In late December 2012, Zach Johnson joined Desert Mountain as Sous Chef of the Chiricahua Grill and Constan- tino's Restaurant. Just following the end of the Christmas holiday and the beginning of a busy Winter season, Zach was tasked with holding down the fort in a clubhouse with a new team, new menu, and upcoming events with no Chef de Cuisine for a little over a month. Upon my arrival just five weeks later, I knew there was a hefty work load ahead of me, but took comfort in knowing that with Zach as my second in command, no challenge would be too great. Those of us who are fortunate enough to work side-by-side with him, we can attest that Zach is an example to follow in practicing all our core values, but one value, in particular, stands out far above the other—a restaurant can only be truly successful when there is leadership that promotes teamwork. Zach has been not only instrumental in executing the day-to-day kitchen demands of food ordering, fabrication and creative development of new features, he has been invaluable to the team of cooks who work tirelessly to create a wonderful dining experience for our membership. The positive morale within the team at Chiricahua is a major point of pride. The cooks are always supportive of one another, just as Zach is supportive of them. Lead cook, Carl Fredricksen says, “When he walks through the door, he always smiles and is in a good mood.” Kitchen Supervisor, Eddie Seliga, who often refers to Zach as “Coach” says, “Zach is a swell guy to work with; always calm, thorough and professional.” “When I talk to Zach, he is respectful, honest and straight forward, yet a courteous person,” says cook, Arturo Ramirez. “Zach has a great work ethic, when he says he's going to do something, he does it,” says cook, Scott Paget. Zach also supports the idea of teamwork Mountain-wide by assisting the other clubhouses. He has often helped Cochise-Geronimo with the execution of the member favorite Pasta Night, and throughout the summer, he has helped the team at Apache. It is a true honor and privilege to have Chef Zach as my iron-clad right hand man—he is an inspiration to us all. In the whirl-wind of the restaurant world, the most often forgotten, underappreciat-ed, yet most integral member of the kitchen is the Sous Chef.

In late December 2012, Zach Johnson
