June is almost here and another wine club order is heading your way! We will be processing all orders on Monday, June 3rd. All orders that are scheduled to ship will also go out and all pick up orders will be available on Monday the 3rd. Remember, you have 75 days to pick up each order (Please pick up before August 15th).

2010 Merlot $28.00/bottle $22.40 Wine Club Tasting Notes: The complex Merlot displays aromas of blueberry, licorice, and herbal flavors such as thyme. The barrel aging enriches the aromatic with delightful smoky characteristics. On the mouth the tannins are supple and elegant. The wine offers a modest finish with a pleasant after-taste due to a year of oak aging.

Wine C lub Release Notes . . .

Here are your Summer selections . . .

2011 Viognier $20.00/bottle/$16.00 Wine Club Double Gold @ San Francisco Chronicle Wine Competition

Tasting Notes: The nose displays aromas of orange peel, grapefruit and a hint of herbal notes such as hay. On the palate the mouth feel is full, textured, and is held together by its great acidity. The partial barrel ageing provides an elegant aftertaste, lingering with complexity.

2010 Cabernet Franc $28.00/bottle/$22.40 Wine Club

Tasting Notes: The nose displays mostly woody characteristics such as coffee, burnt toast, ce-dar and hazelnut. The first impression on your palate is true to the nose, reflect-ing the wood components due to the barrel aging. As the wine opens it offers a soft essence of almond. The finish lingers with fruit and a hint of bell pepper typically found in Cabernet Franc.

Your Opinion Matters! We would love to hear what you think about our events and wine club. Please let us know if you have any sugges-tions or events you would like to see at Del Rio. Feel free to email, call, or stop by with your ideas.

The Upper Rogue Wine Trail will no longer be hosting 2nd Saturday events. This year will be the beginning of new events from case sales to winemaker dinners! Look for more information coming soon!

Directions Place salmon on a lightly greased piece of aluminum foil. If it has the skin, make sure it is on the bottom. Coat the top of the salmon with pesto adding a layer of sliced kalamata olives, chopped tomatoes and feta cheese. Wrap the salmon with foil and bake for 15 to 20 minutes at 400 degrees or until done. Serve at room temperature with your favorite crackers or sliced bread. Would taste delicious with the 2011 Viognier.

Ingredients Olive oil 3 sweet Italian sausage

links, casings removed ½ small onion, finely diced 6 ounces (a little less than

half a loaf) French bread, finely cubed

¼ cup apples, chopped 6 fluid ounces chicken

stock, warm 2 ½ tablespoons unsalted

butter, melted 1 tablespoon flat-leaf pars-

ley, chopped 2 teaspoons fresh thyme

leaves, chopped, divided use

2 teaspoons honey ¼ teaspoon Italian season-

ing ½ cup grated Sharp ched-

dar Salt Freshly cracked black pep-

per 4 portobello mushrooms,

stems removed and gills scraped out

Directions Preheat the oven to 400°, and line a baking sheet with foil.

Place about 1 tablespoon of olive oil in pan; add the sweet Ital-ian sausage and break up into fine crumbles; once browned, remove the sausage from pan. Next, add the diced onion into the same hot pan, and sauté it in the drippings for a couple of minutes until golden-brown; set aside for a moment.

To make the stuffing, add the finely cubed French bread into a medium-size bowl; next, add in the browned and crumbled sausage, the sautéed onion, apples, chicken stock, melted but-ter, parsley, 1 teaspoon of the fresh thyme, honey and the Ital-ian seasoning; mix the stuffing together; next, add in ¼ cup of the grated Vermont cheddar along with a pinch of salt and black pepper, mix well.

To stuff the mushrooms, first drizzle a little olive oil over each of them, along with a pinch of salt and black pepper; next, stuff each cap with stuffing, and drizzle just a touch more olive oil over, and bake for about 25 minutes until mushrooms are tender and the stuffing warm; to finish the mushrooms, sprinkle over each one a little of the remaining ¼ cup of ched-dar, and place back into the oven for a few minutes more to melt the cheese. Serve warm.

Winery Report : Hot Spring Forecasts Early Harvest

3rd Annual Rock Point Wines Affair

On the 5th of April bud break occurred, followed by some tense nights when the temperature dropped below freezing. Thankfully, the frost protection system kept us safe from damage. Today, the hot spring has boosted growth and the vines will soon be touching the top end of the trellis. It is already looking like 2013 will be a particularly early vintage perhaps starting as soon as the 1st of September. Yes, I am already thinking about harvest, and in order to be prepared we are bottling the 2012 whites, opening up room in the cellar. Hope to see you for a good time around a glass of wine. Santé!
