioned properly.

5. Close the lid.6. Insert the plug into the power sok-

ket and switch the appliance on byusing the main power switch on thebackside of the appliance. You will hear a beep and the displayshows the programme number andthe duration for the normal pro-gramme 1.

7. Using the Menu key, select yourprogramme. Every input is acknow-ledged with a beep.

8. Select the colour for your bread.The display shows the markinglines, if you have set the range oflight, medium or dark baking.

Here you can also select the function"Rapid" to minimize the baking opera-tion.

NoteThis function is not possible forProgrammes 4-10.

In order to achieve successful resultswith your baking efforts, please considerthe following factors:

Ingredients• Before you fill in the ingredients,

remove the baking mould from thecasing. If bits of ingredients aredropped inside the baking area,they may start burning due toexcess heat in the heating coils.

• Always, put the ingredients insidethe baking mould in the specifiedsequence.

• All ingredients should be brought toroom temperature in order to achie-ve optimum fermentation of yeast.

• Measure the ingredients precisely.Even negligible deviations from thequantities specified in the recipemay affect the baking results. Never use larger quantities thanthose specified. Too much doughcan flow over the baking mould andcause fire in the heating coils.

PreparationFollow the safety notes given in Section4 of this manual.Place the bread machine on an evenand firm base.

Tip: After a kneading phase of 5 minutescheck the consistency of the dough.It should have the consistency of asoft adhesive mass. If it is too dry,add some liquid to it. if it is too moist, add some flour (asthe case may be, once or severaltimes1/2 - 1 teaspoonful).

Ending a programmeAt the end of a programme, the applian-ce is automatically switched over to astand-by mode to keep the items warmfor 60 minutes.In this mode, warm air circulates insidethe appliance. You can stop the war-ming function at any time by pressingthe Start/Stop key till you hear a beep.

Warning!Before opening the appliance lid,

switch the appliance offand unplug the power cord.

If not in use, the appliance shouldalways be disconnected from the powersupply.

Taking out the breadFor taking out the baking moulds, usepotholders or kitchen gloves. Hold the baking mould in a slantingposition supported by a metal grill andshake it gently till the bread is releasedfrom the mould.If the bread is released from the knea-ding paddles, try to release the paddleswith a wooden spatula or a blunt object.

9. If you wish you can set the endpoint of your programme now usingthe Timer function. You can adjustthe time up to 14 hours and 55minutes.

NoteThis function is not possible forProgrammes 5, 6, 7, 9 and 10.

10. Using the key "One pan mode",select the weight of your bread. Thissetting is possible only when youuse the large baking mould availableas accessory. When you use thesmall baking moulds, leave theweight setting at 2.5 lb (standardsetting), no matter if you are bakingone or two breads.

NoteThis function is not possible forProgrammes 5, 6, 7, 8, 9 and 10.

Starting a ProgrammeUse the Start/Stop key to start the pro-gramme.The programme will automatically runvarious operations.You can watch the programme sequen-ce through the window provided on yourAutomatic Bread Maker. Sometimesthere may be formation of water vapouron the see-through window during thebaking operation. You can open the lidduring the kneading phase.

NoteDo not open the lid during the bakingphase. If you do so, the bread maycollapse.

Warning!Do not attempt to start operating thebread maker, before it has either coo-

led down or warmed up.

Please also read the safety instructionsin Section 4 in this regard.

ImportantThe parts and accessories of the

appliance should not be washed in adish washing machine.

Casing, lid and baking area:Remove all particles left behind insidethe baking area using a wet cloth or aslightly wet soft sponge. Wipe thecasing and the lid too with a wet clothor sponge. Make sure that the insidearea is fully dry.

Baking moulds and kneading paddles:The surface of the baking moulds andthe kneading paddles are provided witha non-stick coating. While cleaning, donot use any corrosive detergents, clea-ning powders or objects that may causescratches on the surface.

Due to moisture and vapours the surfa-ce of various parts may undergo chan-ges in their appearance over a period oftime. This does not affect the quality orfunctional performance of the appliance.

Do not use any metallic objects as thesemay cause scratches on the non-stickcoating. Rinse the baking mould with warm waterimmediately after taking out the bread. Thisprevents the kneading paddles from beco-ming rigid on the drive shaft.

Tip: If you remove the kneading paddlesbefore the bread rises for the last time, thebread can be released from the bakingmould easily.

• For this, open the lid of the applianceand remove the baking mould. Applysome flour to your hands to removethe dough and then the kneadingpaddles.

• Put the dough back in its place andclose the lid.

Allow the bread to cool down for 15-30minutes before you attempt to taste it.

Before slicing the bread, always make surethat there are no kneading paddles in thedough.

Warning!Do not attempt to start operating theappliance, before it has either cooled

down or warmed up.

If the display on the bread maker shows "E 01", the appliance is not sufficientlycooled down.If the display shows "E 00", the temperatu-re is too low. Wait till the display disappe-ars.

Tip: While using the Timer functionespecially, make sure that yeastdoes not mingle with the moistingredients. This may affect therising of the dough.

YEASTIn the fermentation process, yeast splitsthe sugar and carbohydrate contained inthe dough and converts them into car-bon dioxide, which causes the dough torise. Yeast is available in different forms: asdry yeast, as fresh yeast or as fast fer-menting yeast. We recommend usingdry yeast for the Automatic Bread Makerto obtain the best results.

When using fresh yeast instead of dryyeast, follow the instructions given onthe package.Normally, 1 packet of dry yeast corre-sponds to 25g of fresh yeast.

Always store yeast in the refrigerator, asheat decomposes it. Before use, checkthe expiry date. After opening the pak-ket, unused yeast should be carefullywrapped again and stored in the refrige-rator

Note:For recipes suggested in this instruc-tions manual, we recommend the useof dry yeast.

Before cleaning, take out the bakingmoulds and the kneading paddles fromthe baking area. Wipe the outer surfaceof the baking moulds with a wet cloth.

ImportantNever dip the baking moulds in water

or any other liquids.

Use warm soap water to clean the insi-de of the baking moulds. If hard layers of crusts have formed onthe kneading paddles and are difficult toremove, fill the baking moulds withwarm water and allow them to soak forabout 30 minutes.If the insertion grip in the kneadingpaddle is blocked, use a wooden peg tocarefully clean it.

Do not use any chemical cleaningagents or thinners to clean the breadmaker.

13 About ingredients

FLOURMost of the commercially available varie-ties of flour such as wheat or rye flour aresuitable for baking (Type 405-1150). You can also use ready-to-use breadbaking mixtures.Programmes 1 and 2 are ideal for addingsmall proportions (10-20%) of grains orbruised grain.In case of larger proportions of whole meal(70-95%) use programme 3.

SUGARSugar has the decisive influence on thedegree of browning and taste of thebread. For the recipes in this manual ofinstructions, it is necessary to use cry-stallized sugar. Do not use powderedsugar, unless it is expressly specified.Sweeteners are not suitable as alternati-ves to sugar.

SALTSalt is an important ingredient for tasteas well as for the degree of browning ofthe bread. Salt also has an inhibitingeffect on the fermenting of the yeast.Therefore, do not exceed the quantity ofsalt specified in the recipes. In case ofdietary restrictions salt can be omitted.In such cases, the dough may rise fasterthan normal.

LIQUIDSLiquids like milk, water or milk powderdissolved in water can be used formaking bread. Milk adds to the taste ofthe bread and softens the crust, where-as pure water gives a crispy crust. Insome recipes, the use of fruit juices isindicated in order to give a particular fla-vour to the bread.

EGGSEggs enrich the bread and provide asoft structure to it. Use eggs whilebaking according recipes given in thisinstructions manual for large sized bre-ads.

FATS: BAKING FAT, BUTTER OR OILBaking fats, butter and oil make theyeast containing bread mellow. The uni-que form of crust and structure in bre-ads according to French style is due toits fat-free ingredients. However, breadstays fresh longer if fat has been used inits processing. If you use butter directlyfrom the refrigerator, cut it into small bitsto optimise mixing with the doughduring the kneading phase.

MEASURING THE INGREDIENTSAlong with our Automatic Bread Maker,you will receive the following measuringcups, which make the task of measuringthe ingredients easier for you:1 Measuring cup with quantity level mar-kings1 Large measuring spoon corresponding

to one tablespoon(TBSP)

1 Small measuring spoon correspondingto one teaspoon(TSP)

Place the measuring cups on an evensurface. Make sure that the quantitiesreach the measuring lines correctly.While measuring dry ingredients, makesure that the measuring cup is dry. Allquantity specifications for TBSP/ TSPrefer to the lines on the measuringspoon.

Baking in different climatic regionsIn areas located at higher altitudes, thelower atmospheric pressure causesyeast to ferment faster. Hence, lessamount of yeast is required here.In dry regions, the flour will be drier andrequires more liquids.In humid regions, the flour will be moremoist and thus absorbs less amount ofliquids. In such areas, more flour isrequired.

Ready-to-use baking mixturesYou can also use ready-to-use bakingmixtures with this Automatic BreadMaker. Follow the manufacturer’s instructionson the package.The following table provides you theexamples of conversion for some of thebaking mixtures. For the small bakingmould use 2/3 of the quantity that isrequired for a 750g bread.

14 Baking tips

Slicing and storing the breadYou can achieve the best results, if youplace the freshly baked bread on a grillbefore slicing it and allow it to cooldown for 15 to 30 minutes. Use a breadslicing machine or a toothed knife toslice the bread. Unconsumed bread canbe stored at room temperature for up to3 days in suitable plastic bags or contai-ners. If you wish to store the bread forlonger periods (up to 1 month), youshould freeze it. Since homemade bread does not con-tain preservatives, it gets spoilt fasterthan the commercially manufacturedbread.

ANSWERRemove the kneading paddles with awooden spatula. Do not use any sharpobjects, which may damage the coatingof the kneading paddles.

Your dough may be too dry. The nexttime measure the ingredients correctly. Add1/2 to 1 TBSP of more liquid.

Make sure that the kneading paddlesand baking mould are positioned pro-perly.

Please refer to the precise timings in thetable Programme sequence in Section16.

Fresh products such as milk or eggs getspoilt, if they remain in the appliance fortoo long. Therefore, do not use theTimer.

In case of power failure for less than 10minutes, the bread maker will run thelast implemented Programme till theend.

This is the best way to prepare thedough.When the Timer function is used,it prevents yeast from mingling withliquids, before the dough is stirred.

You can simultaneously bake 2 loaves of1.5 lb each or, you can use the largebaking mould (can be ordered) to bakebreads of up to 2.5 lb.

No. Please wash the baking moulds andkneading paddles with hands. Do notdip the baking moulds in water.

The function "Keep warm" ensures thatthe bread is kept warm for nearly 1 hourand protected from humidity. If thebread is left inside the bread maker formore than 1 hour, it may become moist.

Check that the kneading paddles andbaking moulds are positioned properlyAlso check the consistency of the doughand add 11/2 to 1 TBSP of liquids orflour, one or more times after kneading.For ready-to-use baking mixtures: thequantity of ready-to-use baking mixtureand the ingredients is not based on thecapacity of the small baking moulds (500g). Reduce the quantities of the ingre-dients as described in Section 14.

The yeast used was too old or no yeasthas been added.

You will hear a beep, when you areexpected to add the ingredients. If youadd these ingredients to the dough inthe beginning itself, the nuts or fruit mayget crushed at the time of kneading.

Check the dough consistency 5 minutesafter beginning of the kneading opera-tion and add1/2 to 1 TBSP of liquid orflour, if necessary.

You may have used too much yeast.

To prevent ingredients such as fruits ornuts from being crushed, add these tothe dough only after you hear the beep.Check the consistency of the dough Iftoo dry, the dough will not hold the rai-sins.

The bread may be rising too fast. Toprevent this, reduce the water quantityand / or increase the quantity of salt and/ or reduce the quantity of yeast.

You can use other recipes, but followthe specified quantities. Get to knowyour appliance well and the recipesgiven here, before you try out your ownrecipes. Never exceed flour quantity of350 g. Adjust the quantities of your reci-pes to the quantities specified for therecipes given in this booklet.

Whole wheat flour and rye flour are hea-vier than all-purpose white flour; so,bread made of these flours rise lessduring baking. Grains and nuts alsomake them dense and suppress thesize.

The baked bread is too moist.

There are air bubbles on the surface ofthe bread.

The added raisins get crushed in theappliance.

Put any fruits and jellifying sugar at aratio of 2:1 in the baking mould.

Maximum quantities:500 g fruits (cut in pieces)250 g jellifying sugar

Suitable fruits are strawberries, raspber-ries or other kinds of berries, apricots,oranges, cherries etc.

Tip: Adding one teaspoon of lemon juicegives your jam a special flavour.

Fill the hot and fluid jam in preservingglasses. Close the glasses and placethem on the lid. This way you can besure your jam is vacuum sealed.
